Stir-fry Garlic Shrimp

Last Friday, Pam, Julia and I went out for lunch. Julia treated us at Orchard Restaurant. They have a variety of stir fries and I ordered the Japanese stir-fry with shrimp and brown rice, it was so delicious and filling. Today I decided to make Stir-fry garlic shrimp. This is so easy to make and I bought pre-sliced mushrooms at the salad bar.

Here are the ingredients that I used

2 large cloves garlic, finely chopped
2 teaspoons olive oil
1 pound frozen peeled and deveined raw medium shrimp, thawed
3 cups sliced fresh mushrooms (about 8 ounces)
1 cup 1-inch pieces green onions (with tops)
¼ cup dry white wine
2 cups hot cooked rice (you can have the brown or the white one)

Cook garlic in olive oil in 10-inch nonstick skillet over medium-high heat 1 minute, stirring frequently. Add shrimp; stir-fry 1 minute. Stir mushrooms, onions and wine; stir-fry about 2 minutes or until shrimp are pink and vegetables are hot. Serve it over with white or brown rice.

Broiled Parmesan Tilapia

I usually cook the tilapia fillet by just seasoning it with a pinch of salt and pepper and drizzle it with lime juice and olive oil. Then put it in a broiler pan and cook it in the broiler for 15 minutes.

Yesterday, I tried cooking the tilapia fillet in different way. They called it Broiled Parmesan Tilapia. Here are the ingredients that I used for 3 pieces of Tilapia Fillet.

• ¼ cup grated Parmesan cheese
• 1 teaspoons paprika
• 1 tablespoon chopped flat-leaf parsley
• 3 tilapia fillets
• 1 lime, cut into wedges
• 3 teaspoon bread crumbs
• Olive oil

Directions:

Preheat the oven broiler. In a shallow dish, combine the cheese with the paprika, bread crumbs and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Grease a broiling pan and cover it with aluminum foil. Broil the fish for 12 to 15 minutes. Serve the fish with the lime wedges.

Have Had Enough of Snow?

Last February 6, 2010 after the snow storm stopped we got almost 3 feet of snow. They said that this makes this the third-biggest snowstorm since snow records for Maryland began in 1883. Today another snow storm hits us and this will stop tomorrow night (Wednesday). This might result in another 8-16 inches of snow. The snow has already piled up quickly this evening around 3 to 4 inches. There have been reports of sleet and even some freezing rain mixing in. Based on the forecast tomorrow's winds may turn out to be the biggest story of the storm. We expect sustained winds to increase during the day to 20-30 mph with gusts in the 40-50 mph range.

Second Major Snowstorm of the Season hits Maryland

I thought last Dec 19 was the first and the last snow storm that I will experience this winter but now another snow storm hit from mid Atlantic across the north east coast. They said that this could be the biggest in modern history. Last December 19 we got 24 inches of snow. This time seem we will be getting as much as 30 inches of snow.

The size of the snow is gigantic and it is unlike anything previously seen in modern history. Maryland and Virginia is expected to see record snow fall and Maryland has declared a state of emergency and has advised all residents to stay inside and off roads.

Snow continues to pile up and it’s been falling at a rate of 2 inches per hour. This is the photo that was taken last December 19.

Currently (5:30 am EST), we already have thicker than this and based on the forecast, the snow will continue to pile up until 8pm today.

WWe all know that Omega 3 offers lots of health benefits. Dear John is a three part book that starts out when the 23 year-old John Tyree (played by Channing Tatum in the movie), an army enlistee met Savannah Curtis (the character played by Amanda Seyfried) during spring break, when he was home for a temporary leave from military duty. For the smitten soldier, it was basically love at first sight. They became friends at first and lovers later. Over the course of the next seven years, when each deployment seemed more treacherous than the last, the love letters that Savannah sent to John were one of the only things that kept him going. After years away from each other, Savannah writes John another letter. It starts with Dear John and ends with good-bye. A love of a lifetime!

Low-Fat Cheese Cake

I usually buy ready to make cakes like the one where you just need to add eggs and vegetable oil in the cake mix. While reading the sunset magazine I found one interesting recipe that I want to try, the low-fat cheesecake. Instead of using pie dough and sour cream they replace it with graham cracker and low fat greek yogurt. Here’s the recipe that I found. You might want to try this one also.

1 cup graham cracker crumbs
2 tbsp. butter, melted
1 cup plus 2 tbsp. sugar, divided
1 container (32 oz) low-fat cottage cheese
2 packages (8 oz. Each) Neufchatel cheese
¼ cup flour
1 tbsp. each vanilla extract and finely shredded lemon zest
¼ tbsp. Salt
3 large eggs
3 large egg whites
1 cup low-fat (1%) greek yogurt

1. Preheat oven to 325F. In a small bowl, combine graham cracker crumbs, butter, and 1 tbsp. sugar. Press into the bottom of a 9-inch springform pan. Bake until golden brown, about 10 minutes.

2. Meanwhile, drain cottage cheese in a strainer 15 minutes. Whirl cottage cheese in a food processor until smooth. Add Neufchatel and 2 cups sugar and blend until no lumps remain. Then add flour, vanilla, lemon zest, salt, eggs, and egg whites and blend until mixture is smooth, scraping inside of bowl as needed. Pour into prepared pan.

3. Bake until edges are puffed slightly and center barely jiggles when pan is shaken gently, about 1 ½ hours. Turn off oven and leave door slightly ajar and let cheesecake sit in oven another 30 minutes.

4. Mix together yogurt and remaining 1 tbsp sugar. Put cheesecake on a cooling rack. Carefully spread yogurt-sugar mixture over top of cheesecake and let cool completely. Chill, cover with foil, at least 4 hours. Run a thin knife around the outside of the cheesecake to loosen, remove side of pan, and slice cheesecake with a hot knife.

Pinoy Style Leche Plan

I crave for Filipino food again. This time I cooked the Filipino Style Leche Plan. I remember that I cooked this one a long time ago when I was in the Philippines under the supervision of my mother.. hehehe! I just really learned how to cook on my own when I was already here in the US. Irene, a good friend of mine recommended the panlasang pinoy website, a big thanks to her! The site was good since it has a video on how to do it, which makes it easy to follow.

I used the same proportion and some ingredients I found in the site but had a little modification of it. Instead of using evaporated milk, I used skim milk with 1% fat. For the sugar I used the brown one instead of the white one. I baked the mixture instead of steaming it (since my steamer is not big enough for my molder). Here are the ingredients and the procedure.

Ingredients:
10 raw eggs (just the yolk)
1 small can condensed milk (16oz)
1 cup skim milk (1% fat)
1 cup brown sugar
1 tsp imitation vanilla extract

Procedure:

Custard Mixture:
Beat the 10 egg yolks and add all the ingredients except for the brown sugar (this is used for our caramel). Make sure that you mixed it thoroughly. Set aside this mixture while we are making the caramel.

Caramel:
Heat the mold and put in the brown sugar and heat it on low heat until it is melted. Make sure not to overcook it.. After it is already melted, spread it evenly on the mold then wait for 5 minutes before pouring the mixture that you just set aside into it.

I cooked it in the oven instead of the steamer. You just need a bigger pan and fill it at least half full with water. I baked it for 1 ½ to 2 hours or until the knife or any sharp material inserted in the center of the mold comes out clean.

Set it aside for 10-20 minutes before putting it in the refrigerator.

Remember that the key to first-rate cooking is by carefully mixing the most excellent ingredients. This Christmas I spent a great deal of time in finding the perfect Christmas turkey to roast and a perfect gravy to go with it. What I don’t like with the gravy that I prepared last Thanksgiving was that it was so greasy, they said that a fat separator should eliminate this problem.
