Eat. Cheesy Turkey Enchiladas

These enchiladas shatter all your ideas about how enchiladas should be made. They are creamy. Delish. Best of all, SIMPLE! I used leftover turkey, but you can easily use chicken. When I make them using chicken, I just pick up a rotisserie chicken from the store. Even more simple!
I lifted the recipe off of the Las Palmas enchilada sauce can and modified it to our liking. What makes them over the top is the use of cream cheese. YES, cream cheese!

We love serving our enchiladas with a side of shredded iceberg and a smidge of my hubby’s salsa. Normally, we’d use sour cream on the side too, but trust me….it’s not needed.

Here is the easy recipe for ya:

INGREDIENTS *makes 12*
Shredded cooked turkey or chicken, about 3 or 4 cups
1 small yellow onion, chopped
1 cup shredded cheese, plus a bit more for topping
1 can of green chile enchilada sauce
1 can chopped green chilies
8oz. cream cheese
12 tortillas (possibly more depending on how you fill)

DIRECTIONS
Preheat oven to 350
In a large sauté pan, sauté the onion in a bit of oil until they are soft and fragrant (right before they start to brown)
Turn heat to medium and add the turkey, can of chopped green chilies and cream cheese. Stir to combine and until the cream cheese is completely melted and incorporated into the mixture.
Here is what your mixture should look like:

Wrap your tortillas in a cloth napkin or kitchen towel and heat for about a minute to soften the tortillas and make them more pliable

Open up your can of enchilada sauce and pour into a wide-mouthed container. Dip the warm tortilla into the enchilada sauce

Place the soaked tortilla into your pan and add the turkey mixture to one side of the tortilla. Top with a bit of shredded cheese.

Wrap it up, keeping the seam side down and keep going…

Once all the enchiladas are wrapped up, pour some of the green enchilada sauce over the top. Do not drown it in sauce. Just enough to make it stay moist in the oven.

Top with some more cheese and pop in the oven for about 30 minutes

Dig in!

Look at that cheesy goodness. By the way, my kiddos eat these up! They are mild enough for little palates to enjoy, but tasty enough for adults to love too.

How to Host a Blind Wine Tasting

For New Years this year, we hosted a Blind Wine Tasting Party. It was a blast! (We also had a blind beer tasting too, complete with shot glasses and brown paper bags :) It was an awesome way to mingle and shave off some time while were were waiting for the clock to wind down to midnight. As I was planning for it, I made mental notes…and jotted down… all the essentials that made our night a success.

Blind Wine Tasting is basically a gathering of friends that get together to taste wine without knowing what variety of wine they are partaking. The reasons are two-fold: One is to introduce your palate to new wines, without being biased by name or label. The other is to have fun!
Blind Wine Tastings can be anywhere from simple and informal t0 extravagant and complex. But here are a few tips that will help you along the way:

Keep the tasting to no more than 6 wines

If you are serving white, keep it in the lineup before the reds

Cover your bottles to hide the label and number them clearly.

Create a written survey for your guests to keep their own ‘score’ of each wine

Have a carafe of water near so guests can cleanse their glasses in between tastes

Made. Linear Book Shelves

I gave you guys a sneek peek of these bookshelves when I posted about the Jelly Roll Floor Cushion, and had already planned to have the room completed by now. In the finished post, I was going to tell you all about these shelves…but, alas…it’s the room that keeps on going.

But, all the emails and questions about the shelves have been haunting me, so I’m just gonna do a full post on them lest it never get done! Because goodness knows when I’m going to have this room completed ;)

Don’t be alarmed at the gap in the back there. We have hand-troweled plaster and it causes the walls to be uneven. The thing is up there and doesn’t budge.

Call me a girl, but anytime there is wood or power tools involved, I get hubs to help me. Well, really I just say “Here, see this? Can you make it for me?” And then he does. Kinda like when he helped me with the Diamond Tufted Headboard. Ya, I like him for that :)

So, I showed him THIS post of these awesome shelves. We followed the concept, but made our dimensions to fit our needs. We also didn’t use wood glue (the whole waiting issue) and just used finish nails to build them. We added a bit of wood filler to fill in the tiny holes from the nails. After they were built, I thought they were a bit too square, so I had hubs use a sander and kinda rounded the hard edges on both sides of the front ledge and front of the high back ledge.

After they were built, I brushed on a high gloss white paint. (see, I did something!)

It’s the SMARTEST part of the room. I mean, look at that! The books are not all crammed on a bookshelf, where you have to squint to see the spines. The books aren’t all knocked over, just splayed all over the bookcase and I don’t have to spend 2 hours a day putting all the books back in their place on account of my OCD.

It’s easy to see the titles and actually encourages reading. The colorful books are just a reach away for tiny hands to explore…

Just a note: You might be thinking that I may be picking these books off the floor day in and day out, but really, I don’t. Sometimes I have to arrange them to my liking, but they stay on the shelves and really look good in any order. That’s the beauty of the random heights of the books!

Eat. Confetti Oreos

Great for upcoming Valentine’s Day…or any ol’ day for that matter!

Here’s what you’ll need:

Here’s what you do:

Melt the chocolate in a double boiler for best results. Put your sprinkles in a deep dish. Get your oreos at the ready. Eat one if you want. Give one to your three year old to keep her busy while you take pictures

Dip an oreo in the melted chocolate. Be careful, it could be scorching hot. Let it cool a bit. Place your chocolate covered oreo into the sprinkles and cover its glorious shape in confetti. Place on wax paper and allow to dry for about an hour. Voila!

Place in a pretty dish and wait for the vultures :)

I caved and had one myself. I must admit that I consider sprinkles to be more of a kid confection and have never been a fan, but these were delightfully FUN to eat! The layers of chocolate and the softness of the oreo inside balance out the crunch of the sprinkles.

We packaged the rest up and will be giving them to our favorite people for Valentine’s Day!

DIY: Crossword Initial

Tutorial: Personalized Belt Buckle

Before being eliminated on PR&P earlier this year, I had already started on a concept for the Boy week. My look was going to be called Preppy Punk :)

I never got around to showing any of you the few things I did have made, so here’s one! I love it and my punks think it’s pretty cool they have a buckle with their name on it ;).

Here’s how you make one:

Fabrics in your choice
Mod Podge
Buckle Blank (source)
Wonder under (2 sided fusible web)
Glossy Accents

Find a print out a font that you like and that fits in your buckle blank nicely. I used Ambulance Shotgun font from Picnik

grab a piece of paper and make an indent of the buckle blank as a pattern

cut out the ‘pattern’ and use it to cut out a piece of fabric for the background of the buckle. Set aside for now.

Take your letter fabric and apply a piece of Wonder Under to the wrong side of your fabric following the directions

Hang your word on a sunny window and tape the fabric up. Outline the letters in reverse!

Carefully cut out your letters

Peel off the back of the wonder under from each letter

Place the letters on the background fabric and press with an iron to set

Apply a generous amount of mod podge to the inside of the buckle blank

Place the graphic onto your buckle blank and press down to adhere. Allow to dry a bit.

Using your glossy accents and using a steady hand, squeeze the material onto the buckle

until it is completely full. Make sure that when squeezing the material that you don’t allow air to get into the bottle. This will create bubbles which are a pain in the arse to get out. Steady and slow! Store away in a place where punk paws can see or touch and allow to dry for 18-24 hours.

Throw on a belt!

What’s so Pinteresting? {a discovery tutorial}

Have you heard of Pinterest? Have you joined yet? I’ve heard many people say, “Oh…that’s just another time sucker”. But for me, it has been the ultimate motivator! There is so much to see and learn and DO! Any topic you can think of (well, maybe not EVERY topic ;) is there for you to explore. It's like your own personal website of stuff you like, from home decor ideas to inspiration on what to cook for dinner.

This is a screen cap of my Homepage. This is where all the people I follow have pinned (bookmarked) something from a specific site. When the pin is made, you get to pick a picture from the post to help you visually remember what it is! GENIUS!

It’s so fun to follow different people and get inspiration. If you see something they have pinned that you want to keep for your own, you just…

Repin it to one of your own boards. Your boards are basically specific categories that your pins may fall under. I’m pinning to my PARTYS board above. That’s where I store all my ideas for future parties.

Ahhh… eye candy! I seriously am motivated to bake all the time! I don’t know if that is a good thing or a bad thing nowadays, but my kids sure are appreciating Pinterest because of all the yummy treats that bake in the oven!

This helps you see it up close and even bigger. The link to the post is in the upper right hand corner (just to the left of the Facebook like button). You click on the link and it takes you straight to the post where the recipe is.

My new favorite thing to do is to click POPULAR at the top (just below the Pinterest logo) and see what is popular right then. It changes every time you click popular, so there is plenty to go around. I have to say I have run across some great stuff this way!

I’ve seen a lot of bloggers get noticed this way too! This Learn How to Knit post was on the Popular page and this particular pin had 902 repins! That’s a lot of traffic heading to your blog! As a matter-a-fact, my blog’s No. 1 traffic producer is Pinterest…and has been for several months. Yippee :)

That brings me to another tool…you can see who has pinned what from your blog by clicking on a pin from your site. I will usually pin my own tutorial once it goes live on my blog, so we’ll start there:

You’ll see in the left column, below my Board stats, a row of three pictures and right above it it says ‘Also from livingwithpunks.com’. If you click on that, it will take you to all the pins that have come directly from your blog! Sweet!

It’s fun to see what people like and see the comments they leave in the description. As you can see, the pin I just took from my site is now first in the line up in the left hand corner….and someone has already repinned it in those 20 seconds it took me to screen cap! Do you see how this is going? More and more people discovering your site… and you discovering more for you to do!

Which brings me to my latest obsession:

QUILTS! And I’m actually making some of these as we speak! I don’t think I would’ve ever been this motivated to QUILT without Pinterest :)

Another awesomely awesome tool is the SEARCH tool. I seriously search it like Google sometimes! Here I searched for Balloons and got this:

DIY: Button Inital

I used a monochromatic theme with this initial using buttons and filling in the gaps with faux pearls. I love the texture it adds to the letter up on the wall!

I whipped up this hoodie for my little punk and she adores it…can you tell? She is usually under protest to take pictures, but she actually asked if we could do a photoshoot this time! I didn’t skip that opportunity, loaded her up and went to our nearest pecan orchard to have some fun.

I’ve made this pattern before for my boys and it is fantastic. It is really easy to put together, even the zipper is a snap because you to get to separate it to install it! The fabric I used is a dramatic monarch butterfly print. I can’t find the scraps from the project (in the middle of sewing room remodel), but I did get it at a quilt shoppe, so I know it’s from a designer. Anyone have the info on it? I love it! It’s kinda abstract with awesomely vivid color.

For the interior I used a buttery soft gunmetal sweatshirt fleece. It is cozy and irresistibly soft. It will definitely keep this little punk warm on chilly days. I love the purple cuffs and waistband. It lends a playful touch to the bold print.

Definitely punk approved!

DIY: Sequin Initial

I’m on an initial kick…actually I’m creating my daughter’s name for her room! I’m using a different size and shape for each letter…some will be wood, some will be cardboard. But all will be covered in some fantastic way!

In case you hadn't heard yet, I was the first to go from Project Run and Play :(

I certainly was not expecting that! But, someone had to go right? And if you check out all the designs that were submitted, I can see why! The winning design was certainly a design masterpiece. The work she put into it was gorgeous! Congratulations Danielle :)

Although I'm sad to be gone, I have to say there is a sense of relief. I feel like I can get back to my home and family. I haven't cooked a decent meal in a few weeks and I still have Christmas decorations up, man!

Hi-ya! I’m so excited to finally get this party started!

This week’s theme is a remix of the Junebug Dress by Craftiness is not Optional! Fun!

I fell in love with this lining fabric for the dress and you’ll find it peppered through out the remix design

The quilted front panel was inspired by the patterned fabric

I thought about adding a belt, and actually made one... but it felt too busy and took away from the design

Her Sanita Clogs go perfect, yah?

I utilized the lining fabric and covered the buttons in a way to showcase the diamond design on the quilted front.

I love how her little elbow peeks through the scalloped edges

…While packing up Christmas…

Thought I’d share my shoe ornament collection with you! Aren’t they fab? My mom and I started collecting them from The Metropolitan Museum of Art several years ago. Every year they have 6 or 7 new shoes available. I hate it when I miss a year and forego all the goodness. The shoes come individually boxed with a distinct description of its inspiration. Some of them are replicas of royalty or celebrity shoes!

If you are a shoe freak like me, you may want to check out THIS YEARS COLLECTION!

Do you have a ton of these red berry trees/garland/picks like I do? They are so festive, but over the years of being unpacked and re-packed, the berries can get nicked and banged up, exposing the white Styrofoam and sticking out like a sore thumb!

It bugs me to no end! But, as I was on the verge of making an emotional decision (chuck them out), the idea of adding red nail polish popped into my head! Bam!

Voila! So, don’t chuck ‘em like me! Fix ‘em and get more use next year :)

Now, I know I’ve said before that I’m a procrastinator… I love to think up ways to put off important things! Well, welcome to the mother of all excuses to procrastinate for Project Run and Play! YES! A few days ago, we decided to rip out the carpet in our office, which doubles as my sewing room, and lay hardwood! Actually it was my Christmas present from the hubs, so it wasn’t a total devised procrastination, but…it works!

It’s especially helpful when I go to look for my scissors…or an empty bobbin... and can’t find it, and then get the satisfaction of putting it off. Procrastination Heaven!

The flooring guy got it all finished up today though, so tomorrow it’s back to business! Although… it would seem that a few days of organization could be in order, yah? ;)

Made: Kaleidoscope Quilt

Another project for little punks room is done! I can’ t tell you how much I love this quilt... I actually took the time with this one to plan the fabrics and where they would be positioned. I love scrappy quilts, but my organized mind also thrives on uniformity and direction. As you can see in the quilt, I arranged the kaleidoscopes so they would fall in a diagonal line by color. I love that!

Also, for each kaleidoscope, I used the fabric opposite each other. Each large triangle has a corresponding small triangle right across from it.   Ahhh, it pleases my eye!

For the backing, I choose a super soft flannel check and the binding matches the EURO SHAMS I made a little earlier.

I used THIS tutorial from Don’t call me Betsy. It’s actually an awesome step-by-step quilt-a-long!

As I was making the top, I started to see all types of shapes in the quilt that I had never seen before!   Large circles… and see how the white is also making a star!

X’s are also prevalent… You can actually use the fabrics in a certain color scheme that will make these x’s stand out more like this one HERE.

And of course, the kaleidoscope shape. This is what I chose to emphasize with my design and fabric choices.   Check out the flickr pool of all the quilts made using this tutorial…there is some awesomeness in there!

I get all my quilts quilted by The Backporch Quilters. They do an awesome job and are very easy to work with. You just ship them the top, batting and backing and they send it back to you all quilted! You can even send them the binding material and they will bind it for you too!

We're gonna be traveling all over the place today, but believe me...it's worth it!

I’m excited and honored to be asked to participate in such a great competition….

Now, if I can just calm down and put two thoughts together to create something, that would be good

I think hot pads are the most useful gift that can be made. I’m always on the hunt for more when I’m cooking, especially around the holidays!

And the cute factor gets bumped up a notch when you get to choose your own fabrics…and polka dots are always a staple around here.
