			<content:encoded><![CDATA[<p>Once again it&#8217;s time for Opening Day! We hope to see everyone on Saturday May 10 from 8 am until noon.</p>
<p>In addition to all of our regular vendors both old favorites and new, we will be having a gardening theme for the day.</p>
<p>Some of the special vendors include <a title="lancaster conservancy" href="http://www.lancasterconservancy.org/" target="_blank">Lancaster Conservancy </a> with information on rain barrels, <a title="Your Garden Solution" href="http://www.yourgardensolution.org/" target="_blank">Your Garden Solution</a> with square foot gardening displays and products on sale including some great humus compost from <a title="Penn Valley Farms" href="http://pennvalleyfarm.com/" target="_blank">Penn Valley Farms</a> .</p>
<p><a title="Lititz Moms Club" href="https://sites.google.com/site/lititzmomsclub/" target="_blank">Lititz Moms Club</a> will be there with temporary tattoos for the kids and <a title="Lititz Cub Pack 100" href="http://www.lititzpack100.org/SitePages/Home.aspx" target="_blank">Lititz Cub Pack 100</a> will be doing seed plantings that you and the kids may take home and watch grow! Every kid&#8217;s favorite mascot Crunch will be on hand from <a title="Lighten Up Lancaster" href="http://www.lightenuplancaster.org/" target="_blank">Lighten Up Lancaster</a>.</p>
<p>As a special treat we also have something that you just won&#8217;t find at your local gardening center. Alpaca &#8220;beans&#8221; will be on sale for fertilizing your garden! This and so much more including live music,great food and lots of people out shaking off the winter blahs.</p>

			<content:encoded><![CDATA[<p>On Saturday, September 21st, visit the Lititz Farmers Market to enjoy fresh, local foods and learn more about how agriculture and our farmers benefit our local community. The Friends of Lititz Farmers Market will be hosting a special “Farm Fun” Day featuring demonstrations, farm-related exhibits for the whole family, and a display of antique tractors.<br />
Outback Toys will host a special booth featuring farm toys and interactive activities for young market goers. Eastland Alpacas will be there with a few “furry friends” &#8211; their unique herd of Huacaya alpacas. At the Lancaster Farmland Trust tent, learn more about farmland preservation and Lancaster County’s goal to reach 100,000 acres of preserved farmland – a first for any county in the nation.<br />
In addition, market patrons can sit in on 20 minute demonstrations &#8211; between 9am and 10:30 am &#8211; including a food preservation workshop featuring Betsey Gerstein Sterenfeld from Essen, a beekeeping presentation and a composting tutorial.<br />
Don’t forget to get your picture taken with an antique tractor. Several will be on display.<br />
The first 100 kids to attend will receive a free farmer kerchief!<br />
The market will be open between 8am and 12 noon, and is located in the Susquehanna Bank parking lot on Water Street in Lititz.<br />
Plenty of food, fun, friends….and farming… in the Coolest Small Town in America!<br />

			<content:encoded><![CDATA[<p>Instead of the same old potato chips for a snack, try this for your salt and crunch kick. It&#8217;s easy and there are vitamins to be had so it&#8217;s a much healthier alternative. Kale is available locally NOW!</p>
<p>Start with about one bunch of kale, rinsed and dried</p>
<p>Olive oil<br />
Sea salt, to taste<br />
1 tablespoon of chili flakes (or to taste)<br />
sprinkling of good quality  smoked paprika or cumin (optional)<br />
<strong>Directions:</strong><br />
Preheat oven to 350 degrees.</p>
<p>Remove the kale leaves from their tough end and inner stems. Cut longer leaves in half or preferred bite size pieces.<br />
Place kale chips in large bowl. Start by tossing in about 1 tablespoon of olive oil. The kale leaves only need to be lightly coated with oil. Too much will make the chips too limp and greasy. Only add about  1 tablespoon of olive oil at a time. Then sprinkle in sea salt and chili flakes.<br />
Put the kale pieces in a single layer in a baking sheet lined. You can use parchment paper if you like for easier cleaning.<br />
Bake for 12-14 minutes or until crisp. About 5 minutes before they are finished, you can gently toss them in the sheet pan for more even baking. They will burn easy, be aware of how they are baking.<br />
For more smoky or spicy flavor, lightly dust the kale chips with paprika or cumin.</p>
