I remember when I was little the great pear tree in my grandmothers back yard. How I couldn't wait until the were ripe and ready for picking. How sweet they was.
As I've gotten oder I have come to realize how versatile they are when using in cooking. All the different things they are compatible with. Such things as Blue Cheese and Almonds is commonly known but what about Bacon, Quinces, Rhubarb, Radicchio, rosemary, Beets, Basil and Arugula.
And to think when I was little I was told not to play with my food lol. Look for new ideas and recipes like Pear and Roquefort Tart in a Peppered Almond crust with Caramelized Onions or Pear and Pork cassoulet
Published with Blogger-droid v1.6.0

Breakfast Burrito

Try starting you day with a burrito made with Homemade Chorizo. I intend on being more up to date on my post, starting today

Well Fall is now upon us and it is time for one of my favorite parts of the year. The great hearty foods of Fall and Winter. We have a great abundance of food available. Squash,
pears, pomegranate, pumpkin, quince just to name a few. Looking at trying new things with old favorites like Pumpkin Spiced Pancakes, or Pomegranate-Port Reduction with Slow Roasted Pork and Cous cous with Fried Kale. Maybe a vegetarian Roasted Beet and Goat Cheese Risotto would be great sitting in front of a open fire with good friends to share it with. The main thing to do is have fun and try new things.

I will try and keep the recipes coming along with pictures and other tibits of information. i look forward to any comments or request. i will also share more pictures of food, restaurants and travels here and there

Chicken Lentil Soup

1# BUTTER

Ingredients:
• 1 loaf Italian bread
• 1/4 cup Olive mix (recipe following)
• 3/4 cup Spicy Giardiniera (store brought or following recipe)
• 1/4 lb sliced seranno ham
• 1/4 lb sliced mortadella
• 1/4 lb sliced Genoa salami
• 1/4 lb sliced provolone
• 1/4 lb sliced mozzarella
Preparation:
1. Cut bread in half horizontally. Make a grove down the center of the bread -top and bottom- by pressing down with the tips of your fingers almost end to end, leaving about a 1 1/2" so when put together filling won't come out the ends. Brush inside of both pieces of bread with remaining vinaigrette
2. Spread one layer on meats and cheeses then half with olive mix then followed by gardenia then olive mix then cup cheese over it followed by the meat.
3. Cover with top.
4. Ideally the sandwich should be made an hour or more in advance and then tightly wrapped in plastic wrap to enable juices to soak bread.
5. Slice into quarters and serve
12 large eggs
3½c sugar
¼t salt
12t well-shaken buttermilk
3T coconut milk
12t yellow cornmeal
12t fresh lemon juice
¼c unsalted butter, melted
Pie crust
Special equipment: pie weights or raw rice

Line shell (recipe will follow) with foil and fill with pie weights. Bake in middle of oven
15 minutes, then carefully remove foil and weights and bake shell until pale golden, 5 to 10 minutes more. Transfer shell to a rack to cool 5 minutes.

Filling
Reduce temperature to 300°F.

Make filling:
1) Whisk together eggs, sugar, and salt until well blended.
2) Whisk in buttermilk, cornmeal, zest, and juice. Gradually whisk in butter until smooth.
3) Pour filling into pie shell. Cover edge of pie crust with foil to prevent overbrowning .
Bake until custard is just set, about 20 minutes. Transfer pie to rack to cool completely.

Butter Milk Pancakes

5c. Position a rack in the center of the oven and preheat it to 400. Grease a baking sheet or cover it with baking parchment.
2. In a large mixing bowl, whisk together the flour, baking powder, salt, baking soda. Cut in the butter or shortening by pinching it into the flour with your fingertips or mixing it with a pastry blender or 2 cross-cutting table knives until the mixture has small lumps about the size of peas. ( you can use a food processor with fitted blades, pulse to blend.) Stir in the sweet potatoes sugar and nutmeg, cinnamon, ginger with just enough milk to make a soft dough, tossing the mixture only until the dough holds together.
3. Turn the dough out onto a lightly floured surface. Add a few drops more milk if the dough is still too dry, then pat it into a rough ball.
4. To make drop biscuits, scoop 10 to 12 equal portions of the dough onto the baking sheet, placing them at least 1-inch apart.
5. To make cut biscuits, pat the dough into a 6 x 8-inch rectangle about 3/4-inch thick. Divide each side into 2-inch segments and use a long-bladed knife to cut the dough into 12 pieces. Place them about 1-inch apart on the baking sheet. If desired, use the pastry brush to paint the biscuit tops with a little milk. Bake about 15 minutes, until the biscuits rise and their golden color is somewhat darker around the top edges. Cool on a wire rack; serve warm.

Brownie

Preheat 350
1c (½#) butter, unsalted
12 ½ oz good chocolate, rough chopped
5ea eggs
1 ¾c sugar
1½t vanilla
½t salt
1¼c flour

Directions

1) place chocolate in a double boiler (bowl over pot with simmering water in pot. melt chocolate stirring a few times then remove from heat and stir
2) In bowl of mixer with whip attachment, beat eggs until blended, then add slowly add sugar in a steady stream.
