I got a request for the khmer style beef jerky, but i can't do that until it gets a bit warmer ya know? but any hows this is also easy. Just deep frying the fish is the hardest.

Ingredients :

Fish : any 2 fish, In this case we used 2 flounders but snapper is recommended by my mommy lol

Ginger : 1 ginger or how ever much you like more or less

Salted Soy Beans : 2 tablespoons worth

Garlic : 2 cloves

Vinegar : 1 teaspoon

Sugar : 2 teaspoon

Cooking oil

Instructions :

Prepare the fish if you caught it. Scale and gut etc, but we didn't in this case lols...

Dice the garlic, chop the ginger to small thin and long pieces.

Deep fry the fish. The temperature has to be pretty high so be careful ayy. Fry 'till cook ya know?!

Heat a pan with cooking oil in it. Add garlic and fry till it gives off an aroma.

Add ginger fry and stir until its a little bit dehydrated.

Add the salted soy bean, vinegar, sugar and fry for roughly 2 - 3 minutes and that's done.

When the fish is cooked, put it on a plate and add the ginger soy bean fried mix to the top of it.

Ready to servvvveeee!

Now dice up the garlic and add to a heated pan with the cooking oil or butter.

Fry the garlic until golden and then add the beef and lightly fry it

Do Not Over Cook the BEEF lol! once cooked add on to the top of the plate of lettuce, tomato and onion.

It was really nice so yeahhhh I decide to do it this week. Really easy to make so give it a go :)

Ingredients :

Chicken drumsticks : 10

Honey : 3 - 4 tablespoons

Soy Sauce : 15 - 20 shakes

Dark Soy Sauce : 1 shake

Garlic : 3 cloves

Chili : 2

Coriander : 1 stem

Note: it is totally up to you how sweet, salty or spicy you want the chicken to be. Just make adjustments yaaah =P

Instructions :

Defrost and thaw the chicken if frozen (DUH!) lol and place into a mixing bowl

Add the honey and mix until it is even

Now add the soy sauce and dark soy sauce

Cut the garlic into thin slices and add into the mixing bowl

Now chop the chili into the slices and add it to the mix, slice however thick you like but I generally do it quite thin

Now chop the coriander and add into the mix and Start mixing thoroughly

Leave it to sit and preheat the oven on fan bake to 180 degrees

Tin foil the oven tray and place the chicken in

Do not let the chicken overlap each other, and try to have a little bit of room between each piece for even cooking

Now turn the chicken once over when it is has become a golden brown. Usually takes about 15-20 mins. But because is it chicken you can never be to sure lols. Then your done!

Note: Always double check that the chicken is cooked ayyyyy, don't wana get sick and that.

Sorry but there are no photos at the moment I will surely upload them sumtime next week.
Char Keow Teow with Khatna (Fried Beef Noodles with Chinese Broccoli)

Hey peeps, this is a day late, because I was kinda not in the condition to be doing this kind of thing on Sunday... reasons beyond my control...lol. Any hows today I learnt how to make fried noodles! it doesn't take long to cook, BUT it does take a while to prepare for. Anyways nice and tasty like always.

Ingredients :

Thick white rice noodles : 175g (roughly half a pack)
Top side beef : 200g
Chinese broccoli : 5 stems/branches
Garlic : 2 cloves
Eggs : 1 per dish
Soy sauce : 6 dashes roughly
Dark soy sauce : 1 dash
Oyster sauce : 3 dashes
Oil

Note: If you like it chili, just add the chili sauce when the dish is prepared. =D

Instruction :

Firstly put the noodles into a container and add water until it has softened. This can take up to 2 hours. If you can not be bothered waiting that long then boil a kettle and use the hot water speed up the process, however it is not as tasty

Now get the beef and finely slice it into thin thumb size pieces. Be careful not to cut yourself ya know =D

Now get the Chinese broccoli and wash with water. Now cut it into small pieces, however when you cut it, cut it on a 45 degree angle

Put the Chinese broccoli into a container and add boiling water. Leave to sit for 2 -3 minutes and then drain

Now chop and finely dice the garlic

Heat a wok pan with oil to a medium high temperature and fry the garlic until golden

Add the beef and fry until cooked

Now add in the oyster sauce and soy sauce, about 3 dashes each. Mix well and thoroughly

Remove from the wok pan, drain the noodles and add into the wok pan.

Fry the noodles and add 3 dashes of soy sauce and 1 dash of dark soy sauce and mix well until there is an even colour

Now place the Chinese broccoli into the wok pan and mix well with the noodles for roughly 2 - 3 minutes

Now put the beef into the wok pan and mix thoroughly for another 2 - 3 minutes

Now get a small frying pan and fry the amount of eggs you want to fry. 1 per dish is sufficient

Now you are done and ready to serve! enjoy =D

Note: chili sauce is to be added after the dish is served. Like a the iceing on a cake, the chili is good assss lol.

MMMMMM friend noodles with egg on top....

I actually didn't make it because I was kinda too tired from last night -_- but any how, this meal is good as. Just takes longer then the normal Ba Bor.

Ingredients :

Rice : 1 cup
Water : 12 cups
Chicken : half of one
Salt : 3 teaspoons
Garlic : 2 cloves
Carrot : 1
Spring onion : 2 stems
Coriander : 1 stem
Bean sprout : however much you like
Cooking oil : approx. 1 teaspoon

Instructions :

Cut the carrot into small slices

Dice the the garlic into tiny tiny pieces

Dice the spring onion and coriander into the size you like best

Get a pretty big pot, put the water in and bring to a medium boil

Once boiled add the carrot and chicken

Boil until the chicken is cooked

While the chicken and carrots are cooking get a frying pan and heat the oil to a medium temperature

Add the garlic into the frying pan and fry until golden

When the garlic is done wash the rice and then place into the frying pan (at this stage the rice is still raw)

When the chicken is done remove and place the fried garlic and rice into the boiling pot and add the salt

With the chicken, rip the meat into small piece

Once the rice becomes fluffy add the chicken pieces into the pot and simmer for 5mins

Wash the bean sprouts and you are ready to serve

Note : i prefer the bean sprouts at the bottom of the bowl when serving, but its really up to you. Also you can add chili sauce or pepper when serving. If the meal is too bland you can add soya sauce to add in extra flavour.

Hey all, today we made Char Kroeung. This involves a lot of herbs so it is very flavour-awesome. You could say its kind of a like a yellow curry, but with less things like potato and that. Also note that these ingredients is for a whole chicken lols.

Ingredients :

Lemon Grass : 1 stem/branch (whatever you call it)
Garlic : 3 cloves
Turmeric : 0.5 teaspoon
Kaffir Lime Leaves : 5 (cut into halves)
Chili : 2
Salt : 0.5 teaspoon
Sugar : 1.5 teaspoons
Chicken : whole chicken
Water : 0.5 cup

Note: you could also use beef or lamb.

Instructions :

Cut the chicken into small portions

Finely dice the lemon grass, garlic and then place into a herb crusher

Add turmeric into the mix and begin to crush the garlic, lemon grass and turmeric until it becomes paste-like

Dice the chili and place it into the herb crusher and mix it

Heat a frying pan to medium high temperature, and place the mixed herbs

Fry until it produce an aroma of the herbs, then remove the herbs into a small bowl

With the same frying pan, fry the chicken on medium to high temperature with the left over herbs until the chicken is cooked

When cooked, place the herbs into the frying pan

Now add the salt, sugar, water and the kaffir lime leaves

Stir and simmer until the herbs become attached to the chicken

And Ta-daaaaa you done lols

Note: You can also add fish sauce and/or oyster sauce to the frying pan if you please =D

Here is a great complimentary dish to go with Ba Bor Sor (white rice porridge). Its salted fish which has a lot of flavour.

Ingredients :

Fish : 500g
Salt : 1.5 teaspoons
Sugar : 2.5 teaspoons
Sesame Salt : 0.2 teaspoons
Oil : As much as you need to deep fry the fish lol

Instructions :

Prepare the fish such e.g. scaling and cutting the guts out

Cut the fish into small portions

Place the fish into a bowl, a bowl you can mix the ingredient

Add the salt, sugar, and sesame salt into the bowl and MIX thoroughly i mean THOROUGHLY! lol

Now you are ready to fry

Place oil into a sauce pan or whatever you can use to deep fry

Heat to 180C (roughly that temperature if its too hot the oil will explode or something)

Lightly place the fish in

Cook the fish for about 3-5 minutes each side or to your liking

note: don't drink and fry, safety first D: also, drain the fish by placing paper towels into a plate prior to serving.

Also big ups to Mom Hou and Vibol Duch for their assistance Churrr =D

Since winter is coming upon us fast, I have decided to learn how to make Ba Bor Sor (white rice porridge). This meal is great for winter and for when you are sick as it warms you up and is easily digested.

Ingredients :

Rice : 1 cup
Water : 6 - 7 cups
Salt : 1 teaspoon

Extras: coriander, spring onion, soy sauce

Instructions :

Put 1 cup of rice into a pot and rinse 2 - 3 times

Add 6 - 7 cups of water into the pot

Add 1 teaspoon of salt into the pot

Place pot on the element and bring to a boil

Turn down the element and let it boil softly while having the pot lid half off

Let it boil softly until rice becomes fluffy

Remove top layer of starch regularly through out the boil

notes: for a more or less watery meal just simply put in more or less water accordingly. Also fried fish is great with this meal.
