Dice the tops up and set aside.&lt;br /&gt;Scoop out seeds, pulp and juice to hollow out the tomatoes.&lt;br /&gt;&lt;br /&gt;In medium nonstick skillet, sauté sausage in olive oil, breaking it up with a spoon as it cooks. When browned all over, add onion to skillet and cook until soft, stirring frequently. Add garlic, celery, and pepper and cook for another 2 minutes, stirring to combine well. Add reserved chopped tomato tops, or sun dried tomatoes, salt, and pepper and stir for another minute.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Remove skillet from heat. Mix in 2 tablespoons basil, ½ tablespoon each thyme and oregano, grounded pork rinds, and Italian 5 blend cheese. Using a large spoon, stuff low carb mixture into tomatoes, packing down firmly. Top with Parmesan and place tomatoes in oiled baking dish. Bake until heated through and cheese turns golden, approximately 20 minutes. Cornish hens *note*&lt;br /&gt;2 oranges&lt;br /&gt;1 tablespoon Zest from 2 oranges&lt;br /&gt;½ med. Onion&lt;br /&gt;1 tablespoon mince garlic&lt;br /&gt;1 Star Anise *note*&lt;br /&gt;4 to 5 whole Allspice (depending on size) *note*&lt;br /&gt;¼ tablespoon + a little to sprinkle on top- dried French Herb mix&lt;br /&gt;(Rosemary, marjoram, thyme, sage, tarragon, lavender and spices) 2 tablespoons of soft butter&lt;br /&gt;Salt and pepper&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees.&lt;br /&gt;&lt;br /&gt;Remove hens from package. If your hens have the giblets inside, remove and discard. Wash hens inside and out. Remove any little pieces of feathers that might be left on hens. Let drain and pat dry.&lt;br /&gt;&lt;br /&gt;Place hens in roasting pan or baking dish. Large enough so the hens are not crowded. Salt and pepper inside the cavity. Zest the 2 oranges. Only zest ½ a tablespoon from each orange, you want to keep some skin on the orange for more flavor for inside the hens. Take your ½ cleaned onion and thinly slice it and than cut in halve. Each hen will get half of the onion. You can use both oranges if you want, but I only use one. Cut the orange in half and then quarter each half. You will use half an orange for each hen.&lt;br /&gt;&lt;br /&gt;Give each quarter of orange a little squeeze as you place into a bowl. Add your ¼ tablespoon of herb, ½ tablespoon of garlic, sliced onions, allspice, ½ of the star anise and mix all together. That will be your stuffing for each hen. Now with stuffing your hen start with the 2nd largest piece of orange and stuff it all the way in the cavity, so you seal off where the neck was. Keep the largest piece of orange for last. Now place the rest of the stuffing in the hen, make sure you get all the juice.&lt;br /&gt;&lt;br /&gt;Now place the large piece of orange in last to seal all the goodness in. Rub 1tablspoon of butter all over the outside of each hen. Sprinkle ½ tablespoon of zest all over each hen. Sprinkle salt and pepper and a little of herb mix over each hen. Place into your 400 degree oven and bake 45miutens to 1 hour, until the juices run clear and hens are golden brown. Coarsely chop green leaves. Peel stalks from broccoli; slice ¼ inch thick. Cut florets into bit-size pieces. In a large skillet, boil ½ cup water. Add bok choy stalks and broccoli; cover. Add roasted bell pepper strips, shaking skillet often for 1 minute, then stir in 1 tablespoon soy sauce. Transfer to a plate and wipe skillet clean.&lt;br /&gt;&lt;br /&gt;Place each beef slice between plastic wrap; pound lightly until 1/8 inch thick. Season with salt and pepper. Divide roasted bell pepper and scallions among slices. Roll tightly into bundles, securing each with a toothpick.&lt;br /&gt;&lt;br /&gt;Heat remaining tablespoon of oil in same skillet over high heat. Sear the low carb beef rolls until browned on all sides, about 3 to 4 minutes. Transfer to a plate; cover to keep warm. Remove toothpicks and drizzle rolls with sauce.&lt;/p&gt;&lt;p&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;TIP:&lt;/strong&gt; freezing the tenderloin or sirloin for about 20 minutes will make it easier to slice.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;ROASTING A BELL PEPPER:&lt;br /&gt;&lt;/strong&gt;Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. It has been very hot for weeks and the grills are fired up for some low carb bbq recipes! This is my favorite low carb dry bbq rub recipe:&lt;br /&gt;&lt;br /&gt;1/4 cup paprika&lt;br /&gt;2 tablespoons granulated garlic&lt;br /&gt;2 tablespoons granulated onion&lt;br /&gt;2 teaspoons peppercorns&lt;br /&gt;1 teaspoon dry mustard&lt;br /&gt;1 teaspoon chili powder&lt;br /&gt;2 tablespoons cumin seed, toasted&lt;br /&gt;3 tablespoons coriander seed, toasted&lt;br /&gt;1/4 cup kosher salt&lt;br /&gt;1/4 cup Splenda light brown sugar&lt;br /&gt;1 whole chicken, cut in pieces&lt;br /&gt;&lt;br /&gt;Combine all low carb ingredients in a clean coffee grinder. Rub on chicken directly or coat in a plastic storage bag making sure chicken is dry before applying. Cook ground meat and drain off all fat, adding the meat to the onions. Dice peppers up and add to onion and meat mixture. Return the pepper, onion, meat mixture back to the heat and add 3 tablespoons of chili power and cook. (If using banana peppers pour the juice into the meat mix) Add both cans of tomatoes and add more chili power to suit your taste. Salt and pepper to taste. You can change the cheese to your favorite like fontina cheese or smoke mozzarella cheese. Try adding some ground beef or thin slices of ham. For extra flavor try adding sun dried tomatoes or thin olive slices or any low carb ingredients that sound good to you!&lt;br /&gt;&lt;br /&gt;6 large eggs&lt;br /&gt;1/3 cup heavy cream&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/4 teaspoon freshly ground black pepper&lt;br /&gt;4 tablespoons unsalted butter&lt;br /&gt;8 ounces drained ricotta cheese&lt;br /&gt;8 ounces fresh water-packed mozzarella, drained, cut into 1/2-inch cubes&lt;br /&gt;1/4 cup thinly sliced fresh basil leaves&lt;br /&gt;1 cup low carb / no sugar added marinara sauce&lt;br /&gt;1/4 cup freshly grated parmesan&lt;br /&gt;&lt;br /&gt;Whisk the eggs, milk, salt, and pepper in a medium bowl. Heat a 6-inch nonstick skillet over medium-low heat. Brush the skillet with some butter. Working quickly, pour 3 tablespoons of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 10 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.&lt;br /&gt;Preheat the oven to 400 degrees F.&lt;br /&gt;&lt;br /&gt;Butter a 13 by 9 by 2-inch baking dish. Arrange 1 egg crepe on a work surface. Place some of the ricotta and mozzarella cheese in the center of the low carb egg crepe, and then sprinkle with some basil. Roll up the crepe. Place the filled crepe in the prepared baking dish, seam side down. Repeat with the remaining egg crepes, cheese, and basil. Spoon the marinara sauce over the crepes. Sprinkle with the Parmesan and dot with 2 tablespoons of butter. Place garlic on heavy duty foil and drizzle with olive oil. Bake 30 minutes and cool. Squeeze pulp from garlic into large bowl and set aside.&lt;br /&gt;&lt;br /&gt;Meanwhile, arrange florets in steamer basket inside Dutch oven with 1 to 11/2 cups water (do not immerse steamer in water). Steam cauliflower, covered over high for 15 minutes or until very tender.&lt;br /&gt;&lt;br /&gt;Place cauliflower in bowl with garlic; stir in cream cheese, cream and peppers until combined. Place in bottom of serving dish and keep warm. In a large skillet, heat oil until very hot but not smoking. Add garlic an saute until golden. Remove. Add crab meat and toss, cooking for 1 minute. Stir in mushrooms and cook for 1 minute more. Add Stock and pepper and bring to a boil. Add cornstarch mixture and cook, stirring until sauce thickens. Pour over snow pea pods, sprinkle with ginger, and toss to mix. The low carb chop suey recipe below includes snow peas as an optional vegetable to include but keep in mind that snow peas are slightly higher in carbs than the rest of the veggies in this low carb recipe.&lt;br /&gt;&lt;br /&gt;Serves 4 to 6&lt;br /&gt;&lt;br /&gt;Ingredients: &lt;br /&gt;&lt;br /&gt;1 pound pork or beef (don't use pork chops as they are too dry)&lt;br /&gt;2 small bunches bok choy (can substitute broccoli if desired)&lt;br /&gt;1/2 cup bamboo shoots, rinsed&lt;br /&gt;1/2 pound fresh mushrooms, washed and patted dry with a paper towel&lt;br /&gt;1/2 cup water chestnuts (fresh if possible)&lt;br /&gt;1 large green pepper&lt;br /&gt;2 stalks celery&lt;br /&gt;1 onion&lt;br /&gt;1/2 pound snow peas (optional)&lt;br /&gt;&lt;br /&gt;Seasoning for Pork: &lt;br /&gt;1 teaspoon soy sauce&lt;br /&gt;1 - 2 teaspoons oyster sauce&lt;br /&gt;1 teaspoon salt&lt;br /&gt;Pepper to taste&lt;br /&gt;1 piece (under 1 teaspoon) cornstarch (corn flour)&lt;br /&gt;&lt;br /&gt;Sauce:&lt;br /&gt;4 tablespoons water&lt;br /&gt;1 teaspoon oyster sauce&lt;br /&gt;3/4 to 1 teaspoon cornstarch (corn flour)&lt;br /&gt;&lt;br /&gt;Oil for stir-frying&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;&lt;br /&gt;Cut the pork into thin strips. Add seasonings to pork, adding the cornstarch last. Marinate the pork for 10 - 15 minutes. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;While pork is marinating, prepare vegetables and sauce. For sauce: Mix the sauce ingredients and set aside. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For vegetables: Cut bamboo shoots into thin strips. Slice the mushrooms and water chestnuts. Cut the green pepper in half, remove the seeds and slice diagonally. For the bok choy, separate each stalk and leaves. Cut the stalk diagonally and cut the leaves across. Cut the celery diagonally. Cut the onion in half, peel, and slice thinly. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Place the vegetables on a large tray, being careful to keep each group separate (include the bok choy stalks and leaves), and set aside. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Heat wok and add oil. When oil is ready, add the pork. Stir-fry pork until redness is gone. Remove and set aside. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Reheat wok and add more oil. When oil is ready, stir-fry each of the vegetables. The order doesn't matter, but you can stir-fry the onions and celery together, (if desired you can cook these with the pork), and the green pepper and snow peas together. When cooking the bok choy, add the stalk first. Add salt to taste as desired while stir-frying each group of vegetables. Add water and cover wok while cooking bok choy, as it doesn't contain much moisture. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Reheat wok and add oil. Give the sauce a quick re-stir. Add and combine all the cooked ingredients in the wok. Make a "well" in the center and gradually add the sauce, stirring to thicken. Once it has boiled, remove the chop suey from the stove. Put for 30 minutes in cold water, because the eggplants are less bitter tasting then. Now because I do not eat broccoli, I eat a lot of green beans and salads and that can get old quick. I have about 15 different low carb recipes for green beans and I thought I would share one today!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Low Carb Green Beans with Bacon and Almonds&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;4 slices bacon, chopped into small pieces&lt;br /&gt;½ cup chopped onion&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;2 ½ cups green beans, drained&lt;br /&gt;¼ cup chopped red bell pepper&lt;br /&gt;¼ tsp. kosher salt&lt;br /&gt;¼ tsp. thyme leaves&lt;br /&gt;¼ tsp. ground black pepper&lt;br /&gt;½ cup slivered toasted almonds&lt;br /&gt;&lt;br /&gt;In a medium skillet cook bacon piece until crisp. Using slotted spoon, remove bacon from skillet, reserving drippings. Drain bacon on paper towel. Cook onion and bell pepper in hot bacon drippings until tender. Add green beans, salt, thyme and black pepper. Cook over low heat about 10 minutes or until heated thoroughly. But there are times when low carb dieters want something a little gooier. It's not hard to do with a little creativity.&lt;br /&gt;&lt;br /&gt;This article is not designed to give you specific recipes, but to inspire you to become more creative in your low carb cooking. Having a good idea of foods that go well together can give you a whole new perspective when preparing your meals.&lt;br /&gt;&lt;br /&gt;The first step is to think of obvious foods that go well together; meat and cheese, meat and onions, meat and cabbage, meat and peppers, etc. I use ground beef a lot because it's very versatile and goes well with a lot of things.&lt;br /&gt;&lt;br /&gt;Gooey and Filling&lt;br /&gt;&lt;br /&gt;When I want something gooey, I will take ground beef and brown it with chopped onions, salt and pepper. After it is browned I add shredded cheese and mix it well. It's very filling, very satisfying and very fast.&lt;br /&gt;&lt;br /&gt;For Mexican Food Lovers&lt;br /&gt;&lt;br /&gt;If you are a lover of Mexican food and miss it due to low carbing, brown the ground beef without putting the cheese in it. Then put the meat over some crisp chopped lettuce and top with shredded cheese and a little picante sauce. This makes a great low carb taco salad.&lt;br /&gt;&lt;br /&gt;Another great tasting Mexican food dish is a low carb chilli relleno casserole. Brown some ground beef with onions, salt and pepper. Whisk 3 or 4 eggs well and add 12 to 16 ounces of half and half or heavy cream. Layer a square baking pan with whole green chilies (a couple 10 ounce cans with seeds cleaned out). Put the beef over the layered chillies then add the egg mixture until it's just about at the top of the meat. Sprinkle a generous amount of shredded longhorn cheese over the top and cook in a slow oven 30 to 40 minutes. Watch to make sure the cheese doesn't get too brown. Let it sit for awhile after cooking to thicken (if you can resist it long enough).&lt;br /&gt;&lt;br /&gt;For Pasta Lovers&lt;br /&gt;&lt;br /&gt;Do you miss having pasta on your low carb diet? Cook a nice casserole using thin slices of zucchini. Brown some ground beef and make 2 or 3 layers of beef alternated with the zucchini. Add some mozzarella cheese to each layer and some crushed tomatoes. Top this off with more cheese and cook on low heat for 60-90 minutes. This is absolutely delicious. You can even add pepperoni to each layer to help kill the craving for pizza.&lt;br /&gt;&lt;br /&gt;Another variation of this crosses over the lines of Italian and Mexican foods. For this recipe I recommend Mexican tomato sauce. It's lower in carbs and adds a little heat and zest to the dish. Any low carb tomato sauce, or even crushed tomatoes will work.&lt;br /&gt;&lt;br /&gt;Parboil some cabbage leaves then cut into bite sized pieces. Brown some ground beef with onion, salt and pepper. Then, mix the cabbage in with the beef and add the tomato sauce. Enjoy this recipe that takes advantage of the hidden versatility of the artichoke.&lt;br /&gt;&lt;br /&gt;4 whole artichokes (preferably pointed-leaf, not globe artichokes)&lt;br /&gt;4 lemons, divided&lt;br /&gt;2 tablespoons whole coriander seeds&lt;br /&gt;2 tablespoons salt&lt;br /&gt;1 stick salted butter, cut in 8 pieces&lt;br /&gt;&lt;br /&gt;Instructions:&lt;br /&gt;&lt;br /&gt;Trim the stems of the artichokes to about 2 inches. Bring 4 quarts of water to a boil in a large saucepot. Halve 3 lemons and squeeze juice into water. Add lemon halves, coriander seeds, and salt; cook 5 minutes.&lt;br /&gt;&lt;br /&gt;Place artichokes in the cooking liquid, and cover with a heavy plate to keep them from floating. Boil 15 minutes, until a paring knife, inserted where the stem meets the bottom, comes out easily.&lt;br /&gt;&lt;br /&gt;In a small bowl, melt butter in a microwave. Mix in juice of remaining lemon.&lt;br /&gt;&lt;br /&gt;Serve each person one whole artichoke, accompanied by a ramekin of butter sauce and a large bowl for discarded leaves. (See Tip)&lt;br /&gt;&lt;br /&gt;Tip: To eat an artichoke, start by pulling off the leaves one by one. Dip the bottoms of the outer leaves in butter and eat the tender parts only.&lt;br /&gt;&lt;br /&gt;The tender inner leaves are fully edible. In the center is a hair-like choke: scoop it out with a spoon and discard.
