Our beef is all natural and dry aged to guarantee taste and tenderness. We only
use local cattle. Our beef is &lt;br&gt;
USDA inspected for quality. We believe that Roseda is premium angus beef to be

&lt;p&gt;&lt;strong&gt;How does it make beef taste
better?&lt;/strong&gt;&lt;strong&gt;&lt;br&gt;
&lt;br&gt;
&lt;/strong&gt;These days, it's all about speed.
Mass-produced beef is rushed to&lt;br&gt;
grocery stores within 2-4 days of harvest. In all that hurry,
the true,&lt;br&gt;
rich taste is left behind. At Roseda, we hang our beef in a
refrigerated&lt;br&gt;
cooler immediately after harvest for a period of 14 to 21
days.&lt;br&gt;
&lt;br&gt;
We keep the humidity low, so moisture from the beef gradually&lt;br&gt;
evaporates, leaving a greater concentration of rich, beefy
flavor.&lt;br&gt;
Natural enzymes also break down the more fibrous tissues,&lt;br&gt;
tenderizing the meat. The dry aging process takes longer and&lt;br&gt;
costs more. That's why most grocery stores – and even many&lt;br&gt;
restaurants – offer little, if any, dry-aged beef. But those
who&lt;br&gt;
appreciate tender, rich-tasting beef know that dry aging is
worth&lt;br&gt;
the wait.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;What makes marbling so
important?&lt;/strong&gt;&lt;strong&gt;&lt;br&gt;
&lt;br&gt;
&lt;/strong&gt;Marbling refers to the small white flecks of
fat that appear&lt;br&gt;
throughout a cut of beef. Generally speaking, the more marbled&lt;br&gt;
the beef, the better the taste – and the higher it will be rated
by&lt;br&gt;
the U.S. Department of Agriculture. Prime beef has the most&lt;br&gt;
marbling, Choice has less, and Select the least.&lt;br&gt;
&lt;br&gt;
It's no coincidence that many of the most desirable cuts – the
rib eye&lt;br&gt;
and the T-Bone, for example – are the most marbled. A
well-marbled&lt;br&gt;
cut also tends to stay juicier even if it's cooked longer.&lt;br&gt;
&lt;br&gt;
At Roseda, marbling actually begins before birth. We carefully
select&lt;br&gt;
our cattle, matching Black Angus bulls and heifers whose genes
show&lt;br&gt;
that they're most likely to breed the best beef cattle.&lt;br&gt;
&lt;br&gt;
And of course, marbling is just one secret to better beef.
Natural&lt;br&gt;
feeding, a low-stress grazing environment, and dry-aging all
combine&lt;br&gt;
to make Roseda Beef some of the best you'll ever eat.&lt;/p&gt;

Roseda Steak Burgers aren't ordinary ground beef. &lt;br&gt;
They're
delicious ground steak from the same dry-aged beef &lt;br&gt;
as
our gourmet steaks and roasts.&lt;/p&gt;

&lt;p&gt;&amp;nbsp;&lt;/p&gt;

&lt;p&gt;It’s
simple. We control every step to ensure the highest quality.&lt;br&gt;
&lt;br&gt;
&lt;strong&gt;Step
1 is Breeding.&lt;/strong&gt; All our cattle are bred to Roseda bulls, or
to&lt;br&gt;
bulls carefully selected from other farms, with the genetic
traits that&lt;br&gt;
produce outstanding beef.&lt;br&gt;
&lt;br&gt;
&lt;strong&gt;Step
2 is Natural Feeding.&lt;/strong&gt; Calves are weaned at about seven&lt;br&gt;
months, and graze in lush green pastures for most of their
lives. Then&lt;br&gt;
they are placed on a wholesome diet of chopped corn plants and&lt;br&gt;
kernels, corn, hay, alfalfa, soybean meal, vitamins, minerals
and fresh &lt;br&gt;
water. We use no hormones or chemical additives, and no
antibiotics &lt;br&gt;
unless medically necessary. &lt;br&gt;
&lt;br&gt;
&lt;strong&gt;Step
3 is Dry Aging.&lt;/strong&gt; We work with two local packers who dry age&lt;br&gt;
all of our beef for 14 to 21 days for outstanding flavor.&lt;br&gt;
&lt;br&gt;
In fact, each animal has its own "biography." We can
tell you its &lt;br&gt;
pedigree. We can tell you if it was raised at Roseda, or to
Roseda &lt;br&gt;
standards at one of our affliated farms. We can tell you how
it was fed &lt;br&gt;
and when it was harvested. We can trace specific cuts of meat
back to &lt;br&gt;
specific animals.&lt;br&gt;
&lt;br&gt;
More than 50% of Roseda cattle qualify as Kosher. That's about
twice&lt;br&gt;
the rate of ordinary herds – and one more result of Roseda's
stringent &lt;br&gt;
quality control every step of the way.&lt;/p&gt;

&lt;p&gt;You
should have a stand alone freezer because you &lt;br&gt;
will
be receiving all of this beef at one time. &lt;br&gt;
