Midweek Meal Winner

This Lamb Ragu is never argued about, never not-eaten - everyone loves it!

The secret to this dish is to put it in the slow cooker/crock pot all day. The extra veg makes it so tasty!

I use a 6 litre Slow Cooker from Lakeland.

Good Friday with great Hot Cross Buns

It's that time of year again! The Easter bunny is getting ready to deliver all those delicious Easter eggs, and we've had our Easter bonnet parade at school (the hot glue gun has never seen so much action!). Now we are busy creating the Easter egg hunt strategy, and marzipan will be in full action in our beautiful Dark Chocolate Marzipan Easter Eggs - have we forgotten anything?

Good Friday!

More excuses for yummy baked goods!

I used to love hot cross buns until four years ago. I was about 9 weeks pregnant with my youngest and I could only eat hot cross buns. Now the smell reminds me of those nauseous weeks - so I'm not as fond as I used to be. But I'm not a quitter. So every year I try to get that love back and I know that a gorgeous batch of these homemade buns will do the job.

This year I'm relying on the queen of cakes - Mary Berry for her fool-proof Hot Cross Buns recipe. I know Mary Berry won't let me down!
Ingredients:
500g/1lb 2oz strong white flour, plus extra for dusting
75g/2¾oz caster sugar
2 tsp mixed spice powder
1 tsp ground cinnamon
1 lemon, finely grated zest only
10g/¼oz salt
10g/¼oz fast-action dried yeast
40g/1½oz butter
300ml/10fl oz milk
1 free-range egg, beaten
200g/7oz sultanas
50g/1¾oz finely chopped mixed peel
oil, for greasing

For the topping:
75g/2¾oz plain flour
2 tbsp golden syrup, for glazing

HOW TO MAKE:

1. Put the flour, sugar, spices and lemon zest into a large bowl and mix together. Then add the salt and yeast, placing them on opposite sides of the bowl.

2. Melt the butter in a pan and warm the milk in a separate pan. Add the butter and half the tepid milk to the dry ingredients. Add the egg and use your hands to bring the mixture together, incorporating the flour from the edges of the bowl as you go. Gradually add the remaining milk, to form a soft pliable dough (you may not need all of the milk).

3. Tip the dough out on to a lightly floured work surface. Knead by hand incorporating the sultanas and mixed peel into the dough. Lightly knead for 10 minutes until silky and elastic and forming a smooth ball. The kneading can also be done in a food mixer with a dough hook.

4. Oil a bowl and place the dough in a bowl, cover with cling film and leave to rest in a warm place for about 1½ hours or until doubled in size.

5. Turn the dough out on to a floured surface and divide into 12 balls. Line 1-2 baking trays with paper and place the balls on the tray, placing them fairly close together and flattening them slightly.

6. Slip each baking tray into a large clean polythene bag, making sure the bag doesn’t touch the buns. Leave for 40-60 minutes until the buns have doubled in size.

7. Preheat the oven to 220C/200C Fan/Gas 7.

8. For the topping, add the flour to a bowl with 100ml/3½fl oz water. Mix together to make a paste and spoon into the icing bag.

9. When the buns have risen remove the polythene bags and pipe a cross on each bun. Bake for 15-20 minutes until pale golden-brown, turning the baking trays round halfway through if necessary.

10. Melt the golden syrup in a pan and while the buns are still warm, brush the buns with a little syrup to give a nice shine, before setting aside to cool on a wire rack.

Hello and welcome back to Mean Mother Cooker!

It feels like it's been a long time since I've shared any scrumptious recipes with you guys - and I'm so sorry!

We've been through some big changes in the last few years. We've had to deal with the loss of many family members - which made us decide to move back to my hometown of Sheffield after spending eight years in Nottingham.

We sold our beautiful house very quickly and I do miss my kitchen.

We moved to a rental property and I now have this kitchen:

You can see why I might be finding the adjustment a little tough! How I miss my beautiful kitchen...

But this isn't forever and we love being back in Sheffield.

The kids are loving their new school and have fitted in brilliantly. It's also great being close to extended family.

And I've only gone and set up a business with Mr Mean. It's all change!

Working pretty much full time has changed the way we eat. I don't have a dishwasher either in this rental house, so most free time is spent chained to the kitchen sink!

My problem is the same as ever - I won't buy convenience food, so I have to be super organised to get the kids properly fed with fresh and tasty food. Getting them to eat it is another matter!

We spent the start of the year trying to become Lean In 15 with Joe Wicks - The Body Coach. Entertain this Halloween with a gross recipe!

Yuck! This may look nasty and the green, snotty custard is gross - but the taste is divine! The jelly is made with fresh juice and gelatine sheets and the custard is home made, but if you haven't got time, just get some shop bought jelly and custard and add some food colouring to the custard. But it won't be half as yummy! The adults will definitely appreciate this little dessert on Halloween.

Gross Halloween clotted blood drink

Okay, so it's not really blood, but a very spooky drink for Halloween I've done this drink without any alcohol, but if you fancy making it a bit punchier, then add a shot of vodka!

The first ingredient you need is some jelly. You could use a jar of cranberry jelly or make up a packet of jelly. I've used an apple and elderberry jelly that I made last month.

Now put a little on a plate and give it a blast in the microwave to melt it - it only needs a few seconds. Once it's melted, dip the rim of your glass in it and them dip it into some sugar.

Put some chunks of jelly in the bottom of your glass and top up with cranberry juice and a dash of cola. Lovely! That's the Halloween drinks sorted and it tastes like a treat.

The best lamb curry recipe.

I'm a bit of slow cooker addict at the moment. I'm also loving a bit of lamb at the moment too!

I adore a good curry - but I will usually make vegetarian curries. There's so much flavour to be had and sometimes, there's just no need for meat. But I had this lovely bit of lamb in the fridge and decided to make a curry with it.

Mr Mean doesn't get back from work until after the children's dinner time, so I try to make a meal that will be good earlier on for the children and something that will be equally as nice when me and Mr Mean sit down to eat after the children are in bed. The slow cooker always seems a good solution. I can prepare the meal earlier on and avoid the stress of starting to cook a meal from scratch at dinner time with a toddler hanging off my leg. Once I've served dinner to the children, I can leave the slow cooker on for the grown-up's meal later on! I might even go to town and add some more chilli or seasoning - I am living the high life!

I think the slow cooker is one of the best ways to cook a meat curry. It makes the lamb in this dish super melty and tender - perfect for getting picky kids to eat some protein (mine just won't eat tough and chewy meat).

A good trick for this curry is to leave the slow cooker lid slightly ajar for the last two hours. This makes the curry less watery.

Lamb neck makes this Irish stew delicious!

As winter approaches, the slow cooker can provide so much in the way of easy comfort food. As soon as the leaves start falling, my slow cooker is on most of the time. So much so, I'm scanning the supermarket aisles for what ingredients would make a great slow cooker dish!

For some reason, I started thinking about a Christening me and Mr Mean attended years ago. We only had one small mini-Mean then and I had just found out I was pregnant again. We went to the Stalybridge Buffet Bar for post-Christening food and drinks. Now if you're not familiar with the Stalybridge Buffet Bar - let me tell you a bit about it. It's one of the very few remaining Victorian station buffet bars located in Cheshire and it still has it's original marble-topped bar, back fittings and open fire. Anyway, it's a quaint traditional bar - oozing old-school charm.

I think I was about seven weeks pregnant - just on the cusp of rotten morning sickness and falling asleep every other hour. We hadn't told anyone I was pregnant either, because it was before 12 weeks. By the time the food was served - I could have eaten old socks. We got a steaming bowl of stew, and I remember it being the most delicious stew I had ever tasted - I could have eaten three portions of that stew. It was the simplest dish, but still etched in my memory for it's comforting pleasure. Maybe it was the hormones!

So, thinking about slow cooker dishes - I thought I'd try to recreate that delicious Stalybridge stew!

The essential chicken soup recipe

There are some things in life that everyone should know - and a really good homemade chicken soup recipe is the only thing that with make you feel better and remind you of home when you've been feeling a little under the weather.

I love this chicken soup recipe for being a super frugal dish too. It all starts the day before with a roast chicken. Once all the meat is off the bones, I pop the carcass into the slow cooker with a bunch of stock vegetables (1 x onion, 3 x carrots and 2 x sticks of celery) with some black peppercorns and a couple of slices of lemon. Then I top up the slow cooker with cold water and leave it on low overnight.

In the morning, I drain the liquid off (keep the fat too - it's good for you) and discard all the veg and carcass. You can either freeze this and use as a bone broth/stock in other recipes, or use this as your base for this super chicken soup.

Here's how I make my soup:

Start by soaking 1 cup of quinoa in cold water for at least two hours.

Make sure your slow cooker is nice and clean. Put the bone broth/stock back into the slow cooker with the veg (1 x finely chopped onion, 2 x diced carrots, 2 x diced sticks of celery and 1 x minced clove of garlic), left-over shredded chicken and season with salt and pepper. Cook on high for 4 hours. You could also add your favourite herb too.

Now cook your quinoa (follow my guide HERE for perfectly cooked quinoa) and add to the slow cooker. Taste your soup - it may need more salt or a squeeze of lemon.

Healthy & Healing Snacks for Kids!

I'm in love with these little healthy fruit jellies!

Since I've had a blanket ban on sugar in our household (fruit cordial, fizzy drinks, sweets and candies, children's breakfast cereals and low-quality chocolate), the kids feel a bit grumpy.

I know all their friends at school think I'm a bit of tyrant - but I don't care! I'm not giving in to peer pressure - not at the age of thirty-something!

Recently, my old school friend started a Facebook page called Archie's Allergies. Her son has severe multiple allergies and she posts the 'safe' recipes she cooks for her family. She has to be so careful what she gives to her children, but she does a great job of incorporating healthy and fun foods into their diet.

This great vegetarian main dish is full of beans!

Without a doubt, this Aduki Bean & Coconut Curried Stew is one of the best vegetarian/vegan curries in my opinion - and everyone in my meat-eating household agrees!

It's a curry that never disappoints. You won't miss the lack of meat either - it's just so satisfying. Plus, I like an easy life, so if everyone enjoys and eats all their dinner - I'm a happy Mother Cooker!

Aduki beans are a little gem. They are smaller than haricot beans (familiar kiddy favourite - Baked Beans), so I call them baby beans! I also add a whole load of grated veg into this curry. No one knows - and they all yum it up!

The coconut milk makes the dish lovely and creamy. It's also a fantastic store-cupboard meal that's great for a meat-free Mondays. Very cheap and very nutritious.

Feel free to add some fresh chilli for a bit of a kick. I leave it out whilst the kids are young. Of course, if you are a vegan - leave out the yoghurt.

This is the best cough and cold remedy - ever.

I will never bother buying any cough syrups again - they just aren't a patch on the pure goodness of this fantastic Honey, Lemon & Coconut Oil Homemade Cough & Cold Remedy.

Once you try this remedy, you'll never go back. I keep mine in a sterilised jar in the fridge for up to a week. If one member of the family has a touch of a sniffle - everyone has a dessert spoon of it. Not only does it sooth the symptoms of a cold and tastes divine - this remedy helps ward off those pesky germs too.

All the ingredients really work hard together to keep you feeling better. Honey has powerful anti-bacterial, anti-viral and anti-inflammatory properties. Honey is also known for it's soothing abilities when it comes to calming a cough. Lemon is packed full of Vitamin C to keep you topped up and help support your natural defences. The coconut oil is the powerful secret to this being the best cough and cold remedy. Coconut oil contains large amounts of lauric acid - which kills bacteria, viruses and fungi and helps you ward off infections.

This is really a super-charged remedy. And what's even better is - it tastes great. My kids love it. You can also give it more frequently than a shop bought medicine and you don't have the resistance when it comes to taking it - which is always a bonus.

I have some tiny espresso cups that I serve a couple of dessert spoons of the remedy in. My 20 month-old likes to have it like this because he feels like a big boy!

Also feel free to add two dessert spoons to a mug of hot water for a soothing hot drink.

Makes 150ml

Ingredients:
1 lemon, juiced
2 tablespoon coconut oil
2 tablespoon honey

HOW TO MAKE:

1. Gently melt ingredients together in a small pan.

2. Make sure you don't heat too much. The aim is to just melt the coconut oil gently.

3. Store for a week in a sterilised jar in the fridge. Immerse the jar in warm water to melt the coconut oil when needed. Give 1-2 dessert spoons when needed.

*Don't give to babies under 12 months old due to the honey content.

It's autumn! Time to make an easy beef stew!

I think the ultimate British comfort food is beef stew. There's nothing as warming and comforting as a hearty stew that's been cooking all day long, but I want a bit of a change from the traditional, British stew - it's just a bit too stodgy.

I've developed this Autumnal Healthy Beef Stew to be a bit lighter and more nourishing. I used to always thicken my stews by adding flour to the pot before adding the stock (and usually some form of booze - like wine or beer). But I was looking for something less heavy that doesn't require roast potatoes and a giant Yorkshire pudding! This stew is thickened with red and green lentils. I like it quite soup-like too.

Quinoa is a true super food.

But what is the best way to cook it? I'll show you how in my easy-to-follow tutorial: How to cook perfect quinoa.

<style="clear: both; text-align: left;">
Quinoa is a bit of an obsession of mine. Yes, we've all heard that it's healthy and all that, and I'd tried it before and hadn't been that keen to be honest. It was stodgy, bitter and not all-too pleasant.

Quinoa is a seed, so it's perfect for people who find gluten a problem - because it doesn't contain any. It's also very high in protein and has a low GI.

Now I don't like to punish myself all in the name of a super food. I'm not going to eat something that isn't truly delicious just because it's good for me.

But I'm tenacious. So I kept on trying...and trying. And I've found my perfect way to cook quinoa. And it's easy!

Here's what you need to do...

Need a healthy family meal?

You can't go wrong with this healthy pasta sauce!

Kids can be fussy eaters. I know, I have three of them (well, they're not that fussy - really!). One day they will eat something and then the next day, it's all change! So when you mention avocado on pasta, you'd think they would flat out refuse to take part in that sort of carry on. And I'm sure if you mentioned a vegan pasta dish for dinner - to all those carnivores out there, they would laugh in your face. But this recipe is better than the best pesto you will ever have tried. And that's a big claim.

Now the kids are back at school, I'm always looking for a recipe to save time in the evening. This Avocado, Brazil & Cashew Nut Pesto is perfect. I was going to add some broccoli and courgette too, but I ran out of time!

My eldest son has been begging us for three years now to go back to having school meals. So after all his begging and Mr Mean starting a new job that means he is absent during the morning 'get ready for school' routine, we agreed!
Need a healthy snack recipe?

These protein balls could help you quit biscuits!

I've got to stop eating so much sugar. That includes all the cakes, biscuits and chocolate. I find that I can't just eat one biscuit either - it's always nearer ten. There's just something that makes sweet stuff so addictive.

So I've decided to try and change my diet. I could do with losing about 14 pounds so cutting back on sugar and refined carbs seems like a good plan. I always struggle when it comes to reaching for the mid-afternoon biscuits, so I've come up with these Almond, Date and Cranberry Protein Balls.

These Dark Chocolate Marzipan Easter Eggs are a family tradition in the Mean household. I'm a bit of a stickler and have to maintain seasonal traditions, and like with all my Christmas foodie treats, these Easter eggs are something I've made every year.

I am a marzipan lover. I know some people aren't so keen on this almond mix (Mr Mean), and others might call these people just plain weird (I never said that), because who in their right mind would not love a marzipan egg smothered in dark chocolate?

I'm trying to persuade Mr Mean that my homemade marzipan is so much more sophisticated than that bright yellow, highly-almond-flavoured supermarket marzipan (I'd still eat it - I LOVE MARZIPAN!).

He likes my Almond Nut Butter, he likes raw almonds, he'll even eat a cake made with ground almonds - it's just that marzipan flavour. Maybe he thinks I'm trying to kill him with a dose of cyanide? That's what those marzipan haters say: "It smells like cyanide." But how would they know?

And even if Mr Mean can't stand marzipan - one day, he will like my marzipan Easter eggs!

I come from a long line of proud almond lovers. My Nana used to make these Easter eggs every year, along with her Simmnel Cake. Me and my sisters would love to help her, as they are just so yummy.

I am guilty of having the same boring cheese sandwich everyday because I just can't think of anything else to eat. So if you're like me, you'll probably love all these healthy ideas for something that's a little different at lunchtime.

I find lunchtime is the ideal time to have something fresh, healthy and super tasty. Also, if you prepare the salads the night before, with the salad dressing separately, you can have a super lovely lunch ready to go in the morning.
This is Annabel's Rhubarb & Custard Pudding that's a true favourite in our household! Annabel is my sister and is our dessert guru. The kids love this dessert too, although they do like to mix everything together to make a pink fool! It has the texture of a creme brûlée without the sugar topping. This would be great with a crisp biscuit too.

The children adore these little rolls that are super hard to resist. They are a real treat with a bowl of hot soup or made into little sandwich rolls - perfect for packed lunches or picnics. I love these toasted with butter and jam. Yum!

I love to make a good curry, and I never really use meat any more. Curries are a great vegetarian option because there are just so many flavours in them. I promise - you will never miss meat in a curry!

This Vegetable Korma is also a great budget saving recipe. No meat = cheap! Korma is a great vegetarian dish, because it has nuts in it to make it creamy, but they are a super source of protein too.

The kids love this dish. Korma's are pretty inoffensive as far as curries go, so this one is bound to be a kiddy hit. And it means they are eating a load of veg too. Of course, if you just can't go without meat, feel free to add some chicken thighs before you add the carrots.
