Facebook Privacy Policy Changes

Facebook changes their privacy policy quite frequently. It can be challenging to remain vigilant.

Are you aware that with the rollout of the latest version of Facebook, in recent months, all settings were automatically set to allow "Everyone" to view your page? If you have not recently checked your privacy settings, you may be surprised to learn how much information you are unwittingly sharing.

There is a new privacy setting on Facebook called "Instant Personalization", that shares data with non-Facebook websites, and it is automatically set to "Allow." To disallow, go to Account > Privacy Settings > Applications and Websites and uncheck "Allow" (at the very bottom). Share this information with your Facebook friends, your parents, and other family members. Advise your parents to spend time reviewing the privacy settings for younger family members.

Have You Called Your Mother Lately?

Initially I posted this on my Facebook page. It struck a chord with moms and grandmas alike.

OK, so you have kids, and you think they'll stay little forever. And then you blink, and presto they graduate middle school. One more blink and they graduate high school, and then, without hardly blinking, and almost feeling like you must have slept through those years, they graduate college. Next thing you know they have a real world job, and they're living on their own clear across country, and they're going on their first business trip. And you smile and think...weren't we just doing an arts and crafts project or schlepping her to some play date or extra-curricular activity? And then she emails to say they are extending her business trip and she may be taking a seaplane (A SEAPLANE...like a regular plane isn't good enough?!) back home, which sounds pretty cool (in theory only). But all I have to say is that you better call your mother when you get home!!!! Once a mother, always a mother!

It must be a mother's intuition, but we managed to phone her 3 minutes after returning to her apartment. We didn't give her the chance to call us first to receive that illustrious star on her keppie (means "forehead" in Yiddish).

And, while you're at it, call your grandmother. She's wondering about your return, as well.

So, have you called your mother today? She's eager to hear what you've been up to, and, if nothing else, she's looking forward to hearing the sound of your voice.

Ultra Easy Recipe for Homemade Applesauce

I make this recipe from October until early spring. My refrigerator is always stocked with a container of homemade applesauce. It couldn't be any simpler to prepare, so easy, in fact, that I tweeted it in less than 140 characters on Twitter! It’s one of those recipes that I frequently share with friends and family. It is also a surprisingly decent substitute for apple pie. Well....of course, nothing takes the place of a real apple pie, but this is a close second and far better at cutting the calories.

Choose any combination of apples, that you prefer. I generally use a mix of empire, gala, granny smith, and yellow delicious apples. Wash the apples. I do not peel them, but that’s a personal choice. Cut the apples in small pieces; be careful to remove the core. If you have a strawberry huller, it is a convenient tool for removing the core, after cutting each apple in half.

Place apple pieces in a microwave safe baking dish. Add enough water so that the bottom half of the apples are submerged. That's it: apples and water only.

Cover the container with waxed paper or a microwave cover. Microwave on high until apples are tender. I prepare a huge quantity and end up cooking them for approximately 25 minutes on high. Each microwave is different. Periodically, stir and mash the apples to preferred consistency - - chunky or smooth. Cook until desired tenderness.

Remove the container from the microwave. Mash and stir well. Continue to cover the container, while the apples further soften and the flavors meld.

The applesauce is particularly delicious reheated in the microwave, smothered with cinnamon. Store in the refrigerator or freezer.

Budget Friendly Sites for the College Student and Graduate (and their parents!)

A new type of site has been cropping up which offers a daily discount to a variety of options in your area: restaurants, entertainment, services, retail, and more.

Here is how it works: You register to receive their daily email. Once you receive the email, you can decide if the deal is worth purchasing for immediate or future use. Often multiples can be purchased. Even better, you may begin to receive deals for places you already frequent. The deals are unbeatable. The catch: they are usually only available for purchase until midnight on the day you receive the email. There are some exceptions, so check the site for specific regulations.

As an example, my daughter purchased the first deal I emailed to her when she relocated to her new city last fall. That deal included $35 worth of food and beverage, for the cost of $15, at a tapas restaurant. She and her friends all purchased the deal and enjoyed a wonderful dinner at a modest price, including entertainment. In fact, they enjoyed the restaurant so much they purchased another for future use.

There are other benefits specific to each site. For instance, on the daily deal site known as Groupon, if you email your link to a friend and they purchase the deal through your link, your account will be credited with $10 towards your future purchases. The credits may ultimately provide you with a free deal. Gift certificates are also available.

If your city is not listed, keep checking back, since they are rapidly expanding.

And, by the way, your parents will be thrilled with the benefits offered on these sites, so share this posting with them.

Time for a Recipe: Black Bean Burritos

By special request, I am posting another quick and easy recipe.

Black Bean Burritos

1 T. olive oil (or any oil spray)
2 cloves garlic, minced (or more)
2 T. scallions, minced (can substitute one small onion instead)
2 cups cooked black beans (1 can is just shy of 2 cups - - if using canned, drain and rinse)
1/2 jalapeno pepper, seeded and minced - - If you prefer it spicier, increase to a whole jalapeno - - or you can use something comparable, like chili oil, to give it a spicy kick
1/4 cup dry white wine
1/2 cup or more bean cooking liquid (I omit this, but you can add liquid or wine if necessary)
Salt and pepper (salt can be omitted, particularly if you are using canned beans)
1/2 tsp. ground cumin
2 T. olive oil (I omit) (Oil is used to heat the tortillas - - microwave is fine)
6 medium flour tortillas (any size is fine - - we prefer whole wheat from Trader Joe's)
2 T. finely chopped cilantro (the more, the better!)
4 T. white goat cheese (use any cheese you like – We’ve used low fat feta, low fat blue, cheddar, etc.)
Salsa

Heat oil (or spray) in a heavy skillet. Sauté scallions (or onions) and garlic until transparent. Reduce heat and add beans, pepper (chili oil) and wine. Stir to mix well.

Remove from burner and puree the mixture. This can easily be done with a potato masher. If necessary, add cooking liquid (or water or wine) a little at a time.

Season with salt (optional) and pepper.
Add cumin and stir.

Warming tortillas slightly in the microwave will make them easier to roll. Spoon and spread mixture onto each tortilla. Top with crumbled goat cheese. If you prefer, place tortilla in the microwave again to melt the cheese slightly. Top with cilantro and salsa. Fold up and serve at once.

The Ortega site describes how to fold a burrito. The Open Ended method works well for this recipe.

What to do with the Leftover Cranberries (This one’s for you, Sarah)

Since cranberries are seasonal and only available for a few more weeks, at most, I often purchase a few extra bags and store them in the freezer for later use. However, if you are like me, you may be left with a partially opened bag of cranberries. The remainder can easily be frozen or better yet, baked into a batch of cranberry muffins.

Cranberry Muffins

3/4 cup sugar
1/4 cup butter or margarine
2 eggs
1/2 cup milk
2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
2 cups fresh or frozen cranberries, washed and coarsely chopped
Nuts – optional, chopped
Grated orange rind – optional

Preheat oven to 350 degrees. In a bowl, cream sugar and butter until smooth. Add eggs and beat until combined. In a bowl sift together flour, baking powder, and salt. Gradually add dry ingredients and milk and mix with creamed mixture. Stir in chopped cranberries, and nuts and orange rind, if desired. Spoon batter into 12 muffin cups. Bake for 25 to 30 minutes. These muffins freeze well, also.

Another Thanksgiving Recipe: Cranberry Pake

As I mentioned in last week’s posting, my daughter requested some favorite family recipes for her Thanksgiving dinner. Here's a simple, seasonal dessert, that packs a flavorful punch. This recipe, called a Cranberry Pake, is a combination of a Pie and a cAKE, hence the name.

Cranberry Pake

10-inch pie crust (you can make your own or purchase a ready made crust at Trader Joe’s and elsewhere)
2 cups fresh cranberries
1 1/2 cups sugar (this can be reduced)
1/2 cup chopped walnuts
3/4 cup soft margarine
2 eggs, beaten
1 cup flour

Line a 10 inch pie plate with your favorite crust. Mix cranberries, ½ cup sugar (hold the remaining cup of sugar for the next step) and nuts and place in crust. Cream margarine with remaining 1 cup sugar. Add eggs and flour to the sugar mixture and mix well. Pour batter over cranberry mix, sealing it to the edges of the pie crust. Bake at 350 degrees for one hour. Serve warm or cold. Serves 8 to 10.
Freezes well.

Thinking Ahead to Thanksgiving

My daughter recently moved across the country and won’t be joining us for Thanksgiving this year. She has plans to share the holiday with friends and emailed a request for some of her favorite recipes, which she’ll bring to her Thanksgiving celebrations. I haven’t posted a recipe on my blog for quite some time, so in upcoming blogs, I thought it timely to do so.

Thanksgiving is at my house again this year, and I am just starting to think about my menu. I prefer to start preparing and freezing dishes ahead of the holiday. This recipe for Caramelized Onion and Cornbread Stuffing has been a winner the past few years. It can be baked in a casserole or, as is our personal preference, baked in individual muffin cups, called Stuffin’ Muffins. The best part is that it freezes beautifully, especially as Stuffin’ Muffins.

Caramelized Onion and Cornbread Stuffing

2 T. butter (I prefer a light drizzle of olive oil instead)
2 onions, chopped
6 large cornbread muffins (like the oversized ones you purchase in your grocery store bakery), crumbled (I use an entire box of Trader Joe’s cornbread mix – prepared)
A handful of fresh sage leaves, chopped (This is one of those popular Thanksgiving herbs that can be hard to find. Even 4 weeks ahead of the holiday, I had trouble finding it. I was able to locate it in a 1 ounce package at Trader Joe’s, but I had to call ahead for a few days until I found it in stock. I use the entire 1 ounce package when I double the recipe. See notes below.)
Salt and freshly ground black pepper (I omit the salt since it’s in the muffins and chicken stock)
1 beaten egg
1/4 cup heavy cream (skim milk works fine)
1/4 cup chicken broth (reduced sodium chicken broth in a can)

Drizzle a light coating of olive oil in a large pan, over medium heat, and add the onions, cooking until soft and lightly caramelized. While the onions are cooking, blend the egg, milk and chicken broth. Add the blended liquids to the remaining ingredients above in a large bowl and mix well. Incorporate the caramelized onions and stir to combine.

For the casserole: spray a 13 inch casserole dish with Pam cooking spray.
For the Stuffin’ Muffins: Line muffin tins with cupcake papers. Fill each muffin cup to the top.
Bake at 375 degrees until golden brown, about 30 to 40 minutes. If you are freezing the Stuffin’ Muffins, consider baking the recipe until the tops are not quite golden, since you will reheat them in the oven on Thanksgiving.

Notes: I double this recipe, yielding approximately 30 plus muffins. If you search online, you will find a variety of stuffing recipes made as Stuffin' Muffins.

To start this posting on a serious note, October is National Breast Cancer Awareness Month. NBCAM is celebrating its 25th anniversary. While it promotes awareness in October, NBCAM hosts a year round website to be utilized as a resource for breast health and awareness. On a much lighter note, October is also National Cookie Month. To kick off the month Mrs. Fields is offering a free chocolate chip cookie at participating stores from 11 a.m. until 1 p.m. today. Too bad it doesn’t coincide with Starbucks free coffee event, beginning tomorrow.

There’s no question that the current job market is challenging for even the most qualified college grads presently seeking employment. So much for stating the obvious! This is truly a market that requires a creative, “think outside of the box” mentality - - albeit with perseverance, and a lot of luck. But don’t despair; resources abound with tips to make this time in your lives a bit more palatable.
