About the Wynwood Brewery

We brew our beer in a 15-Barrel two-vessel system. One barrel is equal to 31 US gallons. At any given time we can produce about 500 gallons of beers in our 15 barrel fermenters and close to 1000 gallons in our 30 barrel fermenters. We use premium malts from the US as our base malt and British and German Malts for our caramel malts. We make our own unique interpretation of traditional styles with character and boldness. THE STORY in a word or two

SUGARCANE raw bar grill is located in the heart of Miami’s emerging Midtown district 3252 NE First Avenue. Developed by the owners of SAMBA BRANDS MANAGEMENT, SUGARCANE raw bar grill is inspired by international influences and South American spirit.

Three distinct kitchens: robata, hot and raw bar unite for a fresh take on tradition and a unique culmination of flavor. Embarking on a quest for the simple pleasures of life: eating well, kicking back and celebrating with friends – the concept focuses on a ‘shared experience’ through its eclectic menu of small plates, artisanal cocktails, and an extensive rum selection. With 4,200-square-feet of interior space, an impressive outdoor terrace, a private gallery, and indoor/outdoor bars – SUGARCANE raw bar grill is the perfect venue for special events.

THE CHEF

Born to Chinese and Trinidadian parents, Timon Balloo’s scrapbook of memories leads with days on the farm, ethnic recipes and a favorite pastime of watching not-so-traditional childhood television – PBS’ Yan Can Cook. So, in 1998 when Balloo enrolled in Johnson & Wales University, it came as no surprise to family and friends that he would pursue a career behind the stove.

While Balloo has since been recognized as a Distinguished Visiting Chef (2012) by the University, his first real lesson in the kitchen was on humility, taught by “Professor” Allen Susser. “In Susser’s kitchen, you were broken down and then built back up,” Balloo explains. “My time cooking at Chef Allen’s gave me a new respect for food.”

Through the international program of extended studies, Balloo traveled to Belgium to work at Hotel Métropole under French Master, Chef Dominique Michou. From Entremetier Comis (hot line) to Patisserie Comis, Balloo honed his classical culinary training skills. “The vegetables and animals would often come straight from the farm,” Balloo explains. “It wasn’t unusual for us to have to skin and pluck the next dish… now that was farm-to-table cooking!”

Returning to the United States, Balloo became Junior Sous Chef at the five-star AZUL in Miami’s Mandarin Oriental Hotel, under the leadership of Michelle Bernstein. Identifying Bernstein as his greatest mentor, Balloo recalls, “She taught me to cook from my heart and, as such, I started to craft my own approach to food with Asian-Caribbean soul.”

From La Broche in Miami to SUSHISAMBA park in New York City, Balloo cooked his way to the top, earning the title of Executive Chef. Among his favorite dishes at SUSHISAMBA was the Moqueca Mista, “It touches a depth of flavors, is simply prepared – void of ‘fancy’ techniques – and has personality when it enters the dining room. Food is about life and excitement, but it’s also very much about integrity.”

Through the use of simple ingredients to fuel great food, Balloo’s signature juxtaposition of bold flavors on small plates started to take shape. A brief, one-year departure (2007-2008) from the SUSHISAMBA restaurant group resulted in a partnership with Amir Ben-Zion to launch Domo Japones in Miami’s Design District. The Japanese-concept highlighted one-of-a-kind ingredients in a former post office turned restaurant setting. Though brief, Balloo’s menu was awarded three stars by The Miami Herald and voted “Best Japanese 2008” by Miami New Times.

An opportunity to reconnect with the SUSHISAMBA restaurant group in 2009 as the Executive Chef and Partner of SUGARCANE raw bar grill (SUGARCANE) brought Balloo back to their kitchen. “I’ve always appreciated the brand’s contribution to the industry, from the great ingredients to the warm environment.”

Opening with much fanfare in 2010, SUGARCANE has been celebrated locally with a three star review from The Miami Herald; a nod for “Best New Restaurant,” and “Best Up-and-Coming Chef” from Miami New Times; and the titles, “Restaurant of the Year” and “Chef of the Year” (Miami) by Eater. On a national level, the restaurant earned recognition as a semi-finalist for “Best New Restaurant” by the James Beard Foundation and Balloo received a nomination for “The People’s Best New Chef” by Food & Wine in 2011. Most recently, Balloo was honored as Distinguished Visiting Chef by Johnson & Wales University, not to mention the restaurant’s AAA Four Diamond rating for 2013.

Today, Balloo’s zeal and vivacity continues to manifest in his dishes. Dana Cowin, Editor-In-Chief of Food & Wine said it best, calling Balloo’s menu at SUGARCANE, “A greatest hits of delicious dishes.”

Drunken Dragon Late Night Restaurant and Cocktail Bar Brings Korean BBQ to South Beach

Drunken Dragon, South Beach’s first Korean barbecue restaurant, presents the do-it-yourself method of tableside grilling paired with modern Asian tapas, courtesy of executive chef Xavier Torres (formerly of Miami’s The Dutch, Nobu, Zuma).

Homecookin’ Hospitality Group partners Jarred Grant, Angel Febres and Conrad Gomez, along with KNR Hospitality’s Navin Chatani, are the masterminds behind the Asian-inspired gastropub and cocktail bar.

Drunken Dragon boasts Korean barbecue tables with communal grills for guests to roast an array of intensely-flavored food over an energetic flame, along with an extensive menu of modern family-style dishes made for sharing. Non-traditional plates are influenced from all over Asia – from Thailand, Japan to Vietnam – and are lovingly prepared to satisfy a variety of palates.

The exterior of Drunken Dragon, a plain strip mall, is just foreplay for the provocative and well-crafted interior; as designed by Los Angeles-based [Studio Collective]. As an homage to the Latin supermarket that previously called the space home, the restaurant is marked simply by a red neon “MARKET” sign floating above a set of dark tinted windows. Upon entering the restaurant, guests are greeted by a dim sum cart hostess stand and walls decked out with heavy ropes and steamy photography of Japanese bondage. A 300-pound slab of reclaimed Douglas fir from Oregon is suspended from the ceiling, functioning as a communal table for large groups near the equally striking bar of the same sustainable wood.

Hello! My name is Grace Della. The idea of offering culinary tours came to me over 10 years ago when I first mentioned it to my mother. My mom loves to cook, loves food and learning about different cultures just as much as I do. I was at my parent’s home and my mom and I were sitting outside overlooking her 60 different varieties of orchids in her lush tropical garden after having a few too many glasses of Malbec wine. I looked inside my mother’s rustic kitchen with copper pans hanging from the ceiling, turn my head back to her and said: “Mom, you have a passion for cooking, you love people and teaching is in your blood, as soon as I get back home I am starting to market cooking classes and culinary tours for you to conduct right here in your beautiful kitchen and picturesque town.”

Today after a decade, my mother gives cooking classes of traditional empanadas and culinary tours that are booked solid every week. It was not my idea nor my online marketing skills that made my mom successful – it was her. I have seen so much love going my mother’s way in the last decade (people that took her cooking class 5 years ago still sends her holiday cards on the mail!). People just connect with her, and I truly believe it is because she is who she is – and she shares her passion for food and her home with such an open and giving heart.

I remember as a little girl that the happiest times at home were when my mom would cook, family would come around and everyone would share stories around the table. I came up with the idea of Miami Culinary Tour’s first tour called the Cuban-Inspired Food Tour back when nobody had ever heard of food tours in Miami. I was lucky to have some of the most passionate people joining my team and believed in my idea. Together we introduce the different flavors that make up Miami with those who share our passion for food.

NAOE Miami Japanese Restaurant on Brickell Key - Chef Kevin Cory

If you're visiting Miami's Brickell Key, don't pass by this gem. In this petite Japanese jewel box, only eight diners can claim seats. Chef/owner Kevin Cory and manager Wendy Maharlika treat you like a guest in their own home. Maharlika holds down the dining room while Cory single-handily prepares every dish that comes out of the kitchen — which means timing can sometimes be off as he keeps pace with the volume. But with food like this, you’ll hardly notice. (Chef Kevin Cory has received numerous awards since opening NAOE)

Meals start with the chef’s omakase bento box and then proceed to presentation after presentation of pristine and tender sushi delivered until you call uncle. Though the menu changes daily depending on which fish is freshly sourced from Japan and local harbors, recent dishes included housemade egg tofu with uni and miso-butternut squash soup. Housemade barbecue eel is sweet and toothy, and comes topped with the chef’s own special soy sauce. Speaking of soy sauce, it’s the mystery ingredient in the signature ice cream, and it makes for a surprisingly delicious end to the meal.

At the age of 19, Kevin Cory started to learn Japanese Cuisine from Executive Chef, Nobuo Kase. What is the difference between BJ's Pizza & Grill, BJ's Restaurant & Brewery and BJ's Restaurant & Brewhouse?

In 1978 our first restaurant opened in Santa Ana, California and was called "BJ's Chicago Pizzeria." The unique deep dish pizza was an immediate hit and additional "Pizzeria" restaurants were opened in beach cities along Southern California's coastline from San Diego to Los Angeles.

Does BJ's offer any vegetarian dishes?

BJ's offers a variety of vegetarian dishes. Popular items include our Avocado Egg Rolls: crispy, golden wontons wrapped around a blend of avocados, cream cheese, sun dried tomatoes, red onions, cilantro, pine nuts, chipotle pepper and spices. We also offer a variety of salads, including our Garden Medley Salad served with crisp romaine lettuce, artichoke hearts, fire-roasted red peppers, tomatoes, red onions, feta cheese, drizzled with our balsamic vinaigrette dressing.
And of course our signature BJ's deep dish pizza has many vegetarian options. Our Vegetarian Pizza is topped with mushrooms, green peppers, black olives, white onions and fresh Roma tomatoes. You may also build your own veggie pizza from a long list of ingredients, such as pineapple, sweet corn, fresh basil and artichoke hearts.

And you can't leave BJ's without diving into our legendary Pizookie® dessert. This is a freshly baked, hot out of the oven, rich and delicious cookie topped with two scoops of ice cream and served in its own deep dish. Flavors include Oreo cookie, chocolate chunk, white chocolate macadamia nut, peanut butter and oatmeal raisin walnut.

Chef Pascal Oudin of "Pascal's on Ponce"

Pascal Oudin, 45, chef & owner of the award winning French restaurant, Pascal's on Ponce, in Coral Gables, was born and raised in Bourbon Lancy, France.

Pascal Oudin fell in love with the culinary arts at a very early age, assisting his mother in the kitchen and began his professional career at the tender age of 13 at a restaurant in Moulins, a small town in France's gourmet capital of Bourbonnais.

By age 17, Oudin received the prestigious "Best Apprentice Chef Award" in France. This top distinction allowed him to continue his education in the legendary kitchens of France under the masters of haute French cuisine. Alain Ducasse, of the acclaimed Louix XV in Monaco, gave him his first real break at the Les Terrace restaurant in the Juan Les Pins hotel, teaching him about the importance of seasonal cooking and the chemistry of food. Pascal undertook his chef's training under 3-star Michelin luminaries Roger Verge and Joseph Rostang. Gaston Lenotre, of Lenotre in Paris, taught him how to work with pastry and Jean-Louis Palladin of Jean-Louis in Washington. Q.C.., served as his mentor when he first came to America in 1982.

Relocating to Miami in 1984, he began this leg of his career as the executive chef of Dominque's Restaurant at the Alexander Hotel, on Miami Beach and held that title at many of South Florida's highest ranked hotel restaurants for 14 years. In 1989, Chef Oudin won the prestigious "Florida Chef of the Year Award Chefs in America Foundation, at the Colonnade Hotel in Coral Gables.

In 1995, while at Grand Cafe, Oudin was cited by Food & Wine Magazine as one of America's "Best New Chefs" and by Esquire Magazine as "Rest New Chef in Florida". In 1997, Oudin helped create the concept for the Sweet Donna's Country Store in South Miami, where he created his own gourmet product line of dressings and sauces.

In 2000, Oudin realized a lifelong dream and opened Pascal's on Ponce, an intimate 55-seat French restaurant with sublime contemporary French cuisine, featuring local ingredients, prepared fresh when ordered, utilizing the classical French techniques Oudin gleaned from the masters. It was immediately recognized by food writer John Mariani, in Esquire Magazine, who named Pascal's on Ponce restaurant as Best New Restaurant in America for 2000. Gourmet magazine called Pascal's a Neighborhood Gem in 2002 and the New York Times recognized Pascal's as a top new restaurant in 2003.

Mariani says of Pascal's on Ponce: "Every flavor is utterly natural and intense. Pascal's is that rare thing in the Miami area: a restaurant empty of pretension and full of good taste."

Now here’s a place where the worlds of booze-pounding college apes and hot moms converge: The Goose Lounge, a new bar that will feature a rotating microbrew and wine menu, just opened in Coconut Grove.

The beer menu has 60+ microbrews from all over the world, as well as 12 beers on tap including Bell’s Oberon Ale and Stone Ruination IPA.

Some of the bottles on the beer menu are Wells Banana Bread Ale, Belhaven Scottish Ale, Hazed and Infused, and some (semi)local favorites like Cigar City Guava Grove and Swamp Ape IPA.
The wine, which is sold by the glass, is a rotating list of six red and six white wines imported from Argentina, Chile, New Zealand and South Africa.

Oh yeah, don’t forget about rice wine: sake. Stand by for sake-slinging madness straight up or as a mixer.

Saturday’s grand opening party also features some music put on by Deep Roots with Jean P Jam, but The Goose will host live bands every Thursday and Friday, and even hosting aspiring musicians for open-mic Monday.

On the outside, The Goose blends into the backdrop of the Grove commercial sector. The inside: purple ceiling ducts and decorated olive green walls with murals that resemble Basquiat paintings (that’s a good thing), a long wooden bar, a makeshift stage and a pool table buried in the back corner.
Tapas like yuca fries, ceviche, pulled pork sliders and meat n’ cheese platters will be served to satisfy the urge to forage.

China Grill Moving from South Beach to Brickell

As if the dining selection couldn't get any hotter in Downtown Miami! News of China Grill opening up this year on Brickell is over the top...

The new 15,000-square-foot China Grill at 801 Brickell Ave. will be a three-level restaurant with elevated ceilings and a covered outdoor dining garden and bar. Designed by New York's ICRAVE Studio in association with Miami based Arquitectonica, the new Brickell restaurant is part of an effort to refresh the brand which this year will celebrate the 25th anniversary of its flagship New York opening.

China Grill has locations in Fort Lauderdale, Las Vegas, New York, and Mexico City, all of which are expected to receive renovations and a new culinary concept.

In 1987 China Grill New York opened to a packed dining room and immediate critical acclaim. By its fifth anniversary, the restaurant was as busy as ever and regarded as one of the hottest destination spots in New York City.

Jeffrey Chodorow’s labor of love, his first and only venture into the restaurant world, had proven to be an enduring success in a scene where restaurants seemed to come and go overnight. But something was missing…he wanted mashed potatoes.

Never satisfied with the perception that China Grill was a "Chinese" restaurant, Jeffrey broadened the horizons to include even less likely pairings. "Why not wasabi mashed potatoes? Fadó Irish Pub & Restaurant Miami @ Mary Brickell Village

We're excited to bring a great Irish pub to Miami. Fadó, pronounced f'doe, is the Irish expression meaning "long ago". The term was commonly used as the preface of old Irish stories told by the Seanchaí (Shana-kee) or storyteller. At Fadó we are telling the story of Ireland's rich and celebrated pub culture. It is a culture of hospitable surroundings, good food and good drink, and friendly conversation- what we call "craic" (prounced "crack").

We're proud of a number of things- the quality of our food, great pints, how the pub looks and feels and the people who take care of our guests.

Fadó is unique in that it was constructed in Dublin and then shipped to Miami for assembly at our Mary Brickell location. Irish pubs have always been the social center for their communities and Fadó continues that fine Irish tradition.

Design and Decor

The story of Fado Miami begins with the design of the pub. It's broken up into a number of sections, each with a specific intent.

The Victorian Long Hall

As you enter the front door you walk into the Victorian Long Hall. A highly decorated dark Victorian large area meeting space mean to represent the Long Hall at Trinity College in Dublin. The Victorian theme is typified by the Dark Cherry wood, ornate light fixtures, elaborate flooring design and decorative stain glass. It is a style of architecture named for the Queen of England Queen Victoria.

As you turn right and head up the stairs to the next level you are standing directly in front of the inside upper stage. This is where a typical Irish Ceili or Sessiun might take place; think a lot of dancing and singing, it's great craic!

The Shop

Moving forward we enter the Shop area of the pub. The Shop is another one of the Fado primary Design and Décor elements. Typically, the Shop was a place for rural people to meet, buy some things for the home and farm, and socialize. You could go shopping, have a bottle of Guinness and a shot of Irish whiskey and talk with neighbors you haven’t seen in a while. It was the perfect meeting place.

A Pub for Today

As you continue onward you'll enter a more contemporary area of the pub. This newer design is meant to show the younger influence on metropolitan styles that the major European cities are having on today’s Ireland. This is portrayed through the grand windows showing off the Miami skyline and the shopping areas across the street. Also notice the addition of mood lighting accents in the floor and around the old Celtic artwork depicting the Legend of Oisin and the Tir Na Nog. It is the perfect mix of new technology and traditional Irish themed values.

The Cottage

Moving on we enter into the Tradional Country/Cottage theme. In Irish history the tradition of the pub begins in the home. It was actually against ancient Irish law to not extend hospitality to strangers. You'll notice the fireplace and the family pictures. The word Pub comes from the word 'Public House'; a Public House owner would have been called a Publican. Opening one’s home to the public and catering to a strangers needs is the core of what we do here at Fado.

The Importance of Snugs
Next, you will notice another small “room”. This secluded area is called a snug. You will see these throughout the pub and around the bar. It is an important and unique design feature in many Irish Pubs. It originated as a private area attached directly to the bar so that the local parish priest could enjoy his drink in peace!

The Indoor / Outdoor Deck
Go through the door and we are now in the Deck area of the Pub. The Top Deck Lounge, overlooking Mary Brickell Village, is a perfect place to meet friends for Happy Hour, have a meeting or catch a soccer game!

The Deck Area is important to the night life in Miami. Almost all of the windows open up to the street. The light fixtures were selected to represent make-shift outdoor lighting and the furniture is designed to be like typical outdoor deck furniture.

The artwork here is another representation of the Oisin legend. The story goes that Oisin, living in Tir Na Nog as an immortal, falls in love with a mortal woman. He is allowed to leave his land and be with her as long as he stays on his horse. His lover is so overcome with happiness that as she gets on the horse to join him, he falls off and immediately ages and dies.

You will also see artwork telling the story of the freedom of Saint Patrick. He was abducted and sold into slavery to an Irish chieftain when he was just 16 . The design tells the story of his escape and eventual return to Ireland. Saint Patrick is known for saving the Irish people from paganism (the "driving out of the snakes") by bringing Christianity to the clans. Saint Patrick’s day is a huge celebration in both Ireland and America and a major event for Fado Irish Pub. Interestingly enough, there are no snakes on the island of Ireland to this day.

The Stag's Head

Leaving the Deck you'll enter into the Stag’s Head Victorian section of the Pub. It is meant to represent a famous bar in Dublin with the same name. Here you'll see the small Library section of the Pub. This is where we pay homage to some of the great writers in Irish Literature. Writers such as James Joyce, Oscar Wilde, Bram Stroker, Samuel Beckett, and Brendan Behan. These writers created wonderful masterpieces and did most of the work while drinking in Irish Pubs.

Directly to the right of the Stag’s head you see the elegant Dublin Room. With its large communal table, it is the perfect place to have a family dinner or a small private party.
