It supplies your body with energy and essential fatty acids (EFA). Fat from your diet also helps you to absorb vitamins such as A, D,E and K. Fats help maintain healthy skin and provide your body with certain Vitamins.
A moderate amount of fat means no more than 25-35 percent of your total daily calories come from fat.Reducing saturated fat to 10 percent of total calories will slow the development of heart disease ,reduce your cancer risk and improve your overall diet.No more than 10 percent of total calories should come from polyunsaturated fats.
Eating food with lots of saturated fats, trans fats and cholesterol can raise the LDL (or bad cholesterol) and triglyceride levels in your blood.Having high levels of LDL (bad cholesterol)
triglycerides puts you at greater risk for heart disease. Trans fats also increase your risk for heart disease because they lower HDL, (or good cholesterol) . A high level of HDL cholesterol in your blood helps to protect your heart.

Review the chart to see lists of foods with fats that can protect your heart and those foods with fats to avoid.
1/4 tsp salt

Frosting & Decorating Ingredients :-

1 stick unsalted butter, softened
1 pound confectioners sugar
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup cocoa powder
2 packages candy eyes

Method:-

1) Preheat the oven to 350 degrees. Prepare two muffin tins with liners. Set aside.

2) In an electric mixer or a hand mixer, beat the butter & sugar together, till light and fluffy ,this may take 5 minutes.

3) Add the eggs to the butter one at a time, making sure each egg is incorporated well before you add each one.

4) Once all the eggs are incorporated add the vanilla essence and beat.

5) In a separate bowl whisk together the flour, baking powder, and salt.

7) Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.

8) Carefully spoon the batter into the cupcake liners, filling them about 3/4 full and bake for about 18-20 minutes or until set and a toothpick inserted into a cupcake comes out clean.

9) Remove from oven and place on a wire rack to cool. Once the cupcakes have completely cooled, frost with icing.

For Frosting:-

To make the frosting place the butter in a large mixing bowl. Add 1/2 the sugar and alternate adding milk/vanilla, remaining sugar and cocoa to taste while beating on medium speed until creamy.

Frost the tops of the cupcakes and make a turkey using the Candy Eyes and the Candy Corns.

Makes -20 Pedas

Preparation Time -15 -30 minutes

Ingredients:-

Milk powder- 1 cup
Condensed milk- 3/4 tin
Unsalted Butter-1 1/2 tbsp (Melted)
Pistachio for decoration

Method:-

1) Mix all above ingredients except pistachios thoroughly and cook in a large and deep microwave safe dish for 2 minutes, at every 1 minute interval mix it well.
2) Remove and stir it thoroughly.Again microwave it for another 2 minutes.
Mixture has to thicken.
3) To check if done, cool the mixture slightly and if you are able to roll between your fingers you know it is done.
4) Try not to overcook this mixture as it will result in hard pedhas that are difficult to shape.
5) Remove and let it cool down for sometime about 10-15 mins.
6) Grease hands with ghee, knead the mixture and shape itin any desired shapes or like small round balls and flatten them and place it in a greased plate with butter so they won't stick to the plate.Garnish it with pistachio or almonds immediately so that they stick to pedas.
7) Let the pedas set and cool thoroughly then store in an airtight container. And can be kept without refrigeration for about 4-6 days.
8) Tastes best within a couple of days of making it.

Note:-

1) Time taken to cook the pedhas will vary based on the output of the microwave used and the depth and size of the dish used.
2) For best results, store in the refrigerator but serve at room temperature.
Ariselu/ Adhirasam /Athirasam is one of the traditional sweet in South India. This Traditional sweet we make for marriages and festivals like Diwali and Makara Sankranti. This is a recipe for crunchy on the outside and soft in the inside Adhiarsam ~ a pure Diwali delight.

Source :- MIL

Ingredients :-

Raw rice- 2 Cups
Jaggery- 1 Cup
Cardamom powder- 1/4 tsp
khus khus /Poppy seeds - 2 tsp
Sesame seeds -2 tsp
Water -1 cup
Oil for deep frying

Method :-

Wash and Soak the rice in water overnight.. Drain the rice and spread it in a clean cloth in a shady area.It should not become fully dry but should still have some wetness in the rice. You can either grind this to fine powder using your mixie or give to mill to machine grind.

Roast the sesame seeds in a dry pan.

Cut the jaggery into small pieces or grate it.

Add 1 cup of water in a thick bottom pan and add the cut jaggery to it. Cook on medium flame and When the jaggery melts completely filter it in a strainer to get rid of the dirt. Then again cook till the pakam is ready. keep stirring the filtered jaggery in low heat. The consistency here is very very important. When it is thick, check the consistency by pouring a drop of syrup in a cup of water. The syrup should not melt in water and when touched by finger it should roll into a soft ball. It should not be hard. If you hit the ball on the vessel, it should produce a metallic sound. This is the right consistency and pakam is ready.

Immediately switch off the stove and add cardamom powder, roasted sesame seeds and khus khus /poppy seeds. Stir well and add the rice flour to it little by little . Mix well so that no lumps are formed and till you get a chapati dough like consistency.Cover and keep aside for few hours or over night.

Next day Divide into lemon size balls of the dough.

Heat oil in a pan . Place the balls in a plastic sheet and using little oil shape it to form small patties or round puris. Deep fry in hot oil on low heat until golden brown on both sides. Once done, remove from the oil, place between two ladles and press. (usually when frying Ariselu they absorbs oil so when you remove from the oil you have to press them and remove the extra oil).Remove the oil completely drain on a kitchen towel. If you are cooking alone, you can roll out one by one and cook. Else it might get burnt.

Spred them in a big plate(thali) to cool. After they become cool store them in a air tight container.
This delicious Adhirasam will last for more than one month if we make them in right way and store it properly.

Yummy and Delicious Adirasam is ready :)

Note :-

1) The whole deep frying process should be done on low heat.

2) You can store the dough in the refrigerator for 3 months and use whenever you want. If it becomes too hard, just add about 2 tsp of water along with 2 tsp of sugar. Get it to boil, while you keep stirring it. The mix should become soft again. When you handle it, it should come together as a soft dough.

Savories for Diwali

Gongura (also known as Ambadi or sorrel leaves) is a green, leafy plant that has many different uses in Indian cuisine. Gongura is a great source of Iron, folic acid and other anti-oxidants. Gongura comes in two varieties : one is green stem and the other being red variety which is sourer than the green/white stems variety. These Gongura leaves are used to prepare curries, stews, dals , pickles …. Try this Authentic Andhra Gongura Dal recipe (Gongura Pappu).

Ingredients:-

Gongura / Sorrel Leaves -3 cups (Discard stems, wash and Chopped)
Toor dal / Kandipappu -1 Cup
Onion ,finely chopped - 1/2 medium (optional)
Green Chillies -5 ,sliced lenghtwise
Salt to taste
Turmeric Powder - 1/4 tsp
Tamarind pulp - 2 tbsp (adjust according to taste)(optional)
Chilli Powder - 1 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Hing -a Pinch
Few Curry Leaves
Oil - 1 tsp

Method:-

Depending on the sourness of Gongura Tamarind can be used or omitted.

Soak the lemon sized tamarind for around half an hour in water or just microwave for 1 minute and extract the juice free of all the pulp and seeds.

Separate gongura leaves from the respective stems. Wash and Chop.

Wash the toor dal with water .Pressure cook toor dal along with sliced green chillies, chopped gongura leaves, fiely chopped onion, turmeric powder adding about 2 1/2 cups water for 4-5 whistles. It takes more time for dal to cook with gongura leaves as they are sour.Do not open pressure cooker until all internal pressure is released.

When the pressure is released remove the cooked dal and add red chilli powder and salt.Mash it with a wooden pappu gutti or using an immersion blender or laddle into smooth paste. Check for the sourness if required add tamarind pulp.Mix well once again and cook on simmer heat for 7-8 minutes till the flavors come together.

Now, in a sauce pan, over medium heat, do the seasoning or tadka .Heat oil in a pan and add mustard seeds.when they start spluttering add cumin seeds ,hing and curry leaves .Turn off the heat and add tadka to the daal and mix well.
Breakfast being the most important meal of the day, one has to make sure they don't skip it. When you are on a diabetic diet, the usual idli and Dosa doesn't suit as it is made with rice. So for them this dish is perfectly suitable as this Idli is made with oats and Bombay Rava .This is very quick to make and very tasty to eat and tastes same like rava idli.

Makes :-12 Idlis

Ingredients:-

Instant oats - 1 cup (I used quaker oats)
Rava - 1/2 cup (I used Bombay rava, you can use wheat rava also)
Water - 1 cup or as required
Curd - 1/2 cup
Salt - to taste
Carrot - 1 medium , grated
Mustard Seeds - 1tsp
Green chilli - 2-3 , finely chopped
Few Broken Cashews
Hing - 1/2 tsp
Coriander leaves - Few finely chopped
Curry leaves -Few
Baking soda / fruit salt - 1/2 tsp
Oil - to grease idli plates
Oil - 1 tsp

Method:-

1) First dry roast Oats for 3-5 minutes in medium flame until nice aroma comes and set it aside .Cool it completely then grind it to a fine powder. Transfer to mixing bowl.
2) Then dry roast rava for 3-5 mins until nice aroma comes, then set it aside. Transfer to mixing bowl.
3) Heat oil in a pan and add mustard seeds .When it splutters add bengalgram dal , broken cashews , curry leaves, hing ,ginger, green chillies.Saute for a minute then add the veggies u want to add ( I added grated carrot )and chopped coriander leaves. Give it a quick fry .Transfer to mixing bowl, add salt, curd ,water as required and make a batter. The consistency should be similar to rava idli batter consistency (neither too runny nor too thick). Mix well.
4) Add Eno fruit salt or baking soda just before making idlies and mix well. This will give you a frothy/airy batter which gives a soft spongy idlies.
5) Pour the batter in to a greased idly plates and steam just like the regular idlies but for more time, say 13-15 minutes, until done.
6) Cool for a minute and transfer to a serving plate.Serve hot with any chutney of your choice or with Sambar.

Oats Upma
