<p><strong>I just wanted to quickly update you on the &#8220;Big Move to our new domain.&#8221;  Everything is progressing albeit slowly.  But I do anticipate revealing the new site next month! Yeah!</strong></p>
<p><strong>Meanwhile I wanted to pull out a few favorites from the Archives.  I have re-started my Low-Carb Diet so that got me thinking about Meal Options.  Here are a few.  As I start experimenting in the Kitchen &#8212; I will post any new Low Carb Recipes that I come up with.</strong></p>

<p><strong>1/3 Cup Grated Parmesan Cheese</strong></p>
<p><strong>1 Teaspoon Parsley</strong></p>
<p><strong>1/3 Cup Dried Breadcrumbs</strong></p>
<p><strong>Butter<br />
</strong><br />
In a Skillet heat 1 tablespoon of Olive Oil and place chicken in Pan.  Fry for about 4-5 minutes.  Add onions, bell pepper, celery, and mushrooms and continue to cook until chicken is  no longer pink.  Add Cream of Mushroom soup, milk and cheese.  Add spaghetti and parsley and mix well.  Pour into a 13 x 9 inch cake pan.</p>
<p>Mix remaining 1/3 cup cheese, parsley and breadcrumbs and sprinkle all over the top of the casserole.  Then with a spoon drop little bits (tip of a teaspoon) of butter on top &#8212; sporadically.  Bake at 325 degrees for about 30 - 40 minutes until top is gold and bubbly and casserole is heated all the way through.</p>
<p><strong>Note!&#8211;You can also make Tetrazini with Turkey!  Just substitute Turkey instead of the Chicken!</strong></p>

2 tbs chopped green onion
1/2 of red bell pepper sliced
1/4 cup Italian Bread Crumbs

			<content:encoded><![CDATA[<p>I love this Recipe!  It&#8217;s great for Lunch or Dinner.  It&#8217;s very simple to make too.  If you use this Recipe please let us know what you think!</p>
<p>2-4 Catfish Fillets<br />
1 Lemon<br />
1/2 of Onion (sliced) or<br />
1 sliced Shallot<br />
2 tbs chopped green onion<br />
1/2 of red bell pepper sliced<br />
1/4 cup Italian Bread Crumbs<br />
Extra Virgin Olive Oil<br />
Salt and Pepper to Taste</p>
<p>Place two Fillets side by side in a sheet of Heavy Duty Foil.  Squeeze each with a little lemon juice.  Top each Fillet with Onions/Shallots, Bell Pepper and Green Onions.  Sprinkle with a tablespoon of Bread Crumbs and drizzle Olive Oil over each piece.  Fold foil over and seal loosely.  Place on a Cookie Sheet then bake at 350 degrees for about 20-30 minutes.  Open foil and bake another 5 minutes.  Fish should be cooked through and flaky.</p>

			<content:encoded><![CDATA[<p>So this year my Brothers and Sister are each bringing some Dishes to Dinner.  My older Brother is bringing a <strong>Turkey</strong> and the <a title="Maque Choux" href="http://freerecipes.freehostia.com/blog/meals/thanksgiving-cajun-style/" target="_blank"><strong>Maque Choux</strong></a>.  I am baking a Ham.  My Sister will no doubt show up with the <strong>Green Beans and Rolls</strong>.  I&#8217;m not sure about my younger Brother yet.</p>
<p>I am tackling all of the Desserts this year. I love to bake and my Neice is coming over to help out a few days before Christmas.</p>

<p>I love the month of December mainly because of Christmas but I enjoy the cold weather too.  Of Course here in Louisiana, we are lucky if it&#8217;s in the 50&#8217;s for Christmas.  Although, the other night we actually got some Snow!  It was the first time since December 1989.  It was also the first time it ever snowed this early.  When I was little it used to snow every other year(Must be Global Warming).</p>

			<content:encoded><![CDATA[<p>A Cajun Thanksgiving at our Home is not unlike every other Thanksgiving menu except for a few Dishes.  First thing on the Table&#8230;<strong><a title="Cajun Rice Dressing" href="http://freerecipes.freehostia.com/Rice_drsg.html" target="_blank">Cajun Rice Dressing</a></strong>.  It just wouldn&#8217;t be Thanksgiving at our house without Dirty Rice.  My Mom was the best Cook in the world(aren&#8217;t all Mom&#8217;s?) and she could tell you how hard it was to make a superior Rice Dressing.  She came up with this alternative years ago to help speed up the process.  It always came out tasting like Boudin that&#8217;s when we knew it was gonna be awesome!</p>
<p>Second thing we enjoy is <strong>Maque Choux</strong> (Mock Shoe) or smothered Corn.</p>
<p>10 ears fresh corn or 1 large bag frozen corn(thawed)<br />
1 onion chopped<br />
1/2 bell pepper chopped<br />
1 clove garlic(minced)<br />
1/2 cup chopped chives<br />
1/3 pound bacon chopped<br />
1 smalled can crushed tomatoes(drained)<br />
2 T Milk or half and half<br />
Salt and Pepper to taste</p>
<p>Cut corn off of cobs, meanwhile fry bacon pieces in a skillet until almost cooked but not crispy then add onions, pepper and garlic and saute about 4 or 5 minutes. Add fresh corn and continue to saute for about 10 minutes on a Medium/low heat.  Add tomatoes and milk and continue to cook on low heat for another 15 minutes.</p>
<p>These great recipes in combination with baked Turkey, sweet potatoes with marshmellows, green beans and all of the other usual Thanksgiving favorites are what round off a great Cajun Thanksgiving Meal at our house.  Oh and don&#8217;t forget the wish bone chere&#8217;.</p>
