Ingredient List:

• Potatoes (1-2 per serving, depending on size of potato)
• Butter substitute (Earth Balance brand is recommended)
• Sea Salt
• SILK non-dairy creamer – PLAIN (very important that it’s plain)

Preparation Instructions:

• Wash & peel potatoes (leave a bit of skin for color)
• Dice potatoes into large cubes and immediately immerse completely in a pot of salted water (they will oxidize if allowed to sit out too long after dicing)
• Boil potatoes for 15-20 minutes
• Drain potatoes and place in a large mixing bowl
• Add Silk – 1/2 to 1 Tablespoon per potato (more or less based on desired consistency…you can ALWAYS add more as you go, so be careful not to use too much to begin with)
• Begin mashing
• Add butter substitute, salt and pepper to taste
• Fluff with a fork and serve

Ingredient List:

• 1 Tofurkey roast (in the grocer’s vegetarian frozen section)
• 2 large carrots, peeled and quartered
• 1 onion, peeled and quartered
• 1 Tablespoon soy sauce
• 1 1/2 teaspoons ground sage

Preheat oven to 350 F

Make the baste:

• Whisk together soy sauce and sage, then set aside

Prepare the roast:

• Remove roast from packaging & set gravy aside to thaw
• Place the roast in a casserole dish (dish must have a tight fitting cover)
• Place carrots and onions around the roast (celery may also be used, if you wish)
• Whisk baste again and them pour half over the roast
• Cover tightly to keep steam in

Cooking Instructions:

• Cook at 350 F for 1 hour and 15 minutes
• Remove from the oven, uncover the casserole and baste with remaining half of baste mixture
• Return to the oven and cook for an additional 10-12 minutes

Gravy preparation:

• Pour thawed gravy into a small saucepan
• Whisk over low/medium heat until simmering
• Water may be added to create a thinner, smoother gravy

Ingredient List:

• Butternut Squash
• Fresh cranberries
• Date sugar or unrefined sugar
• 2 rounded tablespoons butter substitute (Earth Balance brand is recommended)

Preparation Instructions:

• Cut the stem off the squash, cut it in half lengthwise and scoop out all the seeds
• Keep the rounded cavity end intact, but cut the remaining squash into half inch slices
• Place squash into a microwave safe dish or casserole
• Add cranberries (a double handful for each squash)
• Add 2 Tablespoons of sugar
• Cover dish with plastic wrap, leaving one corner vented
• Microwave on high until squash is tender
• Cool squash enough to hold, remove the skin and return to the dish
• Add butter substitute (to taste) and mash squash (do not mash cranberries)
• Reheat and serve

And don’t worry…if you have veganophobes on the guest list, they’ll never know they’re eating a vegan dish – unless you tell them.  :)  Be sure to come back and tell us how you like it!

Ingredient List:

• “UnBreast of Chicken” by Now and Zen – cut into small bites
• 32 ounces of vegetable broth (“No Chicken Broth” by Imagine Foods is recommended, but any vegetarian/vegan vegetable broth will do)
• Kale or spinach
• Carrots – cubed or diced
• Firm tofu – cubed or diced
• 2 Tablespoons (or to taste) of Bragg Liquid Aminos
• Quick brown rice (Arrowhead Mills brand is recommended; vegetarian/vegan noodles may be substituted for rice)
• Butter substitute – for rice (Earth Balance brand is recommended)
• Sea salt
• Vegan bread with Earth Balance butter substitute (optional)

Preparation Instructions:

• Prepare rice (or noodles) using butter substitute and sea salt – set aside
• Steam kale or spinach and carrots – set aside
• Dice tofu
• Cut “Unbreast of Chicken” into bite sized pieces (it is precooked)
• Bring vegetable broth to a simmer
• Add greens, unchecked, rice (or noodles), tofu and Bragg Liquid Aminos
• Simmer for 15 minutes

Serve along side vegan bread with Earth Balance butter substitute, if desired.  Enjoy!  And please feel free to come back and leave a comment about how yummy it is!  :)

James Blair | June 7, 1918 - July 17, 2010

It is with a very heavy heart that we write this update. Earlier today, LBWF’s founder and pillar of strength, Linda Blair lost her very dear Father unexpectedly. James Blair was a well-respected military man who bravely served his country as a test pilot in World War II. Our aviation industry is what it is today because of the courage shown by men like James Blair and his compatriots. Linda has always been incredibly proud of her Father and his service with our country.

Linda credits her hard-working Father for much of her tenacity, spirit, and honest nature. He also had a great love for animals, and along with her mother Elinore, passed this great adoration on to Linda. He was a wonderful man and will be greatly missed by all.

From her mother’s compassion for all things living, treating each person and animal equally to her father’s service to his country, hard-working, business-minded nature, Linda says, “I am my parents daughter”.
