The four best wines in Australia

wineweek—November 27, 2008 — To mark our milestone 100th episode we thought we would have a special episode where we look at the four best wines in Australia. To narrow it down a little we decided to break it up into four categories.

The first category is a white, and unusually for us the top wine is a chardonnay, and not a riesling. It's a great drop from the Margaret River region and will be no shock to anyone being named Australia's best white, especially given the current vintage.

Our next top wine is a cult wine, from a relatively new producer. It's a big, powerful, red from a Barossa producer who has a legion of fans across the globe thanks to some great reviews from the top wine writers. But it's not all about power with this red, as a splash of viognier adds subtlety and grace to the super old shiraz vines.

Of course no list of Australia's top wines would be complete without our next wine. A true icon of Australian winemaking, the name is known across the world. People who don't drink wine know this wine's name and know it's reputation as Australia's finest drop. This red is ideal for cellaring for the long term, and is the wine that so many Australians have celebrated important milestones by opening.

To round things out we thought we would include a wine that is uniquely Australian. The fortified wines of the Rutherglen region are truly distinctive and recognised as singularly exceptional when at their best. Some producers from the region have stock of old wine dating back many generations. Our pick has dipped into some incredibly old wine to offer a blend that is exceptionally rare and worth every dollar of it's high price tag.

On a more serious note, you don't need a how to guide in order to enjoy wine.

Do whatever you want, it's all for fun.

If going through all the steps (Visual, Smell, Taste etc...) enhances your wine tasting experience then do it. If you just enjoy drinking it, then do that.

There isn't a wrong way or a right way.
What is most important is that you laugh and enjoy the company you are with.

Old Fashioned Cocktail with Liquid Chocolate Drink Recipe

Lee from The Living Room, Manchester twists a classic Bourbon Old Fashioned Cocktail Hotel Chocolat's Orange Liquid Chocolat.
Recipe & Directions
- 3 bar spoons Orange Liquid Chocolat and 2 bar spoons of hot water stir until you have a thick paste.
- Add ½ shot of Woodford Reserve Bourbon.
- Add 2 ice cubes and stir until melted.
Repeat this 4 times
- Add dash angustora bitters (more for extra spice)
- Stir
- Garnish with orange zest.

Open a bottle of wine badly, and you'll likely end up with bits of cork for your guests to chew on as they sip. Save yourself the embarrassment by watching Food and Wine magazine's Senior Wine Editor, Ray Isle, show you how to open a bottle of wine like a pro.
How to open a wine bottle - Opening a bottle of wine
The corkscrew:
Ray demonstrates opening a bottle of wine with a traditional waiter's corkscrew, which has three main parts:
* a blade (often serrated)
* a bottle opener/lever
* a screw
Opening the bottle:
1. Use the knife end to cut around the base of the capsule (the metal part) and pop off the metal cap of the wine bottle.
2. Insert the tip of the screw at an angle, with the point digging slightly into the middle of the cork. This helps prevent you from hitting the side of the wine bottle.
3. Then put it straight in and begin turning the corkscrew while pointing the opposite end straight up so you can place your hand over the top.
4. Twist the corkscrew in until you can use the first notch of the bottle opener against the side of the wine bottle and push up. Twist more till you can reach the second notch or end of the corkscrew and use this notch or end against the top of the bottle to pull the rest of the cork out.
