2 coriander roots
1 garlic clove, crushed
2 tsp coriander seeds
1 bay leaf
10 peppercorns
20cm square pork rind, scored
1 tsp olive oil, to season
8 warmed tortillas, to serve

Lime wedges, to serve

Salsa
3 tsp white wine vinegar

1 1/2 tsp sugar
1/2 tsp salt
1/2 red onion, diced
1 tomato, seeded, diced
1 jalapeno chilli, seeded, finely chopped

1 tbs chopped coriander

Guacamole
1 avocado, mashed
1/2 jalapeno chilli, seeded, finely chopped
1 tomato, seeded, finely chopped
1 tbs finely chopped coriander
1 spring onion, finely chopped

Salt and pepper, to season

Method

1. Carefully cut pork rind away from shoulder meat and reserve. Rub combined paprika, cumin and salt all over pork. Heat duck fat in a heavy-based frying pan over medium-high heat and cook pork for 6-8 minutes or until brown all over. Transfer to a pressure cooker with combined pineapple juice, stock, eschalots, coriander roots and seeds, garlic, bay leaf and peppercorns. Cover and cook over medium heat according to manufacturer’s instructions. Remove from heat, then remove lid and stand for 20 minutes. Shred pork using two forks.

2. Meanwhile, preheat oven to 220C. Rub pork rind with oil and extra salt, then place on a rack on an oven tray. Cook for 40 minutes or until golden and crisp, then break into pieces.

3. To make salsa, combine vinegar, sugar and salt in small bowl. Stir in onion and stand for 5 minutes. Rinse onion and drain well, then combine with remaining ingredients in a clean bowl.

4. To make guacamole, combine all ingredients in a bowl. Season with salt and pepper.

5. To assemble, fill tortillas with shredded pork, then top with salsa, guacamole, corn and crackling. Serve with lime wedges.

Revenge

Overview

Emily Thorne (Emily VanCamp) comes to the Hamptons for the summer, renting a home next to the Grayson family to enjoy a bright summer. However, it's clear Emily has been to the Hamptons before as a little girl. In reality, Emily is Amanda Clarke, whose father was framed for a crime he didn't commit and sent to prison for life. She was permanently separated from him and never saw him again. Now, she's returned to the Hamptons, intent on getting revenge against those who wronged her and her father, the top of that list being Victoria Grayson (Madeleine Stowe), matriarch of the Grayson family and the woman whom her father loved and who, in the end, betrayed him.
As she sets her plan in motion, Emily tries to navigate the upper society to destroy those who betrayed her father. But the further she goes, the more her emotions get involved and the more she questions her motives and the moves she makes.

Omg... I love this drama very much! I was hooked after the first episode. The writing, acting, locations, and characters are outstanding. Every episode gets better and more complex.

Life

2011-10-28T21:42:00.001+08:00

I always have this fear that one day you are going to discover that I'm not as great as you once thought I was.

Accept what you can’t change－Change what you can’t accept.?

Don’t try to understand everything. Because sometimes it is not meant to be understood. But rather to be accepted.

I hear something which doesn't matter at all.But I will think about you as it goes around in my head.

You might be worthless to one person, but you're priceless to another.Don’t ever forget your value.

I wish, I am a witch, can be predict what will happen in future! haha…I asked my friends , if they are become witch, they were predict future ? More friends given answers is “Yes” , because they want to know what will happen in the future, they said no idea what they doing now,and also they thought wasting life now, if they know what happen in future , they will starts to planning the life, sound like good huh? Some friends said “ No”, because they want surprise! Until now, I was no idea what I suppose to do in my future, the college course, the occupation. I am no idea the plan for my future, sometime I felt lost, and very confuse, but never mind, I ‘ll figure out what occupation is suitable for me, and I will try my best to finishing my courses now, and try to get a good result.

ALL THE BEST!!!

回忆

2011-08-20T10:53:00.000+08:00
