Hi friends !! Here's wishing all the mothers a very Happy Mother's Day!! Now, coming to my motherhood trauma.....like any other kid, my girl is currently going through a "biscuits-phase"....a phase where all she wants to hog on is, chocolate biscuits whole day. Now being a mommy, it is obviously not acceptable to me...but "No" is unacceptable to her too. So, I have tried making it a bit healthier, by using wholewheat flour and ragi flour. We as adults loved it too and there was a duel between the daddy-daughter duo for the last biscuit. Needless to say I had to bake a fresh batch that very night to resolve their fight. The nuttiness of the flours added depth to the chocolate flavor, making it more intense and yummier. These biscuits are crisp and buttery.....</div>

If I tell you that I am an ardent chocolate lover, you won't believe me...I know!! My fault, I know...coz you won't find many chocolate recipes on here. But the truth is I test a recipe numerous times before posting it here, and chocolate being my love, requires n number of tests to be passed, before I am really, really satisfied with it....</div>

So my quest for the perfect chocolate cake went on and on...some recipes were finicky with mediocre results, some dry, some not so chocolatey...some were really weird....some resulting in such hard outputs, that you can use it as foundation for constructing your house😑😑....until I stumbled upon this one. I tested it multiple times and was totally satisfied every time. This is one recipe that ticks off all the points on my list:</div>

Easy, simple (heck! you don't even need to take out your hand mixer, a whisk does the job!!!), fluffy, moistest, almost melts in your mouth, aaaaand as CHOCOLATEY as a chocolate can be!!</div>

Though I am more of a Tea person than a coffee one, I do enjoy a good cup of coffee every now and then. It really gives you the much required kick when you are ready to throw in the towel....e.g. getting your hyperactive toddler to sleep. Those are the times I wish I could make my coffee with Red Bull instead of water...and give some tranquilizers to my kid, so that our energies balance out and we both can catch some zzzzzs....ohhh so much for the wishful thinking!!!!! (Disclaimer for the child welfare deptt: No kids were harmed/ actually given tranquilizers during the writing of this post).</div>

If you are a foodie and you get a chance to travel, you tend to subconsciously pick up certain textures and tastes that linger on long in memory. And they needn't be something elaborate....usually it is the simple rustic things that stay back with me. So my today's post is actually dedicated to a slice of Marbled Loaf Cake that I had in Starbucks enroutè Edinburgh. It was light and simple but its texture n taste was simply yummm. I am not intending to replicate it here...but that slice did remind me of the fact that my blog doesn't have a recipe of this vintage beauty yet!! So here is my recipe of this classic cake. Please note that this is not a copycat recipe of Starbucks cake...but flavour n taste-wise is better than that, as it is homamade with love, and without any added preservatives/chemicals.....hope you will love it as much as we do at our home.....</div>

Well! not everything that looks same is actually same! Technically speaking, a muffin is a cousin of quick breads...and a cupcake is the cousin of cake. If you look at their crumbs, muffin has coarse texture, unlike the fine smooth crumbs of a cupcake. Their processing is also different. Muffins use the "wet-dry ingredients" method of mixing...cupcakes rely on creaming method. Taste-wise, muffins are drier than cupcakes and definitely need Jam, butter, juice or milk alongwith. Cupcakes are buttery treats...screaming occasional indulgence. But whether it is a muffin or a cupcake...it is loved by one and all. Seriously! who can say no to them.</span></div>

<span style="font-family: "verdana" , sans-serif;">Hii friends! For our Eggless Challenge this month, Gayathri gave us a Pound Cake Recipe...now we all know what a Pound cake is. The main characteristic of a Pound cake is its dense and tight crumbs and rich taste and texture. Getting the same tight crumbs and dense texture, without the cake being heavy and doughy, is a real challenge. All the egg substitutes I tried to replicate the egg based pound cake texture, didn't really satisfy me. They either turned spongy or had a different taste profile...unlike a pound cake. I tried and experimented to my heart's content with every possible thing, and finally had my Eureka moment when I hit on this one...quite accidentally!! The credit for this month's egg-free recipe goes to my toddler...it was while browsing the nutrition analysis of various diets to feed her that the thought of using Nuts as egg substitute struck me...and you can see the result! I am really really satisfied with the taste as well as the texture. This cake wins hands down on all the points. Dense and tight, yet light and moist...and definitely as rich as a pound cake should be...yay!!!! we have a Winner here...</span></div>

Yesterday, me and my childhood friend were chatting about the stuff our kids make us do and how pampered their lifestyle is...as happens, the chat swerved from "our kids" to "us as kids"..to school....and eventually, to our tiffins!! She still remembered the naankhatais I would bring to school (we munched them during class😁) and moaned the fact that despite having my recipe she's unable to recreate the taste. I assured her, the recipe is same, what's missing is my granny's love. It was she who used to bake these scrumptious cookies for us...and I guess we will be able to replicate that taste when we become grannys...we both laughed and put the matter to rest. This time it was Milk bread, using Tangzhong method, also called "roux method" or, "cooked dough" method. The science behind it is that using roux enables to retain moisture to a larger extent, resulting in softer and moister bread....and it sure does!!! A major part of this time was spent in zeroing in for a pre-school for my toddler. Being hyperactive she gets bored pretty quickly....and keeping her wits challenged all the time has become a challenge for my dim-wits 😃😃. She has become extra clingy too!! Her "terrible twos" have started and are giving me one hell of a time. Hence pre-school seemed to be the best option to siphon off her extra energy!! Quatre quart (meaning Four Fourths) is a classic French recipe, akin to a pound cake. It's called so, as it uses 4 ingredients in equal parts by weight, viz. flour, butter, eggs and sugar. The Brittany region of France, where it is supposed to have originated, doesn't use anything apart from the basic 4 ingredients. This month's challenge for our <a href="http://gayathriscookspot.com/baking-eggless-group/" target="_blank">Baking eggless group</a> was extra nutty and fudgy chocolate brownies by <a href="http://joythebaker.com/2015/02/extra-nutty-dark-chocolate-fudge-brownies/" target="_blank">Joy the Baker</a>. The challenge provided an apt opportunity for me to add a fascinating brownie recipe to my repertoire. The original brownie looked seriously delish, and the real challenge for me was to retain its look and texture, while converting it into its eggless avator. For me, anything fudgy is equal to "condensed milk"....oh yes!! what can be fudgier than it?? So I thought of using it instead of eggs. For any brownie recipe to be a success, the taste of chocolate should scream over any other ingredient used. Hence I used chocolate in two forms....chocolate bar and cocoa. Since I enjoy eating Bournville range, I used that. And for the cocoa I rely on good ol' Cadbury!!<br>

I had always been fascinated by cookies......ever since my "Noddy" days! Then Enid Blyton further augmented that infatuation, to the point where I used to push my mother daily to make the stuff I read about. After so much pestering, one day her patience finally wore off, and she threatened to stop buying me books. Books are my life and blood. Give me any book.....on any topic....and it is enough to keep me occupied and H.A.P.P.Y!! It is aptly said "Once a reader, is always a reader".....So I was forced to concentrate on the content and not on menu.<br>
Dusting my shelves for the Diwali cleaning, I found my stack of all the Enid Blytons, carefully wrapped away behind the present day crushes of Paul Coelho, Danielle Steel etc. Gleefully I unwrapped them with the thought of just peeking in. However for me, no "peeking in" is complete until I've read the whole book....don't blame me....that's the charm of old books. And the Diwali cleaning....ahh! yes you guessed it right! It went for a toss. One look at those childhood memories and out came my baking pans and the staples.<br>
