They're now five and three years old, and am so thankful for having them in my life, as they make me a better person. I can't believe how creative I get making their food, and they always like it. This morning I decided to try something different for breakfast, and play a bit with ingredients like sausages, and eggs. I didn't read this recipe from a recipe book, but trusted my imagination. The comments I received where: "Mommy this is so delicious" "I love it Mommy" "Yummy yummy, this is the best sausage ever" I was so happy to make this recipe. As such, I'll keep on testing different recipes, and based on my boys comment, I'll share it on my blog.

Egg on Sausage Happy Face

Ingredients:

5 ground sausages

2 white egg

1 tsp of ground black pepper

1/2 cup of ground oatmeal

1 tbsp of virgin olive oil

Preparation:

In a blender, add all four ingredients with 1/4 cup of water if needed.

Remove ground sausage, and pour in a bowl.

In a non stick frying pan, heat the virgin oil.

Use a spatula to remove ground sausage from bowl and fry. When one side of the ground sausage looks golden-brownish use a spatula to turn it over, so the other side gets cooked.

Remove sausages from the pan, and serve.

Broil the egg york in the same heated frying pan for 2 mins. When cooked, place the broil egg on the ground sausage.

To complement this recipe, I used pancakes,hot chocolate and banana. You can use any other beverage, fruits, and bread, depending on your child's preference.

I like using banana to make happy faces.

I hope your bundle of joy, will give great feedback.

Enjoy!

Surprise Oatmeal Cookies

Dear Readers,

Being a parent has made me more open in accepting constructive feedback and seeing how to improve.

Couple of days ago, I cooked oatmeal and fruit jam for breakfast, and none of my kids ate it. They never liked cooked oatmeal, but I thought this was due to the texture, when they were younger. They just didn't like it. My oldest tried it, with some oatmeal still in his mouth, he said " Mommy it doesn't taste good." Just his facial expression made me understand that he just didn't like it.

Today for breakfast I made some oatmeal cookies and ham omelette. The surprise was I added some raisins and grated carrots, knowing that they are very picky, when it comes to vegetables and dried raisins.

The results were amazing, they ate everything. I'm so glad I took my kids food critic to make something they like.

Surprise Oatmeal Cookies Crispy or Chewy-- The Choice is Yours.

Ingredients:

3/4 cup butter, softened 175 ml

3/4 cup lightly packed brown sugar 175 ml

1/2 cup granulated sugar 125 ml

1 egg

2 tbsp water 30 ml

2 tsp vanilla 10 ml

3/4 cup all purpose flour ( used Robin Hood flour)

3/4 tsp baking soda 3ml

1 tsp cinnamon 5 ml

3 cups Oats (Robin Hood oats)

1 cups of raisins

1/2 cups of finely grated carrots

Preparation:

Preheat oven at 350•F

•Cream butter, sugars, egg, water and vanilla together on medium speed of electric mixer until light and fluffy.

•Combine flour, soda, and cinnamon. It has been quite a life journey this last couple of days. Last month I organized a bday party for Keegan, who turned 4 and Alexander, who turned 2. I feel proud of myself for been the mom of two wonderful boys, am blessed.

Enough of that! last weekend, I had some fresh apples harvested at my backyard, and was hoping to make a pie. Unfortunately time wasn't on my side. As such, I postponed it till this Friday. After work, I said "Olivia you got to fulfill your promise" though very tired.

Ingredient:

2 Graham pie crust

Dough for pie (makes 2 small size balls)

4 cups of peeled, sliced, partially sour apples

Preparation:

Preheat oven350 Degree F

Pour out the sliced apples in the crusts till full, then cover it with well rolled dough pastry. You can design the edges with a fork. Optional-- you may spread over 1 beaten egg to give the dough covering a golden colour.

Let it bake for 3-45 mins

After baking, let it cool for 10 mins then serve.

Bon Appeti!

Delicious Puff Puff or Beignet

Dear Readers,

How're you? Especially with the Father's Day Celebration. It sure has been a celebration weekend for me; Saturday June 15 was my birthday, and today is Father's Day. Still in the celebration mood, my boys and I crafted something special for their Dad. Check this out:

Dad loved his present, and the boys enjoyed doing the craft work.

As the clock was ticking, and fast getting to lunch time, I dig deep in my mind for a quick and easy recipe; as I was still in the celebration mood. The boys loved it, and even asked for more. I hope it's the same with yours?

Ingredients:

• 2 pack of Instant 'longlife' egg noodle or any other type.

• 2 tbsp. of soy sauce

• 3 tbsp of olive oil

• 1 big carrot

• 4 sausages

• 1 chicken cube

Preparation:

• Bring a small pot of water to boil, add egg noodles and cook uncovered on MAX for 5 mins.
I will like to apologise for my absence in this blog, but never mind, I am back to provide you with the best recipes for your child. Alexander will be 12 months old this month, and he is beginning to stand while using objects for support. He is very playful, and always happy. He gets very grumpy, when he is hungry or wants to sleep; you don't want to give him kisses when he is grumpy as he will fight.

I have a recipe for Alexander's grumpiness, especially when he is hungry. I always try to cook something, which I know he will immediately eat. My baby boy has reached a certain age, where he hates to have his food pureed ( he will intentionally spit it out). So I do not waste my time pureeing his food. There are times when Alexander prefers eating my kind of food than the one I cook for him. I later found that it was because I pureed his food. So what I do is to slightly match his food with a fork, and he likes that form of texture in his food.

Today, I will be sharing an African recipe with you all. This recipe is loved by all children, even adults. My boys are a living testimony, as they enjoyed eating it. They even asked for more, and finished the second portion of serving. It is delicious, and I was quite impressed (coming from my older son who is a little picky in his choice of food). Alexander likes this recipe that I cook it quite often.

Okra Stew and Semolina

Place a deep cooking pan in a stove, and pour out half cup of olive oil;

once the oil is hot, toss in thinly sliced onions, grated garlic, and ginger, and let the onions fry until glazed;

Add three chopped tomatoes, and continue to fry until the tomatoes are ready;

Turn the stove to medium level, add in the two kg of chopped okra, and continue to stir until the okra is well fried;

Add half teaspoon of salt, black pepper, and one chicken cube in the pot.

Add in one kg of cooked beef or dried fish, or smoked chicken or smoked turkey;

Continue to stir the entire mixture, and let it cook for about 30 minutes or until the okra is well cooked, and you begin to see the olive oil texture in the stew.

To cook the semolina:

Bring to boil 2 cups of water;

Add 2 cups of semolina, and continuously stir until it begins to thicken;

Place a small portion of the cooked semolina in a plastic wrap, and serve with the okra stew;

P.S:

Please note that you can either use a fork to feed your baby with this recipe or feed your baby using your hands (make sure your hands are well watched). This recipe can also be made for adults, and it is one of my favorite meals

Do not forget to leave your comments on this sweet recipe.

Thanks,

Chicken Please

Dear Readers,

I hope you had a wonderful day today, and preparing for a beautiful weekend. I had a very busy day today, and after I picked my oldest son from his day care, I decided to cook something easy and creative for my youngest son. Now that my baby is 10 months old, I decided to introduce more protein in his diet, as I have been using chicken or beef broth to make his meals. Today I was able to create this delicious meal, and my baby loved it, and I hope your precious one will also enjoy this meal.

In a medium saucepan bring;

Two cups of water, olive oil, and beef broth to boil;

Add one cup of cooked brown rice, one cup of cooked peas, one cup of cooked carrots.

Add one spoon of grind celery;

Add one cup of sliced chicken, and let cook until chicken is soft.

Pour one cup of water into the saucepan.

Add one cup of apples for some sweetness;

let cook for 30 minutes;

let cool for 5 to 10 minutes, and then blend to favourable texture.

This recipe makes 4 servings.

Enjoy, and do not forget to comment.

Have a great weekend.

How are you doing today, I hope you had a wonderful day. I am sure some of you will be surprised by the title of this recipe--yes it is actually it. Even at a very young age babies can differentiate between fruits and veggies, so how to include veggies in your child's meal plan will be what I will like to share with you. I think it is now high time to do something creative for your child, and the solution is to blend fruits and vegetables. This recipe is extra yummy, I can testify because my youngest one loves it.

Wash,peel, and cut two medium size potatoes, two apples, and two carrots;

In a medium saucepan, pour 1 1/2 cups of water;

Pour the vegetables in the boiling water, and leave to cook for 25 minutes;

Add the cut apples in the saucepan for another 8 minutes to eliminate the sourness;

Once fruit and veggies are done, let it cool for another 25 minutes;

In a blender, pour the cooked veggies and fruits, and blend till desired texture;

This recipe makes two cups.

You may add some breast milk or formula milk to this recipe, it taste extra yummy for your baby, and provides all the nutrients they need to grow.
I hope you are enjoying this Sunday weather, and also hope you had a beautiful weekend. Well as for me I had a very busy day as usual, especially been a mom of two young boys under the age of three, a working mom, a wife and graduate student. I juggle the day, doing everything and also trying to take care of myself.
Today my youngest son hasn't been feeling good, he is now teething, and it has been very painful. Imagine the pain he can be feeling now, and with that he lost his appetite. As creative as I can be, I had to come up with a simple and delicious lunch for him, so that he could feel better and gain more energy for the rest of the day. So I made him something scrumptious, tasty, and delicious. Guess what he ate everything, and I was very happy.

I simply said to myself, this should be a recipe worth sharing to my readers. Please let me know how your young one enjoyed this easy recipe.

combine 1 cup finely diced mango with 1/2 cup cooked red lentils and 1/2 cup tomato puree.

blend to desired consistency depending on your child's age group.

Tips of the post

It is advisable to use sweet ripe mango because it will sweetened the red lentils, and give it a different taste than the regular baby red lentils food.

Have a wonderful weekend,
