I have made this recipe for Chocolate Toffee Cupcakes twice in the last month, but this is a recipe that I have been making for almost twenty years.

I found this recipe a few years ago, long before I ate gluten-free, in a Taste of Home magazine.

I have made both the regular version and the gluten free version so many times over the years.

I have made them for my husband’s office. I have made them for our family and for so many church potluck dinners.

We love them that much.

The cake batter part of these cupcakes is basically an old fashioned wacky cake recipe. That means that the batter is egg free.

Years ago, we had a staff member whose son was allergic to eggs. This made it hard to find cookies and other treats to bake for them. When I first saw this recipe, I knew it would be perfect for this family because it does not contain eggs. I loved to make these cupcakes for them.

And you don’t miss the eggs. The taste and texture of these Chocolate Toffee Cupcakes are so good.

The other thing that I love about this recipe is the combination of chocolate and toffee. How can you go wrong combining those two things? Chocolate and toffee are one of my favorite combinations.

If you need an easy dessert, give these Chocolate Toffee Cupcakes a try!

Can I make chocolate toffee cupcakes gluten free?

Yes, these are so easy to make gluten free. I use Bob’s Red Mill 1 to 1 Gluten Free Flour Blend. Other blends may work, but they have not been tested.

To make them gluten free you also need to be sure all the ingredients, including the toffee bits, are gluten free. The Heath brand toffee bits are labeled gluten free.

Chocolate Toffee Cupcakes

Chocolate Toffee Cupcakes combined toffee bits and chocolate into a delicious cupcake.

Prep Time 20 minutes
Cook Time 25 minutes
Total Time 45 minutes

Ingredients

  • 1-1/2 cups all-purpose flour or Bob's Red Mill 1 to 1 Gluten Free Flour Blend
  • 1 cup sugar
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1 cup water
  • 1/4 cup vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/2 cup toffee bits - I buy the bits that you find near the chocolate chips, but heath or skor candy bars work also. If you are making gluten free version be sure they are gluten free.

FROSTING

  • 1 1/2 cups powdered sugar
  • 1/3 cup baking cocoa
  • 1/3 cup butter, softened
  • 2 tablespoons milk ( or enough milk for the right texture to spread the frosting)
  • 3/4 teaspoon vanilla extract
  • 3/4 cup toffee bits ( see note above)

Instructions

  1. In a large bowl, combine flour, sugar, cocoa and baking soda. Set aside.
  2. In aother bowl whisk the water, oil, vinegar and vanilla until smooth.
  3. Gradually add to dry ingredients to wet ingredients just until combined.
  4. Stir in toffee bits.
  5. Fill paper-lined muffin cups two-thirds full.
  6. Bake at 350° for 20-25 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  8. For frosting, combine confectioners' sugar and cocoa; set aside.
  9. In a large bowl, beat butter and 1/2 cup cocoa mixture until smooth.
  10. Add milk, vanilla and remaining cocoa mixture; beat until desired spreading consistency is reached.
  11. Stir in 3/4 cup toffee bits.
  12. Frost cupcakes.
  13. Cover and refrigerate until serving.
  14. This makes about 12 cupcakes.

Are you wondering who Puny is and why I am sharing her recipe for macaroni and cheese?

It is no secret that I love cookbooks, and I collect them. Did you know I also love to read?

By reading, I mean I read about one hundred books a year. I don’t just love reading; I read a lot of books.

The Mitford Books

One of my favorite fiction series is The Mitford series by Jan Karon. I think I discovered these books seven or eight years ago.

As soon as I read the first book in the series, At Home in Mitford, I knew it was the perfect comfort read series for me.

I like to describe this series as Anne of Green Gables for adults.

The Mitford books are set in the small fictional town of Mitford, North Carolina. It follows Father Tim and the people of Mitford.

Mitford is full of everyday people living everyday life. As you read through the series, the residents of Mitford become your friends.

In the Mitford series, Puny Bradshaw is Father Tim’s housekeeper.

I recently bought the Mitford Cookbook and Kitchen Reader. When I saw a recipe for Puny’s Mac and Cheese in the Mitford Cookbook, I knew that it would be the perfect recipe to share for a Cooking Through My Collection recipe.

This mac and cheese recipe reminds me of an old Taste of Home macaroni and cheese recipe I made years ago. It was probably close to twenty-five years ago. Long before I had this website.

That makes sense because the first Mitford book was published in 1994 and The Mitford Cookbook was published in 2004. The recipes are very1990s, but not in a bad way.

Puny’s Mac and Cheese recipe contains three types of cheese, plus sour cream. Yes, three different cheeses and sour cream. That is what makes it so good!

If you are a fan of the Mitford books, this cookbook is so much fun! It would also make a great gift for someone who loves the Mitford series.

Can Puny’s Mac and Cheese be made gluten free?

Yes, I used gluten-free pasta for this recipe, and it worked great. For recipes like this, I like a pasta that is a corn and rice blend.

Ingredients

  • butter
  • flour or gluten free flour blend for gluten free version
  • milk
  • sour cream
  • cream cheese
  • salt
  • ground nutmeg ( I left this out because my husband does not like nutmeg)
  • mustard powder
  • cayenne pepper
  • ground black pepper
  • cheddar cheese
  • parmesan cheese
  • elbow macaroni or gluten free elbow macaroni
  • butter, see note below
  • breadcrumbs or gluten free breadcrumbs for gluten free version, see note below

Puny's Macaroni and Cheese

Puny's Macaroni and Cheese is from the Mitford Cookbook. It is featured in the book In This Mountain.

Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Ingredients

  • 1/3 cup butter
  • 1/3 cup flour or gluten free flour blend for gluten free version
  • 3 cups milk
  • 1/2 cup sour cream
  • 4 ounce cream cheese
  • 2 teaspoons salt
  • 1/4 teaspoon ground nutmeg ( I left this out because my husband does not like nutmeg)
  • 1 1/2 teaspoons ground mustard
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 4 cups grated cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 pound elbow macaroni or gluten free elbow macaroni
  • 2 tablespoons melted butter, see note below
  • 1 1/2 cups fresh breadcrumbs or gluten free breadcrumbs for gluten free version, see note below

Instructions

  1. Cook macaroni according to directions. Drain.
  2. Preheat oven to 350 degrees.
  3. Grease a 3 quart baking dish and set aside.
  4. Melt 1/3 cup butter in a large pan over medium heat. Whisk in flour and stir until smooth.
  5. Slowly add milk and stir until thickened and smooth.
  6. Remove from heat and stir in sour cream, cream cheese, salt, nutmeg, mustard, cayenne pepper, and black pepper.
  7. Stir until combined and cream cheese is melted.
  8. Stir in cheddar cheese cheese and parmesan cheese.
  9. Add cooked macaroni and stir to combine.
  10. Pour into prepared baking dish.
  11. In a small bowl combine 2 tablespoons melted butter and bread crumbs. Spread on top of macaroni.
  12. Bake for 40 minutes or until bubbling around the edges.
  13. Serve and enjoy!

Notes

The gluten free version of this recipe was tested with gluten free pasta and Bob's Red Mill 1 to 1 Gluten Free Flour Blend.

I don't like bread crumbs on to of my macaroni and cheese, so I left the breadcrumb mixture off and instead put a little extra shredded cheddar cheese on top.
