<li>If you pre-cook them on a hot skillet or comal first they’re easier to place in the hot oil for frying.<br />
Make sure the oil is very hot to fry the dough. If it’s not hot enough, the dough will absorb more oil than necessary.</li>
<li>Fry one buñuelo at the time to keep an eye on it easily. They cook quickly and you don’t want to burn them. Carefully remove them with tongs or two spatulas.</li>
<li>Always sprinkle them with cinnamon sugar while they’re still warm. It’ll settle on the buñuelos better than if cold.</li>

<li data-stringify-indent="0" data-stringify-border="0">In a large mixing bowl, add the flour, baking powder, salt and cinnamon and mix to integrate.</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the butter to the flour mixture and combine with your fingers until the mixture comes is crumbly.</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the sugar, vanilla extract and water. Using your clean hands, mix well, until all dry ingredients are incorporated and the dough begins to come together.</li>
<li id="wprm-recipe-92793-step-0-3" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">Turn dough out onto a lightly floured work surface and knead for 5-6 minutes until the dough is nice and smooth. Place the dough back into the large bowl, cover with plastic wrap or a clean kitchen towel and allow to rest for at least 15 minutes before proceeding.</div>

<div class="wprm-recipe-instruction-text">Form the dough into 14 to 15 equal in size balls, then roll into a smooth ball.</div>
</li>

<div class="wprm-recipe-instruction-text">On a clean surface, roll each dough ball piece into a rough circle, about 6-7 inches in diameter, until thin and almost transparent. To prevent the disk sticking to the rolling pin, keep the work surface and rolling pin lightly floured.</div>

<div class="wprm-recipe-instruction-text">On a hot skillet, pre-cook the disks for about 10 seconds each side. Set aside and get ready to fry them.</div>

<div class="wprm-recipe-instruction-text">Heat oil to 350ºF (175ºC) in a deep frying pan. About 1 inch high.</div>
</li>
<li id="wprm-recipe-92793-step-0-8" class="wprm-recipe-instruction">
<div class="wprm-recipe-instruction-text">When the oil is hot, carefully place each rolled dough into the hot oil. Fry until both sides are golden brown. <em><strong>Note: </strong>Use a spatula to flatten the center as you cook them. This will help for them to stay flat.</em></div>
</li>

<div class="wprm-recipe-instruction-text">Remove the fried buñuelos and let them drain on paper towels. While still warm, coat them in a mixture of sugar and cinnamon.</div>

<li>One large white onion, finely chopped</li>
<li>Four cloves of garlic, minced</li>
<li>One medium can of red enchilada sauce</li>

<li>One can of chicken broth</li>
<li>One can’s worth of water</li>
<li>1/4 Cup canola oil</li>
<li>2tbsp grated cotija cheese</li>
<li>Flour or Corn tortillas, street-taco size</li>
<li>Cilantro, limes for garnish (optional)</li>

<p><em>Note: Dilute the sauce to suit your taste. My Abuela likes it extra strong and spicy! Leftover chicken can be frozen with the remaining liquid in gallon-sized bags and used for breakfast with eggs, lunch quesadillas, or another round of delicious tacos</em></td>

<li data-stringify-indent="0" data-stringify-border="0">Heat the canola oil in a large pot over medium</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the onion and sauté until it is soft and fragrant (save some onion for garnish)</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the garlic and cook for 1-2 minutes, stirring constantly</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the chicken, chicken broth, tomatoes, and enchilada sauce to the pot</li>
<li data-stringify-indent="0" data-stringify-border="0">Fill the chicken broth can with tap water and add it to the pot</li>
<li data-stringify-indent="0" data-stringify-border="0">Stir to combine ingredients</li>
<li data-stringify-indent="0" data-stringify-border="0">Simmer the mixture for 20-25 minutes until the sauce becomes thick, stirring occasionally</li>
<li data-stringify-indent="0" data-stringify-border="0">Scoop the finished chicken with a slotted spoon, allowing the juice to pour back into the pot</li>
<li data-stringify-indent="0" data-stringify-border="0">Serve in warm flour or corn tortillas with onion and cilantro for garnish and a sprinkle of cotija cheese</li>

<ul class="p-rich_text_list p-rich_text_list__bullet" data-stringify-type="unordered-list" data-indent="0" data-border="0">
<li data-stringify-indent="0" data-stringify-border="0">Mix flour, salt, baking powder, sugar, and vanilla extract in a bowl until fully combined.</li>
<li data-stringify-indent="0" data-stringify-border="0">Add the butter using your hands, gradually incorporating the ingredients until you get a crumbly texture. Then, add the egg and slowly pour in the warm milk, mixing continuously for at least 10 minutes or until you obtain a smooth and homogeneous dough. Wrap the dough in plastic wrap and let it rest for 10 minutes.</li>
<li data-stringify-indent="0" data-stringify-border="0">Once the dough has rested, form small balls (lime size), and keep them covered with plastic wrap to prevent drying out.</li>
<li data-stringify-indent="0" data-stringify-border="0">Heat a griddle over high heat. Once it’s hot enough, lower the temperature. Shape the gorditas with a tortilla press or a roller. Place the gorditas directly on the griddle and cook each side for 4 minutes, allowing them to brown gradually. Be sure to monitor the temperature. Repeat until you’ve used up all the dough.</li>

I was the only one of my siblings to be born in the States so my mother was vigilant in teaching me the importance of staying connected to my Vietnamese heritage. She was insistent that I learn and continue to speak Vietnamese in our home.</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;">The lessons my mother taught me about embracing my Vietnamese heritage, so I can continue to celebrate our rich cultural traditions, have shaped every aspect of my life. It is an important value that I hope to instill in my own family.&#8221;</span></td>

My grandfather’s life in traditional dance and music embodied the strength of our history through discipline and artistry. I feel I have a responsibility to preserve and honor our cultural practices, bridging past traditions with contemporary life and my community. After their internment during World War II, they built a life for myself and my four siblings centered around family. We were taught from a young age about the importance of our Japanese culture and holidays. I made sure to pass these traditions on to my children and in-turn, my grandchildren. For me family has always come first and I hope that, through the spirit of generosity that I inherited from my parents, that I have lived a life that honors their teachings. <p><span style="color: #0000ff;"><strong>Welcome to MobilityWare’s Employee Spotlight, where we sit down with our talented team members to find out what it takes to create some of mobile gaming’s most popular and enduring titles. Recently we sat down with Software Engineer II Justin Riccardo to ask him about the innovative work he&#8217;s doing to help keep our competitive card games fresh for dedicated fans.</strong></span></p>
<p>&nbsp;</p>
<p><strong>1) What motivated you to pursue a career in gaming? How did you begin working in the industry?</strong></p>
<p>When I was in high school, I started to learn about programming and discovered it was something I really enjoyed doing. After I graduated from high school, I attended DigiPen Institute of Technology where I learned the ins and outs of game development. Out of all of the assignments I had at DigiPen, my favorite was always our student game projects. While working on my first mobile game senior year, I discovered that mobile gaming was something I was passionate about. From those experiences, I knew game development was something I wanted to pursue. After graduating from college, I was working on casino slot games where I learned how to develop a game in a professional environment with a more experienced and robust team of gaming professionals.</p>
<p>&nbsp;</p>
<p><strong>2) What is your job at MobilityWare? How would you describe your role?</strong></p>
<p>My role is client-side engineering for our competitive card titles. Some of my day-to-day responsibilities include helping brainstorm new feature ideas, planning the software architecture for features we are assigned, and working with the team to ensure we meet project deadlines. We get to work on multiple titles in our competitive cards suite which helps keep our work fresh and engaging. In this role, we are able to work with our design team to help plan new and existing features while also finding innovative ways to implement them. Every 2 weeks, we have a sprint review where we talk about how the sprint went overall and give kudos to teammates who really excelled. One of my favorite aspects of working at Mobilityware is the team-building activities. Sometimes we will play Jackbox together as a team or participate in a virtual escape room. We have a fantastic team that is a joy to work with.</p>
<p>&nbsp;</p>
<p><strong>3) What game titles have you worked on at MobilityWare?</strong></p>
<p>I have worked on both the mobile and Apple Arcade versions of Gin Rummy, Hearts, and Spades along with Spiderette, which is only available on mobile.</p>
<p>&nbsp;</p>
<p><strong>4) In speaking with Sr. Technical Director Greg McBride, we were told that you took the initiative to do some really innovative work on some of our card suite titles. Could you tell us about that? What motivated you to take on this task?</strong></p>
<p>Absolutely! Earlier this year I was tasked with a new feature idea we were interested in implementing. We explored different types of emoji art styles and discovered this clay style of avatars we wanted to use. We wanted to implement a new system that could swap out assets in-game at runtime to change the look of the game for our players. These assets included offline avatars, emotes, and multiplayer avatars. The team was looking to see if we could also reduce the app size. I started looking at different components of the Unity engine and discovered AssetBundles were the perfect solution to this. This was my first time working with AssetBundles and it was fun being able to use them in this feature. We were able to use them to move our avatar and emote assets into bundles and reduce our overall app size.</p>
<p>This task was pretty challenging because it had to work with the existing assets while also ensuring it would be compatible with other card titles. It also needed to work with our league&#8217;s system and associated popups. We developed a method where it would swap asset styles with just the click of a button in the settings menu. AssetBundles provide a really easy way to swap out art styles. Behind the scenes, it’s loading and unloading different bundle types during a swap. It was really exciting to see the assets change in real time!</p>
<p>I was inspired to take on this new task by two of our core values: stay hungry and take ownership. I was eager to learn how AssetBundles worked and wanted to be the one to guide this exploration. After working with AssetBundles, I now understand how they help reduce memory usage while providing the flexibility to do cool things like swapping out textures dynamically. It’s really satisfying knowing players can now choose if they want to use the classic or modern style assets to customize their experience.</p>

<p><strong>5) What do you like to do in your free time?</strong></p>
<p>In my free time, I enjoy playing golf, hiking, and building Legos. I also enjoy taking road trips to the coast and running on the beach with my corgis.</p>

<p>In honor of Lunar New Year, we asked some of our MobilityWare team members to share their favorite customs and traditions. Read on to find out how they celebrate the holiday.</p>
<p>&nbsp;</p>
<p>&#8220;Chinese New Year is the most important festival in China and a time for family gatherings for Chinese people. My parents and I always visit my grandparents and eat reunion dinners with the whole family on New Year&#8217;s Eve. We then watch the New Year Gala together to count down for the Chinese New Year. On New Year’s Day, we put up decorations such as Door Couplets and the Upside-Down Fu Characters (A Chinese character for “Luck” &#8211; posting the character upside down means to “pour out” the good fortune) to express good wishes for the new year. In the following days, we just drop in at relatives&#8217; and friends&#8217; houses, bringing gifts, and greeting one another with &#8216;Happy New Year&#8217;.&#8221;</p>

<p>&#8220;For me, Lunar New Year is always a big celebration with family. It’s a time for me to come home to my parents and wish them good health and joy for the new year. My  Mom will have the house decorated with pots of chrysanthemum flowers and a plate of &#8216;Lucky Fruits&#8217;. We give red envelopes with &#8216;Lucky&#8217; money to wish our loved ones prosperity. Celebrations will open with a Lion/Dragon dance, and we gather around and eat traditional foods. We then gather around and play a dice/ board game called &#8216;lac bau cua&#8217; and gamble.&#8221;</p>

<p>“My family celebrates Tết (Vietnamese New Year), we all gather at my grandma’s house for a huge feast. We eat traditional Vietnamese food like egg rolls, sticky rice, caramelized pork and egg, nuts, and candied fruits. It’s a wonderful time to hang out with family, eat, and sometimes we watch dragon dances and performances!”</p>

<p>&#8220;As a child growing up in Taiyuan City, a small city in the Shanxi Province, my favorite part of Lunar New Year were the fireworks. My family and I would celebrate with the rest of the community at large public gatherings and then set of our own at home so we could experience them up close. It was always such an amazing display, with fireworks of various shapes and sizes and even a few that would do these spectacular spins along the ground.&#8221;</p>

<p>&#8220;In celebration of Lunar New Year I like to do a spring cleaning, fix up paper-cuts on windows and folk paintings on walls, display couplets on doors, and hang a big Chinese character LUCK (<span lang="ZH-CN">福</span>) on the main entrance. On New Year’s Eve, my favorite activity is to sit around a table and play mahjong with light or candles on to keep vigil all night.&#8221;</p>
