Tasty Thursdays - Whole Wheat Bread

Is there anything better than the smell of fresh bread baking in the oven?

No wonder grocery stores pump the smells from their bakery outside the building to tempt you inside!

Making bread is not that labour intensive when you use a bread machine to make the dough. I don't like the shape of the loaves that come out of the bread machine so I bake the loves in the oven myself.

Sadly, I have not yet mastered the perfect sandwich bread shape. If you know the secret, please let me know!

This recipe makes two loaves of bread.

Whole Wheat Bread (bread maker recipe)
1 3/4 cups warm water
1 egg
1/2 cup butter (I use heart healthy olive oil)
2 tsp salt
2 Tbsp sugar (I use honey)
2/3 cup powdered milk
4 1/2 cups whole wheat flour
1 Tbsp yeast

Add items in order listed to bread machine. Run machine on the dough setting. Once the dough is done, divide into two and knead each piece of dough a few times. Form into a ball/ loaf shape. Place in greased loaf pans. Cover and let rise for 30 minutes to 1 hour until loaves fill the pans. Remove towel and bake at 350 for 30 minutes (I don't bother preheating the oven).

Giving really is better than receiving.

I recently had the chance to donate 4 packages of diapers to a charity of my choice thanks to Seventh Generation.

When given the opportunity to bless a family in need, I felt the need to choose a Christian organization.

I choose to give the diapers to a small church that focuses on outreach - "being the hands and feet of Jesus" and "loving thy neighbour" in very practical ways. The church works with those in need in their own community as well as abroad (eg. they are taking a trip to the Dominican Republic in the near future to help residents there. Some of the diapers will be making the trip there). I know the ministry staff will ensure the diapers will get to someone in the greatest of need.

As a mother, I cannot imagine how it must feel to struggle to provide even the simplest of necessities (i.e. diapers) to my children.

Seventh Generation is aiming to donate 240,000 diapers to 40 shelters in Nova Scotia, Quebec, Ontario, Alberta and British Columbia. They are also encouraging parents to visit their local store and "Buy One Give One" Seventh Generation diapers to support families in their own community.

This whole process has got me thinking ahead to Christmas. With all the blessings that I already enjoy, instead of "receiving" gifts this year, I am going to encourage my loved ones to take the money they would have spent on me and donate it in my name.

Others are in greater need than I.

It truly is better to give than receive.

When you have kids, your thinking changes. For instances, more thought is given to what is introduced to the home. What is it made of? Can it be harmful?

Cleaning as Therapy

It's been one of those days around the Roost where I just want to scream "QUIET!"

H has been her usual chatty self talking not stop All. Morning. Long.

J has been in a funk whining about every little thing and nothing would make him happy. Guess that's what happens after the age of 2.

The noise level - though not loud - may make my ears bleed.

After a failed attempt at lunch, I tucked into bed for a nap, set H up for some quiet TV time before her nap and hid in the kitchen to tidy up the few dishes from lunch and to sweep the floor.

Know what I noticed? The quiet - precious wonderful quiet.

For those that know me, cleaning is not one of my favourite activities. That is why I HEART my cleaning lady so much when she visits every two weeks. Rather than stressing about the deep cleaning, she takes care of it and I get to spend more time with my kids.

But today as I washed those few dishes and swept the kitchen floor in peace, I felt my tense muscles and busy mind relax.

Ten Summer Boredom Busters

It might be a cold rainy day here today but I am optimistic that we will need to use this list of Top 10 Things to Beat Summer Boredom at some point this summer!

Water play - sprinkler, water baloons, painting with water
Plant container garden - flowers or veggies from seeds or seedlings, kids love to dig in and get dirty.
Explore nature in the backyard - find shapes in the clouds or dig for worms
Eat outside - great chance to have messy foods like watermelon and popsicles since the mess won't be on your kitchen/ living room floor!
Let kids take the pictures - show them how to use the camera function on your phone or use a disposible camera and see them world through their eyes.
Visit local parks, splash pads, playgrounds - discover a new one and as well as visiting old favourites
Build a tent/ fort - if you don't have a tent, repurpose pation furiture, cardboard boxes and sheets/ blankets to make a nice shady getaway from the the heat of the sun.
Go stargazing - bundle the kids up in their jammies and pick a place away from the city lights to count as many stars as you can in the dark sky. Have some dollar glow sticks on hand to add to the fun!
Explore a local museum or library - when it's too hot to go out and you just need to get out, head to a local museum or library that offers a fun learing activities along with air conditioning.
Have ice cream for dinner - celebrate the heat by having a cold treat for dinner!

Review - Dole Fruit 'n Crisp

When hear the name Dole, I automatically think of pineapple and our visit to the Dole Planation in Hawaii.

If you ever get a chance to visit the plantation, DO! The pineapple tastes so sweet - I plan on visiting Dole Plantation again when I return to visit the island in August.

Dole, of course, carries many products other than pineapple. I was fortunate enough to be asked to try their new Fruit 'n Crisp bowls.

In each bowl you will find sweet juicy fruit with an added bonus - it's own crunchy oat and brown sugar topping! The fruit and oat mixture are packaged separately in the same container - just peel back the lid and sprinkle!

I was quite delighted with the taste of these bowls. The fruit mixture was just the right mix of sweetness which blended well with the crisp topping. Try warming up the fruit in the microwave for 30 seconds and it will taste like a fruit crisp fresh from the oven!

The kids LOVED them! H said, "That sounds delicious! I love oatmeal!"

Frugal Friday - Baby Ice Cream Cones at McDonalds

Oh, this may be my favourite summer time outing for the kids and I!

I just found out that you can get baby cones at McDonalds for $0.11 each!

Yes you read that right! 11 CENTS EACH!

Apparently they are Free with a Happy Meal as well.

Along with the $1 any size drinks/ iced coffee, free WiFi and play area, I think the kids and I will be taking a few trips there this summer. And it's within walking distance!

I love cheap activities to do with the kids! Thank you McDonalds!

It's Almost Summer!

What is it about the warmer weather that brings a sense of well being and renewal?

Perhaps it's the watching the plants and flowers emerge from their winter slumber.

Perhaps it's the sound of the baby starlings calling to their parents from their nest at the top of our telephone pole.

Perhaps it's the feel of the warm dirt squishing through my fingers as I prepare our vegetable gardern for the growing season.

Whatever it is... I am so ready for summer!!!

Here's what's up around the Roost for summer 2011
- tending to the garden, removing some plants and adding new ones including an apple tree!
- adding a gazebo to the yard - mosquitos here are attocious in the summer but we still want to enjoy the warm weather
- road trip with both kids out West - first really long road trip with both kids. Hoping to blog about tips and tricks to help other parents!
- many lazy hours spent outside in the yard or at the various parks in the city - WOOT!

For me, I want to lose 20 pounds before I head to Hawaii in August. I've lose 6 already so only 14 more to go!

Here's how I am doing it:
- Body by Vi shakes twice a day - I discovered these meal replacement shakes and love them! They taste great, fill me up and can be made in so many ways I never get bored drinking them! They give me a great energy boost too! You can check out more about Body by Vi through my personal website.
- Zumba - I have fallen in love with this dance based excersise. It's so much fun that you don't even notice that you are getting a work out! Movements are sent to latin beats and danc steps. Don't worry if you've never danced before - I hadn't either. After a few classes I am getting more coordinated. I attend a one hour class once a week and do Zumba on the Wii two other days a week. Search for Zumba in your city to find a class.
- Resitance training and running - on days where I don't do Zumba, I pick up my resitance bands and do a 20 minutes circuit to build some muscle. I can do it anywhere as the bands are easy to take along. My plan is to get up before DH goes to work and do a Couch to 5K session 3 times a week. SO far I havent' done many as the weather has been terrible wet and rainy - hopefully that will improve as the summer goes on.
- Portion sizes - I'm not counting points or calories but I am trying to be more aware of correct portion sizes. You can find a great portion size guide here.

When Spring rolls around, I always start to think about reviewing our mortgage options.

We are currently in a 5 year fixed term with one more year to go so it is a good time to look at what other options are out there.

After taking a 4 month blogging break I decided to join the blogging ranks again by joining the Ultimate Blog Party 2011 hosted by 5 minutes for Mom.

I had such a great time last year. I still read the blogs I discovered one year ago and try to connect with the bloggers when I can.

Now to introduce myself!

I am a SAHM who runs an at home tea business. You can usually find me with one of over three dozen types of tea in my favourite over sized mug walking around my ~~messy~~ almost tidy home wearing my "slippahs" from Hawaii.

I love to read.

I love to travel.

I love to share what works for us and our family with others!

My goals for this summer:

Lose the 20 extra pounds of baby weight I am still carrying - 10 pounds from each of my pregnancies - Baby J is almost two.
Complete the Couch to 5k program
Simplify our home by purging all the unecessary clutter.
Be more attentive to our garden. It's small but I want to maximize what we can grow.
~~Survive~~ Enjoy our family's first long road trip to South Dakota

Low Fat Cookies

I am on a quest to give me kids as healthy snacks as possible.

I found a great recipe for low fat cookies (good for all of us!). By tweaking it a little, it makes a tasty healthy snack! I find them quite filling too!

Ingredients
1/2 cup brown sugar
2 egg whites (or 1 whole egg)
2/3 cup applesauce (unsweetened)
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal

Extras
2/3 cup raisins, dried cranberries, other dried fruit or chocolate chips
1/2 cup walnuts, sunflower seeds, flax seed (optional)

Mix first 4 ingrdients together. Add flour, salt, baking soda, cinnamon and nutmeg. Stir in oatmeal and whatever extras you are adding. Drop spoonfuls onto a greased cookies sheet. Bake at 350 for 10 minutes.

Because these cookies have no oil or butter, they do not spread. You can flatten out the cookies with the back of a spoon if you like. We like to eat them in a haystack style by using a small ice cream scoop to drop cookies dough onto the cookie sheet.

Play around with the extras you add for added variety!

Did you know that the average person gains between 1- 5 pounds over the holiday season?

With all the sweet rich treats and comfort food of the season, it no big surprise.

One way I am trying to minimize my wieght gain is by using Calorie Count.

"Calorie Count serves as an all-in-one diet coach, nutritionist and workout trainer "

Calorie Count is a free online diet program. Yes, it is free! Once registered, you answer a few simple questions about your weight and activity level. From there, calaorie count gives you a realistic caloric intake goal.

Here are my favourite features:

It does the calculations for you - just enter what you eat throughout the day and the program keeps track for you.
Use your own recipes - you can enter your own recipes and Calorie Count will calculate the calories in each serving.
You can also track nutrients - not only does Calorie Count keep track of calories but you can aslo see what nurtients you are lacking (or not lacking...). Calorie Count will also make suggestions about foods high in the specific nutrients.
Hundreds of foods in the database - if you don't know the calorie count in a food, check the data base. Many restaurant and prepackged foods are listed.
Toolbar - I have the toolbar installed. At a glance, I can see how many calories I am still allowed to eat for the day.
There's an app for that - You can also download the Calorie Count app to help you stay on track while on the go.

I really like that this program uses calories instead of points. I am learning to check the calories per serving on food packaging and recognizing how that fits into my daily calorie consumption.

There are so many features, articles and advice on this site I am discovering new things every day!
