Instapot Homemade Teriyaki Chicken

Yield: 4

Quick and easy dinner with sauce made from scratchCan be served alone or with mixed vegetables

Ingredients

1 1/2 pounds boneless, skinless chicken breasts about 3 medium breasts
2/3 cup low-sodium soy sauce
1/3 cup water
3 tablespoons white vinegar
3 tablespoons honey
3 tablespoons brown sugar
2 tablespoons minced garlic
2 tablespoons ginger paste
3 tablespoons cornstarch stirred into 1/4 cup water

Instructions

Directions to Cook Chicken

Lightly coat the bottom of pot with oil and add uncook chicken breasts in the bottom.
In a bowl, combine soy sauce, water, vinegar, honey, brown sugar, garlic, and ginger with a whisk. Pour sauce over chicken and seal the lid.
Select "Pressure Cook" Setting to cook on HIGH (manual) pressure for 8 minutes of thawed or 12mins if frozen).
Turn off unit and let pressure naturally release for 10 minutes. Release the remaining pressure and open the lid.
Transfer chicken to cutting board. Cut into pieces or shred as desired. Set aside.

Preparing the Sauce

Turn on unit and select the "Sautee" setting.
In a separate bowl, combine cornstarch and water mixture with a whisk.
Once the sauce begins to simmer, stir in cornstarch to combine.
Allow sauce to thicken for 1-2 mins and turn off unit.

Combining with Sauce

Add chicken and vegetables (if desired) to the pot.
Stir to cover with sauce. Serve over rice or noodles. Enjoy!

Notes

Substitute white vinegar with rice vinegar
Serve chicken with sauce alone
Optional: sprinkle with green onion, sesame seeds, or add cooked vegetables

This new keyboard solved my problem of characters rubbing off the keycaps. Not sure if you noticed, but even the keycap stickers I was using were moving around. Growing up my mom was always very eco-conscious so making
choices that were better for the environment was part of my
upbringing. I can remember learning from a very young age the importance of proper disposal of many kinds of items, how to
sort recyclables, and finding centers to get rid of those items appropriately. This is something that I've also carried into adulthood.

Many of us have unused or expired medications in our homes so we take time at the beginning of each year to go through our cabinets to do our part to responsibly discard those.

Unfortunately, most dispose of unused medications improperly by flushing them down the toilet or the drain which pollutes water with pharmaceutical chemicals.

Another common method is throwing them in the garbage which can lead to retrieval by other parties or eventually end up in landfills.This is dangerous for both people and wildlife resulting in drug diversion, drugs getting into the wrong hands causing an accidental overdose, or abuse by others. Per the CDC, this is becoming a growing concern due to the opioid crisis in the United States.

The statistics are daunting:

More than 263,000 people have lost their lives from prescription opioid overdoses since 1991
Every 7mins someone loses their life to an overdose
46M people are exposed to trace amounts of pharmaceuticals in drinking water
51% of misused prescriptions are given, bought, or taken from a relative

I absolutely love swapping out my cell phone cases and was excited to recently try out Casetify! I've been using this case for a few months and can say it's not only adorable, but very durable. It's done a great job at keeping my phone safe from drops, is great quality, as well as made with 50% recycled materials.

I'm all about reusable products which help to reduce our eco-footprint, but also save money in the long run. Check out my go-to Popsocket that is removable and customizable. The Nightmare Before Christmas is one of our favorites to watch as a family every Halloween so we decided to add some NBC pieces to our decor! I'll tell you a secret… we saved some money by buying these super affordable PVC piggybanks that look like Jack, Sally and Zero for much cheaper than buying an actual figurine that is intended to be used for decor. Those actually tend to be much smaller than these. These were a fraction of the price plus they are made of a durable material that is easy to store without worrying about them getting broken.

Toxic Ingredients found in School Supplies

Whether you are preparing for the new school year or restocking supplies for your office, I had to reshare this information before we all begin shopping!

Our local news report said that there were a number of school supplies that had traces of toxic chemicals in them that are commonly sold at one of my favorite places... Dollar Tree.

I know this news report is from a few years ago, but it's definitely worth checking out so you can avoid buying these items (3 ring binders had traces of phthalates and Playskool Brand Crayons had traces of asbestos to name a few). I highly recommend grabbing these items from Walmart, Walgreens, Target, or Staples instead who all are having great sales that are often a better deal anyway.

Easy Bok Choy Beef Stir Fry

We really enjoy stir fry meals!

This is another meal that takes minutes to prep and cooks with minimal supervision!

I used to make this stovetop and now use my Pressure Cooker to make this same dish.

I've included cooking directions for both.

Once the sauce has thickened to your satisfaction serve over rice!

Bok Choy Beef

Stove Top & Pressure Cooker Conversion Included!

Ingredients

Stovetop

Beef Stew Meat, sliced thin
3 Baby Bok Choy, chopped (or as desired)
1/2 yellow onion, chopped
2tbsp garlic, minced
1/2 cup soy sauce
1/2 cup water
Garlic Powder, Black Pepper to taste
Pinch of garlic salt
4-6 pieces of ginger root, whole slices
1/2tbsp olive oil
Corn starch

Pressure Cooker

Same as above except use-
1/2 cup soy sauce
1 1/2 cups water

Instructions

Stove Top

Sautee onions and garlic in oil until golden.
Once onions and garlic are cooked, add whole sliced ginger and garlic powder. Let simmer.
Add other seasoning to taste and stir in meat. Cook until meat is browned.
Stir in soy sauce, water, and bok choy.
Simmer until meat and veggies are tender.
Mix corn starch with water and add to sauce to thicken.
Once the sauce has thickened to your satisfaction serve over rice!

Pressure Cooker

Follow steps 1-2, cubing beef to approximately 1in each
Pour in soy sauce, water, and season to taste.
Add meat and bok choy.
Cover and cook using the Stew Setting for 30mins.
Once cook time is complete and pressure is released, remove the lid and using the Sautee setting, add corn starch to thicken sauce.
Once the sauce has thickened to your satisfaction serve over rice!

The Mama Pullover is more like a lightweight long sleeve than a sweater, but is great quality and comes in a variety of colors. I sized up 2 sizes to a large for a more oversized fit. So glad I did because it’s the perfect length for wearing with leggings!

Simple very well made beanie that comes in many colors and the option for fleece lining. I tend to get hot quickly so this one is not fleece lined and I love it!

Not So Perfect Mom

I know we all scroll social media and see motherhood depicted so perfectly, well I am going to be raw and honest with you today.

Before becoming a mom I had this image of myself and the Mom I would be to my own kids someday. I was that chick that used to say I would never do that when I have kids, my child wouldn't behave that way, or I won't be that kind of Mom. Anyone else guilty of those thoughts? Then years later here I am handing my toddler a phone just like those mothers I used to judge to keep him occupied while we were in public. Not part of the pretty picture I painted in my mind.

Being a Mom is the greatest, most challenging, meaningful, yet rewarding job I've had in in my life. Caring for my children has made me understand love that has no bounds. There is nothing that I wouldn't do or sacrifice for my boys to be happy, healthy, and safe.

While motherhood is amazing, it's not always easy. It comes with so much more emotion than I ever imagined or was prepared for. Although I wouldn't trade it for the world, I understand that as the children grow and change it's bittersweet. It's hard to say goodbye to the stages in life they outgrow, but also exciting to see what's new that God has in store for them.

Whether it was dealing with the sleepless nights after they were born, the terrible 2s, trying 3s, tumultuous teenage years, or transitioning to adulthood there were definitely moments where I could have been better and done better. With every stage we shed the old problems and stresses of that period and are handed a whole set of new ones. Somedays especially with life's circumstances it can be tough... lack of sleep, a tough day at work, a stubborn child that just won't listen...Let's be honest, sometimes the list is endless. Sometimes its hard to stand on the sidelines watching your beloved make choices especially when every alarm is going off inside you screaming "NO that is the wrong one!"

I will be the first to admit I am not a perfect Mom. I myself have not been able to live up to the expectations I set for myself before children. I've lashed out in frustration at my kids, been embarrassed by a public tantrum, been a little too harsh with my words, etc. Yes...I know terrible. I've gone to bed many nights feeling guilty and defeated. I've cried in my own disappointment and sobbed in frustration for my actions, but in those moments the one thing I know is that I am learning from my mistakes. We are often told by society that kids don't come with instruction manuals, but in fact they do... the bible. I am learning as a parent that I can always do right for myself and for my children by simply praying not only in those difficult moments, but every day through everything.

My entire reason for sharing is because there is a mom out there that is feeling the exact same way. If that is you...guess what? I am here to tell you we all have off moments or days, but you aren't alone. We won't ever be perfect, but our kids don't love us any less because of it. You are a beautiful, caring and loving mother.

If you saw stories last week you know this recipe has been on repeat! It’s super tasty and very easy to make!

Beans are great source of fiber, vitamin B, iron, calcium, potassium, phosphorus, zinc, and much more. To help with our gut health, we have been adding this salad to our meals with some modifications to change it up to keep us from getting bored with it.

This recipe can be easily manipulated by changing the cheese, adding a different protein, and other veggies.
