What a difference a week makes. Last week it was cold, dark and raining almost every day and now the sun is shining, with the occasional rainstorms of course because this is the Netherlands after all, and it’s really hot. The Dutch countryside is beautiful, even on a cloudy day. Grass, cows, trees, green in every shade, canals, farmhouses.

We visited our favorite farm yesterday and we came home with the freshest eggs and butter. We could not wait to savor them. Our meal of fried eggs and toasted bread with butter and sea salt, a tomato salad and feta was perfect.

I have been living in Holland for five years and three months now—man, that seems like a long time—and yet I&#39;m still discovering its treasures. Holland is such a small country and sometimes you feel like you&#39;ve seen it all but, no, there&#39;s always more. There are hidden gems everywhere you travel. You just need to dig a little deeper, search for them.

We were in Belgium this past weekend and we visited Ghent for the first time. 

Ghent, a medieval town in the north-west of the Flemish region of Belgium, was one of the largest and richest cities in Northern Europe in the Middle Ages. 

Its architecture is magnificent and most of the medieval buildings remain intact.

This past week, we have been traveling a lot around the Netherlands and we&#39;re planning on traveling even more the next couple of weeks. We&#39;ll go as far as Germany and Belgium as well.

We&#39;re not going home to Greece just yet. Perhaps in September, or October. We generally choose not to make definite travel plans; we&#39;re the kind of people who like to keep their options open.

Today, I made the most beautiful loaf of bread.






If it was possible for someone to fall in love with bread, I would be in love with this loaf.
