			<content:encoded><![CDATA[<p>Who isn&#8217;t crazy about burgers? We had to admit it, the directors, general manager, food and beverage manager, chefs and most of our staff were mad about burgers. Grilled chicken burgers, beef burgers, turkey burgers, fish burgers, mushroom burgers, you name it they would munch it.<span id="more-145"></span></p>
<p>But getting a good burger that was healthy and full of its known ingredients (meat, onions, sauce) was almost inconceivable. Our patrons had the same opinion. <a title="Food Delivery" href="http://www.madjackcafe.com/food_delivery.asp" rel="http://www.madjackcafe.com/food_delivery.asp"><img class="alignright size-medium wp-image-146" title="MadJackDelivery" src="http://www.madjackcafe.com/blog/wp-content/uploads/2012/01/MadJackDelivery-211x300.jpg" alt="Food Delivery" width="211" height="300" /></a>We talked to them and they convinced us that we do not have much of a choice between fast food and chain restaurant mediocrity or overpriced and overcooked hotel fare. We decided it was high time we did something about it. Being reasonably health conscious and extremely MAD about the taste of our food, we knew the task was difficult but achievable.</p>
<p>The mammoth task was thrown down to both our suppliers and in-house culinary team that we would settle for nothing less than the best all-round burger in Singapore. And they had to be made with high quality and wholesome ingredients. We began to meet the purveyors. Week after week the suppliers started pitching about their best of products. We had to get the best of all and scrutinized all the way down to how the grass is grown in their pastures. The kitchen became busy too. Our chefs started preparing sample after sample to be tasted by ever-demanding panel of burger fanatics. Many were rejected, many were half approved but we wanted that perfect burger with its fullness in taste and healthy at the same time. After many months of hard work, we think we got it right &#8211; both the art and science of the burger was reinvented. You will appreciate the science of the thoughtful selection of burger patties with home-made high quality minced beef or chicken. More than 30 per cent of the patties consist of wholesome ingredients like oat, garlic, freshly grated onion and carrot. And the art of the burger &#8211; that is to live for. The burgers were served with a fresh slice of tomato, lots of lettuce and freshly grilled onion, they add much flavor to the finishing bite. From our secret spices and proprietary cooking methods to the delicious sides that accompany your platter, you will see how seriously we take our burgers.</p>

Instead of your regular meat patties, try mixing the patty with ground walnuts. Pineapple, cheese, tomato and lettuce need to be evenly spread after each patty.</p>
<p><strong>MAD Cow Burgers.</strong> MAD Cow patty mixed with lots of good ingredients and herbs plus tomato and lettuce to make this burger taste really awesome.</p>
<p><strong>Cheese-Stuffed Burgers</strong>. Use a burger press like our Burger Buddy to form two thinner patties then the cheese between the patties instead of placing the cheese on top of the burger. Mold the edges together to trap the cheese as it melts.</p>
<p><strong>Fish Burgers.</strong> Hundred percent real and chunky fish fillet grilled to make this burger tasty and healthy. Use mayo sauce on top of the fillet to give that extra mouth-watering taste.</p>
<p><strong>Mock Chicken Burger. </strong>If you are having a party and not all of your guests are meat eaters. There is nothing to worry about. Use mock chicken patties and grilled your burgers as usual replacing the real meat patties with the mock patties.</p>
<p><strong>Turkey Bacon Burgers. </strong>MAD Cow patty with additional turkey bacon to make this burger taste even better. Microwave bacon until it is partly done. With kitchen shears, snip the bacon into bits. Mix the bacon bits into your ground beef.</p>
<p><strong>Buttery Onion Burgers. </strong>Freeze a cube of butter then grate it as you would with cheese. Mix the grated butter, a chopped sweet onion, and your choice of spices into your ground beef before forming the patties. (To keep the butter hard, place the grater and a plate or cutting board in the freezer before use. Make sure that the meat is ice cold.)</p>
<p><strong>Chef’s recommendation: </strong>To add more fat and moisture to the meat, add grated cheese or butter to the burger before forming. Lean and extra lean burgers are often too lean to make flavorful, moist burgers. Grated cheese or butter helps to compensate for the lack of fat in the meat. Diced chilies, onions, or mushroom and spices should add flavor.</p>
<p><strong>Three Secrets for Great Burgers</strong></p>
<p>1. <strong>Start with the right meat.</strong> Source for the best purveyors in town. Make an effort to experiment with few, try the cooked patties and avoid the lean and extra lean burgers which are great for casseroles but too lean for burgers. You need the fat for flavor and juice. Or buy your meat from a butcher you trust. Your meat should be fresh. Ask the butcher or purveyors when it was ground and avoid meat that was not ground in the last few hours.</p>
<p>2. <strong>Less handling of the meat.</strong> Handle the meat patties as less as possible. Too much handling makes for tough burgers. Immediately after breaking a section of the meat off, form the burgers with as little handling as possible. If you are mixing ground nuts or other seasonings into the meat, toss the meat gently with your fingers to disperse the seasonings.</p>
<p>3. <strong><a href="http://www.madjackcafe.com">Burgers</a> that are right size.</strong> If your burgers are to be huge make sure that you add adequate number of patties. For our Extreme Blue Mountains burger we add five homemade patties with pineapple, lettuce, tomato and cheese in between. Use a long supporting stick that goes through the burger so that the patties and other ingredients hold together. In terms of cooking, we need to remember that they shrink. Three-quarters of an inch thick on the edges and slightly thinner in the middle is just about right for most of us.</p>
