&lt;span class="Apple-style-span" style="font-size: large;"&gt;8 l mjölk (opastöriserad)&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;3 ½ dl vetemjöl eller glutenfri mjölmix&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;2 msk ostlöpe (köps på apotek eller i välsorterade livsmedelsbutiker)&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;Blanda mjölet och löpen med 5 dl av mjölken. Värm resten av mjölken till ca 35º&amp;nbsp;C och tillsätt mjöl-, löpe- och mjölkblandningen. Låt detta stå en stund under lock för att tjockna (löpna). Vicka försiktigt på grytan, om mjölkblandningen släpper från grytans kant så är det dags att finfördela massan. Detta gör man genom ta sönder massan i mindre delar antingen genom att skära med en kniv ner i grytan eller genom att röra med exempelvis en ballongvisp. Därefter läggs locket på grytan och det får stå en stund. när det stått en stund så har ostmassan delat sig från vasslen och sjunkit till botten. Då öser man försiktigt bort vasslen i omgångar, däremellan får ostmassan sjunka igen (det är bra om man får kvar lite vassle i ostmassan annars kan ostkakan bli torr)! När detta är färdigt ska äggstanningen vispas samman.&lt;/span&gt;&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-size: large;"&gt;12 ägg&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;1 l gräddmjölk&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;½ l vispgrädde&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;3 ½ dl socker&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;100 g malen sötmandel&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;(½ kkp vetemjöl eller glutenfri mjölmix för att inte ostkakan ska vattna sig)&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-size: large;"&gt;Blanda i äggstanningen i ostmassan och ös upp i lämpliga smorda formar, jag använder gärna engångsformar av aluminium för att utnyttja ugnen på bästa sätt. &lt;span class="Apple-style-span" style="font-family: Times, 'Times New Roman', serif; font-size: large;"&gt;1 kg socker per liter silad saft&lt;/span&gt;&lt;br /&gt;
&lt;span class="Apple-style-span" style="font-family: Times, 'Times New Roman', serif; font-size: large;"&gt;atamon (ca 3 tsk)&lt;/span&gt;&lt;br /&gt;

&lt;span class="Apple-style-span" style="font-family: Times, 'Times New Roman', serif; font-size: large;"&gt;Koka riset i rikligt med vatten och låt det rinna av väl! Vispa grädde och socker ganska hårt. Skala apelsinerna och var noggrann med att få bort det vita från skalet. Klyfta apelsinerna och klipp eller skär klyftorna i mindre bitar. Blanda ner det kalla riset i grädden och vänd ner apelsinbitarna. Grädda i 175º C ca 20 minuter. Låt kakan svalna något och lossa den från formen. Lägg kakan på ett ugnssäkert fat. Blanda äggvitorna till marängen med 1 tsk av sockret. Vispa blandningen och tillsätt resten av sockret allteftersom marängen tjocknar. Marängen är färdigvispad när den går att klicka och inte rinner ut.&lt;/span&gt;&lt;br /&gt;

Rör ägg, socker och smör till fyllningen så det blir pösigt. Tillsätt nötterna samt den pressade potatisen. 220º C&lt;/span&gt;&lt;br /&gt;

Tillsätt ägget och arbeta raskt ihop degen. Låt den ligga kallt en stund. Blanda mandel och socker till mandelmassan och tillsätt så mycket lätt uppvispad äggvita att man får en smidig massa. Kavla ut degen och tag med runt mått ut kakor. Lägg dem på smord plåt och spritsa en ring mandelmassa på varje kaka. Vispa blandningen tills massan tjocknar och känns fast. Låt den svalna av och rör ner nötterna. Lägg upp klickar av smeten på smord och mjölad plåt och grädda marängerna i mycket svag ugnsvärme (75º – 125º).&lt;/span&gt;&lt;br /&gt;

Om det behövs så lägg två omlott, för att det ska klä kanterna också. Bred ut smeten i långpannan och grädda kakan i 175º C i mitten av ugnen i ca 20 minuter. Bred på glasyren när kakan svalnat och skär kakan i lagom stora rutor. Strö över kokosflingor.&lt;/span&gt;&lt;br /&gt;

Rör ner grädden och tillsätt smöret. Koka upp och låt småkoka tills det tjocknar.
