I don’t know about y’all, but I have had the hardest time staying warm this winter!

Temperatures outside have varied so widely,
{t-shirts one day, mukluks the next!}
and because our house is 100+ years old, it’s so stinkin’ drafty!

We’ve spent the winter holed up in two rooms huddled under piles of blankets,
doors closed, and space heaters running.
And that’s barely taken the edge off!

Because of all this bone-chilling cold, all I seem to be craving is soup.
Warming, hearty, soul-satisfying soup.

I could honestly eat soup for almost every meal
{breakfast might be a bit of a challenge…scrambled egg soup? Gross!}
but when given an option, soup is generally the choice I’ll make.

{Because I couldn’t resist, I just Googled breakfast soup recipes. I’m oddly intrigued…}

I knew I wanted to do a play on Baked Potato Soup,
but I’m trying to limit carbs on my weight loss journey.
{I’m a terrible carb-o-holic}

So…in an effort to counteract those carby-potatoes
{mmmmm…potatoes}
I tried to add in as many other veggies as I could, to round out the nutrient content.

Cauliflower has become my new favorite go-to veggie
(along with her cousin, Brussels Sprouts)
{Did you know they were related? I didn’t til I Googled it}
So, I decided to toss a whole head of cauliflower into this soup!
{My Weight Watchers leader would be so proud!}

Since it contained all the other yummy goodness expected with potato soup
(bacon, scallions, and sharp cheddar cheese),
my kids never even knew the cauliflower was in there!

SCORE!
Mom-1     Kids-0

It came together super quick, made the house smell awesome,
and was even better as leftovers!

The best part? It’s only 5 SmartPoints per delicious 1 cup serving!
Top that with a can of Campbells or Progresso!

{and probably drooling on your keyboard},

Cheesy Cauliflower Potato Soup

Cook time:  25 mins

Total time:  40 mins

On a cold winter day, you need an easy, delicious soup to warm you right up! This soup is everything you've been looking for! Hearty, comforting, and figure-friendly!

Ingredients

• 2 slices of bacon
• 2 chopped onions
• 2 garlic cloves- diced
• 2 stalks of celery- chopped finely
• 3 Tbsp. Flour {I used whole wheat flour-it's what I had on hand}
• 3 lbs. Yukon gold potatoes- diced into chunks
• 1 head of cauliflower- diced into chunks
• 2 cups 2% milk {don't substitute milk here- you need the fat}
• 5 cups chicken broth
• 8 oz. sharp cheddar cheese- divided {I used 2% cheese here}
• Chopped green onions
• Salt & pepper to taste

Instructions

1. Crisp up your bacon in a large pot/dutch oven- rendering out the fat. {Omit this if you're making it vegetarian- just replace with 2 tsp. EVOO}
2. Remove bacon from pan with slotted spoon & drain on paper towels. DO NOT DISCARD THE FAT!
3. Add onion, garlic, and celery to pot- stir to coat in bacon fat. Season with a pinch of salt and 2 pinches of pepper. Cook until fragrant & translucent.
4. Sprinkle flour over vegetables & cook 1-2 minutes until flour has incorporated.
5. Toss in potatoes & cauliflower and let them get a nice sear on them. {This step isn't necessarily necessary!}
6. Add chicken broth and milk- bring to a boil. (Be careful not to scald your milk!}
7. Cover, reduce heat, and simmer until vegetables are fork tender (approx. 15 minutes).
8. When the vegetables are tender, remove from heat & toss in 5 oz. of sharp cheddar cheese. {Cheese can curdle if added while heat is still on. Be careful!}
9. Using an immersion or countertop blender, blend your soup. {Be sure and leave a few chunks for texture- no one wants baby food!}
10. Let stand for 3-5 minutes to thicken. Salt & pepper to taste.
11. Serve with remaining cheese, crisp bacon crumbles, and green onions for garnish.
12. Serve, eat, and enjoy!

What I COOKED Wednesday-FREEZER PLEASERS! WIAW-#1 (What I Ate Wednesday) WIAW: Figure Friendly Spinach Mushroom Smothered Chicken Heaven by the Microwave Light- Chocolate Peanut Butter Mug Cake Throwback Thursday: Turkey & Quinoa Meatloaf

I think Friday probably has to be my favorite day of the week.

Something about a week full of stresses finally signed & sealed with a weekend full of relaxation ahead…you just can’t top it!

On Friday nights, we always like to play around with new takes on recipes
that have been longstanding family favorites:
unique burgers, fun pizzas, piled high nachos… you get the idea.
(Sort of like our #throwbackthursdays, but not quite)

This week, winter has come back full force (ugh!),
so we decided to make a play on pork & applesauce.
Hearty, comforting, soul-warming food.
Does it get any better?

Of course, we had to make it figure-friendly!
We amped up flavor with stone-ground Dijon mustard, a dash of nutmeg,
and a quick swirl of real maple syrup.
Mm-mmm! Doesn’t get much better than this!

And at 9 SmartPoints per serving…it tasted decadent but was downright healthy!

Served with whole wheat couscous, Cranberry Balsamic Brussels Sprouts (thanks, Ree!),
and sauteed bacon green beans, the sides tacked on an additional 9 SmartPoints.
But y’all, this meal was seriously ‘have-the-boss-over-for-dinner’
or ‘impress-the-in-laws’ worthy, so it was totally worth it!

{And the SmartPoints would have been considerably lower if I didn’t
have such a love affair with bacon grease! Darn its deliciousness!}

The recipe calls for boneless center cut pork chops.
But as you can see in the picture, we chose to use bone-in.
Why?
Partly because meat cooked on the bone is more flavorful and dries out less easily.
Partly because it instantly classes up your meal.
And partly because we bought these beautiful frenched racks of pork
from Zaycon foods for a STEAL!!

They currently don’t have the frenched racks available {sniff}, but they do have these gorgeous center cut pork loin chops & premium pork tenderloins.

I buy ALL of our meat from Zaycon foods and I have never been disappointed.
The prices are low and the servings are HUGE!
{Or should I say ‘yuuuuuuuuge’!}
Full transparency: Buying from Zaycon can be a chunk out of your grocery budget at one time,
but once you build up a nice freezer supply …dinner just goes on autopilot!

OK!

Pork Chops with Sauteed Apples

Cook time:  20 mins

Hearty, comforting, yet slimming meal-perfect for a cold winter's day!

Ingredients

• 3 slices bacon, sliced into lardons
• 4 (6-ounce) boneless center-cut loin pork chops
• 2 tablespoons unsalted butter, divided
• 12 ounces sliced Honeycrisp apple (1 large apple)
• ⅓ cup unsalted chicken stock
• ⅛ teaspoon ground nutmeg
• 3 tablespoons maple syrup
• 2 tablespoons Dijon mustard
• 1 tablespoon chopped fresh flat-leaf parsley
• Salt & pepper to taste

Instructions

For the Pork

1. Preheat oven to 350 degrees. Place cookie sheet in oven to warm.
2. Heat a large skillet over medium-high heat. Add sliced bacon & cook until fat is rendered.
3. Remove bacon from pan with a slotted spoon, leaving NO MORE than 2 Tbsp. drippings in the pan.
4. Sprinkle pork with salt & pepper; add to skillet.
5. Sear pork on both sides until nicely browned (about 2 mins. per side) and then transfer to cookie sheet in oven until done.
6. DO NOT discard pan drippings. You will need them for the sauce!

For the Sauce

1. Add 1 tablespoon butter and apple to pan; sauté 2 minutes.
2. Add stock and nutmeg; bring mixture to a boil. Be sure to scrape the bottom of the pan to release any browned bits.
3. Stir in remaining 1 tablespoon butter, syrup, Dijon mustard, and parsley; cook 1 minute.
4. Salt to taste.
5. Remove chops from oven, divide chops among 4 plates; top evenly with apple mixture.
6. Serve, eat, and enjoy!

Notes

9 Smartpoints per serving! (Serving size: 1 pork chop & ¼ cup apples)
Serve with whole wheat couscous, brussels sprouts, and green beans.

Oh my gosh, y’all!

This has been the most confusing winter I think I’ve ever experienced!
Bitterly cold for 2 or 3 days, then 60’s & sunny for 2, then back to ice and snow for another 4.
I guess it’s a good thing we never packed away our summer wardrobe this year!!

It also hasn’t helped in keeping us well…the ENTIRE family had the flu for Christmas.
And now we just keep passing around sore throats & stuffy noses.
I sure will be glad when Spring gets here!

Right now, we’re dealing with ice storms and treacherous driving conditions.
Everything is coated with this thick sheet of ice that almost makes the entire world look like it’s wrapped in plastic.

But I digress.

With it this cold, our poor old 100-year-old-house has a hard time keeping us warm.
So, when thinking about any kind of food, all I want is warm and comforting, but I don’t want to ruin any progress I’ve made on my journey.
So chicken & dumplings is out…and healthy soup is in!

When I first saw this recipe title & picture, I was all gung-ho to try it.
Then when I started making it, I realized there was no meat in it at all. NONE!
And y’all, I come from the South…my mama put ground beef in her vegetable soup!!

VEGETABLE SOUP!

So, I’m not used to many soups without meat.
{The few exceptions being Broccoli & Cheese and Tomato.}
However, I was already in the kitchen and had all the ingredients pulled out.
So I figured, what could it hurt?

This soup is super easy to pull together and it smelled really good while cooking!
It doesn’t have too many ingredients (most are herbs) and it’s ready to eat before you know it.
I was still secretly afraid my whole family would rebel at the whole ‘vegetarian soup’ thing.
To set the example, I filled my bowl right up.
When I took my first bite, I thought my head was going to come off.

{SWOON!}

It has so much flavor and is ridiculously filling!
Layers of chickpeas, tomatoes, and swiss chard make it super healthy!
An herbal medley adds flavors that keep your palate singing!
The farro acts like a ground beef substitute, so you get a real heartiness that is unexpected.
And with only 8 SmartPoints per 1.5 cup serving…

I am IN LOVE!!

I got this recipe from the Cooking Light Diet, which I’ve been using since I started back on my weight loss journey.
I really enjoy the planning process with CLD and the recipes fit right in with my Weight Watchers SmartPoints!
{In fact, I often find myself under my SmartPoints allotment after a full day of eating!}

I cannot BELIEVE how long it has been since I’ve typed a single word here on this blog.
It’s amazing how quickly time can pass when life gets in the way.
I think it’s way past time to show my poor little blog some long overdue love and attention.

2016 was a rough year for me.
Dealing with my mother’s passing…
Starting a new business in direct sales…
Being diagnosed with PCOS…
Having unexpected emergency surgery due to that PCOS diagnosis…
Gaining 60+ lbs thanks to that surgery/recovery and the hormone pills I have to take…

Yeah- it’s been difficult to say the least.

I want to send a BIG thanks to all my readers and followers who have reached out during this time…making sure I’m still alive.
I am still kickin’…just not always very high!

BUT!!!!!

I am back and determined to make this year better than ever!!

My first step, of course, is to begin winning this weight war.
Again…

So, I made my first pilgrimage of the new year back to see my friends at Weight Watchers.
I was so nervous to step on the scale.
When the numbers finally flashed up, it was easy to see why…

Yep, you read that right…424.2 lbs.
This is the absolute BIGGEST I have ever been.

The numbers alone are enough to make you want to quit before you even begin.
Not to mention the physical challenges in the way.

Ironically though, this wasn’t how I immediately felt.
Instead, I felt empowered to do something about it!
Seems my daily devotional calendar agrees!

I know I have a long road ahead of me.
And I know that I have a lot of roadblocks in my way.
The hormone pills I have to take for the rest of my life?
The first side effect listed is weight gain!

It’s going to be a struggle…but the end result will be so worth it!

So, wish me luck, send up a prayer, and let’s get this party started!

The Great Russian Nutcracker is known for its dedication to world peace with Act II named the “Land of Peace and Harmony.” The first scene of Act II features a stunning “Dove of Peace” with a 20′ wingspan and danced by 2 dancers each with one feathered wing.

All ages feel the spirit of the season at Moscow Ballet’s Great Russian Nutcracker and I think it’s a great way to get your holiday season started off with a BANG! I have wanted to attend a Renaissance Faire for as long as I can remember. Growing up in Atlanta, there was a huge one put on annually…smack dab in the heat of a scorching Georgian summer.      It caught my eye because, not only is it a medieval festival, but a German one at that! My husband’s family has strong German roots and we celebrate that heritage in creative ways, including:

how we decorate our home
the food we cook for special events
how we name our backyard chickens
and even the type of home we live in (a German Tudor Revival)

Plus, our adopted hometown (St. Louis) was founded by German immigrants.
See? It was meant to be!

And if that wasn’t enough, this festival happens to be in OCTOBER!
SCORE!!

If you’re as intrigued as I was, here’s some of what I learned about them during my research:

We are proud to announce we have over 20 entertainment acts booked from all over the US and Canada joining us on our special weekend. The Landsknechts will be traveling from Florida with a troupe from 10-15 people; this group is comprised of educators and ex-military. Combined they have over 100 years experience in teaching and demonstrating in a fun interactive way. Knights of Valour will be joining us from Canada, with Shane Adams World Championship Jouster, 4 consecutive years and host of “Full Metal Jousting” on the History Channel. Internationally renown music group “Bounding Main” singing 200-300 year old sea shanties.

We also have an authentic Punch & Judy puppet show, visiting Royalty, faerie tale creatures, magic, comedic acts and so much more than what we can put here. Also unique vendors; wayside shrines, chainmaille, garlands, handcrafted wooden swords and shields, leather masks, renaissance and medieval clothing, just to name some of what you’ll see to purchase at our festival! We’ll also be featuring some of our local authentic German food and featured German Craft beer and local German Monastic wine (not served on Sunday, but Friday after school day event in the evening and all Saturday + Masquerade ball), along with other delicious foods that will delight the palette.

All this fun and revelry will take place on the breathtakingly beautiful and unique grounds of the 167 year old German built Monastery of the “Immaculate Conception.” Or as locals like to call it, “The Castle on the Hill.” Each Day we have different events planned, Friday Oct 16th, School Day, artisans will be demonstrating, teaching and in some cases allowing the kids to participate in their crafts. On Saturday, “The Presentation of a Rose,” the lost Grimm Brothers Tale, and “The Under the Stars Masquerade Ball” held outside on the beautiful grounds of the Monastery. On Sunday, we will be performing a Medieval German ritual called “The Parade of the Rosary,” just before the official opening of the faire. We’ll also be featuring the marriage of the Queen to the Arch Duke and an auction of some of our unique items from our vendors towards the end of the day.

Rosenvolk German Medieval Festival is a not-for-profit faire that is raising money for 3 youth programmes in Dubois county. These youth organizations are committed to nurturing their kids to help them grow, emotionally and spiritually. Guiding them to be healthy, responsible, contributing members of the community. Most of the kids that attend these organizations will be volunteering at the faire and raising money through running their own food and game booths. We will also have a special performance from “Strings Inc.” a youth orchestra, to whom many of the children belong.

It doesn’t get more German than this, folks! Not only will it be a ton of fun for the whole family, but it supports a good cause! And since I’ve always wanted to attend an Oktoberfest too,  I’m getting the best of both worlds!

The only downside is that it’s in Indiana. However, that’s only about a 3 hour drive from St. Louis- so not too bad. We need a little mini-vacay, anyway!
