A bowl full of basics – the question is what noodles would best suit the Shiromaru Classic? Noodle specialists worked night and day trying out all kinds of possibilities until they reached the answer which was “Round blade noodles fineness no. 26”. Skilled
professionals controlled the hydrolysis rate and process by adjusting the temperature and humidity, and achieved the most perfect balance. Using “round blades” which produce circular noodles, these noodles which draw up just the right amount of silky
pork broth, and provide a gentle, almost nostalgic comfort can be said to be the basic origin of IPUUDO tonkotsu ramen.

My Review - The Karaka Spicy Ramen is a very tasty and has a good heat level. The broth is on the lighter side, but still rich enough to satisfy. The toppings are a bit sparse, but that depends on which style of ramen you get as the other styles of ramen include more/different toppings, and you can always add on options. Though options here are somewhat pricey side, e.g., corn is $1.50 and an egg is $2.00.

The broth is the shinning component of this dish and stands up to other popular ramen joints I've been to. The spicy Karaka broth has a nice heat level, is rich, but still on the lighter side and not very thick. Ippudo makes use of the ingredient that gives your mouth a pleasing numbing feel as well, which could be the szechuan peppercorn. I was very happy to slurp the remaining broth at the end of the meal.

Now, with that said, the disappointment of the dish is their style of noodles. I prefer a more thick and chewy noodle, much thicker than the normal ramen noodle. Ippudo's noodles are much thinner than even regular noodles, more akin to angel hair pasta(in size only). They were done perfectly for ramen noodles and had some bounce, but because of lack of substance I had to downgrade a star. Your mileage may vary, as I mentioned I prefer a thick noodle. I wouldn't hesitate to go back if someone wanted to try Ippudo, or if I was already in the area. However, Afuri Ramen is right down the street, and I live near downtown Japan town where Kumako is, one of my absolute favorite ramen joints.

Right now being this location is brand new, they just opened the previous Friday, the line can be quite long especially around dinner time. We (2) waited for 45-60 min and were put at the shared counter alongside the glass window of the kitchen, where all the action occurred and the seats were comfortable. I would have to say if your are going to try this place out for the first time the wait is worth it, but as for a return visit I wouldn't wait more than 10 min.

Spicy Tonkotsu Ramen @ Obu Ramen House!!!

Tucked away in a strip mall plaza, you wouldn't think anything special about this Ramen house from the outside, especially when its sitting right next to a New Tun Kee Noodle house, but this ramen noodle house is a hidden gem in San Jose.

We went there around 1:30pm, well past the lunch rush, however the place was still a bit busy. We were seated quickly and had ordered in a matter of minutes. We each got the Spicy Tonkotsu Ramen with thick noodle, and when I asked how spicy the dish was he replied "very mild" and then suggested the chili paste when I indicated I like it very spicy.

Once the bowls arrived I tasted the broth, it was the porky creamy goodness that I expect in a good ramen bowl, and despite being labeled as spicy, it was not, and so I added the 1/2 the chili paste which brought the spicy level to a very good level of kick.

The noodles were thick and chewy, just like I like them, and all of the added toppings were cooked to perfection. It wasn't long before we both had devoured the bowls in front of us and we were both extolling the virtues of the dish we had ordered.

I'll certainly be back for some more ramen at this location!

People have lost their damn minds once again in the "craze" of these Hawaiian Mochi Donuts! We arrived after lunch at the Mitsuwa Marketplace in San Jose off Saratoga Ave. The line was out the door! My friends got in line, I went in to scope out how long it would be. I passed the automatic doors and saw the line twisted to and fro, back and forth, amongst various food stands and displays. I inquired the length of time people were waiting, 2-3 hrs was the wait time.

OMG! No frick'n way!!!

No pastry was worth that wait!Luckily, my friend came in to see the line size and saw their sister in law and was able to snag a few to share with us! Thanks CHAN! The max you could get for one person was a dozen for $20.

Now don't get me wrong, the donuts were very tasty and had that slight chewiness of fresh pastries combined with mochi, but they weren't mind blowing crazy good. The best donut was the one lightly sprinkled with cinnamon, sugar, and matcha powder vs the other "dipped" flavors, which seemed to over power and weigh down the donuts. While they were tasty, I wouldn't have waited 3 hrs or paid $20 for just 12 donuts. Especially when there are 2 other donut shops in the area and a crispy creme where you could get your donut fix with less time and money.

Dark Chocolate Chunk Cookies!!! #homemade

The other night was craving some chocolate chip cookies, saddly didn't have any chips on hand (have to restock the pantry I guess!). Did find some dark chocolate bars, so threw it in a gallon sized zipper bag, covered it in a tea towel (don't forget to bring a towel!), and went all medieval on them until they were nice sized chunks. Whipped up the normal tollhouse recipe and used proper soften butter this time around to cream the sugar vs doing what I did last time, which was nuke the frozen butter too much to where it went liquid, which resulted in thin and crispy cookies. While a bit pricy, you do get a lot of food, and the staff was super friendly and attentive. I'd recommend going here if you want a bit more tastier experience than some of the other similar locations unless you're on a budget.

Sadly in my excitement to get the other food photographed, I forgot to take a picture of my own meal, the Spicy Pork Stew, served in a stone hot pot. Very delicious, and more than enough (with the rice), for me to take home 1/2 and have it for dinner that night as well!

I make a point of mentioning that the meal I received was labeled "EXTRA HOT" but sadly it was one of the mildest curry dishes I've had to date. I'm not a spice fanatic but when its labeled EXTRA HOT on the menu I expect something a bit more than a slight tingle on the tongue, and being that they are warning me on the menu I shouldn't have to ask for it to be "extra spicy" for it to be EXTRA HOT! My friends normal curry dish was more spicy.

Don't get me wrong its a tasty dish, but as I described to my friend, its not a curry I can see myself craving like I do with normal Thai or Indian cuisine. I will go back to the Curry House, but next time around I think i'll just get the normal curry meals, perhaps with seafood!

Looks like Alton Brown is going back to his Good Eats roots he teased a bit online today. From all reports it seems its going to be a web series and not on TV. Back in the day Good Eats was a Food Network staple, until he branched out and started working on other projects, to some dismay of lots of fans when he delved into the "reality tv genere". Here is hope this new series is going to bring back the classic character and format we all fell in love with. WOOT!

Around lunchtime a few of us decided to check out the new beef noodle place #ChefHung here in Cupertino, CA. I ended up deciding on two items Braised Beef Shank w/Noodle and a Wonton w/Spicy Sauce. Each was labeled with a chili pepper icon so I assumed it would be "spicy". Sadly neither dish was spicy in the least, and a quick poll of the table of the other spicy dishes ordered also confirmed that there was zero spice. With that said they did have flavorings to "enhance" the spicy on the table and in the end I completely forgot to add additional spice to actually make it spicy, but if its labeled on the menu as spicy I expect it to BE spicy!

The dishes were very good however, but if you were't versed in how a fresh hand pulled noodle was the texture could be a bit off. The wonton I was a bit disappointed being that it came in a bright red sauce, again not spicy in the least, and the wontons filling and texture was very "bland", I made the comment to a co-worker that they tasted and the texture was if you'd have over cooked gnocchi. The wontons were $5.00, and the dish was about the size of your hand if you made a fist, so the menu pictures aren't a good judge of size.

Which brings me to the Beef Braised Shanks w/Noodle. The bowl was a nice size, but as others have mentioned in reviews there is another shop within walking distance with the same dishes and for cheaper. This dish was $12.50. Its a hearty bowl with some nice beef bits floating in a rich beefy broth, and the noodle are very chewy and bouncy and very satisfying to eat. I very much enjoyed this dish despite not being spicy at all. Its great for a fall/winter lunch.

The service was just ok, they took a bit of time to fill the waters, and take our order, one of my co-workers had to be back for a 1pm meeting and despite arriving at 12:15 (we did have to wait about 5 min to be seated) they didn't actually come by to take our order until 12:38 so sadly he only had hot tea.

Sorry if I go on a bit of a rant regarding "the bill". Like a lot of biz's there seems to be a trend in the bay area that, while accepting credit cards in exchange for meals they frown on or outright refused to accept more than one or two credit cards for payments. Which to me is absurd.

Now, I understand why people can be difficult and wanting to only pay for items they order, but typically, the group I roll with all get about the same priced items, and we all tend to not care if we split the bill evenly among multiple cards. If we know we're going to a place where we tend to get vastly different items and prices we ask for separate checks ahead of time. Also with the advent of newer register systems its quite easy to "split the bill" and in some instances you can even charge only your items to a specific card on a bill, so in this modern era I don't see the fuss with getting the bill split or giving multiple cards.

There are many smaller mom and pop places we go to, Ramen Tenma for one, who say nothing of multiple cards even with groups of 8 or more! So I'm really wondering if its the server who is just being lazy and not wanting to run the cards or if there is some kind of hidden fee the restaurant is having to pay, as far as I know its just a percentage so it shouldn't matter for the restaurants.

Which bring me to my main point, how is paying with multiple credit cards, albeit if your being easy peasy about splitting the bill evenly across 2, 3, 4 cards or more, different than if we EACH went in to dine solo and each paid by credit card. This is the gist of my frustration, multiple diners vs if we each went to dine solo, its still the same number of credit cards its still the same number of diners.

As you can tell by now that this place ended up refusing to split the bill on 3 credit cards and only would accept two.

Its 2016, you're in the heart of Cupertino, Apple is right down the street. You would expect them to accept android pay, apple pay, pay pal, square, etc. Also this is a multinational chain, this is not a mom and pop shop. My local cheese steak place accepts square. Why is this such a hassle in our increasingly cashless society. Sadly this place may suffer, if they don't get their food done according to their menu, and if they don't start getting with the times, especially in Cupertino.

Joule From ChefSteps! Basic Pork Chop Recipe!!! Sous Vide!!!

I pre-ordered Joule awhile back and it finally arrived! What is Joule you might ask? Well its the new Sous Vide machine from ChefSteps! Its essentially a water heater and circulation device. Joule allows you to cook food immersed in water (in a zip lock bag or vacuum bag) to a tenderness and keep that food at that state for long periods of time without fear of over or under cooking the food.

Another cool aspect is that you can pair the device with your phone (app is android and ios), your wi-fi router, as well as an Amazon Echo or Dot (for some voice control) to cook/monitor/start/stop/change temps/set timers from anywhere you have an internet connection. ChefSteps app(android and apple) takes the calculations out of Sous Vide so its a simple process of selecting the doneness, visually, within the app and then just hit GO!

Staff is super friendly, cozy place good atmosphere, comfortable seating, staff gave me a free Thai Iced Tea when my order got mixed up, (was just slightly slower than I was expecting, which is no big deal, and wasn't "thai hot", which I didn't mention, so they gave me the Thai Iced Tea for the perceived slowness, so great staff! The Duck Panang Curry was delish, despite lack of any real heat, and plentiful pieces of duck and other fresh veggies throughout dish. Lunch special came with soup and salad as well! Its a bit out of the way for me but worth the drive for some decent Thai food!

I was up in south-ish San Francisco for the company I work for quarterly meeting and sales kick off event. After the presentation a few of us broke off from the lunch provided to indulge in some tasty sea food. So we went to the New England Lobster Market & Eatery as it was 5 min walk from the hotel. I ended up ordering three menu items, I thought if I was going to try this place out I'd get the three main staples. I got the Twin Tails, which are just two lobster tails, butter, coleslaw and a half roll (which its the same roll that you get when you order a lobster roll). The second item was the lobster roll, dressed, which also comes with coleslaw and chips(made in house). The third item was the lobster corn chowder.

All the items had plenty of lobster, which were delicious, and the place is set up with picnic tables both inside and out for seating and has a unique atmosphere. Also, they have a separate area for their clams and oysters, and by the time we finished all of our food, we didn't have the room to sample any the 4-5 varieties of the oysters they had on hand.

The only complaint I had was that the lobster roll. The roll has a few options and the first is "lobster roll, dressed", which didn't have a lot of dressing or spices which I would expect for a lobster type "salad" roll I was expecting. So I suppose it isn't realy a complaint as it just wasn't what I was expecting, it was still delicious, there was so much lobster meat I took a bunch and put it into the delicious chowder!

The other complaint was with the chowder, which was pretty tasty, everything in it was delicious except for one thing, the corn. Either the corn used was over cooked or was just old as it was very "mealy" and "chewy" rather than crunchy/fresh like corn on the cob, etc., but because the rest of the chowder was so tasty I ate ever last bit!

Fish And Chips Plus Clam Chowder @ The City Fish

This little fish and chips place is located in downtown San Jose, CA. The place isn't very large and the location has plenty of "interesting characters" milling about outside, as it is downtown San Jose! While the food is certainly four stars IMHO, especially for the value, the decor size and location take it down a notch. Also make sure you park in a nearby parking garage so as to get validated for parking, otherwise you might be paying around 4-6 bucks extra for parking.

Essentially you order at the counter and then find a seat, the food,and sauces, are brought out to you. You aren't really "waited" upon, but we decided to tip regardless. On the menu they have separate options for panko bread crumb as well as other options for salmon, and other fish prepared in the traditional batter and deep fry style. You could also get those fish pan fried, baked, etc., but those were typically the same price as you would think to pay at a upscale fish restaurant, so were a bit pricy.

I opted for the Fish and Chips + Chowder combo for my first foray into the cuisine here, not knowing what to expect in terms of batter or flavor. It was right around ten dollars in cost. As you can see in the pics the batter isn't like you would find at an english pub, so thickly coated that you need a knife to cut into the fish, but a delicate and flavorful batter that flakes away with the whitefish underneath. It is almost as light and crispy as the tempura batter that my favorite place uses, Tugboat Fish and Chips.

The fries are your typical faire. The chowder on the other hand was very good! The chowder was on the thinner side, creamy yet soupy, with plenty of clams and other ingredients, and not over cooked to where the potatoes just disintegrate and thus thicken the soup, which is a good thing! The chowder alone is something to seek out.

This is a place that I'll certainly come back to for a fish and chips fix, especially since its a bit closer to my work/home.

Cashew Chicken @ The Joy Luck House

This place is somewhat tucked away on the central north side of Napa, in a little business center/industrial complex. We had lunch there around 1pm on a Sunday and we were the only ones in the entire place! The weekdays from other reviews seems its a rather popular place. The food is typical fair for Chinese cuisine. Its tasty food, both with non spicy and spicy, and I recommend going with a dish with at least a little spice! In the end, I don't think i'd go out of my way to eat here, certainly not an hour and a half drive! However, if you're in the area be sure try it out, otherwise there are much closer places that are cheaper and have dishes which are more flavorful, in my opinion.
