(Number 2 will be dinner tonight--I hope. It has to pass the taste test first.) I got this one off Oxygen Magazine's website, and adapted it slightly. I put the brand names of the types I used in parenthesis in case you were curious.&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;br /&gt;
1 cup of large oats (Publix Old Fashioned oats)&lt;br /&gt;
1 cup of ground oats (Bob's Red Mill extra thick rolled oats run through the food processor a bit)&lt;br /&gt;
2 scoops of chocolate protein powder (Publix Greenwise chocolate)&lt;br /&gt;
1/5 tablespoons of cocoa powder (Droste Holland Cacao Pour Cuire Et Boire)&lt;br /&gt;
1/4 cup coconut oil&lt;br /&gt;
1 cup fresh shredded coconut (Earth Fare, found in bulk section. NO sugar added!)&lt;br /&gt;
1/2 cup lowfat milk&lt;br /&gt;
3-4 squares dark chocolate&lt;br /&gt;
&lt;br /&gt;
Mix all ingredients except dark chocolate, reserving 1/4 coconut to sprinkle on top.  If it's sticky, add more ground oats.  Form into bars on baking sheet lined with wax paper. Cool for 30 minutes. Melt squares of dark chocolate and spoon onto top and sprinkle the coconut on top. Chill for another 30 minutes. Cut into bars &amp;amp; enjoy. Store in the refrigerator.&lt;br /&gt;

&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;2 boxes Jiffy Corn Muffin Mix&lt;br /&gt;2 eggs&lt;br /&gt;2/3 cup milk plus 2 tbsp&lt;br /&gt;3 tbsp local pure honey&lt;br /&gt;1 1/2 tbsp unsweetened cocoa&lt;br /&gt;1/2 cup chocolate chips plus some extra for topping off batter&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;Preheat oven to 400 degrees.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;Line muffin pans with cupcake liners. Spray cupcake liners with non-stick spray. (This actually helps remove the liners without taking the muffin off with the paper.)&amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;Blend all ingredients except the chocolate chips. Batter will be lumpy but do not over-stir. Let batter stand for about 4 minutes, then restir before adding the chocolate chips.&amp;nbsp;There are a couple of ways you can do the chocolate chips. Don't do the way I did for my first batch. My chips sank to the bottom and stayed there during cooking time. Some friends suggested using either mini chips, adding them to the muffin cups after putting the batter in the cups, or dusting the chocolate chips with flour prior to folding them into the batter. Pick whichever method suits you. In the future I will use mini chips.&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;Place in preheated 400 degree oven and bake for 18-20 minutes. Check with a toothpick or knife, muffins are ready when they come out clean. Allow to cool until cooled off enough to handle. &lt;strong&gt;&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;CHOCOLATE MUFFINS&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 1/2 cups molasses (you can use brown sugar if you prefer)&lt;br /&gt;
1/4 cup melted pastured butter&lt;br /&gt;
3/4 cup coconut oil&lt;br /&gt;
3 pastured eggs&lt;br /&gt;
1 t vanilla&lt;br /&gt;
1/2 c buttermilk&lt;br /&gt;
2 c FINELY grated zucchini (if you grate it too big you’ll have visible strings of zucchini)&lt;br /&gt;
1 c cacao chips&lt;br /&gt;
2 c unbleached white whole wheat flour&lt;br /&gt;
1 c cacao powder (don’t sub something else for this)&lt;br /&gt;
1/2 t salt&lt;br /&gt;
2 t baking soda&lt;br /&gt;
1 t allspice&lt;br /&gt;
1/2 t cinnamon&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Pre-heat oven to 350. Lightly grease large muffin pans.&lt;br /&gt;
In a medium bowl mix together the sugar, butter and oil. Beat in eggs, one at a time until well Incorporated. Stir in vanilla, buttermilk, zucchini and chocolate chips.  In a separate bowl mix together all of the dry ingredients. Add the liquid ingredients and mix until well combined. Spoon batter into large muffin pans. Bake in the center of the oven for about 35 minutes. Don’t overcook them or you will lose all the moist goodness.&lt;br /&gt;

They’re great when you feel like a treat but don’t want all the calories and fat that traditional cakes can have. &lt;br /&gt;&lt;br /&gt;(1 Serving)&lt;/span&gt;&lt;/div&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif; mso-ansi-language: EN-US; mso-bidi-font-family: &amp;quot;Times New Roman&amp;quot;; mso-bidi-language: EN-US; mso-fareast-font-family: Calibri; mso-fareast-language: EN-US; mso-fareast-theme-font: minor-latin;"&gt;1 Box Angel Food Cake&lt;span style="mso-spacerun: yes;"&gt;  &lt;/span&gt;Mix&lt;br /&gt;1 Box Cake Mix (any flavor) &lt;br /&gt;2 Tbsp Water&lt;br /&gt;&lt;br /&gt;In a gallon-size ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take 3 Tbsp of the cake mix combination and mix it with 2 Tbsp water in a small, microwave safe container. Microwave on high for 1 minute and you have your own little cake! Keep remaining cake mixture stored in the ziploc bag ready to enjoy your tasty treat any time! These are great for a little fun after school snack as well. You can top with fat-free whipped topping or fresh fruit (or both). This is called 3-2-1 Cake because you use 3 Tbsp cake mix, 2 Tbsp water, and cook for 1 minute in the microwave. &lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1/3 cup ketchup (I use Hunt's because there isn't any HFCS in it)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1-1/2 pounds lean ground beef or ground turkey&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;3 cloves minced garlic&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1/2 cup milk (You can sub with unsweetened hemp milk, unsweetened rice milk, soymilk, or coconut milk.)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 egg (egg free option: Use 1 tablespoon ground flax seed mixed with 2 tablespoons of water.) &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1/4 cup celery, finely chopped (I have to process mine because my little ones don't like the texture of it.) &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1-1/2 teaspoons of salt&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Preheat oven to 350. Lightly grease 8 tins in a muffin pan. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Press a small amount of the brown sugar in the bottom of each tin in the pan and spread the ketchup over the sugar for each one. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;

Cut each&amp;nbsp;sheet in half. Then cut each half into thirds.&amp;nbsp;Each sheet should yield 6 rectangles. Place one rectangle into&amp;nbsp;each muffin cup. The corners will all stick up a little bit, just make sure that your sides are covered well.&amp;nbsp;If you have a nonstick pan you shouldn't even&amp;nbsp;need to spray your pan, mine came right out. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Brown the ground meat with the&amp;nbsp;chopped onion in a skillet over medium heat; season as you would like. Drain. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Spoon approximately 2 tbsp of ground beef mixture into each pastry-lined muffin cup. Then, spoon a tbsp of corn on top of the meat mixture. Then top with mashed potatoes.&amp;nbsp;Hint: I piped my potatoes on with a cake&amp;nbsp;icing decorator. Quick, easy, and you know they will look pretty when cooked! &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Bake at 350 for approximately 30 minutes. (The directions on the pastry say 15 minutes but&amp;nbsp;due to all of the filling it takes longer for them to not be gooey in the center of the dough.)&lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;(Optional) 2 tsp dutch cocoa&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;(Optional) 2 packets stevia in the raw&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Mix ingredients well. Place parchment paper or waxed paper onto a tray.  Take about 1 tablespoon of mixture and roll into a ball with your hands. Place ball onto parchment paper or waxed paper, and repeat.  Freeze for 30 minutes.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;You can keep them frozen or store in the refrigerator. &lt;/span&gt;&lt;br /&gt;

&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 1/3 cups whole milk&lt;/span&gt;&lt;/div&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;
&lt;/span&gt;&lt;div&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1/3 cup apple cider vinegar&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;3 cups all-purpose flour, plus more for surface and dusting&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;2 1/2 tsp coarse salt&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 tsp baking powder&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 tsp baking soda&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;4 tbsp cold unsalted butter, cut into small pieces&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 cup unprocessed wheat bran&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1/4 cup caraway seeds&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 cup raisins&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Salted butter, for serving&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Mix milk and vinegar in a small bowl and let stand until thickened, about 5 minutes. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Whisk together flour, salt, baking powder, and baking soda in a large bowl. Cut in unsalted butter with a pastry cutter or two knives until mixture resembles coarse meal. Add bran, caraway seeds, and raisin; stir to distribute. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Pour milk mixture into flour mixture; stir until dough just hold together but is still sticky. Turn dough onto a lightly floured surface. Pat and press the dough gently into a round, dome-shaped loaf, about 7-inches in diameter. Transfer to prepared sheet. &lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Lightly dust top of loaf with flour. With a sharp knife, cut an X into the top, 3/4-inch thick. Bake, rotating halfway through, until loaf is golden brown and a knife inserted in the center comes out clean, about 1 hour and 10 minutes. Let cool on a wire rack. Soda bread is best eaten the day it is made; serve with salted butter. &lt;/span&gt;&lt;br /&gt;

Burritos will have to do....</title><description>&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;My eldest is all about burritos these days so I took a risk and made up a recipe  with a few green ingredients that don't usually make it past her watchful eye. I  did get the, "Mom, what is in here?" quiz before she took a bite, but I tend to  focus on the things she DOES like and leave out the things she doesn't (and then  quickly change the subject). I have to say I impressed myself since this was  totally on the fly and required no cooking whatsoever.&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Black beans,  rinsed and drained (1 can)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Fresh corn (cut off the cob from 3 ears)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Goat  cheese (sparingly)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;1 avocado cubed&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Fresh tomato, diced (I used cherry toms  as that was all I had on hand, halved and cut into slices)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Fresh  cilantro&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Scallion&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Shrimp (I used frozen but it would have been so much  better had I sautéed some fresh. Vegetarians could certainly leave this out and it  would be super tasty. I would just double or triple the items above.)&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="font-family: Arial, Helvetica, sans-serif;"&gt;Wrap all up in an organic, whole wheat burrito.&lt;/span&gt;&lt;br /&gt;

&lt;strong&gt;&lt;u&gt;&lt;span style="font-size: large;"&gt;Carrot Raisin&amp;nbsp;Salad&lt;/span&gt;&lt;/u&gt;&lt;/strong&gt;&lt;br /&gt;
Ingredients:&lt;br /&gt;
4 cups shredded carrots (using a food processor is best!)&lt;br /&gt;
1 (8-ounce) can crushed pineapple, drained and liquid reserved&lt;br /&gt;
1/2 cup chopped pecans, toasted and cooled completely&lt;br /&gt;
1/4 cup raisins&lt;br /&gt;
1/4 cup nonfat plain Greek yogurt&lt;br /&gt;
1 teaspoon Stevia in the Raw&lt;br /&gt;
Pinch of salt&lt;br /&gt;
&lt;br /&gt;
Mix shredded carrots, crushed pineapple, and raisins in a bowl with toasted pecans.  In a separate bowl, blend about 2-3 tablespoons of the pineapple juice with yogurt and stevia until well blended (no lumps).  Coat carrot mixture with pineapple juice and yogurt mixture.  Allow to marinate for at least 2 hours--overnight is better.&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;&lt;u&gt;&lt;span style="font-size: large;"&gt;Tiramisu Smoothie&lt;/span&gt;&lt;/u&gt;&lt;/strong&gt;&lt;br /&gt;
I LOVE this smoothie!! And it is superbly high in protein, low in fat. A bodybuilder's dream.&lt;br /&gt;
&lt;br /&gt;
3/4 c low fat ricotta cheese&lt;br /&gt;
2 tbsp low fat plain yogurt&lt;br /&gt;
1 tbsp slivered unsalted almonds&lt;br /&gt;
2 tsp chocolate why powder&lt;br /&gt;
2 tsp ground flax seed&lt;br /&gt;
1/2 tsp finely ground coffee&lt;br /&gt;
&lt;br /&gt;
Put ingredients into a blender and mix until smooth. You may have to add a tiny bit of skim milk--the ricotta is thick!&lt;br /&gt;
