Ray and his Wendish Noodles
If you visit the Manor Farmers Market for the fresh food and crafts then you’re only getting part of the story. On your next visit to the Market, take a moment and get to know your local history and culture directly from the source. Raymond, the Noodle Man for one has lot to share. His journey across the country filled with rewards for his hard work and loyalty to his employers, Ask him about the garage doors or the hanger on LBJ’s ranch if you get a chance. Yet Ray’s Noodles are also full of Texas History too.

Five Charter members of the Texas Wendish Culture Club.”(L. to r.” Frieda Wendland; Laura Zoch; Lillie Moerbe Caldwell; Emma Wuensche; and Gertrude Mitschke
Raymond’s’ Mother along with her 5 cousins started the Wendish Culture Club in Serbin. Now it has grown into a large museum with visitors from all over the world. They also have a Wendish Fest in Sept. which is attended by several thousand people.
When the club was started it was to let people know about our heritage. The noodles were a recipe that his Mother’s relatives brought over from Germany. At the Fest all the good foods are served including noodles, sausage, sauerkraut, beans. ect. That group of ladies did go to the ’68 Hemisfair in San Antonio when they first started the fair to introduce people to other cultures. The Wendish are still an important part of the permanent exhibit at the University Of Texas Institute of Texan Cultures to this day.

Ptaci Kwas (Bird's Wedding)
Ray also sells noodles to relatives, fellow Church members and whomever he can sell them to. Ray says, “We always tell people the best way to cook the noodles is first cook a hen and use that broth for the noodles. None of our big weddings are without noodles.”
Who are the Wendish? Like so many emigrants, the Wendish came to America for religious freedom and to establish homes. When the Wends came from Germany on a ship called The Ben Nevis in 1854 they brought the original recipe with them for the Noodles that are still made by hand by the ladies at the Texas Wendish Heritage Society in Serbin TX. This art is dying out since the ladies are getting older but hey are trying to find younger women interested in making these noodles.
Come see Ray and the others vendors:

Munkebo Farm Munkebo Farm will have carrots, beets, various herbs, New Zealand spinach, lambsquarters (spinach like), spring onions, green garlic, turnips, eggplant, berry pie, artichoke dip, balsamic dressing and dried herbs.

Green Grass Meats
All Beef. No Surprises.

Organically raised, grass-fed beef cattle produce meat that is leaner and more flavorful than cattle raised in feed lots and fed corn and other fillers. Grass-fed beef is higher in Omega 3 fatty acids and CLA’s than grain-fed beef and since it is naturally leaner there are many health benefits to replacing traditional store bought beef with naturally raised grass-fed beef. David is running his 5# ground beef for $20 special. Call for special orders and he'll bring it to the market for you.

Ray, The Noodle Man - You have simply have to try a little bit of Texas History, noodles made by hand

McGeary Ranch is a sustainable, grass-based farm run by Mike and Judith McGeary in Cameron, just one hour from Manor. They raise their lambs from birth entirely on pasture and never feed grain. Grass-fed lamb is low in fat, yet high in Omega-3, CLA, Vitamin E, and other important nutrients. Their eggs come from chickens that roam their pastures, eating a diet of green grass, organic wheat and sunflower seeds, and GMO-free corn (no soy).

Mata Tamales will be at the market this week with beef, pork, chicken and vegetarian varieties of homemade traditional tamales.

Morning Glory Farm this week brings Green Beans, Cabbages, sweet peppers, tomatoes-plum and regular, fresh chicken eggs and delectable fresh baked coffee cakes.

Gordon's Garden has not had the chance to check in yet.

The Downtown Manor Farmers Market is held every Wednesday from 4-7pm at Jennie Lane SmartPark between Lexington & Rector Streets.

Spinach
Did you know that spinach is not only a rich source of vitamins and minerals, but researchers have identified carotenoids and at least 13 different flavonoid phytonutrients in spinach that act as powerful antioxidants? Antioxidants combat the free radicals that cause oxidative damage to both cells and DNA. When the researchers at the USDA Agricultural Research Service's Human Nutrition Research Center on Aging at Tufts University tested various fruits and vegetables for their antioxidant capabilities, spinach ranked second only to kale among the vegetables tested. The various flavonoids in spinach have been shown to possess anti-inflammatory, anti-mutagenic, and anti-carcinogenic properties, while its carotenoids, such as zeaxanthin and lutein, help fight prostate cancer and protect against eye diseases, such as age-related macular degeneration and cataracts. Since carotenoids are fat-soluble, they are not well absorbed unless fat is also consumed — a g ood reason to add extra flavor and nutrition to spinach by dressing it with extra virgin olive oil. When looking at spinach.s impressive nutritional profile, remember that it also contains many other health-promoting phytonutrients for which daily recommended intakes have not yet been provided, so they are not included in the chart.Read More
If you have any questions about today's Newsletter Ask George Your Question
1-Minute Spinach

view recipe ...
The Food Tip of the Week How do oxalates affect the absorption of calcium in spinach?
Here is the Daily Tip for this week: What factors can cause an oil to become rancid? Betty writes:

When our ancestors came from Germany on a ship called The Ben Nevis in 1854 they brought the original recipe with them for the Noodles that are still made by hand by the ladies at the Texas Wendish Heritage Society in Serbin TX where our immigrated ancestors first established homes and a church. They tell us that this art is dying out since the ladies are getting older. They are trying to find younger women interested in making these noodles.

Our Wendish ancestors came to America for religious freedom and to establish homes.

Actually Patti is not going to be back right now. However, I've spoken to Benita and Francesca and they will be returning next week with tamales and empanandas but won't be able to get to the market until 5.

Paul writes:

http://www.main.org/aog/plantcal.htm

Tells you when you can plant what in Austin. There is almost always
something you can plant. I just planted a couple sweet potato vines in
medium sized pots. Sure larger would be better but I got something done.

A journey of a thousand miles begins with a single step. Paul

With that in mind please see:

I'm a huge fan of container gardening ( most of my citrus and tropicals are in containers) and I ran across this today and found it informative from an apartment point of view.

Top 4 Apartment Homesteading Ideas:

1. Grow your own vegetables. You may not have a yard, but you can
certainly start planting vegetables in pots! Otherwise known as
container vegetable gardening. Even if you don't have a balcony
or patio, you can start growing veggies INDOORS. Really!

Vegetables that grow in the shade (such as lettuce, spinach,
mixed greens, carrots, radishes, and certain berry varieties, often called cool weather crops here in Manor/Austin)
are good first choices for indoor vegetable gardening.

If you have aspirations to grow larger, fruiting plants, such as
peppers and tomatoes, you can use fluorescent, HID or LED grow
lights to provide the necessary light for plants to grow. With a
little creativity and modern technology there's practically no
limit to what you can grow indoors!

2. Plant a medicinal herb indoor garden. Indoor herb gardens are
an excellent choice for the urban homesteader. In terms of what
they require vs. the benefits they bring, herbs may have the
highest return on investment of any plant you could grow. Not
only do they add delicious aromas and flavors to our dishes,
most herbs have multiple beneficial medicinal qualities.

The best part is that it is actually easy to grow herbs indoors.
They require less space, light and care than other edible
plants. Any window with a few hours of sunshine is perfect for a
window sill herb garden.

3. Compost your own food. Long called "black gold" by gardeners
for the invaluable nutrients it provides to plants, compost is
something you can start making from what you are already
throwing away. And now that you've decided to grow indoors (see
idea #1), why not turn your discarded food scraps into the
valuable resource that they really are?

You may not have enough room for a huge compost tumbler in your
apartment, but I bet you could find room for a small kitchen
composter. There are even composters available for smaller
spaces, such as countertops and under sinks.

4. Ferment your own foods. Ah the world of fermented foods. Do
you know of their many health benefits? Do you know how easy they
are to make at home?

Humans have fermented foods for thousands of years. Not only is
fermentation a natural form of preservation that keeps food safe
for consumption longer, it generates billions of probiotics that
are highly beneficial for our intestines and digestive systems.
In fact, probiotics have been proven to render dairy safe for
the lactose intolerant, reduce cavities in children, protect
against colon cancer, aid with IBS (inflammatory bowel
syndrome), and more.

A few of the most commonly fermented foods are: Yogurt, kefir,
sauerkraut, wine, vinegar, aged cheese and kombucha (a delicious
Japanese fizzy drink), all of which you can learn to make at
home.

So there you have 4 ideas to get you started with apartment
homesteading and self-sufficient living in the city. Other ideas
include canning your own food, making nut butters, sprouting,
making bread, and more!

Don't get overwhelmed - start with just one thing. Arguably the
most rewarding practice of urban homesteading is to start growing
your own food, whether it be in a balcony- patio- or indoor
vegetable garden. With the satisfaction of eating your own
delicious organic produce, you will soon be inspired to learn
other self-sufficient living techniques.

To learn more about Apartment Homesteading
<http://containergar deningcenter. com/apartment- homesteading- 101-i\
ndoor-vegetable- gardening/> , Urban Homesteading and Indoor
Gardening, sign up for the FREE Mini Course "Indoor Gardening
Success" at http://www.Containe rGardeningCenter .com
<http://www.containe rgardeningcenter .com/> .

There are spaces available for ACE summer camp. Healthy Saute onion in broth over medium heat for 2 minutes.
While onions are sauteeing, cut chicken into pieces. Add chicken pieces and continue to saute for another 3 minutes, stirring frequently to seal chicken on all sides. Add garlic and continue to saute for another minute.
Add mustard, 1/2 cup broth, and honey. Mix thoroughly and simmer uncovered for about 7-8 minutes on medium-high heat stirring occasionally to cook chicken evenly. This will also reduce sauce.
While chicken is cooking, chop herbs and add at end with salt and pepper to taste.
Serves 4
Serving Suggestion: Serve with
Mediterranean Swiss Chard
Printer Friendly Version of 15-Minute Sautéed Chicken Breasts with Mustard and Tarragon
In-Depth Nutritional Profile for 15-Minute Sautéed Chicken Breasts with Mustard and Tarragon

World's Healthiest Foods web site used with permission to the Manor Farmers' Market.

Eat well,

Marketing for market

Several members of the Manor Farmers' market attended the marketing seminar hosted by the Manor Chamber of Commerce today. Nov. 30 – 7 pm at Lions Club in Manor

The public is invited to attend a meeting at 7 pm Tuesday November 30th at the Lions Club, 105 W. Eggleston in Manor to discuss a planned solar plant.
Within the next six months, Fotowatio Renewable Ventures (FRV) plans to begin constructing one of the nation’s largest photovoltaic solar installations (30 MW), helping Austin Energy meet its target of installing 200 MW of solar capacity by 2020 and generating 35% of its power from clean, emissions-free renewable energy resources by 2020. FRV will own and operate the system; Austin Energy has contracted to purchase all of the power it produces for a 25-year period.

Austin Energy’s 2,800 acre property is located in eastern Travis County, extending from near Blake Manor Road to near FM 969. The solar farm had originally been planned for the northern portion of the site, but has been changed to the southern section of the site in order to preserve numerous existing environmental attributes, including archeological and water features present at the northern location.

Manor Veterinary Hospital is now taking applications for a full-time receptionist position. No Surprises.

Organically raised, grass-fed beef cattle produce meat that is leaner and more flavorful than cattle raised in feed lots and fed corn and other fillers. Grass-fed beef is higher in Omega 3 fatty acids and CLA's than grain-fed beef and since it is naturally leaner there are many health benefits to replacing traditional store bought beef with naturally raised grass-fed beef.

Cattle were meant to graze the land; but somewhere along the way, cattle raisers figured out that they could fatten more cattle for less money - and in less time - if they took them off the pasture and fed them grain and other fillers. Not only does this add unnecessary fats, but it mutes the authentic flavor of the beef, leaving taste of grains and fillers.

Here at Green Grass Meats, we believe in authentic, flavorful meat. Every cut of our meat has the lean, natural taste of real beef - a taste that some folks may have never experienced in their lifetime. We make sure our cattle have plenty of space to graze and get the ample grass they need to grow.

We dry age all of our meat for two weeks, and hand select each cut for our customers.

Our philosophy is simple. Better tasting meat that is better for you. No hormones. No pesticides. No antibiotics. No bloat-inducing, genetically modified feed. Just pure, tender, delicious beef that’s been pasture raised and finished on fresh green grass, sunshine and spring water. That’s the way we do things here at Green Grass Meats. It’s a fact that Stress free cows produce beef that’s superior in taste and texture.

We encourage you to taste the difference and order your grass-fed, free range meats today.

Sincerely,

Peter Aman
Founder, Green Grass Meats

Oh Honey

For you JoAnna:

Denise/JoAnna,

I prefer to leave honey on the bees after the fall honeyflow. This
usually amounts to 40-60 pounds and is sufficient to carry them through
the darth of winter till the first natural nectar is available in late
February. Last year, they were moderately successful and I fed
minimally to some of the weaker colonies. The previous year was a
disaster and it was either feed them or lose them. I use sugar off the
shelf at Wal-Mart or HEB and mix at the ratio of six pounds of sugar to
enough water to make a gallon of syrup. None of this ever reaches my
customers. The syrup is consumed by the bees several months before I
put my extracting boxes on the hives. If a colony has honey stored
through the winter, they get no supplemental syrup. The honey that
JoAnna purchased from me was my Spring Wildflower Blend. The colonies
that gathered this honey were two boxes high when I installed the third
and successive boxes in May. The combs were completely dry and most
frames had new foundation. All of this honey was primarily from nectar
gathered from Horsemint, Indian Blanket and Mesquite Blossom. If there
are further questions, call me at 272-8710 or come out for a trip to
the beeyards.

Thanks, Frank

If you have any questions let me know.
