 Now that all the pie in my house has been eaten, I can once again &lt;span style="font-weight: bold;"&gt;dream&lt;/span&gt; about pie ... pumpkin, Pecan, Apple, Coconut Cream, Lemon Meringue, Blueberry and just about every other kind of berry that you can imagine. Can you tell that I love pie? On Thanksgiving Day, I tried a piece of every one on the table and had seconds. That was after making 80 pies for Thanksgiving orders at the market.&amp;#0160;&lt;/p&gt;&lt;br /&gt;&lt;div&gt;A couple of weeks before Thanksgiving, we plan a few pie marathon nights, when we mix the dough, roll out the crusts and fill as high as possible with fresh apples, Maine blueberries and combinations of mixed berries and fruit including peach, raspberry, blackberries, strawberries and cranberries. In order to have enough time to bake all the pies fresh for Thanksgiving Day, we freeze the unbaked fruit pies and rolled crusts. Then on Tuesday night we start baking non-stop until Thanksgiving morning. The most popular are always pumpkin, pecan and apple; then the cream and meringue pies - banana-cream, coconut-cream, chocolate cream and lemon meringue.&amp;#0160;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Our little pie marathon is quite the scene. Wish you could all be there to see the trays of pies stacked up to the ceiling on the sheet pan cart. It looks delicious!&amp;#0160;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;And the anticipation just about kills us. We are all ready for company to arrive, but we have to count down two weeks until everyone comes to town for Thanksgiving. It was worth the wait and I look forward to doing it again next year.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Hope you had a Happy Thanksgiving too!&lt;/div&gt;</content:encoded>

4 main-course servings or 8 appetizer servings&lt;br /&gt;
 &lt;br /&gt;
2 racks baby back pork ribs (about 4 pounds)&lt;br /&gt;
1 tablespoon course ground salt (sea salt)&lt;br /&gt;
1 tablespoon course ground pepper&lt;br /&gt;
(Salt and pepper can be substituted with 1 tablespoon Lawry's seasoning salt or McCormick's garlic pepper)&lt;br /&gt;
1 head of garlic&lt;br /&gt;
1 tablespoon olive oil&lt;br /&gt;
Local Barbeque Sauce (recipe follows)&lt;/p&gt;

&lt;p&gt;Preheat oven to 325 degrees F. Line a baking sheet with aluminum foil.&lt;/p&gt;

&lt;p&gt;Remove the thin membrane from the back of each rack of ribs. Slip a sharp object between bone and rib to loosen membrane, then grab membrane with a kitchen towel and peel back from ribs. Discard membrane. &lt;/p&gt;

&lt;p&gt;Season both sides of rack of ribs with salt and pepper (or seasoning substitute). Over season the ribs and rub the season into ribs, some will fall off during cooking. Place ribs (and garlic, recipe below) on baking sheet and place in oven for 2 hours until meat is very tender and almost falling off the bone. &lt;/p&gt;

&lt;p&gt;Place full head of garlic in a square of aluminum foil. Drizzle olive oil over top and wrap foil around garlic to enclose. Place in oven with ribs for 45 minutes, then remove garlic from oven and set aside.&lt;/p&gt;

&lt;p&gt;One half hour before serving, transfer ribs to a preheated grill. Brush ribs with barbeque sauce and cover grill. Turn and baste ribs with barbeque sauce every 10 minutes, for about 30 minutes total. Cut racks into individual ribs or 4 rib sections and serve.&lt;/p&gt;

&lt;p&gt;Local Barbeque Sauce&lt;br /&gt;
roasted garlic, mashed (recipe above)&lt;br /&gt;
1 cup cider vinegar&lt;br /&gt;
1/2 cup soy sauce&lt;br /&gt;
2 cups ketchup&lt;br /&gt;
2 cups honey&lt;br /&gt;
1/2 cup strong coffee (or instant espresso)&lt;/p&gt;

&lt;p&gt;In a bowl, mix all ingredients until well blended. Baste ribs with barbeque sauce while grilling. Barbeque sauce can be made ahead and stored in refrigerator for up to 2 weeks.&lt;/p&gt;

&lt;p&gt;Local Ingredients used in the barbeque sauce include Opa's Honey harvested from hives in Camden, Maine on Mt. Battie and Ragged Mountain, &lt;a href="http://www.sewallorchard.com/"&gt;Sewall's Organic Cider Vinegar&lt;/a&gt; and a strong brewed coffee from &lt;a href="http://rockcitycoffee.com/"&gt;Rock City Coffee Roasters&lt;/a&gt;.&lt;/p&gt;</content:encoded>

<title>Pasta, Pasta, Pasta</title>

&lt;p&gt;When my friend Sharon asked, "Do you want to go to a cooking class at the Hartstone Inn?" I said of course I do.&lt;/p&gt;

&lt;p&gt;Chef Michael Salmon was teaching a class on pasta, pasta and more pasta. Just what we had in mind for a Sunday workout. Kneading semolina pasta dough for about 20 minutes will really build your arm muscles. Michael had an advanced plan for us, as he was prepared to make beet pasta, spinach pasta and egg pasta. We learned the techniques for rolling out the dough by hand and machine, then cut out shapes for tortellini, linguine, pappardelle, ravioli and striped bow-ties.&lt;/p&gt;&lt;p&gt;In three hours we made enough pasta for 12 people to have four entrees, plus more for freezing. And, the pasta machine was fun. I am absolutely hooked. My wish list of kitchen tools now has a new item at the very top. &lt;/p&gt;

&lt;p&gt;&lt;em&gt;Can you imagine mixing fresh herbs and pureed garden vegetables into pasta or fillings for ravioli and tortellini?&lt;/em&gt; At the end of the summer, I usually spend a whole day making pesto for the freezer. I can just picture an assortment of fresh pastas ready for making soups, comfort dinners and a slow simmered bolognese.&lt;/p&gt;

&lt;p&gt;As we wrapped up our &lt;em&gt;work&lt;/em&gt; in the kitchen, Michael turned the shapes and strands of pasta into Spaghetti with a Creamy Prosciutto and Roasted Pepper Sauce, Pappardelle with Pesto, Oven-Roasted Tomatoes and Grilled Tiger Shrimp, Sweet Potato Ravioli with a Pine Nut and Sage Butter Sauce and Three-Cheese Tortellini with Chicken and Pesto. We were all hungry and the room grew silent as everyone filled a plate with the Hartstone's handmade pastas. &lt;/p&gt;

Chef Michael Salmon and his wife Mary Jo have turned the inn into an elegant retreat and culinary destination. (I met someone in the class who was vacationing from Boston's North Shore.) Michael opens the inn's kitchen for one-on-one cooking classes like &lt;a href="http://www.hartstoneinn.com/blog/2008/04/todays-pasta-cooking-class.html"&gt;Pasta, Pasta, Pasta&lt;/a&gt;. If you can't make it to a class in Camden and still want to learn about pasta making, the recipes and step-by-step pictures are in his book &lt;a href="http://hartstoneinn.com/gift.htm"&gt;Hartstone Inn Cookbook&lt;/a&gt;. Better yet, reserve a table for dinner and let Michael cook for you.&lt;/p&gt;

&lt;p&gt;Oh, I almost forgot to tell you about a Maine chocolatier that I met at Michael's cooking class, &lt;a href="http://blackdinah.wordpress.com/about/"&gt;Kate&lt;/a&gt;. All Kate's chocolates are made by hand using local cream infused with organic herbs, flowers and fruit. Kate was sweet enough to bring some chocolates along and I ate them all in one sitting. We will definitely be carrying her &lt;a href="http://blackdinahchocolatiers.com/"&gt;Black Dinah Chocolates&lt;/a&gt; at the market. Actually, I'd really like to take a field trip to Isle a Haut, and eat at her shop and cafe. I'm sure it is an island of chocolate heaven.&lt;/p&gt;
