<p>Last Tuesday I was cooking with my friend Lesley for her book club dinner. She decided to serve <a href="http://www.mykitchenintherockies.com/2012/09/22/roasted-veggie-rice-bake/">roasted veggie rice bake</a> for the main dish and I suggested brown butter raspberry tart for dessert. This tart was one of the first recipes I ever blogged about almost three years ago. It is one of my family&#8217;s absolute favorite desserts, but unfortunately, the recipe got lost for all of you my readers during my blog move. This delectable cake has a perfect mixture of tart raspberries, and a sweet, crunchy, buttery short bread crust. The brown butter adds a nutty flavor to the berry filling.</p>
<p>As soon as my teens overheard that brown butter raspberry tart was being baked they wanted a tart as well. I promised them their own brown butter raspberry tart for the weekend. The pictures you see is of the cake my family enjoyed.</p>
<p>This brown butter raspberry tart would be an outstanding treat to bring to any Memorial day weekend get together. It is simple to make (no mixer necessary), keeps and travels well and will be gone in a flash since everyone just loves it!</p>

<li class="instruction" itemprop="recipeInstructions">Preheat your oven to 375 F.</li>
<li class="instruction" itemprop="recipeInstructions">Butter a 9 inch tart pan with removable bottom. A spring form would work just fine, too.</li>
<li class="instruction" itemprop="recipeInstructions">Place the butter for the filling in a smaller light sauce pan and heat on low to medium until the butter is melted to a golden brown. Be careful, the butter could turn black very quickly. Set aside.</li>
<li class="instruction" itemprop="recipeInstructions">In a bowl using a spatula or even just a fork mix together all the ingredients for the crust.</li>
<li class="instruction" itemprop="recipeInstructions">Press the crust dough evenly into the pan bottom and up the sides.</li>
<li class="instruction" itemprop="recipeInstructions">Bake the crust for 18 minutes or until golden brown. *Check notes. Remove from the oven.</li>
<li class="instruction" itemprop="recipeInstructions">In the meantime prepare the filling. Place all the filling ingredients, including the browned butter, into a bowl and mix well.</li>
<li class="instruction" itemprop="recipeInstructions">Place the raspberries with open sides on the bottom evenly onto the crust.</li>
<li class="instruction" itemprop="recipeInstructions">Pour the filling over the raspberries.</li>
<li class="instruction" itemprop="recipeInstructions">Bake tart for about 40 minutes or until done and golden brown. **Check notes.</li>

I take it out after 10 minutes of baking time to press the crust up the sides again. **Cover the tart loosely (don&#8217;t touch filling!) with aluminum foil after 20 minutes of the baking time. <p>The other day, while shopping, I overheard a conversation in the produce department in which two costumers were trying to figure out what the name of a vegetable was they had never bought and cooked with. I was astonished to see they were talking about leeks. In the German or French cuisine fresh leeks are a kitchen staple and spring time offers you some of the best leeks to choose from. Leek is a vegetable from the allium family. I would call it the milder tasting cousin of the onion and garlic. You can usually find leeks in my fridge. I like to mix them with other veggies for roasting or sauté them for stir fries.</p>
<p>In this savory leek quiche the leek gets sautéed with ground beef.  In my search of dinners to prepare ahead this quiche was a welcome variation to my traditional Quiche Lorraine which is prepared with bacon. I prefer to make my own pie crust, but if you are short on time a store bought one will be just fine. Serve this savory leek quiche alongside some fresh butter lettuce salad for a tasty weeknight dinner.</p>

<li class="ingredient" itemprop="ingredients">1 pound (450 g) ground beef</li>
<li class="ingredient" itemprop="ingredients">2 leeks, washed and cut (dark greens parts removed) into thinner strips</li>

<li class="instruction" itemprop="recipeInstructions">Preheat your oven to 400 F (200 C) Convection. Grease a 10 inch (26 cm) spring pan.</li>

<li class="instruction" itemprop="recipeInstructions">Prepare pie crust with flour, pinch of salt, 1 egg, cold butter and ice water in a food processor. Let rest in fridge for ½ hour.</li>
<li class="instruction" itemprop="recipeInstructions">Roll out your dough and place it into the pan. You need a rim about 1.5 inches (3 to 4 cm) up the sides of the pan.</li>
<li class="instruction" itemprop="recipeInstructions">filling:</li>
<li class="instruction" itemprop="recipeInstructions">Heat oil on medium high in a bigger pan and cook the ground beef.</li>
<li class="instruction" itemprop="recipeInstructions">Stir in leek and cook for another 4 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Season with salt and pepper. Set aside.</li>
<li class="instruction" itemprop="recipeInstructions">Mix cottage cheese, Gruyere cheese, milk, cream, eggs, and a pinch of nut meg. Season with salt and pepper.</li>
<li class="instruction" itemprop="recipeInstructions">Spread leek beef mixture evenly on top of the crust in the baking pan. Pour egg mixture over the leek mixture. Grate some extra Gruyere cheese and top the quiche.</li>

<li class="instruction" itemprop="recipeInstructions">Remove from pan and cut in 12 equal slices.</li>

I got the inspiration from Linda, <a href="http://www.thatskinnychickcanbake.com/2013/04/moomies-buns.html"><em>That Skinny Chick can bake</em></a>. Mine are not as pretty as hers, Linda is the ueber baker!!, but they sure taste fantastic. Try to make the time to prepare Kaiserrolls with poppy seeds yourself for your next barbeque. They are light, airy, and will for sure be a huge hit with everybody. The taste difference between the home-baked and store bought buns is just unbelievable. Home-baked  Kaiserrolls with poppy seeds will beat store  bought ones any time.</p>

<li class="instruction" itemprop="recipeInstructions">Mix two tablespoons of the sugar with the warm water and add the yeast. Mix well. Let sit for 10 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">In the meantime in a bigger bowl mix the flour, rest of the sugar, salt.</li>
<li class="instruction" itemprop="recipeInstructions">Add butter, yeast mixture, and the egg to the flour mixture and mix until just incorporated.</li>
<li class="instruction" itemprop="recipeInstructions">Transfer the dough to a floured surface and knead gently by hand for about 5-10 minutes or until the dough springs back when poked. (This can also be done in a stand-mixer.)</li>
<li class="instruction" itemprop="recipeInstructions">Place the dough into a greased bowl, cover, and let rise in a warmer spot until the volume has doubled (about one hour).</li>
<li class="instruction" itemprop="recipeInstructions">Divide the dough into 8 equal pieces. Shape the dough pieces to your liking.</li>
<li class="instruction" itemprop="recipeInstructions">Place the rolls on baking sheet, cover, and let them rise in a warmer spot until doubled in volume (about 30-40 minutes).</li>
<li class="instruction" itemprop="recipeInstructions">Heat your oven to 375 F.</li>
<li class="instruction" itemprop="recipeInstructions">Glace the rolls with egg wash and sprinkle with poppy seeds.</li>

<p>Similar rolls like these Broetchen can be purchased at any bakery in Germany. There they aren&#8217;t sweet and the consistency is a little different, too. This Kaiserroll recipe reminds me more of a Brioche roll. I personally enjoy a fresh baked  Broetchen with butter and marmalade for breakfast.</p>

LOVING IT!! This is not an unusual scenario at my house, since I often try to shoot a dish, before it hits the table and is vanished in minutes. I am sure my food blogger friends know exactly what I am talking about and everybody else will probably think, well, that is very strange. I know, and I totally understand. It is a little odd. I think (hope) that after three years of this (nonsense?) my family has gotten used to it by now. Thanks, I love you, too!</p>
<p>My daughter got to eat this bowl of soup and the Panini that day and luckily I made enough to store some in the freezer for days like today. It is the first of May and it snowed again, so this will be the perfect dinner to warm us up. This soup has been a kitchen staple at my house for many years now and always puts a smile on everybody&#8217;s face. Not just honey, but also thyme accompanies the tomatoes in this soup very well. I like to serve it with a simple Gruyere Panini, but any other grilled cheese you may prefer would be fantastic, too.</p>

<li class="ingredient" itemprop="ingredients">10 large sprigs fresh organic thyme (tied together for easier removal from the hot soup)</li>
<li class="ingredient" itemprop="ingredients">6 14.5 oz (411 g) canned organic diced tomatoes</li>
<li class="ingredient" itemprop="ingredients">4&frac12; cups (1125 ml) chicken stock (I use Better than Bouillon)</li>
<li class="ingredient" itemprop="ingredients">6 Tablespoons honey</li>
<li class="ingredient" itemprop="ingredients">1 Tablespoon (about) salt (more or less to taste)</li>
<li class="ingredient" itemprop="ingredients">1 teaspoon pepper</li>

<ol class="instructions">
<li class="instruction" itemprop="recipeInstructions">Heat the olive oil in a big soup pot on medium heat.</li>
<li class="instruction" itemprop="recipeInstructions">Add the onions and cook until lightly browned.</li>
<li class="instruction" itemprop="recipeInstructions">Stir in the garlic and thyme and cook for a minute until fragrant.</li>
<li class="instruction" itemprop="recipeInstructions">Add tomatoes, chicken broth. honey, salt and the pepper. Bring to a boil.</li>
<li class="instruction" itemprop="recipeInstructions">Simmer the soup for about 15-20 minutes uncovered on low heat.</li>
<li class="instruction" itemprop="recipeInstructions">Remove the thyme.</li>
<li class="instruction" itemprop="recipeInstructions">Transfer the soup in batches to a blender and puree. You can also use a stick blender, but it gives it a little bit chunkier consistency.</li>
<li class="instruction" itemprop="recipeInstructions">Season the soup again with salt and pepper to your liking.</li>
<li class="instruction" itemprop="recipeInstructions">Serve with a grilled cheese sandwich or my Gruyere Panini (sour dough bread, Gruyere slices and butter).</li>

<p>Kaiserschmarrn is a true staple in the Viennese cuisine. Literally translated it means <em>emperor&#8217;s nonsense, </em>but looking at the dish you can probably easily see that we are talking about shredded pancakes. Kaiserschmarrn originated in the kitchens of the poor and is a dish that often uses up left overs pancakes. It contains rum soaked raisins in the batter, is served with some fruit on the side and dusted with powdered sugar.</p>
<p>The Kaiserschmarrn in the picture was actually prepared by my son. It was a project for his German class in High School. Why was an Austrian dish chosen? Well, that is a good question. I assume that most American guests visiting Germany end up touring only the southern part of the country (Bavaria) which shares a lot of traditions, also reflected in the food, with the neighboring country of Austria.   Therefore it is probably assumed that the served dishes are German. The students were paired in teams and my son and his partner picked a Kaiserschmarrn recipe that resulted in a very light and airy pancake, since all the egg whites are beaten separately and folded into the batter right before frying. It took him a while to separate all the eggs (he tripled the recipe), but since he has been preparing waffles (at first under the supervision of my husband) on Sundays since he was a very little boy, he did just fine. I have to say that both of my teens are very handy in the kitchen and that I am very proud of them. Did you ever have the chance to try out Nico&#8217;s favorite <a href="http://www.mykitchenintherockies.com/2011/08/17/nicos-favorite-yeast-waffles/">yeast waffles</a>? They are outstanding!</p>
<p>Kaiserschmarrn can not only be served as dessert but also as a main course. I think my kids would be very happy coming home to Kaiserschmarrn as their dinner once a week. Surprise your family with something old, but somehow new. Kaiserscmarrn, a new pancake dish from the old world will have everybody raving.</p>

<li class="ingredient" itemprop="ingredients">2 Tablespoons (30 ml) rum, (or apple juice)</li>
<li class="ingredient" itemprop="ingredients">4 organic eggs, separated into yolks and whites</li>
<li class="ingredient" itemprop="ingredients">&frac14; cup (50 g) organic white sugar</li>
<li class="ingredient" itemprop="ingredients">a pinch of salt</li>
<li class="ingredient" itemprop="ingredients">&frac12; teaspoon (2.5 ml) good vanilla</li>
<li class="ingredient" itemprop="ingredients">1&frac12; cup (125 g) organic white flour</li>
<li class="ingredient" itemprop="ingredients">1&frac12; cup (375 ml) organic 2 % milk</li>
<li class="ingredient" itemprop="ingredients">unsalted organic butter for the pan</li>
<li class="ingredient" itemprop="ingredients">organic powdered sugar for dusting</li>

<li class="instruction" itemprop="recipeInstructions">Place your raisins in a cup and soak in rum for 30 minutes, drain.</li>
<li class="instruction" itemprop="recipeInstructions">Using an electric mixer or stand mixer beat egg yolks, sugar, salt, and vanilla until the mixture has a light yellow color, about 4 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">With the mixer set on low stir in flour and milk alternating, scrape sides in between, finishing with the flour.</li>
<li class="instruction" itemprop="recipeInstructions">Fold in the raisins.</li>
<li class="instruction" itemprop="recipeInstructions">Beat egg whites in a separate bowl until very stiff and fold them very carefully under the flour mixture(by hand using a spatula).</li>
<li class="instruction" itemprop="recipeInstructions">Heat a 10-12 inch non stick skillet on medium heat, add some butter and fill batter about 2 inches (5 mm) high into the pan. Cook batter until pan side is golden brown. Flip huge pan cake carefully and cook until cooked through and golden brown.</li>
<li class="instruction" itemprop="recipeInstructions">Take the pan cake out of the pan and shred it (using two forks) into bite size pieces.</li>
<li class="instruction" itemprop="recipeInstructions">Place more butter into the pan, let it melt and add the shredded pan cake. Cook for about two more minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Transfer Kaiserschmarrn onto a plate, sprinkle with powdered sugar and serve immediately.</li>

<div class="ERNotes">Don&#8217;t be worried, the batter is very liquid. Make sure to have the batter evenly mixed before pouring into the pan, since the egg white tends to float on the top.</div>

Sprinkle with powdered sugar after a portion of the Kaiserschmarrn is placed on the actual serving plate. In my son&#8217;s case, he kept the finished dish in the warming oven and the mom taxi delivered the Kaiserschmarrn in a portable warming container to High School  right before German class started. (The mom cab actually went to the High School four times that day to accommodate individual pick up times and deliveries.)</p>

<p>As soon as we entered the huge outdoor enclosure where they were kept, he started following me around. His eyes were a little droopy and he was a lot calmer than his brothers and sisters. I fell in love with him right there. It took a little to convince my kids that he was the puppy we should take home and not the one they had picked; but I succeeded. We could not have found a smarter and sweeter dog than Kajo. He still is my boy and is usually found close by my side. Happy Birthday Kajo. I love you.</p>

Springy pea cakes exceeded our expectations. I prepared them for my kids as a healthy snow day lunch yesterday afternoon. The pea pancakes are very light and moist. They contain cottage cheese, lots of peas and scallions. I served them with smoked wild caught salmon on top. My kids LOVED them. I baked some smaller and some larger cakes. <li class="instruction" itemprop="recipeInstructions">Cook fresh fresh peas for about 3 minutes. Don&#8217;t precook frozen peas, just make sure they are thawed.</li>
<li class="instruction" itemprop="recipeInstructions">In a blender mix together 1 teaspoon salt, eggs, cottage cheese, flour and 2 Tablespoons of oil. Make sure the batter turns out smoothly.</li>
<li class="instruction" itemprop="recipeInstructions">Poor the batter into a bowl and stir in the prepared 4 scallions and peas.</li>
<li class="instruction" itemprop="recipeInstructions">Heat a bigger nonstick pan on medium heat and add a little bit of oil.</li>
<li class="instruction" itemprop="recipeInstructions">Use &frac14; cup to measure out batter for the bigger pancakes and 1 Tablespoon for the appetizer size. Spread the batter with a spoon.</li>
<li class="instruction" itemprop="recipeInstructions">Bake pancakes about 3 minutes on one side and about 2 minutes on the other. You want them nicely browned and cooked through.</li>
<li class="instruction" itemprop="recipeInstructions">Pancakes are fragile, so make sure to be gentle flipping them.</li>
<li class="instruction" itemprop="recipeInstructions">Drizzle pancakes with the melted butter and top with scallions (and wild caught salmon).</li>

In this recipe the <a href="http://www.oxo.com/p-1239-flip-fold-omelet-turner.aspx">OXO omelet turner</a> came in very handy for flipping my springy pea cakes. The flexible head allowed the turner to easily glide under the entire pancake. Like an omelet these pancakes are light, airy, but also pretty fragile. <li class="ingredient" itemprop="ingredients">10 ounces Mexican chorizo, casings removed</li>
<li class="ingredient" itemprop="ingredients">1 cup shredded queso quesadilla cheese**</li>

<ol class="instructions">
<li class="instruction" itemprop="recipeInstructions">Prehaet your oven to 350 F.</li>
<li class="instruction" itemprop="recipeInstructions">Bring 8 cups of water to a boil. Add 1&frac12; Tablespoons of kosher salt and the cubed potatoes. Cook until the potatoes are tender. Drain and set aside.</li>
<li class="instruction" itemprop="recipeInstructions">Crumble the chorizo into a casserole dish, cover with foil and bake in the oven until well done.</li>
<li class="instruction" itemprop="recipeInstructions">Add the cooked potatoes to the chorizo dish and add &frac12; Tablespoon of salt. Mix gently until well combined.</li>
<li class="instruction" itemprop="recipeInstructions">Top with shredded cheese and return the casserole dish back into the oven until the cheese is melted.</li>
<li class="instruction" itemprop="recipeInstructions">Serve with tostadas, mini sopes, warm corn and flour tortillas, or fill into gorditas.</li>
