Não descame, apenas limpe e tire as entranhas.&lt;br /&gt;Coloque o peixe numa grelha e asse-o na churrasqueira. &lt;br /&gt;Prepare uma salmoura (em uma travessa coloque água fervente com sal).&lt;br /&gt;Quando o peixe estiver pronto, sirva na travessa mergulhado na salmoura.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tipicamente, o peixe assado de escama é servido acompanhado do pirão de café. As nozes dão um toque especial e esse é um prato leve que me ajuda a acabar com o monte de nozes que ganhei nas cestas de Natal hehehe. &lt;br /&gt;A foto não ficou muito boa. Corte as maçãs verdes em cubos e a vermelha em meia-lua. Regue as maçãs com o suco de limão (isso vai evitar que elass escureçam na salada). &lt;br /&gt;Ponha as unas passas em água fervente para ficarem macias e inchadinhas (se preferir deixá-las de molho no rum, também  fica ótimo). Escorra as uvas. Em uma saladeira, ponha a batata, a maçã verde, a uva passa e misture  maionese. Salpique a salsa, decore com a maçã vermelha e as folhas verdes. Sirva em seguida.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;A maionese é um prato quase que obrigatório ns festas de fim de ano e serve de ótimo acompanhamento para churrasco ou galeto. É um prato simples e fácil de preparar que permite muitas variações: bassta manter a base (batata cozida) e alterar o molho (normalmente a maionese, mass pode ser usado iogurte, uma mistura de maionese e mostarda, molho de limão, creme de leite, etc.) e/ou outros ingredientes (pode-se colocar castanhas, tomate cru (sem as sementes para não deixar a maionese úmida), tomate seco, azeitonas, ervas (manjericão, ervas finas, salsa, etc.). Cozinhe em uma panela com água e sal e até ficar macia. Pique os cogumelos. Tire as sementes dos tomates e pique a polpa. Descasque e pique os dentes de alho.Corte o pimentão ao meio, tire o miolo com as sementes e corte em quadrados grandes (aprox 3cm de largura).&lt;br /&gt;&lt;br /&gt;Aqueça a panela em fogo médio com duas colheres e meia de azeite. Adicione os cogumelos e duas pitadas de sal e mexa bem. Cozinhe por cinco minutos, em seguida, aumente o fogo e cozinhe por mais dois minutos.&lt;br /&gt;Coloque os cogumelos fritos (com todo o líquido que estiver na panela) em uma tigela para uso posterior. Adicione uma colher e meia de azeite na frigideira em fogo médio e adicione o pimentão vermelho. Cozinhe por cerca de cinco minutos. Reserve.&lt;br /&gt;Com a panela em fogo médio acrescente duas colheres de sopa de azeite de oliva. Despeje o tomate e o alho e misture bem. Cozinhe por dez minutos.&lt;br /&gt; Adicione o açafrão, alecrim e páprica doce ao tomate e o alho. Mexa bem por cerca de um minuto. Adicione o caldo e, em seguida, o arroz. Empurre o arroz para o fundo da panela com uma colher. Aumente o fogo de modo que a mistura esteja levemente fervente. Adicione os cogumelos à mistura.&lt;br /&gt;Cozinhe por 10 minutos, em seguida, baixe o fogo e cozinhe por mais oito minutos em fogo baixo. Adicione o pimentão e, em seguida, remova a paella do fogo. Acrescente a gema e continue misturando.&lt;br /&gt;Leve a massa a geladeira por 30 minutos dentro de um saco plástico.&lt;br /&gt;Abra a massa com um rolo  +/- 05 cm. Corte em formato de barrinhas com&lt;br /&gt;o cortador ou mesmo com uma faca.&lt;br /&gt;Coloque as barrinhas numa assadeira retangular e pincele gema batida&lt;br /&gt;com um pinguinho de azeite, salpique queijo ralado e leve ao forno&lt;br /&gt;para corar um pouco. &lt;br /&gt;Hoje não vou passar receitas de sopas, porque já tem várias aqui no blog. Vim colocar dicas de como incrementar a sopa na hora de servir em casa. Mesmo que não haja variedade de sopas, se houver variedade de "complementos" para a sopa os comensais vão se sentir em um verdadeiro bufê.

&lt;br /&gt;Vamos à relação de complementos às sopas:
&lt;br /&gt;&lt;b&gt;&lt;i&gt;Queijos&lt;/i&gt;&lt;/b&gt;&lt;i&gt;&lt;/i&gt;
&lt;br /&gt;- Parmesão ralado: esse é um item quase obrigatório.
&lt;br /&gt;- Provolone em cubinhos: ele se derrete um pouquinho com o calor da sopa e hummmmm...

&lt;br /&gt;&lt;b&gt;&lt;i&gt;Castanhas &lt;/i&gt;&lt;/b&gt;&lt;i&gt;&lt;/i&gt;
&lt;br /&gt;- Castanha de caju triturada: se nunca tentaram colocar na sopa, experimentem. É uma delícia.
&lt;br /&gt;- Castanha do Pará em lascas: vai bem com qualquer sopa, mas vai melhor com as sopas cremes de um único ingrediente principal (sopa creme de abóbora, creme de cebola, etc.)
&lt;br /&gt;- Nozes picadas
&lt;br /&gt;- Amendoim cru ou torrado
&lt;br /&gt;
&lt;br /&gt;&lt;b&gt;&lt;i&gt;Verdinhos&lt;/i&gt;&lt;/b&gt;&lt;i&gt;&lt;/i&gt;
&lt;br /&gt;- Alho poró: em rodelinhas ou cortado em miudinho
&lt;br /&gt;- Salsinha: as folhinhas separadas inteirinhas ou cortado em miudinho

&lt;br /&gt;Para outros que não fazem feijão porque acham complicado, digo que cada pessoa tem um jeito de preparar esse prato básico da culinária brasileira. Abaixo seguem três receitas diferentes para os iniciantes escolherem.
&lt;br /&gt;
&lt;br /&gt;&lt;b&gt;Meu feijão&lt;/b&gt;
&lt;br /&gt;Lavo meio quilo de feijão e cozinho apenas na água (sem mais nada, nem sal) na panela de pressão por 20 a 30 minutos. Cozinhando sem sal, ele fica macio mais rápido (acho que todos viram algo sobre equilíbrio osmótico na escola).
&lt;br /&gt;Depois de cozido, separo em porções individuais e preparo temperos diferentes para cada uma delas. Às vezes, congelo sem tempero e só tempero na hora de comer.
&lt;br /&gt;Temperos:
&lt;br /&gt;Alho: refogo uma cabeça de alho, acrescento o feijão já cozido e adiciono o sal.
&lt;br /&gt;Linguiça calabresa, cebolinha verde, cominho, coentro, cebola e paio são outros 'aditivos' que costumo colocar no meu feijão.
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;&lt;b&gt;Feijão da mãe da Rúbia&lt;/b&gt;
&lt;br /&gt;- O feijão deve ficar de molho de véspera (na noite anterior, coloque o feijão de molho)
&lt;br /&gt;- Escorra a água do feijão e lave-o novamente. Com um pilão (ou com o fundo de um copo) aperte o feijão - a Rúbia não soube explicar por que a mãe dela faz isso e outras amigas disseram que já viram suas avós realizando esse procedimento - deve servir para alguma coisa.
&lt;br /&gt;- Prepare o tempero: pique bem miudinhos uma cebola e meia cabeça de alho. Refogue até ficar douradinho. Acrescente salsinha e coentro e refogue mais um pouquinho.
&lt;br /&gt;- Acrescente o feijão (sem água ainda) e refogue mais um pouco. Acrescente água,  a linguiça e o louro. Se for colocar verduras, coloque agora. Verduras que foram sugeridas: repolho, couve e nabo. Deixe cozinhando por 40 a 50 minutos (ela usa panela normal, não de pressão).

&lt;br /&gt;&lt;b&gt;Feijão da Sílvia&lt;/b&gt;
&lt;br /&gt;O feijão fica de molho na véspera.
&lt;br /&gt;Refogue cebola e acrescente o coentro e o louro. Adicione o feijão e a água. Acrecente uma abóbora cortada em pedaços grandes. Feche a panela de pressão e deixe cozinhando por cerca de meia hora. Deu, está pronto.
&lt;br /&gt;Esse feijão eu provei e adorei a idéia da abóbora. Ela fica bem molinha e dá uma cor e uma textura ótima pro feijão quando derrete. Uma delícia!

Bata as claras em neve. Quando estiver firme, acrescente 1/4 de xícara de açúcar e continue batendo (batedeira). Acrescente mais um quarto de açúcar e bata novamente. Reserve as claras batidas com o açúcar. &lt;br /&gt;Junte as gemas, o restante do açúcar e a baunilha. Bata bastante até ficar um creme esbranquiçado e cremoso. Misture as duas partes sem deixar de bater até deixar bem cremosa. &lt;br /&gt;Com a batedeira desligada coloque um pouco da farinha de trigo, do amidos de milho e a pitada de sal. Misture devagar usando uma colher para não empelotar. Acrescente o restante da farinha de trigo e do amido de milho. Vá misturando sem pressa! Polvilhe uma fôrma redonda com fundo removível com farinha de trigo. Despeje a massa e leve ao forno aquecido, a mais ou menos 180 graus.
