A lot has happened. My husband and I decided last April to try to get pregnant and I did. We had our daughter, Emma, on February 13, 2013. She's beautiful and I couldn't be happier!

Weight-wise, I did pack on almost 50 pounds being pregnant, but luckily it was mostly her, fluid and placenta. I have already lost all but 10 pounds, which I am working on now. I am nursing, so that's helping a lot. I am sure I will post like crazy these last few weeks I have off work, but once I am back, it will probably dwindle as I spend a lot of time attached to an infant.

I hope my followers are doing well. I miss blogging and all that. It just takes quite a bit of time, which there doesn't seem to be enough of nowadays.

Onto important things. I can eat quite a bit more calories while I am nursing (500 to be exact). I don't eat larger sized meals, I just mostly eat more frequently.I have either an extra meal each day or two extra snacks.

Today has been pretty boring food wise as I had to run out. I had scrambled eggs and homemade homefries for breakfast. Lunch was a slice and a half of leftover pizza. Snacks have been (and I am being honest-I know, shudder at the site of the rice crispy treat-it's only a 90 calorie one!) a chocolate chip chewy granola bar, rice crispy treat, garden salad with chicken, and Roadside Lemonade Nectar Protein drink. No pictures, unfortunately, as I wasn't planning on posting today. I will try to have pictures tomorrow.

Hi Everyone!

It obviously has been awhile. I have just been busy, but still cooking different things and staying on track.

Lately, I have been loving making indian food at home, like Mango Curry Chicken with Raita-omg, YUM!

Today, I channeled my inner Eggface and had a really great food day.

Breakfast- Spinach, Tomato and One Egg sauteed a pan coated with non-stick cooking spray, wrapped up in an 80 calorie tortilla topped with a lil pinch of shredded cheese. NOM and filling!

Snack was 4 oz Plain non-fat greek yogurt with 2 tbsps SF Vanilla Torani syrup and 1/2 cup fresh strawberries.

Lunch- Leftover Ginger Pork and Peppers (1/2 cup) with 1/2 cup brown rice.

Snack- I made lil cucumber sandwiches with sliced cheddar and pepperoni! (Hint, this is the one I channeled from Eggface!). They are sooo cute and a work collegue complimented how cute they are, so it's not just me... LOL

Supper was a request of my Hubby-meatloaf and mashed potatoes (oy, calorie fest, not good...)

But I made it and had 2 oz of the loaf-at 200 calories on it's own, even when I used the 90% lean beef, ugh! I also had sauteed green beens and 1/4 cup of the mashed.

After all, I worked out today and had a very low carb day, so I am good. ;-)

I will try to post more, it's been crazy since I got married, we moved, I got a promotion, etc... It goes on and on.

Talk to you all later.

If you are looking for some new ideas, this is a great place to find them. You of course have to scale down the portions, sometimes, but the ideas for different meals are great! Especially this one, me being in such a breakfast rut...

Breakfast Quinoa:

2 cups Vanilla Soy Milk
1 cup Whole Grain Quinoa
2 tbsp Dried Cranberries
2 tbsp Almonds (she uses pecans, I didn't have those on hand)

Take the soy milk and bring it to a boil. Keep an eye on it, this happens suddenly! I almost had a nasty cleaning job on my hands. Once boiling add in the quinoa, dropping the temperature to the lowest your stove will allow and cook until the milk is absorbed.

I took 3/4 cup of the quinoa and topped it with about 1 tbsp dried cranberries and the same amount of almonds. It's incredibly yummy, protein packed and has healthy carbs to boot! I highly reccomend this meal. I couldn't even finish mine, it's so filling!

Enjoy the food porn:
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjAR9iGUuDZzBck5-WhKixypG-0xsX_65ghNajIkMpRd7vAyJBA7ZvqNmRM6DgWoWxzAHAzZAhHtIBflCiVoI2Scskhd_i5Xszo4TAieyAJqvRQfms1cqVjQ7rpB0ej27FrSHVKgaSQxByN/s400/photo+%25285%2529.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5687098159934431010" />

Some new things...

Lately I have been reading a lot of new recipes in magazines like Self, Fitness, Health, etc... Basically chic mag's. I hate to eat the same boring thing every day and night. I call that a food RUT and I am not a fan!

So, I am trying some new things, buying some new items, and I hope you enjoy can enjoy them, too!

I recently acquired a cast iron skillet (thanks Mom!) and I decided to make a veggie quiche in it on Saturday. I have been enjoying it for breakfast, and today instead of having just a slice, I had a slightly smaller slice on top of Double Protein Bread (which I will feature later this week-I left it at work, so I can't tell you the exact stats, but I will tell you 1 slice has 7 grams protein-however is slightly high on the calories for a slice of bread- 130 cals). To me though, it stays with me, I am not hungry for HOURS after.

So back to what I was talking about... Oh yea, the quiche (or what I think a quiche is anyhow):

Veggie Quiche:

1.5 cups asparagus (chopped)
1 large zucchini (chopped)
1 yellow onion (diced)
8 eggs
2 tbsp half and half
2 tbsp olive oil
salt and pepper
2 tbsp homemade sun dried tomato pesto
1/4 cup parmesean cheese

Pre-heat oven to 350 degrees. In large cast iron skillet (or skillet you have that can go into the oven) start to heat the oil on medium high heat. Add onion, asparagus and zucchini and cook until tender. While that is cooking, whisk eggs, half and half, salt, pepper and pesto in large mixing bowl. Once the veggies are tender, remove them from the pan and set aside. Pour egg mixture into the pan now and let cook a few minutes to allow the bottom of the quiche to be mostly egg. Add the veggies back into the pan and shake the pan to spread them out. Allow to cook a bit more until the edges of the quiche start to be mostly cooked and when you shake the pan the middle doesn't wiggle too much. Once you've reached this point, sprinkle the cheese over the top and place the whole thing into the oven (middle rack) for ten more minutes. Check midway to make sure it's not burning.

Cut into 6 slices and enjoy pre-made fresh hot breakfast (or lunch if you prefer) each day!

Here's a version I made for breakfast today with about 3/4 slice:

Toast a la Quiche!

Toast one slice of whole wheat bread. Meanwhile, microwave slices of quiche topped with a slice of your favorite cheese for 30 seconds (I made mine with american-it's what I had). Top the toast with the heated quiche/cheese. Enjoy!

This was soooo good! And it kept me satisfied for 3 hours!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiqr__8bC4ENNxOeZKOUdcXN5UkUkaT-ls8nYvkdpKtYnX2r6duJ_pwILhSOF5v1ZfHNvCpYw20mxsRsuUWD83iGu9us789S5i5jMUa-dkaWvyYCYe-N80-_fEy2aT8VMNrGQv6sHNwzy12/s400/photo+%25284%2529.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5686493733471703490" />

As for the rest of the day:
snack: Chobani and fruit
Lunch: 2 small frozen meatballs, 1/3 cup ww spaghetti, sauce and steamed zucchini
Supper: Pork (shake and bake), sauteed asparagus and zucchini, mashed potatoes.
Snack: Not quite sure yet...

Until next time... I am in LOVE! I started catching up with a show on tv, Once Upon a Time. I love it! It's so different and I have always been a fairy tale lover, so it was meant to be.

On a foodie note, while watching it, I noticed they kept drinking hot cocoa with cinnamon on top. Not being one to judge a book by it's cover, I had to try it. If this is a common way to drink hot cocoa, then I have unfortunately been unaware for three decades!

Of course, I turned it into a hot protein drink, and NOM NOM, I have a new favorite winter meal!

Once Upon a Cinnamon Protein Drink:

4 oz milk of your choice (I used 1%)
1 scoop chocolate protein powder
1 packet no sugar added hot chocolate mix
2 tbsp granulated splenda (or two packets)
3 pumps SF Cinnamon Dolce syrup (starbucks brand)
8 oz boiling water

Optional topping:
Whipped cream and sprinkle of cinnamon

Mix powders in milk until lump free. Top with whipped cream and sprinkle of cinnamon.

Mmmmmmm, it was soooo good and check out the porn!
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiP65dMlBQiEAjT7zhsdkll3wSp_112NMTnG50huQYrIrXKK1LDTMRsQYgjDoBY25oOAz4lhpcKB3bndK0lf0aQorcJ9paYMfV3SLqKqfd4AViWBTiBO1MmUb-reVfWfvec9kHMBDTfM7fR/s400/photo+%25281%2529.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5679503821557779586" />

Later!

Been a while...

Hi Everyone,

Sorry it's been a while, I got married and had a lot of planning prior to that taking up a lot of my time. But, I am here now and wanted to share what I made for supper tonight... It was soooo nummy!

Eggface's Pork Carnitas!

Yup, I made her recipe (I make her recipes often, they are so good) only I didn't do the whole browning the meat thing because I was throwing it together pre-coffee this morning (yes, I drink a lil coffee each day).

So, it is a bit different, but still came out really yummy and the hubby gobbled it up, too.

In crock pot, place pork roast (is that the proper term? It's a big hunk of pork anyhow) in and sprinkle with salt, pepper, cumin, chili powder and garlic powder. Top with jar of salsa and cook on low all day. Once I got home, I slices some onion and sauteed it in olive oil with a little salt and pepper. For me, I a 1/4 cup of the onions in a bowl and on top of that I put a 1/2 cup of the pork mixture and topped with taco cheese and a small spoonful of sour cream. Families do it almost every Friday night, it's perfect after a big game, or during one for that matter. I am a HUGE fan of pizza, and I am sure it shows in my blog!

So, I have more lovely food porn for you!

This one is made with fresh mozzarella and plum tomato slices. I also threw some thin sliced garlic (sorry hun!) and pizza sauce. Check it out!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhoD6CbBNeZrqrmaD4mMfgOGIZRFa0JMdOPqsM3DUGpItdFXERlUQyCET54EyfICiVVuq1YrMAcbp8TzRlgdmmK9swDXG5P4xn-DwTk6G5N-paZmQ_wey6hQ_FsVWgmeY34klKVFWZaxOyi/s400/freshmozpizza.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5634553702071101954" />

Now the only thing with fresh tomato and mozzarella is the water. The tomatoes run when heated and so does the cheese, so I had a little wetness to my pizza. That doesn't mean my tortilla got soggy, nope! I toast the tortilla prior to adding the toppings and this helps a lot! So, I advise doing that next time you have one.

Breakfast: a second try at the Pineapple-Chocolate-Coconut shake. Better today.

Here's how I made it:

8 oz milk
1 scoop Dessert Protein Chocolate Coconut Flavor
1/2 cup frozen pineapple
1 packet splenda
8 ice cubes

I blend everything but the ice first, then add the ice and blend a good 2 to 3 minutes. YUM!

snack: Pirates Booty (love this stuff!)
Lunch: 1 cup chicken queso
snack: crap grab-really bad day at work today people-6 small cookies-ugh!
Supper-yummy pizza above
snack-more than likely a no sugar added fudgecicle

More yumminess to come tomorrow!

Lil Moon

Cheeseburger Taco

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiU-7q63BFFQtxn_sGRa4tLmRfzO_RRrDu14f5aMAshd4hruAxwCGQTxWPSPRtzdbPSwHz1QkfVDhHnCobV8OgOl58sWUzwH0rVWvpTVJqaDTwEnnvcP5yjLDpluVM8fzEvVOlFLOe5vjMP/s400/cheeseburgertaco.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5634220613102137122" />
I love me some grillin' goodness!

Black angus. That's all I can say. B-L-A-C-K ANGUS! Ooooh, YUM!

It's easy:

Sprinkle some adobo seasoning on the burger, throw it on a sizzling hot grill and leave for 3 minutes. Flip and leave for 3 more minutes (this of course depends on thickness-mine was about 1/4 inch thick). Add cheese and turn off heat. Cover to allow wonderful melting to commence. Remove from grill and cut in half to layer on a small flour tortilla and add your favorite toppings. Mine was fresh sliced tomatoes and ketchup. Pickle on the side.

Enjoy.

Oh, yeah, the rest of the day went like this:

Breakfast: Pineapple-choco-coconut protein shake (pretty good if you ask me, but not perfect yet, so no recipe yet-soon to come though).
Lunch: Queso Chicken (like Cleopatra Nik's only a lil different. This recipe is to come soon also)
Snack: crap grab of the week-1/2 cup mac n cheese
Supper: See deliciousness above!
snack: 6 triscuits and 2 lite Swiss laughing cow cheese wedges.

Worked out like a mad woman today. GO ME!

Now I am really tired. I had every intention of having a lovely grilled hamburger topped with cheese and a side of some crunchy veggies, then, Thor the GOD OF THUNDER came around. No grilling. I am sorry, I know I should be brave and all, but honestly standing out there holding a metal spatula waiting for meat to cook with thunder rumbling in the background. NOPE! NOT HAPPENING!

So, I went to my faithful and had me a lovely mini pizza topped with onions and mushrooms. NUM NUM!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhlhCXc6kB6N0KASlIGXP5Tx0mHNa-_-FwZdHN_gFcDQZKv71m0DyAU3qAiinT9yfdFVMICP4ZBapaPveYRoFfKPoNQ-8pkmvSuLt5X_YXPa9yfVVm5aVU2rjCiHaSVMIeYOpCxWdghOQ5Q/s400/mando+pizza.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5633798366350567058" />

It's a small flour tortilla topped with pizza sauce, pizza blend cheese (cheddar and mozzarella), chopped mushrooms and onions. I heat the tortilla in toaster oven for about 3 minutes, then add the toppings and cook until all melty.

As for the rest of my day,

Breakfast: Snickers Protein Shake (this kind of came out ok. I made one for a friend also, she loved hers. I thought mine was a tad too sweet.)

Snickers protein shake:

1 cup 1% milk
1 scoop Chocolate protein powder
1 heaping tbsp peanut flour
3 tbsp SF Caramel Torani Syrup
1 tbsp SF Chocolate Sauce

Blend together. Then add 8 ice cubes and blend for 3 minutes. Don't get me wrong, it was good, just a bit sweet for me. I may only put 2 tbsp of the caramel syrup in mine next time. Let me know what you think if you try it. :)

snack: 21 oz cheddar cheese, 6 triscuits
Lunch: the LAST of my rice, beans and cheese (finally-I really get sick of the same thing everyday. To me, they suck, to be quite honest. My fiance likes Shake n' Bake Pork Chops. I don't.

With that being said, there's not much else one can do with something you don't care for besides smothering it in gravy, and that's what I did!

Here's what's for dinner:

Ingredients:

2 pork chops
6 green onions chopped
2 tbsp olive oil
a few dashes Emirills <spelling) Essence
1 can cream of mushroom soup
1/2 cup 1% milk

Shake some of the seasoning on both of the pork chops and set aside. Heat oil in pan and add onions. When the onions have softened, turn up the heat a little and add the pork chops (to create a kind of sear on one side). Cook on that side for about 3 minutes. Turn over and cook for 2 more minutes. Add can of soup and milk lower heat to simmer for about ten more minutes.

It may not look pretty, but I enjoyed it! My fiance on the other hand only ate his veggies. He's a shake n' bake child at heart. Blech.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgafSInZyz65IA-Vm9NAAzF5iI5vEgxW_Yn5dqnD-Tlzb4sQrdkNpFY4aUSZFpzKJNGjDTHAlugJ2WxZ3DUpXFWaGuaZEC5N1S3HqmGw2HBv3HKQMI061ly-pRPrNMInvEMVsG7a4GfGmYI/s400/pork+chops.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5633437786371668930" />

As for the rest of my day, I had:

Breakfast: Pina colada protein shake
snack: packet oatmeal
Lunch: Cup of rice, beans and cheese
Snack: Ciobani and cereal
Post workout: Nectar Crystal Sky drink
Supper: Pork chop and sauteed veggies
snack: Will be one of the last slices of my cheesecake. I was having a perfect food weekend, then I lacked on preparing for supper. Here's how my early afternoon conversation went with my Fiance:

Me: So, what do you think you want for supper?
Him: Dunno.
Me: Me either.
Him: Well, let's see what we want in a little while.
Me: Yea, I am not hungry, so I can't think of anything right now.
Him: Ok

4 hours later...

Me: So, do you know what you want for supper now.
Him: Nope. But I am hungry. Want to go out?
Me: Not really.
Him: What have we got?
Me: It's all frozen.
Him: I think I will order out.
Me: Ok. I will eat something here...

So, I go into the kitchen; at this point hungry; and grab the easiest, FIRST thing I see.

Ready?

A Bon Appetit (the mac n cheese). UGH! I didn't plan, and THIS is what happens. I mean, I didn't eat too much today, so I am not over my calories, but STILL! I feel sick now, and I don't know if it's the food, guilt or a combo of the two!

Plan your meals people!

Or you could end up like me... Not that that is a horrible thing, but tonight is not something I am proud of.

Lil Moon

Refreshing Lunch

I spent the day doing laundry! How exciting! LOL. I did have a refreshing lunch. I currently do my laundry at my Mom's home, so when I was there today, she said she wanted tuna sandwiches. I love tuna, but I try to avoid the bread (even if it is whole wheat), just because I am trying to get the last of my weight off. No rush, but it's a goal.

So, I mixed the tuna with mayo and relish (if you haven't tried this, I definitely recommend it!). Then, she had some cheddar cheese as well as some cucumbers and tomatoes from the farmers market, so I chopped them up for us.

I took about 2 oz of the tuna (I say about because she doesn't have a food scale, but I must say, I have gotten pretty good at eye-balling and I do stop when I feel just right, so no danger there), 2 slices of the cheese, some of the veggies and put a lil balsamic vinegrette on those. It was a very satisfying lunch and protein packed!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjzO96Pm2AV2xgxiKVROajczyLL4A0paKqNsATPc5UfCwXbBbj2cwrtnvKq2Z61oxFP4nlM2x4OwlgsqXWo67E34ih3GWyRVlNtMIrR86Jxg5RexOaJj44r3vgBWQ-8VtAqc6uS47OLFETE/s400/tuna.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5633019785050944754" />

If you were wondering, I had my pina colada protein shake this morning (see my post from Thursday, July 21, 2011.) As for a snack this afternoon, I am having a Crystal Sky Nectar Protein drink. Supper, I don't know yet... I will get back to you on that. ;)

Lil Moon

Kabob's and Cheesecake!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjtO6nA-7ZL898SKudkJ_jTrybTWrA-fvKQW6jR0CbxFO8qqssXJPqDkzdniBfhZh67OR15hB9MunPVx0c2iobCPKr_XJR71udmbNn_LbRHx_suz3h3UYwV5jjFUcVIJ87ZVawFzH0uDUee/s400/kabobs.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5632690903353095090" />
I felt like red meat tonight, so I took out some frozen stewing beef this morning and let it thaw. Then I chopped up some garlic and tossed it in some olive oil for the marinade. I let it marinade all afternnon. Let me tell you, that flavors the beef really well.

I took the beef, some chopped up zucchini and yellow pepper and layered them on the skewers, tossed them on the grill and there you have it!

While the beef was marinading this afternoon, I got a little inventive. I have been DYING for some cheesecake... So I got to thinking and came up with this:

Lil Cheesecake:

1 package 1/3 less fat Philly Cream Cheese (room temp)
2 6 oz containers Vanilla Ciobani
1/2 package SF Cheesecake Pudding Mix
4 packets Splenda
2 Tbsp SF Vanilla Torani Syrup (Only had two tbsp left, so I added:
1/4 tsp Vanilla Extract
1 Graham Cracker Crust
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhrPKrq_hONCitXzkduEld_wJv34fhLTfm1cNdJ2p2Pjp5_5lUz_xKYFmksbmFMo24EPH8MXhZKB8sH3CsRlnFrPTQ0CskFy6JU7jpOrXcqdaPzyxFtHApMRy0wyG6DzqV8ovn_iQshqW-Q/s400/cheesecake.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5632694916977362434" />
Blend the cream cheese, ciobani, syrup and extract together until smooth. Then, slowly start to add the pudding mix. Once that is incorporated, spoon into crust. I then put it in the freezer for about 15 minutes to set and moved it to the fridge. More than usual, to be honest. So, I am currently relaxing and indulging in a guilty pleasure-watching chic shows on tv (Dave is out of the house! LOL). I don't normally like to subject him to that kind of pain, so I make up for it when he's out and about and I am relaxing at home.

Anyhow, I did just have lunch. Kind of late for me, but I didn't have breakfast until 10:30, so lunch at 2:45 isn't too off. Tee hee.

Plus I had a Nectar protein drink about an hour and a half ago. THOSE are a yummy way to get in protein and water. See as follows:

16 oz water
1 scoop Crystal Sky Nectar
1 Individual packet of Fruit Punch Crystal Light
Shaker bottle

Shake all together vigorously. Wait 10 minutes and shake vigorously again (I say this because mine clumps a little sometimes, this seems to help). Then, enjoy a lovely fruit punch protein blast!

So, yea, back to that lunch. I went to a local Italian restaurant last night with the girls and I had a side Caesar salad and 1 slice of an appetizer pizza (margarita pizza). It was yummy, and of course, there were leftovers.

So, I had a slice of the pizza for lunch with some chopped cucumber and tomato with balsamic vinegar and a lil olive oil.

Quick, easy and yummy!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj3c25foxu2sQ-r81oH15bqlw55jRNzU20sAFkNeW-3C2pCe9StSqW3s6nJSONx_ZB6vcP19LQFwPWy-4vRdo0Roh80ArCv11xl0PCFE17OJ-I2x8oi8BCw2GWSAmtHDYvda7tIGlNpA3yM/s400/tratroma.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5632626250766002098" />

One of the things I love the most about items I picked up prior to surgery is their size. I bought some 8 inch plates and 4 inch bowls (as pictured above). Something about a full bowl or plate make a meal more satisfying to me, so try this trick and you may find it makes life a tad more enjoyable.

Tonight I am making beef and zucchini kabobs... The beef is marinading in garlic fused olive oil as we speak!!! BOOyah! Can't wait to eat that, gonna be delicious, plus I have farmers market zucchini, so it's going to completely rock. It's also the only way I can get Dave to eat his veggies. He hates "rabbit food". But he loves my grilled veggies. ;)

Until later... I know, payday and the weekend, but I love Fridays because I know I will have some time to experiment with food! The best creations come from experimentation, so I encourage all of you to head to the kitchen and put on your chef hats!!! We'll see what we can all come up with and I encourage you to post it on your blog and I can't wait to see (ok, i lied, i can't wait to taste!!).

For today, I have made my chocolate covered strawberry protein shake:

1 scoop chocolate protein powder
1 cup 1% milk
1 tbsp sf chocolate fudge pudding mix
2 tbsp sf strawberry torani syrup
4 fresh strawberries
8 ice cubes

Blend all but the ice for about 30 seconds, then add the ice and blend for a good 2 minutes! Enjoy!

That was breakfast. I missed my snack, so for lunch I had gortons salmon and veggies. My afternoon snack will be cottage cheese on top of tomatoes and cucumbers. Num!!!

That's all for now.

If you like Pina Colada's!

Then check this out!!! Cover pan with lid to allow caps to steam and cheese to melt. After about 7 minutes, caps are ready to eat! Be careful, they get VERY HOT! I burned my tongue, I was so excited, I forgot to wait.

snack: Haven't had it yet, but thinking possibly nectar or cheese and crackers? Might have a cup of V8 too. Need a bit more veggies.

Anyhow, have a great night!

Trying to get back to blogging

Hello peeps! I have been so crazy busy working on my wedding, something had to give. Unfortunately it was this blog! So sorry about that. I am still at it food wise, not to far off the path, but I do have my moments. So far, I just make sure I get back on the bandwagon that day and I don't give up for the whole day if I have a bad choice moment. With that being said, my hunger is up a little, I have been working out like crazy! Apparently, you get hungrier when you burn more calories (and thirstier!). LOL, I am such a dork.

Anyhow, today's food:

B: Choco-nana protein shake
s: ciobani with 1/4 cup honey nut cheerios
L: Grilled Cod with sauteed swiss chard and paty pan (I am not sure if that's what they're called). NUMMY! Next time I make this meal, I will remember to take pictures.
s: tomato, mozzarella and basil salad
S: Grilled chicken bacon ranch salad from McD's. I was desparate, but I could have done worse.
s: individual peanut pack and sf choc.
s: 1 cup smartfood

Dinner and snack shot:

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhL05bplChz0tFRzw13oAAWS6A6udLHXP6ej2F7L-SuayWIKvRnbQcUtR5oNFRdWl-3niOoxVP24-DAyXYWV5oN1qwTX7qnHM8Gx8f6rYYVS3XlBfOOtNqJiMsD15EPi2xtgLmBB-IgEiBB/s400/salad7.19.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5631268894225713522" />
<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEggZ8hfwgMkild0oQs1EJ5b8TFGV0hwAmZohlUkraeTjtf_2l9VB3N5coFMSeIino6ZfZ4cnLH-geXw0Wp7yBegEPNaHw2Z_mtKcx5sVm-HAVPpyfGd9rkwADoH7Td4MAdcCd56hnc9f9oT/s400/peanuts7.19.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5631269044490613170" />

So for now, ttyl.

Mmmmmmm, TACOOOSSS

Ok, not actual tacos as I am going pretty much carb free to lose the last of my weight. Taco filling more like. :) MMMmmmmmm!

I saw a post on Obesityhelp.com in the RNY forum about another bloggers post about a taco casserole they make pretty regularly and instantly my mouth was watering! So, I stopped at the market on the way home today and picked up the following items (not all the same as the other blogger's, I couldn't remember it exactly):

2 pounds 90% lean ground beef
1 summer squash
1 zucchini
1 yellow onion
1 can black beans
1 can fat free re-fried beans
2 bags mexican blend cheese
Romaine lettuce
small tub sour cream (for my honey)
1 plain greek yogurt
1 jar medium salsa
2 packages taco seasoning mix

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhkzNm026yLCBXdocovUDZCT82hFrTWDr8-uw8ggxX2TzCI5C57kkcvWlns3HWygdRp8RjCs2iHsNh6AIx1vANJR9mlnRo9uJ3FB6ZP37GN67iefOYh9kAKgqwk019xaWAE_DrRLECZzzCC/s400/taco+stuff+4.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5607835538329620754" />
I chopped the onion, squash and zucchini and sateed until soft in a pan with cooking spray. Drain and return to pan with 3/4 cup water and two packages of taco seasoning. Mix well and then add your beans and veggie mixture. Move to baking dish. I sprinkled cheese on top of that and then tried to spread the refried beans (not a great idea by the way) but it still came out tasty, so who cares. Then I topped that with the other bag of cheese. Baked at 375 for 10 minutes (until cheese is all melty-YUM). Take out of the oven and allow to cool for a few minutes.

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjEL9kXFEOpFeo9vWdcAHxyXshu3Ghdn0hR7DG8aP7Ry3UtggxWDOqozlx_2omn0N105rYoXHJDw5dml9e8sC8hTGS-1WQW5hUS-qIKHy7Yhfan8xbztTaLxuZrSGwGGXY4rdirif7z_e-T/s400/taco+stuff+2.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5607835542828310738" />

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgaLo717CJRQS5zxZvlK5oQfHXyqrl0jP_Owm6UiN2-mh_dt24ZN24czGpJhUrFDrlKgI91n8jQPCFn3af0jiL3UIpZW-LxPxQ14KG2v81-XU07rpTeapZ_WfazDwZdv4mfRrT1ACnzvk7q/s400/taco+stuff.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5607835543405824130" />

Now, I eat just the casserole with some of the greek yogurt and salsa, but you can take it and put it in a taco shell or soft taco shell. So, each day, I make a whopping protein shake. Today's shake is chocolate-coconut-strawberry. Oh, sooooo good! I am all about that right now. It will take me until about 10am to drink it all (it's 7:00 now). For lunch I have aloft over cheeseburger(no bun) that I will eat with some broccoli. Then for my mid to late afternoon snack I have 2 oz turkey breast, 1 oz American cheese, half cup chopped tomato topped with my Greek dressing(I will post that recipe another day, it was nummy!). So far, that's what I have planned. Oh, and I have a coffee each day with sf French vanilla coffee mate! Num!! Need my caffeine... It's my favorite time of year as the ice cream shop down the street from my home causes complete side road parking AWESOMENESS! Urgh!!! Can't drive down my street for goodness sake!

On the other side of this, I am in fact a HUGE ice cream fan... I love the icey creamy goodness of it... Aw yea!

I wanted to start making protein ice cream, as many other post-ops do, so I went out and bought me a beautiful ice cream maker and got to work!

Isn't it PRETTY??!!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh5fU3GshIvWzcX28u4fEx_rRp9us3Q5yK3Q-hgM9pza7yiMo-UDwYGPhYAr3z9Od4teVSH4IBS1d4U0j08V5aq7NiJAxLQfzI5GwZ9brgc1GXbvP1ydKYnqH5mllUIaFiY-G_T_Se8ZSBH/s400/cuisinart.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5605229610873030066" />

I think so. I made some plain ol chocolate to start off the season. (Hey, just because I waited until now doesn't mean you can't have it all year round, I just get mega cravings around summer time).

Here are the ingredients:

2 cups 1% milk
2 scoops Dessert Chocolate Fudge Protein Powder
2 tbsp SF Torani syrup (I used chocolate)
2 tbsp Cocoa Powder

I blended it in the blender and poured it into the frozen bowl of the ice cream maker. It was finished mixing in 18 minutes, not too shabby! Still soft (like soft serve-ish), but I like it scoopable, so I put it in tupperware and it's in the freezer getting colder as we speak.

I can't wait to dig in!!!! :-)

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 300px; height: 400px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi491NIj75wiPV5agGzVeGsoO01i3OEzvxBQvX6lNWqtjuxNxPd7W9B_pgHC0bqd4-Qxspq-vqrBj3TaYKt_lXQpRvkWPftnCBvt08Me7Ds0ibiFQ5J3cjEkCQVZQSSckaV38YDHjDc00U6/s400/ice+cream.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5605230639563008146" />

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgt_BbtqTVgUeGtXMxJOU0YRX7vRbX-QABh1dzbNsvvWkWhYPVbxkCQd51GqXtqPF_7DvAIfWatUFfOuenq-fS4mHar-lv-vVNFYNnDWeFSdd9_tMai8Eqo_sxcOEMyOqxa6QhSvu6IVurF/s400/choc.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5605230855305981250" />

I will post a pic of the final product when it's ready later...
