This is what mom keeps saying.. to everyone she talks to today! So, obviously her RAVENS won! SO we're happy.. well, shes happy .. but now this means she is leaving me next weekend ... :( She is headed to New England on Saturday! But Gramps is staying behind.. so I will have a friend :)

Well Saturday was great, I got to help mom cook for the tailgate! My favorite part of the football season is sausage dip and buffalo chicken dip.. two super easy recipes

Sausage Dip:
One tube of HOT Jimmy Deans sausage
1 can of minced tomatoes- I usually do the tomatoes with jalepenos.. or green peppers and onions
1 block of cream cheese
Shredded Cheese
- cook sausgae on frying pan until browned.. chop it in little pieces as its cooking, just with a spatula, when finished cooking, empty greese.. add tomatoes to pan.. then place softened cc in pyrex, then add hot sausage and tomatoes on top, mix all around .. finally add shredded cheese on top.. put in over for 10-12 min on 350, so that the cheese melts.. best with multi grain tostitos

Buffalo Chicken Dip
3 boneless chicken breast
2 block of Cream Cheese
Ranch Dressing
Texas Pete hot buffalo sauce
Shredded cheese

Cook chicken in pot .. then shred the chicken and place in pyrex.. add melted cc and mix.. then add a cup or so of Ranch (to taste) and as much of the buffalo sauce as you would like.. shredded cheese on top, cook on 350 for 10-12 minutes so cheese melts, best with Fritos Scoops!

Recipe of the Day!

CHICKEN PESTO.. Mom and I LOVE pesto.. although, I only get to enjoy the smell.. depending on Moms mood

Makes 4 servings, recipe adapted slightly from The South Beach Diet Quick and Easy Cookbook.)

4 boneless, skinless chickenn breasts
salt and fresh ground black pepper for seasoning chicken
1/2 cup basil pesto (I used my homemade Basil Pesto with Lemon, but you can use purchased pesto.)
2 oz. (1/2 cup) grated low-fat mozzarella cheese

Preheat oven to 375F/190C. Trim all visible fat and tendons from chicken pieces, then cut each chicken breast lengthwise into 2 or 3 pieces. (I cut the larger ones into 3 strips and the smaller ones into 2 strips.)

Spray a 9" x 12" (or 8.5" X 12.5") baking dish with non-stick spray, then spread 1/4 cup basil pesto over the bottom of the dish. Lay chicken strips over the pesto, then spread 1/4 cup more basil pesto over the chicken.

Cover the baking dish with aluminum foil (or use a baking dish with a tight-fitting lid) and bake the chicken for 25-30 minutes, just until chicken is barely firm and cooked through. (Don't cook too much at this point, or the chicken will be overcooked by the time the cheese is melted and browned.)

When chicken is barely cooked through, remove foil and sprinkle chicken with 1/2 cup grated mozzarella cheese. Put dish back into the oven without foil and cook 5 minutes more, just until cheese is melted. (If your broiler is separate from the oven, start preheating it when you take the chicken out.) After I melted the cheese for 5 minutes I switched my oven to broil and broiled for 5 minutes more, just long enough to get the cheese lightly browned.

Serve hot. There will be some flavorful juice in the bottom of the dish when this is done, so you may want to serve with rice, couscous, or quinoa to soak up the juice, but if you're eating this for phase one, just spoon the juice over the chicken.

The Week From Hell

My life is generally really easy and stress free. Wake up, eat , take care of what I need to outside, sit and shake hands, so I can get a pig ear and then its back to sleep for the next 5 hours, unless Gayle wants a cigarette (Gayle is Lisa's Dad, he lives with us when I stay at my grandparents, he and my 17 year old uncle and his friend Ben) , if Gayle wants a cigarette, I will gladly join him out back. This week was different... Wednesday, Mom picks me up.. I haven't seen her all weekend long because she went to the beach for New Years and ditched me. So I was really excited to see her. She picked me up and we headed to the house. I love car rides, so I was loving life, head out the window, toungue out.. just taking it all in.. life is good. We go home.. hang out downstairs with the roomates for some time, go to bed. Morning comes, I am all excited again because I get to get back in the car, its weird how much I love car rides, I literally hear the words and go absolutley bananas, its actually embarassing. Anyway, we get in the car.. take the normal route back to the grandparents.. were going down Bellona, mom is going about 10 over the speed limit, which is pretty standard. Out of no where , this J.A in his fancy little beamer cuts us off.. mom has no choice but to slam on the breaks and swirve right, as I go FLYING in to the dashboard. Thank God for my massive block head because I was fine, what can I say.. im a survivor. Mom on the other hand, is a hot mess. I look over and the water works have already begun. If you ask me, I think that was over kill, but I get it , shes a woman.. shes emotional.. she literally cries at commercials. Anyway, we are both shaking so we pull over and collect ourselves. I am not going to pretend like I minded the attention I got for the next hour until she had to leave for work. She left thinking she was some terrible mother, which I am sure that I didnt help by watching her drive away with my droopy eyes. OOPS! Not her fault, that this beamer guy had little man syndrome.

If you thought that was bad.. wait until you hear about my night last night!!! Mom was feeling really sick and just wanted to go to sleep, she took these two little green pills, called Nyquil and 20 minutes later was trying to get words out and honestly sounded like she was just learning to speak the english language.. get it together Mom. So obviously, it was bed time.. we took ourselves upstairs and got in bed.. she was out in 3 minutes.. I sat and stared out the window for a while but finally fell asleep... BOOOOM.. 2 am, I wake up on the floor.. what the hell just happend. Mom hears the crash, comes out of her Nyquil coma , screaming like a banshee.. she cant find me.. "MURPH", she says as shes looking all around.. Hello, Mom.. look left and down, yes I somehow got my fat butt stuck in between the bed and the wall. Well now what, we are screwed, I cant move and moms on drugs. I am staring up at her , waiting for her to respond.. shes in complete panic mode .. looking around the room, for help?? She moves the bed out as much as she can, which is about 3 inches.. I try to fit underneath the bed and crawl out that way, that is NOT happening.. I wedge myself a little bit and I am able to stand up and get my two front legs on the bed.. Mom gets some weird super man like strength and pulls me up on the bed. I was amazed, as was she at herself.. we are both still seriously confused as to how that happend. I jumped up in bed, shaking again and slept on her head the rest of the night.. I need to stay as close to her as possible so that this did not happen again but it was extremely uncomfortable and humilating.. this is why I love my mom, she totally got it .. spooned me and didnt let me go the rest of the night, although that may also have something to do with her being alone and using me as her secuirty blanket.... JUST SAYIN... either way .. im not complainging!!!

What is it with these guys? Stealing all of my moms attention from me?? I get it , they are beasts who can run up and down a field fast as hell, they can tackle guys, they can throw, they can kick and damn can they dance?!! BUT, I can run, maybe not as fast because I have a few extra pounds and I can tackle but only when someone gets on the floor on my level.. as far as the kicking, throwing and dancing part.. they have me beat..but I think I'm pretty awesome. Anyway I have learned to love them , because they make mom happy so , I am going with it. That being said, I must say that I am pretty excited that they kicked ass this year and won the AFC North.. because that means I, too get a break this weekend. A break from this stupid hat and the jersey mom likes to put me in that really "shows off my curves" in the worst way.. My neck fat is NOT the bad.. you would have neck fat too if you had one a jersey three times too small!!!

Pipe Dreams

I would like to dedicate my first blog to my girlfriend, Piper. Piper and I had a special bond. We lived together a few years ago in Baltimore City. I was always a county guy, so when I got there, I thought.. where the hell is the grass? Piper had to show me the ropes and teach me to not be such a God damn sissy. I mean,I was that guy, who ,when it was raining or snowing or just to cold out, I would stand at the back door with half of my body still inside, so that I didnt get too cold while I peed. Seriously? Thank you Piper, I should have lost my man card for that but then she can into my life and I had to win you over and show Piper that I could be the man for her. Piper just got me and loved the crap out of me. Even though I may have seemed annoyed, I loved it when you sat one inch from my face and just stared at my while making your pig like noises. I dug the sounds you made.. Piper and I were reunited again in 2011 when our moms moved to Rogers Fordge with our friend Cara, it was beautiful, I was ecstatic the first time I saw her again, I thought I had lost her! Unfortunatley our stay together was short lived and Piper passed away a few weeks ago. But Piper told me she was in pain and was ready to move on! So I gave her my blessings and sent her a long to doggy heaven. I am forgetful sometimes and still check in Laurens room for her everytime I walk in the house. We all miss Pipe but we know she is killin it up there in doggy heaven and I can't wait to be re united for the third time!
