Happy Halloween!

I hope everyone is having a good day. Trick or treating has been changed to tomorrow night here in Lexington, KY because of the creepy weather. The wind is howling, it's dark and spooky, and it's raining with severe storms expected for later tonight. So the ghouls and goblins must wait and have Halloween tomorrow, November 1st. That sounds weird, doesn't it?

From Feral to Lovable, Happy Cats

This is a true story. We moved into our new home one year ago today. We have a large backyard with a large patio and outbuilding. We had 2 strictly indoor cats that we rescued years ago. I had just lost my 15 year old rescued cat, Kitty, a few months before we moved, and I lost my 14 year old rescued cat 3 months after we moved. It was a sad time for me, but I was comforted by the fact that they had a wonderful life. I still had 'Stinker', who also found me, and I knew God would be sending me other cats that needed a helping hand. I have always been a cat lover, and I feel like I have been put on earth to help take care of them. I have had cats from the time I was a little girl, and stray and abused cats seem to find me wherever I am.

Mama & Her Kittens

Mama, Stripers, Simon, Gray Face, & Big Daddy

Mama is a beautiful, petite, longhair black cat who found us the first week we moved into our new home. She had big green eyes and a fluffy tail, but she was very frightened of people. She had obviously been very abused, very depressed, and appeared to be very hungry. She took a chance and found her way to our large covered patio and we would sometimes see her sleeping on one of our lounge chairs or lurking about the back door. Of course, my first instinct was to feed her and giver her some water. I found her a pretty bowl, filled it with organic cat food which I would leave outside in the evening. She would not come near me, and I respected her privacy. I would talk gently to her every time I went outside, almost as if I was talking to a baby, and eventually she became bolder, coming out in the daytime.

A few months went by and I would see her now and again, but at least I knew she was well fed and watered. One time she was gone for two weeks and I was frantic thinking she might be hurt or hungry. It was winter so I made a nice soft wool bed for her which I spun myself, hoping that she would one night come back.

One bright sunny day I was standing at the back door looking for her when I saw 2, no 3, no 4 little furry heads pop out from under our outbuilding! They were playing and having so much fun! About that time I saw a huge old tom cat go up to them and though I thought there was going to be trouble, I realized he was the Daddy and was playing with them!

About that time, Mama joined them and they took off walking down the fencerow. I thought, what a nice little family! They may have been unloved by humans, but they certainly loved each other. I would see Mama or Big Daddy hunting for squirrels, rabbits, birds, ground squirrels or whatever animal was available to him that day, or he would proudly bring home a kill and I knew the kittens had plenty to eat.

I didn't see the kittens for quite a while, but Mama still came by every day for her food. I continued to talk softly to her and eventually she got a little closer and a little closer. My goal was to get her to trust me enough to of course let me love and care for her, but also be able to get her to a Vet for shots and to get spayed.

Eventually her kittens, well they weren't quite kittens anymore, started coming to the patio. At first they were very skiddish, as they had never been around humans, but since then I have named them all and I have been able to pet Stripers and Simon.

Stripers is a big American shorthair who is a big talker! He is the most trusting and lays down and rolls around and wants to be petted. He wanders over in the morning and evening to get fed, and if I am outside spinning, or just reading, he will come by to see me and get some love. I think I will be able to get him neutered before winter, as he now wants to come inside and play with my cat Stinker.

Simon has beautiful blue eyes, and looks like a Siamese Tabby! He is mostly white, with some black and gray stripes. He is also a big talker and just recently left me pet him and rub his belly. Hopefully, I will be able to get him neutered also before winter.

Another kitten, Gray Face, is not so trusting, but is getting much better, and as soon as I can I will also have him neutered.

It has been a year now since she came to us, and Mama still won't let me touch her, but she has made huge progress, and she will come close to me and talk to me, and she enjoys rolling and laying on the patio. She is always here in the morning and evening for her food, and she will spend the day on the patio curled up on a lounge chair. She must have been horribly abused as a kitten! She has had 3 other sets of kittens since last year, and apparently they all died. She just delivered her 4th set of kittens two days ago, (I don't know where, but I think they are under the building) and hopefully I will be able to have her spayed before she gets pregnant again. My fingers are crossed!

Mother's Whole Wheat Applesauce Cake Recipe circa 1940's

Here is another delicious recipe from my Mother's recipe box. She wrote this recipe on a little slip of paper and tucked it neatly into the back of her recipe box. I loved this cake when I was a child. Please let me know what you think of it!

The recipe calls for One-half cup fat, which I replace with 1 stick of homemade butter. Margarine can also be used. My Mother used 1/2 cup of bacon fat which I don't recommend. That was a long time ago and I cringe thinking of it now.

Whole Wheat Apple Sauce Cake

One-half cup fat (1 stick butter or margarine)
1 cup Sugar (brown or white)
1 1/2 cups thick, unsweetened apple sauce (I use Organic apple sauce)
1 cup seedless raisins

2 1/2 cups whole-wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoons salt
2 whole eggs, beaten

1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon cloves

Cream fat (butter) and sugar together.
Add apple sauce, then beaten eggs.

Mix raisins with 1/2 cup of flour.

Mix rest of flour with baking soda, salt and spices.

Then add all dry ingredients to liquid mixture.

Beat well. Pour into well greased pan and bake in very moderate oven (300-325 degrees fahrenheit for about 1 hour.

Tips: The cake is done when the sides pull away from the pan. Another tip is to insert a toothpick into the center of the cake. If it comes out dry, the cake is done. If it comes out wet, bake a few minutes longer.

How to Make an Old Fashioned Jam Cake with Carmel Icing

I've been looking through my Mother's recipes and I found the recipe for her delicious Jam Cake with Caramel icing! She made it the old fashioned way with fresh blackberries that she picked in season. She would pick and freeze enough blackberries to last through the winter. She also made delicious blackberry jam.

Rosa Lee Turner Greene

1907-1987

This recipe came from her Mom and has been passed down for generations. My Mother was a school teacher and an exceptional Southern cook. She cooked everything from scratch and put up loads of vegetables and fruits from the garden.

She taught me to always make extra just in case someone stopped by for dinner. She was from the old school and lived through the Great Depression in the 1930's, and she saved everything to the very last bite!

Sometimes if we got up late on a school day and didn't have time for breakfast, we would get a piece of jam cake and eat it on the way to school which was only less than a block away from our house. It was soooooo good!

So, here is her recipe which I will type exactly as she has it written down on a file card. This was written on this card in the 1960's.

Remember to put on an apron to keep your clothes clean. She had many aprons that she sewed and I always thought they were so elegant and colorful. Of course she had aprons for everyday use, Sunday only aprons, holiday aprons, and other aprons for various occasions. I remember she would change her apron and put on a clean one if someone stopped by for dinner.

OLD FASHIONED JAM CAKE

1 cup sugar

3/4 cup butter (she used real butter)

1 1/2 cups flour

1 teaspoon of cinnamon, Allspice, and Nutmeg mixed together.

3 eggs

1 cup Blackberries
***I always mash the blackberries with a little water before adding them. Don't use too much water though, as the cake will fall. Just moisten them enough to mash. This is a little tricky, but will come with practice.

2 teaspoons soda (baking soda)

1/4 cup Buttermilk

Cream sugar and butter, measure and mix dry ingredients.

Add creamed sugar and butter.

Add eggs.

Add berries and buttermilk.

Mix until well mixed. Bake in a 9 x 12 cake pan or 3 round cake pans.

Bake at 325 or 350 until done. Allow to completely cool before icing it.

TIP: Insert a toothpick into the center of the cake. If it comes out clean, it is done. Also, when the cake pulls away from the edges of the pan, it is done. The toothpick trick works every time!

TIP: She always let her eggs come to room temperature before using in a cake recipe. She said the cake would be fluffier and I have been doing that for years.

CARAMEL ICING

In saucepan melt 1/2 cup of butter.

Stire in 1 cup of brown supar.

Cook 2 minutes on low heat.

Remove.

Add 1/4 cup milk, return to a boil. Immediately remove from heat.

Cool to lukewarm, and then add 2 1/2 cups of powdered sugar.

Beat to spreading consistency.

TIP: Be sure cake is completely cooled before spreading icing.
