Bipolar Weather

Darlings,

Michigan is absolutely cray cray.

At least, its weather is.

Just a couple of weeks ago I though I was

in the midst of another ice-age and now

I'm enjoying temperatures in the mid forties.

Today is wonderful, don't get me wrong, but it's

just so confusing. It's getting my hopes up for

spring and that ain't fair.

For all I know that first picture might repeat itself in

a couple days... you just watch hehe.

Chili & Cheese {Dorm Room Edition}

Darlings,

This is one of my favorite lunch recipes EVER.

Except usually lettuce, tomatoes, and a dollop of sour cream

are part of the final presentation.

But when the nearest thing to a grocery store is the University's shop and your

small dorm room contains only a small fridge and a microwave,

you can't be too picky.

It was actually quite delish.

Snow and Goodbyes

This morning marked the end of my sister's visit.

No more late night talks, coffee dates, or trying to both fit on a twin-sized bed every night...

I'm going to miss it all.

Now I just need to survive Michigan's crazy winter and seven more weeks of classes

before I head out to Chicago for the rest of the year.

Even though we didn't get a white Christmas this year it

was still absolutely wonderful.

Sean came down for Christmas Eve and that's when

we had our very own Christmas. It was so nice.

I can't wait till we'll get to spend Christmas Eve

AND Christmas day together.

Then Christmas morning came with lots of gifts, food,
wrapping-paper "fights", and Puerto Rican

Christmas music with the whole family.

There is nothing like quality time with those you love.

I hope you all had a wonderful Christmas season.

Here is to many more to come!

There is something about this apron that brings the goddess

of all domestic goddesses out of me.

Nothing was burnt and they turned out looking EXACTLY

as I had imagined them to look like.

It took me longer to decide which one I wanted than to make it.

Brown Sugar "Cookies"... and Baking Confession no. 1

Darlings,

I have a major baking confession to make.

Ok, here it goes...

I can't make cookies.

*cue the gasps*

It's true!

Not once in my life have I been able to successfully make a batch.

They are always either too hard, too soft, too flat, or too ugly.

Too flat (and maybe too floppy) was the problem with these ones...

I practically made pancakes.

Maybe I should stick to cakes and pastries.

At least they tasted good, they just were not cookies.

Well, better luck next time.

I will not quit till I finally get it right!

Breakfast Burritos with Avocado

Darlings,

What better way to start your day than with a succulent breakfast?

Well, this morning I woke up feeling inspired and breakfast burritos

seemed like the way to go.

They were so good and quite the hit with mom and the little sis.

Enjoy!

Ingredients:

Large flour tortillas
Fresh avocados (Straight from Puerto Rico... Thanks grandma!)
Tater Tots
Mild Cheddar (shredded)
Scrambled eggs (recipe below)
Sausage links (I used MorningStar veggie ones)

Recipe:

Mix 4 eggs together
Add chopped green and red peppers
Add a dash of Adobo seasoning, black pepper, and dried herbs.
Before throwing mix into hot pan make sure to melt a tablespoon of buttered in it.
Throw sliced sausage links into the pan and leave them to darken a bit
Once sausage are slightly darker add the egg/spices mix into the pan
Mix constantly as you would when making scrambled eggs

To a flour tortilla add finished scrambled eggs with sausage and tater tots. Sprinkle

cheddar on top of ingredients before closing the tortilla like a burrito.

Grill it till golden and indulge.
(2 Large Servings)

Ice-skating Downtown

Last night we headed to downtown Milwaukee for a drive around the beautifully

decorated city and for our first ice skating experience of the year.

It was the perfect way to start this Holiday season.

Combine Christmas music, ice-skating, holiday decorations, and my love

and you will have a very happy me.

Great things that happened today...

1. Made my first gourmet breakfast in months

(living in a dorm doesn't really inspire me to play Giada in the mornings)

2. A package arrived in the mail... all the way from Puerto Rico!

(Fresh avocados, tangerine oranges, and other goodies from my beautiful little

island to help with the Holiday-homesickness factor... Thanks grandma!)

3. Running errands with mom and laughing the whole ride

4. Bought enough baking/cooking ingredients to make many of the delicious

goodies Pinterest told me I should try. Maybe I'll get my own Food Network

show by the end of this holiday break...maybe.

5. Ok, this hasn't happened yet but I'm too excited not to share...

Guess who I get to spend the whole day tomorrow with?

Finally Home

I'm finally home with my family and love for Christmas...

and for a whole month this year!

Now that finals are past me I can't wait to share with you
