°Lavate gli &lt;b&gt;scampi&lt;/b&gt; e lessateli in un litro d&#39;acqua unendo l&#39;alloro spezzettando fine,i gambi di prezzemolo,l&#39;aglio,i grani di pepe,il vino bianco,il mezzo cucchiaio di salsa di pomodoro.&lt;br /&gt;
Dopo cinque minuti dall&#39;inizio dell&#39;ebollizione levate con una schiumarola gli scampi,sgusciateli&lt;br /&gt;
e rimettete a bollire i gusci che daranno al brodo una lieve colorazione rossa.&lt;br /&gt;
&lt;br /&gt;
°Tritate finemente lo scalogno e lasciatelo leggermente dorare nell&#39;olio e metà del burro,unite il &lt;b&gt;riso&lt;/b&gt; e mescolate perchè assorba tutto il condimento.&lt;br /&gt;
Aggiungete gli scampi e il brodo dei crostacei filtrato (circa 600 gr).&lt;br /&gt;
Coprite e portate a cottura a fuoco moderato.&lt;br /&gt;
Il risotto dovrà risultare morbido,non troppo cotto ma nemmeno troppo al dente:ci vorranno circa 18 minuti di cottura.&lt;br /&gt;
Mantecate con il burro,fate riposare un momento e dopo servite.&lt;br /&gt;
