<h2>Procedimento per preparare la crostata di mirtilli</h2>

<p>Innanzitutto preparate la frolla: unite farina, burro a tocchetti e buccia di limone in una ciotola e iniziate a lavorare, poi incorporate anche zucchero e tuorli.<br />
Lavorate velocemente fino ad ottenere un panetto omogeneo, quindi avvolgete con pellicola per alimenti e lasciate riposare in frigo per almeno 30 minuti.<br />

<p>Riprendete la frolla e stendetela col matterello sul piano di lavoro leggermente infarinato fino ad ottenere una sfoglia sottile.<br />

<p>Unite mirtilli freschi e marmellata in una ciotola, mescolando delicatamente, quindi trasferiteli nello stampo.<br />
Livellate i bordi, coprite con un secondo strato di frolla e sigillate bene le chiusure.<br />
Cuocete per circa 45 minuti (o fino a doratura) in forno statico preriscaldato a 175°C, nel ripiano più basso.<br />

<p>Nel frattempo pelate le patate, lavatele e tagliatele a fettine spesse non più di mezzo cm, quindi lessatele per 5 minuti in acqua bollente leggermente salata, infine scolatele (saranno ancora un po&#8217; indietro di cottura).<br />

<p>Preparate le tortine: unite burro e zucchero in una ciotola e lavorate fino ad ottenere una consistenza a pomata, poi incorporate prima l&#8217;uovo e la vaniglia, poi anche farina e lievito setacciati, zucchero, sale ed estratto di rosa canina e amalgamate.<br />

<p>Innanzitutto preparate la pasta frolla: frullate il burro con zucchero e farina con un mixer fino ad ottenere un composto sabbioso, poi incorporate anche la vaniglia e metà dell&#8217;uovo dopo averlo leggermente sbattuto (tenete da parte l&#8217;uovo restante).<br />
Avvolgete con pellicola per alimenti e lasciate riposare in frigo per almeno 30 minuti.<br />

<p>Riprendete il panetto, stendetelo in una sfoglia non troppo sottile sul piano di lavoro infarinato e ricavate delle strisce lunghe e non troppo sottili, con cui dovrete rivestire i bordi (e solo quelli) delle formine precedentemente imburrate e infarinate.<br />

<p>Man mano che sono pronte disponete le tartellette sulla teglia rivestita di carta forno, cuocete in forno ventilato preriscaldato a 170°C per 15 minuti.<br />
Tiratele fuori, sformatele, rimettetele sulla teglia, spennellate con il tuorlo e rimettete in forno per altri 5 minuti.<br />
Quando saranno ben dorate lasciatele raffreddare completamente.<br />

<p>Preparate la crema: sbattete bene le uova con lo zucchero mentre, a parte, scaldate il succo di limone in una casseruola non troppo piccola.<br />
Incorporate il succo di limone alle uova sbattute, rimettete sul fuoco nella casseruola usata per scaldare il limone, cuocendo a fuoco basso e mescolando costantemente finché la crema non si addensa.<br />

<p>Nel frattempo mettete la gelatina in ammollo in acqua fredda per 10 minuti.<br />

<p>Riprendete le formine usate per le basi, rivestitele di pellicola per alimenti (in modo da creare un fondo, se avete usato dei coppapasta semplici come me) e poi anche con carta forno.<br />
Versateci dentro il composto e lasciate riposare per tutta la notte in frigo.<br />

<p>Infine montate gli albumi a neve ben ferma, incorporate anche lo zucchero e continuate a montare.<br />
Riprendete le formine con la crema, sformatele, tagliatele a metà con un coltello affilato a lama liscia, e se necessario tagliatele con un coppapasta per ottenere la dimensione giusta in modo che entrino dentro le basi di frolla.<br />
Infilate un mezzo disco di crema dentro a ogni cerchio di frolla e, con l&#8217;aiuto di una sac-à-poche, create delle meringhette sulla parte tagliata della crema al limone, quindi abbrustolitele con il cannello per dolci.<br />
