3 dl de vinho tinto&lt;br /&gt;&lt;/li&gt;&lt;li&gt;60 g de açucar&lt;/li&gt;&lt;li&gt;sumo de uma laranja&lt;/li&gt;&lt;/ul&gt;Confecção:&lt;br /&gt;&lt;br /&gt;Abre-se o lombo ao ao meio mas sem separar as duas partes.&lt;br /&gt;Recheia-se o lombo, primeiro com três fatias de presunto, de seguida com as ameixas, depois com as fatias de queijo e novamente com três fatias de presunto. Ata-se o lombo com fio próprio.&lt;br /&gt;Faz-se uma  pasta  com o vinho, a pimenta, a salsa, as folhas de alecrim, os alhos, o  azeite e o sal.&lt;br /&gt;Tempera-se o lombo com esta pasta e deixa-se repousar durante 3 horas.&lt;br /&gt;Findo o tempo de repouso, coloca-se o lombo numa assadeira, e rega-se com o caldo de galinha.&lt;br /&gt;Vai ao forno assar a 230ºc, cerca de 60 minutos.&lt;br /&gt;Enquanto o lombo assa, prepara-se o molho, que é muito simples.&lt;br /&gt;Numa caçarola, juntam-se todos os ingredientes, cozinha-se em lume brando, cerca de 20 a 30 minutos.&lt;br /&gt;Depois de cozinhado, corta-se o lombo ás fatias e rega-se com o molho.&lt;br /&gt;&lt;br /&gt;Sugestão:&lt;br /&gt;&lt;br /&gt;Puré de maça, é um excelente acompanhamento para este prato. Basta descascarmos algumas maças reinetas, juntarmos uma noz de manteiga e um pouquinho de agua.
