There is a bit more to it than those three things...but...who doesn't like Dinos, Noodles and Egg? Got your attention didn't I?

I don't want to scare you but there is a monster after you lunch. Noodles with pork, organic apple, hard-boiled hen egg, fig newman, soy blueberry yogurt, and peanut butter and jelly dino sandwich - I'd be after your lunch too.

Quorn Roast, Pears and More

I should have titled it "Quorn Roast, Chocolate Drops and Yum"...cause that looks seriously good! We love a little bit of meat-free roast in our lives it is seriously delicious. If you haven't tried it - I suggest you do. The pears & apples are pretty darn near the only fresh fruits we can get a grip on this time of year so we eat a LOT of them. The yogurt is blueberry soy yogurt. The potatoes are mashed and the cauliflower is mixed with noodles and a leftover from dinner. Chocolate drops for dessert. Mmmmm.

Where did the time go?

We've been busy...but we haven't stopped making lunches. Everybody needs to eat right? So we're still going strong just not so good about posting these days (weeks/months). You see we've got a remodel/expansion happening at our toy store. And the holidays brought the busy bluster they bring to each of you, and I'm just sitting down with a cup of tea and decided it was high time I posted a few lunches...so here we go.

This is from our Thanksgiving Leftovers...and I have some older than that I haven't had a chance to share, but I liked the looks of this one just now as I was paging through the "past." I made a mean (and by mean I mean a delicious) Stromboli with stuffing, turkey, cranberries and mashed potatoes. The dough I made from scratch so it wasn't a quick process, but it actually doesn't take more than a couple of hours to piece this whole meal together (as long as you have your leftovers). It was really good, really filling and we had leftovers of that too. So this lunch is made from double leftovers - lucky boy. The dollops of mashed potatoes are always a hit whether they are warm or cold. The rest: Teresa's pineapple and ritz cracker dessert (if anyone wants the recipe I have that one too), a green apple, some organic mandarin oranges, some sunflower seeds, a dinner roll and some vitamins. Just about the same size as Thanksgiving dinner - hope you are hungry today Simon.

Pan Fried Potatoes, Kiwi and More

If there is one food that Papa Shane (Ukulele Guy) has mastered it is Pan-Fried Potatoes. He doesn't mess around when it comes to these delights. He's very particular about his potatoes so you can rest assured you'll be getting the best of the best if he is preparing them for you.

All packed up and ready to go.

The rest of the delicious lunch today: Pink Lady apple slices, a bit of ketchup for dipping those delicious potatoes, some rainbow chocolate drops for Simon and vitamins for Gus (don't worry he already ate his chocolate), a sandwich (sandwich style for Simon and dino style for Googs), the sandwiches differ slightly - both have turkey and cheese and Simon likes a bit of lettuce in his. Kiwi, red grapes and some smootches complete the package for today. Happy Cold Lunch my sweet boys.

Smoked Turkey Thigh, Snow Peas and More

The afternoon following the consumption of this lunch I hear..."Mom, I don't really like winter peas." I get it - they aren't as fresh - they aren't as delicious as straight from the garden - and...they aren't winter peas...they are snow peas...but I'll probably call them winter peas from here on out.

The rest of this scrumptious lunch tells some stories. I'll start with the corn. A few of our favorite people on earth, the Ramirez Clan, all came over one summer eve and we roasted approximately 90 ears of corn and then stripped it off the cob and put it delicately into baggies and froze 12 bags each. It was a long arduous process but totally worth it on these cold days to savor the flavor of summer roasted corn. The rest of the stories aren't quite as laborious. The smoked chicken thigh - is Papa's new specialty. He's been smoking something delightful every weekend for the past couple of months just warming up for Thanksgiving when he'll smoke an entire turkey - we might be enjoying this of which I speak as you read. The squash with brown sugar is pretty much the only way I can get my kids to eat squash - whatever it takes. It is just an acorn squash I baked in our oven. The apples are self-explanatory and not from our backyard (those are long gone) - the bear keeps coming to check though. He visited at 4AM only two short days ago, he was right on our deck. The applesauce is homemade and from those apples that we grow and harvest in our backyard (sorry bear). Winter peas, a hard-boiled hen egg (from our backyard birds) and those chocolate dollops that I mostly love the color of complete today's cold lunch. I realize school isn't in session (I'm playing catch up).

Meatloaf, Buscuit and More

As usual we have two versions of lunch today. There are a handful of things that one kid loves and the other kid detests. It always seems awesome to me that kids that come from the same parents aren't just exactly the same.

The small differences are a hard-boiled hen egg for some stuffing and some chocolate rainbow drops for some Graham bunnies. The rest of the lunch is virtually the same: 1/2 organic banana, some organic red grapes (might be the last time you see these guys until summer), a bit of kiwi, a delicious buttermilk biscuit, some leftover diced up meatloaf (recipe taken from the Threadgill's Cookbook), a dollop of homemade applesauce, and a diced up apple. And tomorrow is Thanksgiving...so obviously we won't be eating lunch from our PlanetBoxes but we will be eating quite the feast. I've got some lunch posts to catch up on though so you might just be hearing from me. Save the ideas for Monday when school starts back up.

Enjoy your Thanksgiving! I love reflecting on all of the things I'm so thankful for from the year past and the list is long and plentiful. A biggie is our ability to always fill bellies in our house with such delicious meals. Happy Eats!

Breakfast for Lunch

Sometimes we like to eat some pancakes for breakfast and stick them in our cold lunch to eat a second time. When I make a batch of pancakes I make a mass of them and that seems to be the most effective way for us to have hot breakfast at least a few times during the week. In addition to the cakes we've got some diced up apples and of course some syrup for dipping the cakes, and finally a Hebrew National hot dog on a Wheat Montana bun, vitamins and juice. Happy School Lunch (er Breakfast).

300 Lunches!

Today I celebrate the posting of my 300th lunch. I think I need to have a party of some sort. Dedication, I suppose I have the two cutest boys on earth to thank for that, and they need to eat. Nothing makes me feel better than filling their bellies up for mid-day meal with the goodness I am able to pour into those little lunchboxes. PS that doesn't mean I've only made 300 lunches.

I should probably have something spectacular to share for the 300th post, but instead I decided I would just make this a normal lunch experience. Pesto that we made from scratch with basil from our very own garden on some wagon wheel noodles, a bagelwich or bagel sandwich on an everything bagel with ham and lettuce and fresh tomatoes. A fake Oreo Cookie (Newman makes them), a sliced apple (pink lady variety), some diced up and pan fried carrots from our garden, a bit of couscous and some cherry tomatoes.

Red Beans and Rice, Pocky and More

Who needs more than red beans and rice and Pocky sticks? Oh what the heck we'll throw about a billion other things in this lunch to spice it up a bit. Cherry tomatoes for starters, and of course some carrots from our garden (NONE of those are going in the compost this year), some couscous is always welcomed with an open mouth, organic pineapple chunks (in the small cup because they are a bit juicy) and a sliced organic apple, some fig cookies and....

A smoked chicken roll with some fresh lettuce (my Papa smoked the chicken himself - and it was delicious!). Oooh and the couscous was lemon/spinach. Yummy!

Facebook Followers Love Fairy Lunch

If you don't already you ought to follow us on our Facebook Page we post extra photos there from time to time and we'd hate for you to miss them.

Our theme for lunch today was fairy inspired. We had a Magical Fairy Party at our Toy Store on Friday and the bits of cheese were cut into hearts, stars, angelfish and butterflies. That made us want a whole fairy lunch...so we ended up with some rainbow chocolate drops, some heart and star sandwiches, grapes and kiwi and bright green apples and as many colors as we could find.

The lunch and my sweet big boy practicing his spelling words before heading to school.

Gus's lunch had some cherry tomatoes instead of the yogurt covered raisins in Simon's lunch. Gus also likes dried apples and they aren't a favorite of Sime's.

Both have magical applesauce and Simon's (at the top) has some wild rice and garlic crunchy sticks. Oh and the sandwiches are filled with turkey - Simon's has lettuce and Gus's has tomatoes.
