 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;&lt;strong&gt;1/2 c. butter&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;1/2 c. flour&lt;/p&gt;&lt;p&gt;1/4 c. grated onion&lt;/p&gt;&lt;p&gt;1/2 c. chopped green onions&lt;/p&gt;&lt;p&gt;2 TBS chopped fresh parsley&lt;/p&gt;&lt;p&gt;&lt;strong&gt;2 c. heavy cream&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;1 c. dry white wine&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 tsp Real Salt&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;1/2 tsp ground white pepper&lt;/p&gt;&lt;p&gt;1/4 tsp ground red pepper&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1/2 c. shredded Swiss Cheese&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;2 (6 1/2 oz) jars marinated artichoke hearts, drained and chopped&lt;/p&gt;&lt;p&gt;2 TBS fresh lemon juice&lt;/p&gt;&lt;p&gt;1 lb lump crab meat, drained and picked over&lt;/p&gt;&lt;p&gt;1 1/2 lbs medium fresh shrimp, roasted and peeled&lt;/p&gt;&lt;p&gt;2 c. sliced mushrooms&lt;/p&gt;&lt;p&gt;3 TBS freshly grated Romano Cheese&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Ingredients found at Miller Farms Market:&amp;nbsp; Real Salt, Heavy Cream, Swiss Cheese, and Butter.&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;Melt
 butter in large sauce pan over medium heat; gradually stir in flour.&amp;nbsp; 
Cook, stirring constantly, 5 minutes.&amp;nbsp; Add onions to flour mixture and 
cook 2 - 3 minutes.&amp;nbsp; Stir in parsley.&amp;nbsp; Gradually stir cream into flour 
mixture and cook until thoroughly heated.&amp;nbsp; Stir in wine and next 3 
ingredients.&amp;nbsp; Simmer, stirring occasionally.&amp;nbsp; Add Swiss Cheese to cream 
mixture, stirring until melted.&amp;nbsp; Cover and remove from heat.&amp;nbsp; Let cool.&amp;nbsp;
 Fold in artichoke hearts and next 4 ingredients.&amp;nbsp; Pour mixture into a 
buttered 3 qt baking dish.&amp;nbsp; Sprinkle with Romano Cheese.&amp;nbsp; Chill 
casserole in order for flavors to blend, if desired.&amp;nbsp; Let stand @ room 
temperature 30 minutes before baking.&amp;nbsp; Bake @ 350 degrees for 30 - 45

 <title>French Toast Casserole</title>

 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;For the Casserole:&lt;/p&gt;&lt;p&gt;1 loaf French Bread&lt;/p&gt;&lt;p&gt;&lt;strong&gt;8 large eggs&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;2 c. heavy cream&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 c. whole milk&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;2 TBS sugar&lt;/p&gt;&lt;p&gt;&lt;strong&gt;2 tsp vanilla&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 tsp cinnamon&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1/2 tsp freshly grated nutmeg&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;dash of real salt&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;For the topping in the morning:&amp;nbsp; Combine over low heat until well blended&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 c. butter melted&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;1 c. brown sugar&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 c. chopped pecans&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;2 TBS white corn syrup&lt;/p&gt;&lt;p&gt;&lt;strong&gt;1 tsp freshly grated nutmeg&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;dash of real salt&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Ingredients
 that can be found at Miller Farms Market:&amp;nbsp; eggs, heavy cream, milk, 
vanilla, cinnamon, nutmeg, pecans, maple syrup, and real salt.&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;Slice
 bread into 1" slices.&amp;nbsp; Arrange in buttered 9x13 pan (overlapping 
slices).&amp;nbsp; Combine other ingredients (not the topping) and pour over the 
bread.&amp;nbsp; (we quickly dip each slice of bread into egg mixture, lay in 
buttered dish, then pour remaining mixture over the bread).&amp;nbsp; Cover with 
saran wrap and refrigerate overnight.&amp;nbsp; Next morning, remove saran wrap.&amp;nbsp;
 Combine topping ingredients over low heat until well blended.&amp;nbsp; Evenly 
pour topping over bread mixture.&amp;nbsp; Bake @ 350 degrees til golden .... 
about 40-45 min.&amp;nbsp; (be sure to set on a sheet pan because it tends to 
bubble over.)&amp;nbsp; Best if cooled a little before serving.&amp;nbsp; May serve plain,
 with a drizzle of maple syrup or with a dollop of homemade whipped

 <title>New Year's Day ... Good Luck Soup</title>

 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;New Year's Eve ... before you go out:&amp;nbsp; Empty a one pound bag of dried
 black-eyed pes into a bowl.&amp;nbsp; Wash and sort out debris.&amp;nbsp; Cover with 
water and soak in refrigerator overnight.&amp;nbsp; New Year's Day ...&amp;nbsp; drain the
 soaking water off the peas and place peas in a large kettle.&amp;nbsp; Add 2 qts
 water, ham chunks or hamhock and one large onion (chopped).&amp;nbsp; Bring to 
a&amp;nbsp; boil, reduce to simmer and simmer along a couple of hours (adding 
more water as necessary) until peas are tender.&amp;nbsp; Then add ... 1 (15 oz) 
can tomatoes, 1 large bell pepper (chopped), 1 garlic clove (minced), 
1/4 cup lemon juice (freshly squeezed), salt and pepper to your taste 
and a pinch of ginger.&amp;nbsp; Simmer another 15 - 30 minutes until all 
seasonings and vegetables have mingled nicely.&amp;nbsp; Good Luck with your Soup

 <title>Christmas Breakfast!!</title>

 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;12 thick slices bread with crusts removed&lt;/p&gt;&lt;p&gt;1/2 cup butter &lt;/p&gt;&lt;p&gt;1/2 lb fresh mushrooms sliced&lt;/p&gt;&lt;p&gt;2 cups onions, thinly sliced&lt;/p&gt;&lt;p&gt;Salt and Pepper to taste&lt;/p&gt;&lt;p&gt;2 lbs Papa Weaver Sausage&lt;/p&gt;&lt;p&gt;1 lb Cheddar cheese, grated&lt;/p&gt;&lt;p&gt;5 eggs&lt;/p&gt;&lt;p&gt;1 1/2 cup milk&lt;/p&gt;&lt;p&gt;1 cup heavy cream&lt;/p&gt;&lt;p&gt;2 TBS Dijon Mustard&lt;/p&gt;&lt;p&gt;Parsley for Garnish&lt;/p&gt;&lt;p&gt;&lt;strong&gt;The
 Butter, mushrooms (when in season), Papa Weaver Sausage, Cheddar 
Cheese, eggs, milk, heavy cream, and Dijon mustard can all be found at 
Miller Farms Market.&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;Line the bottom of a well-greased 
13x9 inch baking dish with the bread slices, overlapping as necessary.&amp;nbsp; 
In a large skillet melt the butter and saute' the mushrooms and onions 
until tender.&amp;nbsp; Season with the salt and pepper and set aside.&amp;nbsp; In a 
large skillet fry the sausage, breaking with fork into small chunks as 
it cooks.&amp;nbsp; When brown, drain the excess fat.&amp;nbsp; Over the bread in the 
baking dish layer half each of sausage, onion mixture, and cheese.&amp;nbsp; 
Repeat the layers.&amp;nbsp; In a bowl beat together the eggs, milk, and 
mustard.&amp;nbsp; Pour the mixture over the layers.&amp;nbsp; Cover and refrigerate 
overnight.&amp;nbsp; Starting in a cold oven bake at 350 degrees, uncovered, for 
50 to 60 minutes, or until set.&amp;nbsp; Serve garnished with parsley.&amp;nbsp; Yields 8

 <title>Homemade Egg Nog</title>

pure vanilla extract,&amp;nbsp; 1 pt whiskey,&amp;nbsp; 1 oz rum,&amp;nbsp; freshly grated nutmeg 
(eggs, heavy cream, and milk can be found at miller farms market.) &amp;nbsp;&amp;nbsp; 
Beat separately the yolks and whites of 6 eggs.&amp;nbsp; Add 1/2 c. sugar to the
 yolks while beating, and 1/4 c. sugar to the whites after they have 
been beaten very stiff.&amp;nbsp; Mix egg whites with yolks.&amp;nbsp; Stir in heavy 
cream, milk, and vanilla.&amp;nbsp; Add whiskey and rum.&amp;nbsp; Stir thoroughly and

 <title>Scottish Cream Scones</title>

butter,&amp;nbsp; 2 large eggs&amp;nbsp; 3/4 cup heavy cream.&amp;nbsp; The butter, eggs, and heavy
 cream can all be found at Miller Farms Market.&amp;nbsp; Mix
 all dry ingredients with wire whisk.&amp;nbsp; Cut into the butter with pastry 
cutter for two minutes, then mix with fingers until mixture&amp;nbsp; forms 
coarse, bead-like texture.&amp;nbsp; Add the cream and beaten eggs to the flour 
mixture; mix until dough forms soft ball.&amp;nbsp; Separate dough into 6 large 
scones and bake on parchment paper on cookie sheet at 425 degrees for

 <title>My Favorite Cheesecake</title>

 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;Grease a 9" springform pan.&amp;nbsp; Set aside.&lt;/p&gt;
&lt;p&gt;For the crust mix these ingredients and press into bottom of 9" pan and 1/2 way up the sides:&lt;/p&gt;
&lt;p&gt;1 1/4 cup grahm cracker crumbs &lt;/p&gt;
&lt;p&gt;2 tbs sugar&lt;/p&gt;
&lt;p&gt;1/4 cup melted butter&lt;/p&gt;
&lt;p&gt;set prepared crust aside.&amp;nbsp; Do not pre - bake&lt;/p&gt;
&lt;p&gt;for the filling, mix these ingredients in mixing bowl until well blended:&lt;/p&gt;
&lt;p&gt;2 (8 oz) packages cream cheese, softened&lt;/p&gt;
&lt;p&gt;4 egg yolks&lt;/p&gt;
&lt;p&gt;1 tsp vanilla&lt;/p&gt;
&lt;p&gt;1 cup sugar&lt;/p&gt;
&lt;p&gt;Then add 1 cup whipping cream (heavy cream)&lt;/p&gt;
&lt;p&gt;Beat 4 egg whites until stiff and fold into mixture in mixing bowl&lt;/p&gt;
&lt;p&gt;Pour into prepared crust.&amp;nbsp; Bake 1 hour @ 325.&amp;nbsp; Turn oven off after the hour of baking and let cheesecake sit in oven another 1/2 hour.&lt;/p&gt;

 <title>Shiitakes in Beans</title>

 <description>&lt;div class="field field-name-body field-type-text-with-summary field-label-hidden"&gt;&lt;div class="field-items"&gt;&lt;div class="field-item even"&gt;&lt;p&gt;Have you tried the fresh Shiitake Mushrooms?&amp;nbsp; After the March cooking class (where we made Fresh, Hot&amp;nbsp;Shiitake Mushroom Spread .... on freshly baked English Muffin Bread) and we demonstrated how to cook a bag of dried beans) .... the&amp;nbsp; following recipe has been shared by K &amp;amp; T Specialties, our Shiitake Mushroom growers:&lt;/p&gt;
&lt;p&gt;1 (lb) bag dried 15 or 17 bean mix, soaked overnight&lt;/p&gt;
&lt;p&gt;1 cup chopped Fresh Shiitake Mushrooms from Miller Farms Market (1/2 lb bag)&lt;/p&gt;
&lt;p&gt;1 cup chopped onions&lt;/p&gt;
&lt;p&gt;1 cup chopped celery&lt;/p&gt;
&lt;p&gt;1 cup grated carrot&lt;/p&gt;
&lt;p&gt;1 (14 oz)&amp;nbsp;can diced tomatoes with Italian seasonings and 1 can water&lt;/p&gt;
&lt;p&gt;1 (12 oz) can V - 8 Juice&lt;/p&gt;
&lt;p&gt;2 tsp Italian seasonings or to taste&lt;/p&gt;
&lt;p&gt;salt and pepper to taste&lt;/p&gt;
&lt;p&gt;may need to add more water during cooking process&lt;/p&gt;
&lt;p&gt;mix all ingredients together and simmer along until beans are tender&lt;/p&gt;

 <title>Cheesy Grits</title>

&lt;p&gt;&lt;strong&gt;From Miller Farms Market you will need:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1 lb Papa Weaver Sausage&lt;/p&gt;
&lt;p&gt;4 cups Trickling Springs Creamery Milk&lt;/p&gt;
&lt;p&gt;1 1/2 cups grits&lt;/p&gt;
&lt;p&gt;10 tablespoons butter&lt;/p&gt;
&lt;p&gt;1 cup grated cheddar cheese&lt;/p&gt;
&lt;p&gt;3 large pastured eggs lightly beaten&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;you will also need:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1 tsp salt&lt;/p&gt;
&lt;p&gt;2 cups water&lt;/p&gt;
&lt;p&gt;1/4 - 1/2 tsp cayenne pepper&lt;/p&gt;
&lt;p&gt;freshly grated nutmeg&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Let's get cooking&amp;nbsp; ....&amp;nbsp; &lt;/strong&gt;Preheat oven to 350 degrees.&amp;nbsp; Butter up a 13 x 9 x 2 baking dish&lt;/p&gt;
&lt;p&gt;Brown off sausage and set aside to drain.&amp;nbsp; In a large heavy sauce pan, bring milk and water to a boil.&amp;nbsp; Add the salt!&amp;nbsp; Add the grits and stirring from time to time, simmer until grits are done, about 12 minutes.&amp;nbsp; Remove pan from burner and put lid on pan.&amp;nbsp; Let grits sit for 10 minutes.&amp;nbsp; Once the 10 minutes have passed, add the drained sausage, butter, cheese, cayenne, and the eggs.&amp;nbsp; Mix until well combined.&amp;nbsp; Turn mixture into buttered casserole dish.&amp;nbsp; Using a microplane add a light grating of nutmeg on top.&amp;nbsp; Bake 30 - 40 minutes until top is lightly browned.&lt;/p&gt;
