Independence day in Honduras is in July. Every year we would get up early and travel by bus to the town of Independecia to celebrate and see the parade, shop in the Mercado, and buy tons of handmade pottery. Afterwards we would all have a picnic at the local hot springs. Everyone would walk around the side of this mountain to get back into the woods where there were three springs in different degrees of hot water. The first would sometimes be hot enough to boil an egg. Not for the faint of heart let me assure you! Then the ponds would get cooler and cooler as they went down the hill. Hot water heaters are not a typical thing in our village, so to have a warm bath was quite the treat to my family and friends. The average temperature each day is around 105 degrees so it is ALWAYS hot there, so hot water heaters are not necessary. Anyway, this is not about hot water heaters!</div>

My first friend from our village, who was not a family member was named Gladys. After our trek back to the bus we were all so thirsty! She handed Edwin and me a cup of hot coffee! HOT COFFEE on a day that was at least 110 degrees! He said are you trying to kill us or what? She said drink it, it will cool you off! Well she was right! It did! We just had a fit about that coffee, it was so smooth, and tasted just like Good coffee smells YUM!! And it was called CAFE INDIO.</div>

Flash forward 20 years and I just can't stop thinking about that coffee. It was a staple in our home from that wonderful Independence day on, and I had missed it all those years I had been back in America. Then low and behold, on a fluke, I looked it up on Ebay! and found some!! YUM!!! Just as good as I remembered!!</div>

I will share a picture with you down below of the wonderful gift I received from my favorite English student. His name is Henry and he and his lovely family sent me a whole box last Christmas!</div>

I will share that story later, it is a very sweet one!!</div>

A little bit about me! I am on the Ketogenic diet. This is a version of the low carb diet, but instead of eating high protein, you eat high fat, moderate protein, and low carb. I started on January 30, 2015. It was very hard for me to give up the sugar!<br />

SUGAR IS MY COMFORT IN TIMES OF STRESS!( and let's face it, my life is full of stress!)<br />
But anyway, I saw this YouTube video called Fooly Living, where this girl is like me and on this eating plan. So I tried it. At first I was doing very well, I didn't even cheat and have Birthday cake on my Birthday, but then we had a tragic event , and it went to hell in a hand-basket really fast!<br />
My daughter Bella was attacked by a stray cat, and had to be hospitalized with the threat of rabies, and had to undergo the rabies protocol. It was a horrible experience, one that I would not wish on my worst enemy! Thankfully she is ok now, and when things calmed down, I went back on my plan. I originally lost 55 pounds, but for some reason I decided to enjoy the summer, and put back on 20 pounds, so I am now working to get that back off!<br />
My goal is to loose 22 more pounds by my Birthday which is Feb. 5th. I still have a ways to go after that, but I am taking this one step at a time! Some days are good, some are bad. Really bad. But for the first time I know that I can get back on and really adapt quickly now, and that is such a great feeling! My body feels so much better when I don't eat sugar! I miss it, don't get me wrong, but I feel like I am not riding the Sugar dragon any more!<br />
I will be sharnig some of my keto recipes here on this blog, and some of the videos that I will be posting to explain the process.<br />

As you may know, I had to close my beloved Missouri Jane's Restaurant, about 3 years ago, due to the fact that my Mom had to go on life support, and we brought her home to spend her last days here. Well, what we thought would be only about a month turned into 3 YEARS going strong! Praise the LORD we still have Mama with us, and she is just as fiesty as ever!<br />
So now I have to come up with a new plan for my life! I can't reopen my restaurant, because the owner of the building no longer want to have a restaurant in there. So.....<br />
I BOUGHT AN OLD AIRSTREAM!! And I am going to turn it into a mobile food cart! We are beginning to remodel it and do some repairs. That is our winter project, and I will try to post some before and after photos for you!<br />
<br />
This is going to be called MINI JANE"S, and we will only be serving our FAMOUS quesadillas, chips, fresh salsa, and pink lemonade!<br />
<br />
I hope that we can have a successful business. I know that it will be a lot of hard work, but I will be up to the challenge!<br />

In fact if you would have told me all of the changes that would occur in the coming year I wouldn't have believed it! <br />
It all started in October when I fell in the kitchen of my restaurant-not once but twice!- because once is never enough with me apparently! To make a long story short, I hurt both of my knees and wound up in the emergency room... It all went to hell in a hand basket after that!<br />
Two weeks later my Mom fell, and did not go to the emergency room, so that her injuries developed into pleurisy and she had to be put on life support for 22 days. During which time I lost 5 friends ranging in age from 17 to 80.. It was a tragic time to say the least. How my Mom survived and the others didn't is a miracle. We brought Mom home, thinking it would be our last days with her. I closed my restaurant so that I could care for her 24/7. This was one of the hardest decisions I have ever had to make! I assumed it would be for a short while, but sadly I had to close for good and remove my equipment when the landlord decided to sell the building. I never thought I would leave the place I put my heart and soul into. It was such a struggle to get it off the ground, and finally to be able to see it succeed was a great joy. <br />
I met so many wonderful people, and made some new friends that will last a lifetime!<br />
I lost my two best friends shortly after opening, and it was in my kitchen that I found solace for my loss. When I had to close it was as if I lost them all over again too! I could feel their spirits guiding me every morning when I would get in my kitchen and cook. I miss them. I miss my life.<br />
Luckily Mom is still with us, and it is it a great blessing when so many younger and stronger have not made it.<br />
I have had such a mental, emotional and financial struggle this past year. I am not the same person I was a year ago, I had to let her go. I miss my old self, but I have evolved into a new person, and even found some of the hope and dreams I had as a child beginning to resurface.<br />
I have learned a lot about myself and what makes me happy, and what I really want in the future for my life.<br />
I miss creating beautiful things. That has always made me happy, and I plan on being creative for the rest of my life. My family thinks I am crazy, and they do not understand this pull inside me-they never did. But one thing about growing up, I don't need them to understand or approve any more! I am going to do this for myself. I have to listen to that voice inside my head that I have been suppressing for so long!<br />
I will be an artist, a crafter, a jewelry maker, a baker, a writer, a t shirt maker, and any other little 'ol thing my heart desires!<br />

This weekend we went to gather apple pears at a Ms. Lawanda's house in Cullman. Her Grandfather, and Father had grafted a pear onto an apple tree, and made the most amazing little globes of juicy fruit I have ever eaten in my life! She let us gather two huge Wallmart bags to take home- it was very difficult because if hey hit the ground they would burst open, because they were so filled with juice! I told her that I wanted to make some pear preserves with the fruit, but she told me that her Grandmother had tried many times, and it always failed because of the moisture content. My sister told me to just make pear honey-so I did! Oh My Goodness! It is so wonderful!<br />
So today Bella and I had a wonderful brunch of warm croissants, salted butter, pear honey, and a fresh pot of tea-while we watched the best Mother /Daughter show of all time-BRAVE!<br />
I wish all Monday's could be so good!<br />

This is how I made the Pear Honey!<br />
<br />
Clean pears, and check for spots.<br />
If peel is tough -remove peels-mine were soft so I just cut them up!<br />
Put in a heavy bottom pot- if not it might burn!<br />
Start with two cups of sugar, and about 1/4 cup water- pore over fruit, and start the temp on med. high<br />
As the fruit cooks down it will release the juice<br />
Keep adding about a cup of sugar per hour until it starts to thicken-depends on how much fruit you have and how juicy it is. Taste , and stir often when it starts to resemble the flavor of honey it is done!<br />
I put mine in left over containers and put in fridge- but I might transfer to a freezer container tomorrow.<br />

Here at Missouri Jane we make it to order-mild or hot!<br />
The list of ingredients are:<br />

lime<br />

cilantro<br />
tomato<br />
onion<br />
That's it! Of course if you want to add some heat, add jalapeno or Serrano chilies, and when I am making it for myself, I always add fresh garlic! I don't add the garlic in the restaurant because not everyone enjoys the flavor.<br />
The amount depends on you!<br />
For one avocado,<br />
1/2 large lime-juiced<br />
1/8 t. salt<br />
2T. cilantro-chopped<br />
1/4 c. tomato<br />
3T. onion<br />
This is to your taste, sometimes I add more lime, and I tend to like more tomato than most.<br />
I have had many people ask me how to make this, I thought everyone already knew!<br />

When you come in to Missouri Jane Cantina & Creamery, you will see lots of interesting things!<br />
Photos that I took while living in Honduras Central America, a seven pound-yes I said 7lb-sweet potato that a Mr. Lenox in Lacey's Spring grew, lots and lots of horses, cool tables with bamboo legs- and some Outsider Art!<br />
I visited the famous Outsider Artists Howard Finster, from Athens Georgia, and his world famous museum-(what a place let me tell you), several years ago with some friends. We had a wonderful time looking at all of his treasures! He was sitting in his chair and visiting with folks, such a kind man. He told us the story of how he was painting an old bicycle, and saw the vision of an angel in a drop of paint, and that is how he started. Well he was so inspiring, and I had always done photography because I had no talent for painting, but I realized that day that it didn't matter- I had all of these ideas in my head that needed to come out!<br />
So..I started painting,but I didn't want my photography and painting to be confused so I used the name of my Great Grandmother-Missouri Jane. The images that I painted were things that I had lived as a child, so I chose the name Missouri Jane because I loved that name and because it just fit!<br />
Little did I know that one day I would open a restaurant and use the same name!<br />
Later, I went back to Athens for Fenster Fest in 2004 , even though Howard was not there, His spirit was, the night before there had been a huge storm that washed away a lot of the artist tents and canopies, but they did not give up! They said that if Howard were alive -He wouldn't let them give up!<br />
So,I bought the cross to add to my collection, and to remember the day.<br />

I've made a few changes in my life over the past year-I just about lost everything, and it has been a hard road, but I'm on my way back up!!!<br />
This blog will now be called Missouri Jane- Cantina & Creamery.<br />
I will be adding some of the recipes that I am using in my restaurant, lots of photos!( If i can figure it all out!)<br />
And some of the trials and troubles that befall me as I try to make a go of it in this new food world!!<br />
Am I crazy for doing this? .....Yep you better believe it!!<br />

BUT I LOVE FOOOODDDDD!!!!YUM! and cooking, and all things mexican, or cowboy, or country, or horses...etc. You get the idea!<br />

Oh and just so you know, i might sometimes post letters to my best friend Gina who passed away on June 10, of this year.. I'm not crazy-really- just sad and I miss her so- and I have so much that I need to tell her-so you can skip over those and get right to the food-if you want.<br />
