<p>Per l&#8217;impasto giallo, unite in una ciotola farina, curcuma e sale, poi incorporate acqua e olio e lavorate velocemente fino ad ottenere un panetto omogeneo, che coprirete con pellicola per alimenti e lascerete riposare a temperatura ambiente per 30 minuti.<br />

<p>Per l&#8217;impasto rosso: unite acqua, olio e barbabietola in pezzi, acqua e olio e frullate.<br />
Mescolate farina e sale in una ciotola, poi incorporate la barbabietola e lavorate velocemente, infine coprite il panetto con con pellicola e lasciate riposare per 30 minuti.<br />

<p>Una volta passati i 30 minuti riprendete il panetto verde, dividetelo in 2 parti e stendetene una per volta, utilizzando la macchinetta tirasfoglie partendo dallo spessore maggiore e arrivando fino ad ottenere una sfoglia molto sottile.<br />
Arrotolatela in maniera un po&#8217; lasca su se stessa e ricavatel le tagliatelle con un coltello affilato.<br />

<p>Se volete condirle come ho fatto io, fate sciogliere del burro con del rosmarino in una padella antiaderente.<br />
Cuocete la pasta in un&#8217;ampia pentola piena di acqua bollente, scolatela al dente (basteranno circa 5 minuti) e fatela insaporire velocemente nel condimento, aggiungendo poca acqua di cottura.<br />
