Hønen parteres rå, dækkes med kogende vand med salt og suppevisk, lauerbærblade eller grønsager efter smag. Koges ca. 1 1/2-2 timer alt efter alder og størrelse (kødet skal være mørt og side meget løst på benene).&lt;br /&gt;
Hønsekødet bliver meget saftigt, og suppen anvendes til sauce.&lt;br /&gt;
&lt;br /&gt;
Gulerødder og selleri skrælles og skæres i passende stykker, gives et let opkog til de er møre. Asparges snittes i ca. 3 cm lange stykker.&lt;br /&gt;
Smør smeltes ved svag varme, mel tilsættes det smeltede smør og røres godt sammen. Herefter tilsættes den kogende hønsebouillon under omrøring. Der justeres med fløde (evt. fløde 13%) til opbagningen har en cremet konsistens.&lt;br /&gt;

Kog kikærterne i usaltet vand med laurbærblade i ca. 50-60 minutter, til de er helt møre. Kassér laurbærbladene, og dræn vandet fra kikærterne (gem lidt). Gem halvdelen af kikærterne til fredag, og blend resten med en stavblender eller i en foodprocessor. Tilsæt olivenolie og lidt af kogevandet, til du har en puré, som er så cremet og glat som mulig. Del imens fisken i 2-4 stykker, og rids skindet. Rist dem med skindsiden nedad i lidt olie på en varm pande. Tryk den godt ned, så skindet bliver sprødt over det hele.
