Food-a-licious Friday {81} Estle Family Casserole {and a WINNER}

One of my cute friends is super creative in the kitchen and I asked her if she'd share some of her favorite family recipes with us. Brittney and I went to high school together...so we go waaaay back. She married her high school sweetheart and they have 2 of the most adorable kids you ever did see.

Take it away Brit!

Broccoli Rice and Chicken Casserole

(Feeds 4-6)

Ingredients:

2.5 cups cooked rice (5 minute, white, or brown)
1 bag frozen or fresh broccoli
1-2 chicken breasts (or I often use leftover grilled chicken from the night before)
1 can cream of mushroom soup (or cream of celery if you're not into mushrooms)
1 cup shredded cheese (cheddar, colby or mexi blend)
Salt and pepper to taste

Directions:
So start with boiling chicken until cooked through, then shred (or dice leftover chicken into small pieces).

Put cooked chicken, frozen or fresh brocoli, cream of mushroom soup, and cooked rice in a big bowl and stir until blended. I add salt and pepper here. (if you're into garlic salt, through that in too)

Pour entire bowl into caserole dish and spread out evenly.

Sprinkle cup of cheese on top and bake for 20 minutes at 350 degrees.

Easy and everyone eats it; even my 1 year old! Oh and it makes great leftovers!

I'm fantastic! My lingering cough from last week's illness is almost gone and we leave for vacation in just two days! That means my toes will be in the sand this weekend AND I get to finally meet my bloggy bestie (delicateCONSTRUCTION) in person. CAN.NOT.WAIT!

Taggy Baby Blanket {tutorial}

So I've mentioned a couple times now that there are a TON of baby arrivals coming up (LOVE babies) so I've been getting my craft on BIG TIME in preparation. I try to make different things for each of my friends' and family members' babies. Luckily, there are TONS of cute things to make for babies.

Enter in...

Supplies:

-2 pieces of coordinating fabric, each 12in x 12 in

-Multiple pieces of ribbon cut in different lengths

(anywhere from 2in to 4in...I didnt actually measure though)

-Sewing machine and notions

(Pardon the bad lighting... this was a nighttime project.)

Tutorial:

-First start by cutting your fabric and ribbon.

-Fold your ribbon pieces in half and pin to one of the pieces of fabric. Pin it so that the ribbon is laying on the right side of the fabric, facing in (look at picture collage above).

-Lay the other piece of fabric on top, right sides together and pin in place.

-Sew all the way around (remembering to back stitch at the beginning and end) except for a small opening to turn right side out.

-Turn right side out through the hole. Press with an iron.

-Go ahead and top stitch all the way around the blanket. Be sure you sew over the small hole as well (picture not in collage).

-DONE!

Such a simple, adorable, handmade baby gift... don't you think?

This Taggy Baby Blanket is obviously for a girl, but they are great for little misters too!

Babes love the different textures of the ribbon on their fingers...something to pull or chew on is always good, right? {winks}

Sewing Skills {and a WINNER}

It's another manic Monday around our house...how about yours?

I've been working on tons of projects (at once...because that's normal), planning my sister's baby shower (that's less than 2 weeks away), getting us ready for our family vacation to the beach (this Friday...WAHOO!), and sewing up a storm for all these upcoming baby arrivals. Needless to say, I've been busy. But with all wonderful things that I enjoy doing and that make my heart happy.

With my sewing machine getting lots of use, I've been able to brush up on my sewing skills...a bit. I'm not a pro by any means, but I get better and better every time I sew something. Over the weekend I took a 30 min break and decided to sew something for myself.

{GASP!}

I know...crazy idea, right? I already knew exactly what to sew. Have you seen the awesome Business Card Holder {tutorial} over at Artsy Fartsy Mama? If not, RUN on over and check it out. Easy to follow, great photos, and you'll end up with an awesome little card holder for your blog/shop cards.

Here's how mine turned out...

I still need to work on my top stitch skills, but I'm super happy with the way it turned out.

Zip Screen Tote

Happy weekend!!

Yesterday was my niece's 10th birthday party. Her momma (my sister-in-law) is an amazing party planner. Not only is she creative and thoughtful, but she's frugal and a DIY-er like myself. My niece had a sleepover (with all the fixings)... my sister-in-law even made all of the girls matching pajama bottoms and "morning essentials" swag bags. Way cute!

I'm a handmade gifter... if you've read my blog for a while or know me personally, then this is old news to you. I decided to make my niece a tote bag for her to carry her summer time things in (she's also a new fan of roller derby, so this tote could be used to carry her skates in too). Here's how it turned out...

FashionArtProject.com supplied me with the blank tote (perfect canvas for artwork!) and their newest product, Zip Screens & Paint.

I will be honest...was was a little skeptical this new product would work as well as the package showed. I read the directions thoroughly and did exactly as it said.

And it worked beautifully!

Clean lines, super simple, and easy clean up! Plus, the Zip Screens are reusable!

I did make a small boo-boo in the corner of the design where I carelessly swiped the paint; be sure to be careful around the edges of the Zip Screen.

I added some rhinestones and ribbon and DONE!

Can you see the sparkles in the paint? Sparkles and glitter make everything prettier, I think.

Inside the tote I included a new book and a handmade coupon ...

One ticket to attend a Roller Derby meet!

Not sure if she was more excited about that or about the tote! {wink wink}

Food-a-licious Friday {80} Chicken Nacho/Taco Salad

I cannot get over that this is the 80th edition of Food-a-licious Friday. A series I started (some 80 weeks ago) to motivate me to cook more for my family, to try new things, to experiment with recipes, and to eat healthier. It is my hope that in the last 80ish weeks you have been able to walk away with a couple of yummy recipes and maybe a tip or trick that has been helpful to you.

Today's recipe sort of came together in the kitchen spontaneously the other night.

I was hungry for Mexican food (the norm) but wanted something a bit more light and healthy. So here is what I came up with...

This is totally kid-friendly and you can customize it to fit your family's taste. I'm going to share how I made our version.

Ingredients:

2-3 cooked chicken breasts (chunked or shredded)

Lettuce (chopped)

1 can black beans (cleaned and drained)

1 can corn (drained)

2-3 avocados (cubed)

handful of cilantro (chopped)

Lime juice from 1 lime

1/4 onion (chopped)

Tortilla Chips

Tortilla Strips

Mild Cheddar Cheese (shredded)

Salt & pepper to taste

Directions:

1. Cook your chicken on the stove top and while it's cooking, start prepping your veggies.

(I cooked my chicken in our favorite salsa.)

2. In a mixing bowl, add all of the veggies except the lettuce. Also add salt, pepper, and the lime juice. Fold with a spoon gently until all ingredients are mixed.

3. Set up your tortilla chips in a circle around the edge of your plate and add shredded cheese. Pop in the microwave for a few seconds to melt.

4. Add lettuce to the center for the circle, then the veggie mixture, then the chicken, and lastly the tortilla strips.

5. Top with your favorite dressing or salsa.

It was DELISH!

You could do shredded pork or beef instead of chicken... or no meat at all!

You can also add other veggies to the mixture such as peppers, cucumber, olives, carrots, etc.

Simple Baby Onesies

Hi there friends!

Is it just me, or are there a TON of little babies on their way? There are a few baby showers coming up (one of which I am hosting) so I figured I better get a move on with the gift making process.

Lucky for me, FashionArtProjects.com sent me an Activity Kit- the Accessory Baby Set.

The directions were easy to follow, and I was able to customize three, adorable baby onesies in a matter of minutes! Just cut out the design with your scissors, place on pre-washed fabric, lay a piece of cloth over the top, and iron! Flip inside out and repeat until the clear transfer paper easily peals off.

I just love the way they turned out.

I had all 3 of these onesies on hand.

(When I see them on clearance I pick them up. Customized onesies are so fun to give as baby gifts!)

Last Minute Mother's Day Gift

Simple Pillows {upcycle project}

I decided to start finding ways I can make my front porch look a little more cheery.

It all started with the bench makeover... now I am on to accessorizing the front porch.

First up? Pillows of course.

If you've ever bought throw pillows or decorative pillows, you know they are not cheap. Personally, I don't want to spend a ton of money on outdoor pillows. So I opted to make my own.

That's right. I used kitchen towels that I found on clearance at Target a couple months back to make my new outdoor pillows.

I did a double take when I saw these chevron kitchen towels at Target. Then I proceeded to toss 4 of them into my cart when I noticed the clearance tag. In case you can't read teeny tiny print... They were marked down to $2.99. But wait! It gets better... when I was checking out the towel rang up at $1.99 each! The Target cashier informed me they had been marked down again. SCORE!

It took me a bit to decide what I wanted to used these towels for. They were the perfect fabric to make pillows, aprons, a skirt for my daughter... It was really difficult to decide, but once I did I got right to work.

Since the edges of the towels were already hemmed, I just pinned the edges together and sewed! I left a small section open so that I could stuff them with fluff, then sewed them shut.

Once I finished stuffing and sewing the pillows, I felt like the black chevron pillows needed a little something.

So I bused out my fabric and button stash and got to work again. The fabric flowers turned out so cute I almost kept them as hair fascinators : )

My bench looks so happy now.

I so happy with the way this upcycle project worked out!

Total cost: Less than $15 for 4 outdoor pillows

Food-a-licious Friday {79} Oreo Pudding Poke Cake

Hi there Mine for the Making readers! I'm Kristyn from Lil' Luna! I blog about all sorts of things but especially love crafts and recipes. Come on over and say hi!

Today I will be sharing an awesome AND easy recipe!

I had seen the idea on Pinterest from The Country Cook and knew I had to try it myself.

I made mine with Red Oreos with Valentines in mind, but you can do it with any kind of Oreo.

Here is how you can make it as well.

OREO PUDDING POKE CAKE

Oreo Pudding Poke Cake

Recipe Type: Dessert

Prep time: 5 mins

Cook time: 30 mins

Total time: 35 mins

Serves: 12

A super yummy and easy oreo pudding cake that everyone will love.

Ingredients

1 box chocolate cake mix (oil, water, and eggs)
2 boxes of Oreo Pudding
4 cups milk
Crushed oreos (use Red for Valentines day)

Instructions

Make cake as directed using a 9x13 pan.
While cake is still semi-warm, poke holes into your cake. I used the end of highlighter.
Make pudding as directed on box and pour over cake.
Sprinkle crushed oreos on top.

This cake was so simple and tasty. Everyone loved it.

I've had people ask where to get the Red Oreos, and they are a seasonal item. I found mine discounted at Target in January. I've also seen Pink and Yellow Oreos which would be fun to change out for parties and holidays!

My Soul Mate

Many of you may feel the same way about your spouse...

That you have literally married your soul mate.

And I don't feel like the term "soul mate" should be thrown around loosely...

I really love the definition Urban Dictionary gives for "Soul Mate"

"A person with whom you have an immediate connection the moment you meet -- a connection so strong that you are drawn to them in a way you have never experienced before. As this connection develops over time, you experience a love so deep, strong and complex, that you begin to doubt that you have ever truly loved anyone prior. Your soulmate understands and connects with you in every way and on every level, which brings a sense of peace, calmness and happiness when you are around them."

This is my husband for me.

My true best friend and partner in this life...and for the rest of eternity.

My husband and I celebrated our 3 year wedding anniversary last week. I still remember our wedding as if it were yesterday (not that 3 years is a super long time). We DIY-ed almost our entire wedding on a very tight budget. It was a lot of work and sometimes very stressful...but our wedding turned out beautiful and was worth all of the work. In fact, if I could go back and do it again, I probably would have done more! (Now you know how crazy I really am...)

All my girls and my sister were there to help us celebrate our special day.

I loved that every bridesmaid wore their own style of black dress.

Priceless memories and I'm so happy to have shared them with these girls.

Before we headed out to celebrate, we snapped a couple pictures...and little Lu had to jump in : )

What I Wore {Anni Edition}

With our busy lives, it's difficult for us to get out for a date night. So we didn't plan anything extravagant to celebrate our 3 year anni... simply a quiet dinner just the 2 of us was enough for us.

Although Matthew and I celebrated 3 years of marriage...we have actually been together for a lot longer than that...

{Our first Christmas together. Matthew was 16 and I was 14.}

I was giddy and head over heels (or should I say overalls?) for him then...

But I am even more in love with him now.

(I think that happens after you see your husband become a father...especially when they are as amazing and involved as my husband is with our Luci.)
