I bocconcini ciocco arancia sono i pasticcini che ho preparato ieri.Avete presente le peschine dolci? L'idea nasce da quei dolcetti ,ma i miei&amp;nbsp; sono tutt'altro.Inizialmente pensavo di ricoprirli di zucchero,ma dopo alcune prove ho desistito....troppo stucchevoli! Ecco allora la soluzione : cioccolato aromatizzato e sciroppo all'arancio.&lt;br /&gt;
&lt;b&gt;Ingredienti per una marea di bocconcini:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;300 gr di farina manitoba&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;10 gr di lievito di birra&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;100 gr di acqua tiepida&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;1 uovo&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;60 gr di zucchero &lt;/b&gt;&lt;br /&gt;
&lt;b&gt;50 gr di burro a pomata&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;per il ripieno e la presentazione&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;ganache al cioccolato aromatizzato all'arancia &lt;/b&gt;&lt;br /&gt;
&lt;b&gt;una tazzina di sciroppo di arancia&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;pirottini da praline&lt;/b&gt;&lt;br /&gt;
Ho messo la farina e il livito sbriciolato all'interno della ciotola del Kenwood munito di gancio,L'ho fatto partire a velocità minima ed ho aggiunto l'acqua tiepida.Dopo 2 minuti ho unito anche&amp;nbsp; gli altri ingredienti tranne che il burro.Ho inserito&amp;nbsp; questo ingrediente solo dopo diversi minuti di lavorazione ,quando tutto era ben impastato.Ho aumentato loa velocità e dopo diversi minuti di lavorazione&amp;nbsp; ho ottenuto un impasto liscio che ho messo a lievitare all'interno di una ciotola di plastica .&lt;br /&gt;

&lt;br /&gt;
&amp;nbsp;Ho preparato una ganache,inserendo insieme al cioccolato fondente&amp;nbsp; da sciogliere anche la scorza di un arancio,non vi potete immaginare il profumo!&lt;br /&gt;
Ho messo la ganache sulle basi poi ho tuffato le parti superiori dei bocconcini nello sciroppo di arancia e li ho adagiati sopra:&lt;br /&gt;

L'ho frullata e ho aggiunto un cucchiaio di concentrato di pomodoro.&lt;br /&gt;

&amp;nbsp;&lt;b&gt;ingredienti&amp;nbsp; &lt;/b&gt;&lt;br /&gt;
&lt;b&gt;350 gr di farina di semola di grano duro rimacinata &lt;/b&gt;&lt;br /&gt;
&lt;b&gt;150 gr di purea di peperoni&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Ho inserito la frusta k e la farina nella ciotola ,ho avviato la macchina al minimo.Ho fatto cadere a cucchiaiate la purea di peperoni e ho aumentato la velocità fino a 2.&lt;br /&gt;
L'impasto è risultato molto sbriciolato e quasi&amp;nbsp; asciutto :&lt;br /&gt;

Poi ho preparato un sughetto semplice ai peperoni con :&lt;br /&gt;
1/2 cipolla&lt;br /&gt;
un pomodoro pelato&lt;br /&gt;
un peperone giallo&amp;nbsp; tagliato a listarelle&lt;br /&gt;
Ho tritato finemente la cipolla e l'ho fatta soffiggere.Ho aggiunto i peperoni ,il pomodoro ( ho messo &amp;nbsp; anche la purea di peperoni che mi era avanzata......mica si butta via niente qui !).Ho aggiustato di sale e ho fatto cuocere per 20 /25 minuti.&lt;br /&gt;

&lt;i&gt;Ingredienti &lt;/i&gt;frolla N° 2 delle sorelle Simili con variazione :&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&lt;b&gt; 260g farina&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; 100 gr zucchero semolato&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; 100gr di burro&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; 1 uovo&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; 30 gr di limoncello &lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; un pizzichino di sale.&lt;/b&gt;&lt;br /&gt;
&lt;i&gt;per il ripieno&lt;/i&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; marmellata di limoni&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&amp;nbsp;&amp;nbsp; latte condensato&lt;/b&gt;&lt;br /&gt;

&amp;nbsp;Dopo aver fatto la&amp;nbsp; frolla&amp;nbsp; l'ho messa a riposare in frigo ,nel frattempo ho preparato la farcitura "a occhio" mescolando la marmellata di limoni che avevo cotto nella macchina del pane,il limoncello e un po' di latte condensato.&lt;/div&gt;

Ho preparato diverse strisce di spessore grande.&lt;/div&gt;

Ho steso una piccola quantità di ripieno e ho ripiegato le strisce ,poi con una rotella dentata ho tagliato la pasta,cercando di dare una forma ovale.&lt;/div&gt;

Frullare gli spinaci,la ricotta,il parmigiano,l'uovo ,e la noce moscata.Aggiustare di sale e mettere in frigo per far raffermare la preparazione.&lt;/div&gt;

La pasta margherita è la torta più semplice di tutte,un pan di Spagna arricchito con del burro.La preparo sempre seguendo il consiglio di luca Montersino,ovvero scaldando uova e zucchero in modo che, quando vado a sbatterle, inglobino più aria possibile.&lt;br /&gt;
&amp;nbsp;Ingredienti per 6 tortine :&lt;br /&gt;
150 gr di farina 00&lt;br /&gt;
150 gr di fecola&lt;br /&gt;
150 gr di zucchero&lt;br /&gt;
5 uova&lt;br /&gt;
100 gr di burro.&lt;br /&gt;

Per prima cosa ho tagliato il burro a piccoli pezzi e l'ho messo a&amp;nbsp; sciogliere sul gas ,nel frattempo&amp;nbsp; ho imburrato e infarinato lo stampo&amp;nbsp; più grande per muffin,quello per 6 tortine.&lt;br /&gt;
In un pentolino ho unito le uova e lo zucchero e ho scaldato a fuoco molto dolce,mescolando sempre e &amp;nbsp; tenendo sotto controllo la temperatura con il termometro da cucina .&lt;br /&gt;
Una volta raggiunti i&amp;nbsp; 45° ho trasferito in planetaria e ho fatto andare fino ad ottenere una crema molto spumosa.&lt;br /&gt;
Ho setacciato la farina e la fecola all'interno della ciotola e ho amalgamato con con movimento dal basso verso l'alto.&lt;br /&gt;
Ho unito il burro sciolto ,che nel frattempo si era intiepidito; dopo aver amalgamato bene ho trasferito l'impasto nello stampo.&lt;br /&gt;
Cottura 180° per circa 25 minuti.&lt;br /&gt;

Finalmente domenica scorsa è uscito un po' di Sole ,così, con tutta la famiglia, ho passato qualche ora a Pienza ,una delle mie mète abituali.&lt;/div&gt;

Ho impastato farina ,acqua uova ,lievito e sale.Mentre la planetaria era al lavoro ho tagliato il pecorino a cubetti piccoli e l'ho aggiunto all'impasto.&lt;/div&gt;

Ho trasferito tutto in una sacca e ho distribuito il composto nei pirottini più piccoli che avevo,quelli da praline per intenderci .&lt;/div&gt;

Li ho cotti in forno a 200° per 20 minuti,poi li ho decorati con del miele biologico&amp;nbsp; di castagno e altri&amp;nbsp; spicchietti di pecorino.&lt;/div&gt;

Ingredienti per 4 persone&lt;br /&gt;
170gr di cioccolato al latte&lt;br /&gt;
15 gr di burro&lt;br /&gt;
30 gr di zucchero &lt;br /&gt;
2 uova&lt;br /&gt;
5gr di colla di pesce&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp;&amp;nbsp;&amp;nbsp;&lt;u&gt; per la decorazione :&lt;/u&gt;&lt;br /&gt;
15 gr di latte &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; cioccolato fondente&lt;br /&gt;
100 ml di panna fresca &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; &amp;nbsp; panna montata &amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; &lt;br /&gt;

Mettere a bagno la colla di pesce in acqua fredda,quando si sarà ammorbidita scioglierla nel latte tiepido &lt;br /&gt;
Scaldare i tuorli e lo zucchero ,tenendo sotto controllo la temperatura con un termometro da cucina(come insegna Montersino).&lt;br /&gt;
non appena arriverà a 85° togliere dal fuoco e montare con le fruste elettriche.&lt;br /&gt;
Aggiungere il latte con la colla di pesce .&lt;br /&gt;

Stendere la frolla al cacao sulla carta forno e spostarla sulla teglia dove cuocerete le crostatine.&lt;/div&gt;

Ma no !&amp;nbsp;&lt;b&gt;&lt;u&gt;&amp;nbsp; non sono uova vere .... e' solo il mio pesce d'aprile&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;
Ingredienti:&lt;br /&gt;
250 gr di farina&lt;br /&gt;
50 gr di zucchero&lt;br /&gt;
2 uova&lt;br /&gt;
1/ bustina di lievito per dolci&lt;br /&gt;
50 ml di latte &lt;br /&gt;
60 gr di burro&lt;br /&gt;

Preparate i "tuorli" tagliando dei pezzettini di pesca sciroppata;per essere più precisa ho usato uno stampino per biscotti.Adagiate i pezzettini di pesca al cento del dolcetto e&amp;nbsp; cuocete in forno a 180° per circa 20 minuti&lt;br /&gt;

&amp;nbsp;Mentre&amp;nbsp; muffin si cuociono, pensiamo&amp;nbsp; all' "albume" : &lt;br /&gt;

Ecco l'impasto della colomba in versione muffin :&lt;br /&gt;
ingredienti&lt;br /&gt;
per il lievitino:&lt;br /&gt;
30 gr di farina,5 gr di lievito,poco latte&lt;br /&gt;
per l'impasto:&lt;br /&gt;
300 gr di farina&lt;br /&gt;
2 uova&lt;br /&gt;
120 gr di burro&lt;br /&gt;
80 gr di zucchero&lt;br /&gt;
scorza di arancio&lt;br /&gt;
50 gr di farina di mandorle&lt;br /&gt;
50 gr di mandorle intere&lt;br /&gt;
100 gr di latte&lt;br /&gt;
mezza&amp;nbsp; bacca&amp;nbsp; di vaniglia .&lt;br /&gt;
&lt;br /&gt;
preparare il lievitino unendo&amp;nbsp; in una ciotola i 30 gr di farina con il lievito sciolto in poco latte tiepido.Lasciare lievitare diverse ore,l'ideale è prepararlo alla sera per usarlo la mattina seguente.&lt;br /&gt;
&lt;br /&gt;
Impastare molto bene&amp;nbsp; il lievitino con&amp;nbsp; la farina lo zucchero,la farina di mandorle,le uova;aggiungere il burro ammorbidito e il latte tiepido e i semi di 1/2 bacca di vaniglia,potete utilizzare un impastatore.Fare lievitare un'ora.&lt;br /&gt;
&lt;br /&gt;
Trascorso il tempo di lievitazione aggiungere 20 gr di burro morbido ,ma non fuso e impastare ,amalgamando bene.Lasciare lievitare per un'altra ora nel forno spento.&lt;br /&gt;
&lt;br /&gt;
Dopo la seconda lievitazione aggiungere altri 20 gr di burro,impastare bene,unire al termine&amp;nbsp; le mandorle e la scorza di arancio.&lt;br /&gt;
Disponete dei quadratini di carta forno in una teglia per muffin ;&lt;br /&gt;
mettete&amp;nbsp; poco più di un cucchiaio di impasto per ogni stampino e fate lievitare un'altra ora nel forno spento che avrete leggermente scaldato.&lt;br /&gt;
Quando i dolcetti saranno belli gonfi&amp;nbsp; cospargeteli&amp;nbsp; di &lt;a href="http://stella-mysweetsugar.blogspot.it/2011/12/glassa-allacqua-e-consigli.html"&gt;glassa all'acqua&lt;/a&gt; e mandorle tritate e cuocete in forno a 200° per 20 minuti.&lt;br /&gt;

Dose per circa 10 ciambellini:&lt;/div&gt;

500 gr di farina&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
3 uova&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
250 gr di zucchero&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
3cucchiaini di semi di&amp;nbsp; anice&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
vin santo qb&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
buccia di arancia&lt;/div&gt;
&lt;div class="" style="clear: both; text-align: left;"&gt;
Il procedimento è semplicissimo:&lt;/div&gt;

si impastano tutti gli ingredienti per formare una palla di impasto.Sulla spianatoia si formano tante ciambelle .&lt;/div&gt;

Dopo vari tentativi e modifiche alla ricetta che avevo questo è il risultato della &lt;u&gt;torta al formaggio&lt;/u&gt; preparata con la macchina del pane.&lt;br /&gt;

Aggiungere il ripieno a mucchietti ben distanziati;&lt;br /&gt;
coprire con un' altra sfoglia di frolla e tagliare con uno stampino.&lt;br /&gt;

&lt;span style="font-size: large;"&gt;&lt;span style="font-family: Georgia,Times New Roman,serif;"&gt;2)Bollire il latte rimanente ,quando si sarà intiepidito aggiungere le fargole frullate e la colla di pesce.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt;

Ingredienti per una doppia dose di frittelle&lt;i&gt; &lt;/i&gt;:&lt;/div&gt;

500 gr di riso&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
1,5 litri di acqua&amp;nbsp;&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
due cucchiai di zucchero&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
un pizzico di sale&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
un'arancia non trattata&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
un tuorlo&amp;nbsp; &lt;/div&gt;
&lt;div style="text-align: left;"&gt;
150 gr di farina&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
mezza bustina di lievito per dolci&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
100 gr di zucchero a velo ( più quello per decorare)&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
Olio per friggere &lt;/div&gt;
&lt;div style="text-align: left;"&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
Cuocere il riso in acqua con i due cucchiai di zucchero,il pizzico di sale&amp;nbsp; e la scorza di arancio.Lasciare andare per almeno 1 ora a fuoco dolce.Utilizzare se possibile una pentola con il fondo molto spesso ed aggiungere a metà cottura ,se lo riterrete necessario, un bicchiere di acquain più.&lt;/div&gt;

Fate riposare il riso cotto&amp;nbsp; almeno 12 ore poi aggiungete il resto degli ingredienti e amalgamate bene.&lt;/div&gt;

Formare delle palline aiutandosi con due cucchiai e friggere in olio abbondante.&lt;/div&gt;

La crema al burro è veloce,facile da prerarare e adatta per decorazioni sostenute.&lt;br /&gt;
Il sapore? Moooolto dolce&amp;nbsp; per i miei gusti .....meglio non abusarne.&lt;br /&gt;
Con questa crema ho decorato i &lt;a href="http://stella-mysweetsugar.blogspot.it/2013/01/buon-compleanno-marco.html"&gt;cupcake stile pirata&lt;/a&gt; e l'ho usata come "colla " per &lt;a href="http://stella-mysweetsugar.blogspot.it/2013/03/dolce-agnello.html"&gt;l'agnello dolce&amp;nbsp;&lt;/a&gt;&lt;br /&gt;
ecco una&amp;nbsp;&amp;nbsp; mini-dose :&lt;br /&gt;
Ingredienti&lt;br /&gt;
50 gr di burro&lt;br /&gt;
50 gr di zucchero a velo &lt;br /&gt;
2 cucchiaini di Nesquik&lt;br /&gt;
2 cucchiaini di latte&lt;br /&gt;
&lt;br /&gt;
Frullare&amp;nbsp; il burro morbido e il latte con le fruste elettriche,aggiungere lo zucchero a velo e il Nesquick ,mescolando fino a che non sarà tutto ben&amp;nbsp; amalgamato.&lt;br /&gt;

mescolare con la frusta a foglia ;&lt;/div&gt;
&lt;div class="separator" style="clear: both; text-align: left;"&gt;
aggiungere le uova e lo zucchero;&lt;/div&gt;
&lt;div class="separator" style="clear: both; text-align: left;"&gt;
diluire l'impasto con il&amp;nbsp; latte tiepido e continuare a mescolare ;unire in ultimo&amp;nbsp; il burro liquefatto. &lt;/div&gt;

Versare l'impasto nello stampo imburrato e infarinato, cuocere in forno per 35 minuti a 180°:&lt;/div&gt;

Ingredienti:&lt;br /&gt;
20 bigné&lt;br /&gt;
100 gr di cioccolato bianco&lt;br /&gt;
250 ml di panna fresca&lt;br /&gt;
25 gr di burro&lt;br /&gt;
100 gr di gelato alla crema&lt;br /&gt;
30 gr circa di cereali Miel Pops per la decorazione &lt;br /&gt;
&lt;br /&gt;
Dopo aver preparato &lt;a href="http://stella-mysweetsugar.blogspot.it/2012/03/la-pasta-da-choux.html"&gt;le bigné&lt;/a&gt; è il momento di pensare alla farcia:&lt;br /&gt;
fondere il cioccolato bianco a bagnomaria ,aggiungere il burro a pezzettini .Quando sarà&amp;nbsp; sciolto trasferire tutto nella planetaria ed aggiungere 150 ml di panna ;montare con la frusta a filo e mettere in frigo.&lt;br /&gt;
Per la copertura : &lt;br /&gt;
In una ciotola mescolare 100gr di gelato e la panna restante ;sbattere con le fruste fino ad ottenere un composto semi-montato che verrà posto successivamente in frigo.&lt;br /&gt;
Sbriciolare i Miel pops o tritarli con un mixer. &lt;br /&gt;
Riempire le bigné con la farcia&amp;nbsp; e disporli sul piatto da portata ,versare la crema di copertura e decorare con i Miel pops sbriciolati.&lt;br /&gt;
