This Churro Ice Cream Sandwich brings you right back to Sleepy Hollow at Disney World. It is full of cinnamon and sugar and filled with Breyer’s Vanilla Ice Cream! This is a treat you will not want to miss out on. 

Any time we head to Disney there is one treat we ALWAYS have to get. The Churro Ice Cream Sandwich at Sleep Hollow is absolutely amazing. It is the perfect combination of a warm churro with vanilla bean ice cream. If you have not tried, you cannot go to Disney again and pass it up!

How do you make Churros? 

Churros are a famous Mexican pastry treat and they are much easier to make than you may realize. It is a cinnamon sugar dough that is fried and covered in even more cinnamon and sugar. It is delicious!

Today’s recipe for Churro Ice Cream Sandwiches comes directly from the Happiest Place on Earth, Walt Disney World! Like I mentioned, there is not a churro out there better than one at Disney. Being such good fans of the real deal, we had to try this one at home!

Churro Ingredients

Here are the ingredients you will need to make Churro Ice Cream Sandwiches-

• water
• butter
• salt
• flour
• cinnamon
• sugar
• vanilla
• vegetable oil
• Breyer’s Vanilla Ice Cream
• more cinnamon and sugar!

In a medium sauce pan, add water, butter, 1/4 tsp cinnamon and salt. Bring to a rolling boil and then reduce to low heat. Add flour to mixture and combine to create a dough ball. Remove from heat and let cool. 

After cooling, add eggs one at a time and combine.

Using a star tip piping bag, add mixture to bag and pipe in a circular motion creating a “churro cookie”. Place on parchment lined cookie sheet. Repeat until you run out of dough! Place in freezer for 10-15 minutes. 

Fill a heavy bottomed pot with 1 1/2 cups vegetable oil. Heat on medium heat to 350 degrees. 

While the oil is heating, mix cinnamon and sugar in a shallow bowl to top cooked churros with later. 

Remove churros from the freezer. Gently add churros to the heated oil cooking on each side for 2-3 minutes each. Make sure there is enough room for churros to cook through evenly. Remove with slotted spoon and place on paper towel. While still warm, roll in cinnamon and sugar mixture!

Top with Breyer’s Vanilla Bean Ice Cream then with another churro!

Serve and enjoy!

Recipe Notes

Shape: Traditionally churros are made in a straight shape. You can definitely use this recipe to make traditional churros as well. Using a star tip on the piping bag will help you to get the traditional churro shape. 

Cooking time and Temperature: Make sure that your oil is the perfect temperature. I found that 350-360 degrees is best. If it is too hot, your dough will burn on the outside and be raw on the inside. Also, make sure that you do not put too many churros in at a time. You want to leave plenty of space for cooking. Also, if you put too many in the temperature could drop. 

Dipping Sauce: If making traditional churros, try them with dipping sauces. My favorite dips are chocolate and caramel. OMG I want some now!

If you are at Walt Disney World, you can find this delicious dessert at Sleepy Hollow Refreshments. At Disney, they serve these cinnamon sugar churros with Breyer’s Vanilla Ice Cream. This ice cream is the perfect touch and helped to make our churro ice cream sandwiches taste even more authentic!

• Churros:

• 1 1/4 cups all purpose flour
• 3 large egg
• 1/2 teaspoon vanilla
• 1 1/2 cups vegetable oil for frying
• Topping:
• 1/2 cup sugar
• 1 teaspoon cinnamon divided
• Ice Cream:
• Breyer's Vanilla Bean

Instructions

1. In a medium sauce pan, add water,

HOMEMADE MOON SAND– Does your kiddo love sand but it is too messy for you? This Homemade Moon Sand Recipe from The Imagination Tree is what you need.

BUILD A BLANKET FORT- My friend Sarah from Pretty Providence has put together the best post full of tips and tricks to building the most epic blanket forts. We will be building one in my girls room this week. It will keep them busy for hours and hours!

These baked gluten free chicken tenders are so delicious and taste just like they came from a restaurant. Made with almond flour and a secret ingredient they will quickly become a family favorite! These are a go-to meal in our home and the kids LOVE them! 

Our entire family loves these chicken tenders for dinner! They are the number 1 meal requested in our home and there are never any leftovers. They are a quick and easy dinner and go great with green beans and this delicious salad!

Family Favorite Chicken Recipe

I recently had my entire family over for dinner. I whipped up several recipes for everyone to try and although they loved it all, these chicken fingers were gone before I even sat down for my first bite. I am taking that as a sign that they are delicious! 

It could be that I have a secret ingredient that takes these chicken tenders to a whole new level but it could also be that I am just an amazing cook. Ha!

This particular recipe calls for chicken tenders but you could also cube up chicken breasts to make nuggets as well. I do this when I am feeding an extra large crowd and need them to stretch a bit further among the crowd. 

I have tried several different gluten free chicken tender recipes from the internet but they were never just right. I made some tweaks and developed this recipe. It is definitely one I am super proud of. Give it a try and let me know what you think!

Healthy Baked Chicken Strips

When you eat these chicken strips the best thing is that you do not have to feel guilty for eating them. They are coated in an almond flour mixer and baked. Don’t worry though, this recipe doesn’t taste healthy!

2 Step Breading Process

Set up a station with 2 pie pans. One pan will have whisked seasoned eggs and the other will have the almond flour mix. Dip each chicken tender in the egg and then the almond flour until they are well coated. 

Baking

Place coated chicken fingers on a lined cookie sheet. Bake at 400 for 20-25 minutes. Remove when chicken is golden brown.

These baked gluten free chicken tenders are so delicious and taste just like they came from a restaurant. Made with almond flour and a secret ingredient they will quickly become a family favorite! These are a go-to meal in our home and the kids LOVE them! 

Prep Time 15 minutes

Cook Time 20 minutes

Total Time 35 minutes

Ingredients

• 1-2 lbs chicken tenders
• 1 cup Almond Flour
• 1/2 cup Tapioca Flour
• 1 package Hidden Valley Ranch Dip Package
• 1 teaspoon Paprika
• 3 eggs whisked
• Salt and Pepper to Taste

Instructions

1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
2. In a shallow dish or pie pan, whisk eggs and salt and pepper. In another pie pan add almond flour, tapioca flour, ranch dip packet and paprika. Whisk all dry ingredients together.
3. Dip each piece of chicken in the egg wash and then in the flour mixture making sure that each piece is coated evenly. (I find it easiest to use one fork for the egg mixture and one for the dry ingredients)
4. Bake 20-25 minutes until golden brown and cooked through.

Notes

*To make sure that your chicken is seasoned well, "taste test" the dry mixture. Add salt and pepper to taste.

This Disney copycat recipe from the Grand Floridian Cafe is the BEST Heirloom Apple Salad EVER! It is filled with greens, bacon, sharp cheddar cheese and a delicious apple cider vinaigrette. This salad is so filling it really is the best salad recipe for dinner!

There is nothing I love more than going to Disney, eating all the food then coming home and recreating some of my favorite recipes. The last time we were at Disney World we were able to stay at the Grand Floridian and we ate often at the Grand Floridian Cafe. If you have not tried the Grand Floridian Cafe, you are missing out on some of the best food I have EVER had at Disney. 

The BEST Salad at Disney World

My very favorite dish I had was by far the was the Heirloom Apple Salad. You guys, I never in 1 million years thought that I would say my favorite thing I ate when I was at Disney was a salad but this dish is AH-MA-ZING! Like I dream about it because it’s so delicious. 

Packed full of heirloom apples, sharp cheddar, candied pecans and prosciutto….this salad is delicious! This dish may not be on the Best Food at Disney list yet but it should be!

Simple Green Salad with Apples

This heirloom apple salad is a favorite in our house and is so easy to make. We have it at least once a week (really because I can’t stop thinking about it) but the hubs and kids love it too! 

The flavors in this salad are perfection! It did come from Disney so I’m not sure what else would you expect. It is literally the best salad recipe EVER! Have I convinced you yet?

It is packed full of greens, prosciutto, candied pecans, and the sharpest cheddar you can find. I sometimes add a few dried cranberries for a sweet topping as well. Yum.

I am so excited that I figured out this recipe. Every time I make it, it takes me back to relaxing days at Disney with the fam and living my best life. 

Heirloom Apple Salad Dressing

• Avocado Oil or Light Olive Oil
• Apple Cider Vinager
• Honey
• Dijon Mustard
• Pepper
• Salt

Add all ingredients except for the oil into a mason jar and shake vigorously for 2 minutes or until well blended. Add in the oils and shake for another 2 minutes. 

Assemble the salad. 

Add all of the salad ingredients into a large bowl. Pour chilled dressing over salad and toss. Serve immediately!

Additional Tips

If you want to prepare this salad ahead of time, add all ingredients except for the apple into a large bowl. When ready to serve, slice apple thinly and put with other ingredients. Toss salad with chilled salad dressing and serve.

• Salad Ingredients:
• 4 cups spring mix greens
• 1 large finely sliced heirloom apple (can substitute with gala)
• 3 pieces crumbled bacon
• 1/4 cup shredded sharp cheddar
• Candied Pecans
• Salad Dressing Ingredients:
• 1 cup Avocado Oil or Light Olive Oil
• 1/3 cup Apple Cider Vinegar
• 2 tablespoons honey
• 11/2 tablespoons Dijon Mustard
• Salt and Pepper to taste

Instructions

1. In a large bowl, add greens, apples, prosciutto, and cheddar to a large bowl . Make sure that your apples are sliced very thinly before adding.
2. Add candied pecans to taste. I like to add 1/1 cup. You may want to add more or less.
3. In a mason jar add apple cider vinegar, Dijon mustard and honey. Place lid on jar and shake vigorously.
4. Once mixed, add oil and salt and pepper and shake again.
5. Pour desired amount of dressing over salad and toss gently.
6. Serve and enjoy!

Notes

*You can make this dressing ahead of time but it will separate. If chilled, remove from fridge a few minutes before serving and shake vigorously to mix dressing well.

This Valentine’s Christmas Tree is the perfect addition for your Valentine party decorations!
These valentine tree decorations are super easy cost effective. 

I have partnered with Hometalk to do this fun Valentine’s Holiday Tree but all opinions are my own. 

Friends, I have an obsession. I cannot get enough of holiday trees. I know, it’s over the top and absolutely ridiculous but I love them. I created this Halloween Tree in October and now with Valentine’s Day around the corner, I just couldn’t help myself. 

This fun Valentine’s Decoration Idea is super easy to make and does not have to be expensive. I grabbed this white Christmas Tree off of Facebook Marketplace for $15 and it has been the perfect tree for all of my holiday trees. 

Here is what you need for the perfect Valentines Christmas Tree!

This tree was super easy to put together because I had almost everything left over from Christmas! I added a few other fun decorations and it is perfect!

Supplies:

• White Christmas Tree
• Red and White Christmas Ornaments
• Valentine Garland
• Valentine Picks
• Large Valentine Sign
• Light Box
• Mailbox 
• Valentine Heart Doilies
• Glue Gun
• Valentine Ribbon and Tulle

Also, don’t forget the glitter. Your Valentine’s Tree decorations are not complete without it! 

Directions:

1. Start with the top! Anytime I start to decorate a tree, I start with the top of the tree. This is the focal point of the tree and I usually try to make it pretty full. This tree is no exception. For this tree, I started with the mailbox. I glued pipe cleaners to the bottom and attached it to the tree. 
2. Next, add the doily hearts. I strung doilies on some jute string and then hot glued it to the inside of the mailbox. I wanted the hearts to look like they were falling out of the mailbox so I went in and added several more by hot gluing them on. 
3. Now it’s time to add the BIG items your are putting on the tree. This is my number 1 tip when doing a tree of any kind. Not only to large pieces help to make the tree look full. Simply push your signs onto the tree and use the stems of the tree to make sure they are secure. 
4. It’s time now to add the rest of the decorations. Start with ribbon! I always like to use 2 different ribbons to add more texture to the look of the tree. Once the ribbon is on it’s time to add garland. You can’t mess garland up so don’t be scared. Simply wrap it around the tree and it’s good to go. 
5. I purchased the picks from the Dollar Tree and put them on next. I actually think these picks were drink stirs. I put 3 together with floral ribbon and put them on the tree.  They are the perfect finishing touch!

Don’t spend a ton of money on these holiday trees. I love to go over the top for my Christmas Trees but when doing a tree like this one for Valentine’s Day I went to the Dollar store, the Target dollar spot and used what I had here at home. It was so much fun!

When doing a DIY Valentine project like this, be creative. If you see an item you love think of how you can re-purpose it.

Valentine’s Day Holiday Tree

This quick and easy Sheet Pan Steak Recipe topped with fresh authentic chimichurri sauce is so delicious and easy to make in one pan. This dinner is healthy and perfect for the family!

Fajitas are one of our favorite dinner recipes. We live in Texas so Mexican food is definitely a staple in our home. Don’t forget to check out these Green Chili Chicken Enchiladas and these Authentic Carnitas too!

If there is one food group I can’t live without, it’s Tex-Mex! I could literally eat Mexican food for every meal. I mean any cuisine that can be wrapped up in a delicious tortilla is complete perfection to me! 

These sheet pan steak fajitas are so easy to make and filled with steaming veggies. It is prepped and ready to eat in under 30 minutes and the best part, it hits the spot for a Mexican food craving. The best part of this meal, the chimichurri sauce. If you have not tried chimichurri sauce on your steak fajitas, you are missing out!

How to Cook Steak Fajitas

No access to a grill, no problem! The awesome thing about fajitas is that you can not only throw him on the grill but you can also pop them in the oven on a sheet pan. That might be my favorite part of this recipe. All of the ingredients are quickly cut up, tossed onto a sheet and in minutes you have sizzling fajitas that will rival any cast iron full of fajitas from a restaurant. 

What kind of meat do you use for fajitas?

Steak fajitas a typically made with skirt steak but can also be made with flank steak. When making sheet pan fajitas you can use a more lean cut like a sirloin or round cut of steak. You can definitely marinate and season the meat the same but choose carefully depending on how you are going to cook your fajitas. 

How to make Fajita Seasoning

When making fajitas, a good marinade, seasoning or even both is key! For sheet pan fajitas, I used my own blend of chili powder, cumin, paprika, onion powder and garlic salt. I always like to make my own seasoning mix rather than use a store bought taco seasoning. You really can taste the difference and it doesn’t have extra preservatives. 

If you would like to marinade your meat, use the same seasonings with olive oil and some lime or orange juice. Mix all together and let the meat marinade in the sauce for at least an hour. The tougher the cut of meat the longer you should marinade. 

Cooking Veggies

To make the perfect sheet pan fajita veggies I use the same seasoning as I do for the meat. I always cook the veggies for a few minutes before adding the meat. There is nothing better than tasty veggies on a delicious fajita taco. 

What to Serve With Fajitas

My most favorite topping to serve with fajitas is one that you cannot miss trying! Any time we make fajitas or any type of Tex-Mex dish at home, I always whip up a batch of this fresh and tangy authentic chimichurri sauce. This sauce is full of fresh parsley, fresh oregano and other delicious spices. You have to try it! I promise you will be hooked. 

Another one of our favorite toppings is this guacamole! OMG I could just eat a bowl of it by itself!

This recipe is absolutely perfect for a busy night! You can prep ahead of time and have everything ready to toss on the sheet pan. What is better than a one pot/pan recipe that can be ready in under half an hour? Nothing, I promise!

Sheet Pan Steak Fajitas

This quick and easy Sheet Pan Steak Recipe topped with fresh authentic chimichurri sauce is so delicious and easy to make in one pan. This dinner is healthy and perfect for the family!

Cook Time 15 minutes

Ingredients

• SHEET PAN FAJITAS:
• 1 tablespoon olive oil
• 2 large bell peppers (I like using red and orange)
• 1-2 lbs of lean steak (sirloin or round) thinly sliced
• 2 tablespoons of chili powder
• 1 tablespoon of cumin
• 1/2 tablespoon paprika
• 1 teaspoon salt
• 1 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 2 limes juiced
• Fresh Tortillas
• Cilantro for garnish
• AUTHENTIC CHIMICHURRI SAUCE:
• 1 large bunch flat leaf parsley
• 1 cup extra virgin olive oil
• 1/2 cup fresh oregano or 2 tablespoons dried oregano
• 1/4 cup red wine vinegar (add more if needed when tasting)
• 1/2 teaspoon red pepper chili flakes
• 1/2 tablespoon garlic powder
• 1/2 tablespoon of salt (add more if needed)

Instructions

SHEET PAN FAJITAS WITH VEGGIES:

1. Preheat oven to 400 degrees Fahrenheit.

2. In a small dish mix chili powder, paprika, cumin, onion powder, garlic powder and salt.

3. Thinly slice onions and peppers. Toss with 1/5 tablespoon of olive oil and 1/2 tablespoon of fajita seasoning mixture. Place on large sheet pan and cover with juice of 1 lime.

4. Bake onions and peppers in preheated oven for 10 minutes.

5. While the onions and peppers are cooking thinly slice steak. Toss with remaining olive oil and 2 tablespoons of fajita seasoning. *save remaining seasoning for next time.

6. Remove onions and peppers from the oven and add sliced steak. Toss together with tongs and spread evenly on pan.

7. Bake steak, pepper and onions for an additional 12 minutes or until the veggies are soft and the steak is browned on the outside. *Be careful not to overcook the steak!

AUTHENTIC CHIMICHURRI SAUCE:

8. In blender add parsley, oregano, olive oil, red wine vinegar, garlic powder, red pepper chili flakes and salt.

9. Blend on high until all ingredients are blended well and the sauce is smooth!

10. Serve fajitas in warm fresh tortillas with this delicious chimichurri sauce. It's also great with a sharp cheddar cheese sprinkled on top!
