<p>He was welcomed into our family just last night and already seems to feel at home.  Currently he is passed out laying next to me.  I am in love with my dog!  I have to make a small plug for anyone who lives in Illinois, Iowa, and Wisconsin.  <a href="http://www.huskyrescue.org/rescueanimals.php">The shelter I received him from</a> has truly some of the nicest people that care so much about the dogs.  If you are thinking about adopting a a dog, take a look at them.  They are primarily husky and husky mix but they occasionally have other dogs!</p>

<p>Radar is a  five year old husky that seems to know my house is officially his.  One to never be under prepared, I made sure I had everything he would ever need and more (including wholesome, healthy dog treats!)</p>
<p>There are so many recipes out there for doggie treats but I knew there were things I didn&#8217;t want to see in the treats: butter,canola oil, and white flour.  When I did low-fat baking, I would often substitute applesauce for the butter and thought that would be a great way to leave out the butter.  I made sure I had pure apple sauce and natural peanut butter (if I won&#8217;t eat it, I shouldn&#8217;t expect him to!)  These are simple and make a great, healthy treat for your dog!</p>

	<li>Preheat oven to 375˚.</li>
	<li>In large bowl, whisk together flour, wheat germ, and baking powder.  Add in remaining ingredients and stir until the dough comes together.  (This can also be done in a stand mixer.)</li>
	<li>Roll out dough on a floured surface to about 1/4" thick (you can make thicker/thinner- just watch baking times.)  Use a cookie cutter or just cut out squares.  Place on a parchment covered baking sheet and bake for 20-25 minutes until the biscuit is golden brown and crispy (you want to make sure there is no soft spot- this will help the biscuits keep.)</li>

<p>Enter in carrots and coconut.<br />
I had carrots from the csa that I knew I needed to use.  I’ve eaten so many stir fries recently that cooking carrots was so far from my mind- I was thinking cake.  Then, after thinking about it, I decided on carrot bread (a slightly healthier cousin of the cake.)</p>

I couldn’t leave well enough alone though.  I mean, carrot bread is good but adding coconut into the mix is even better.  I have to be honest in saying that the carrot really isn’t a strong flavor which didn’t surprise me.  However, the coconut enhances the sweetness in the bread which makes you feel like you are eating something rich and fattening when really, there is only four tablespoons of butter in the whole loaf of bread and I used whole wheat flour.</p>

	<li>Pre-heat oven to 350˚.</li>
	<li>In a medium bowl, whisk together coconut milk, butter, egg, carrots, and sugars- set aside.  In a large whole combine dry ingredients, stirring to evenly distribute.  Pour in wet ingredients and stir until everything is well combined.  Pour into a prepared (I grease with a little butter)  9x5 (and 8" bread pan will also work- just adjust baking time).  Sprinkle with extra coconut flakes and bake fore 50-60 minutes until bread is baked through and a knife can be entered into the bread and come out clean.</li>
	<li>This bread freezes well (as do most quick breads) and can be pulled out if company is coming or if you feel like a breakfast treat!</li>

<p>I love summer.  Warm weather, quality time outside, and fresh produce.</p>
<p>What don&#8217;t I like about summer? (besides the obvious humidity&#8230;.)  I never seem to have enough recipes to eat all the produce I have.  My refrigerator has been taken over by produce but I suppose there are worse problems to have&#8230;</p>
<p>So I start making soup.  I can toss anything I want in these soups and start to at least use some of my produce.</p>

	<li>In a medium pot, heat olive oil over medium low heat.  Add in garlic and onions, sauteing until onions begin to soften and garlic becomes fragrant.  Add in squash, carrot, and potatoes- continuing to cook until squash and potatoes being to soften, about five minutes.  During this time, begin to add spices.  Once vegetables begin to soften, add in white white to deglaze the pan.  Finally, pour in vegetable broth, bring to a boil, and reduce then to a simmer.  Let simmer until potatoes and squash are soft, 20-25 minutes.  (taste a couple times during this to adjust spices to your liking)</li>
	<li>Once potatoes are done, use an immersion blender or a regular blender to create a smooth texture in your soup.  Return soup back to stove top, stir in coconut milk, and heat again until soup is hot.  When ready to serve, place soup in a bowl, spoon 1 tablespoon each onto top of soup, and sprinkle a little paprika on top of each.</li>

<p>Like, what&#8217;s sucanat?  What&#8217;s the &#8220;extra virgin&#8221; in olive oil? What&#8217;s quinoa?</p>
<p>It is in my nature to do research.  I love research (which has proven to be helpful in grad school and in food) so I have began a page of devoted to the ingredients I use.  It&#8217;s still a work in progress but I really wanted to get it up and moving so that if you had questions- you had a reference!</p>
<p>I am going to continue to update and hopefully even aim to have seasonal veggies/fruit page!</p>

<p>I know there are plenty of great recipes with beets but for my first beets of the season- I went with what I knew: chips.  I mean, how can you go wrong with homemade chips?</p>
<p>The answer is you can&#8217;t.  You really can&#8217;t.</p>

<p>I am actually surprised any of these chips made it to be photographed.  The second they came out of the oven I started popping chips into my mouth and it became like the Pringle&#8217;s saying, &#8220;Once you pop, the fun don&#8217;t stop&#8230;&#8221;  I just kept eating and eating- I didn&#8217;t want to stop.  Luckily for me, I didn&#8217;t make a big batch but still&#8230; who knew I would love beets so much?</p>

	<li>Pre-heat oven to 325˚.</li>
	<li>Peel the beets with a vegetable peeler and with either a mandolin or a sharp knife, slice the beets as thin as you can (the thinner- the better.)  Lay beet slices in a single layer on a baking tray covered with parchment paper.  Brush olive oil over slices and sprinkle with salt/pepper.</li>
	<li>Bake for 30-40 minutes (time will vary based on how thin you sliced- start checking after 25 minutes and go from there.)  The chips should be reduced in size and crispy.  Remove from oven and let sit on the tray for 10 minutes to let cool.</li>
</ul>
(I sliced by hand and unfortunately didn't slice evenly so I had to remove some chips from the tray and finish baking the rest so that the thinner ones did not burn...)</div>

<p>As food goes in hot months, I grill a lot and I eat ice cream.  I really eat more ice cream than I probably should.</p>

<p>So when I saw <a href="http://www.thekitchn.com/thekitchn/dessert/grownup-popsicles-pomegranate-yogurt-pops-119600">these Popsicles,</a> I knew I had to try them.  With the only ingredients being juice, yogurt, and honey- you really can&#8217;t go wrong and I don&#8217;t have to feel guilty &#8220;scarfing&#8221; down these.</p>
<p>Even better?  Super simple to make.</p>

	<li>In one bowl, combine the water and cherry juice.  In a separate bowl, combine the yogurt, honey, and milk.</li>
	<li>Using 3 ounce molds, fill 1/3 of each Popsicle mold with yogurt mixture.  If you want strips, freeze mold for 45-60 minutes, remove, and add in a layer of cherry juice.  Place mold back in the freezer until the cherry juice layer is set, another 45-60 minutes, remove and place the final layer of greek yogurt mixture in the molds.  On your final layer place the stick in the molds and place back in freezer for 3-4 hours (I left them in over night.)</li>
	<li>If you don't want to wait for the layers to freeze, do the layers all at once, use a skewer to swirl, place a stick in the molds, and freeze overnight.</li>

<p>I grew up in a cat family.</p>
<p>Don&#8217;t get me wrong, I love cats.  I love their different personalities and their willingness to curl up and cuddle with you.  However, I don&#8217;t love their inability to go on walks, greet you at the door, and be your friend.  Cats are more just there- rulers of the house (Trust me, one of my mom&#8217;s cats thinks he isn&#8217;t a cat but a king trapped in a cat&#8217;s body.)</p>
<p>I have always loved dogs.  I did have the chance to grow up with a dog named Pete- he was a golden lab that belonged to my uncle but spent a great deal of time with my grandparents (just liked I did.)  I loved running around the backyard with him and I think even as a five year old I was plotting of to steal him and take him home.</p>
<p>I gave up on trying to get a dog out of my parents because I eventually learned it just wasn&#8217;t going to happen.  I decided a dog just wasn&#8217;t the right thing- until now.</p>
<p>I&#8217;d like you to meet Brittany&#8217;s two lovable goofs, spanky and buckwheat, that have slobbered their way into my heart&#8230;.</p>

<p>So today, I am driving to look for a dog of my very own and I seriously feel like an expecting mother (without all the food cravings and gas&#8230;)  What&#8217;s happens when I get excited?  I bake.  Seriously, I think it may be a bit of a problem.</p>
<p>I present to you the chocolate sugar cookie- for when a regular one isn&#8217;t enough and you are in need of a chocolate fix.  I took my favorite sugar cookie recipe and added cocoa powder- super easy and super delicious.</p>

	<li>Using the paddle attachment on your mixer, cream butter and sugar  together.  Add one egg at a time, making sure to incorporate each egg  well, mix in vanilla.   Add dry ingredients and continue to mix until  dough comes together- let mixer continue for another two minutes.</li>
	<li>At this point you can put the dough in the refrigerator for later use or roll out onto a floured surface and cut.</li>
	<li>Bake on a parchment covered try for 8-10 minutes.  With the chocolate, it may be hard to tell when they are done.  The edges should be firm and the middle should still be slightly soft.</li>
	<li>Top with your favorite icing or frosting.  I use the <a href="http://www.wilton.com/recipe/Royal-Icing">Wilton Royal icing with a little cocoa powder.

			<content:encoded><![CDATA[<p>When I find something I love to eat, I eat a lot of it.  Take for example quinoa- it has surfaced a lot in my cooking.  Also, take for example peanut sauce and asian cuisine- I can&#8217;t get enough!</p>
<p>So, when I was walking through whole foods and saw a salad similar to this, I about hit the floor.  How did I not think of this?  This salad seriously combines everything I have been craving over the past month.  I mean, I had the slaw, I had the quinoa, and I had a crazy good peanut dipping sauce- why not combine them all?</p>

<p>And combine them I did.</p>
<p>So long mayo-based slaw, I may never eat you again.</p>
<p>What&#8217;s also great about this dish is that with the added quinoa- one could conceivably eat this as a meal.  In fact I did- twice.</p>

	<li>In a pot, combine rinsed quinoa with the water and bring to a boil.  Reduce to a simmer, cover, and let sit for 15 minutes until all the water has been absorbed.  Combine with cabbage, onions, and peppers in a large bowl.</li>
	<li>In a small bowl, whisk together sauce ingredients.  Pour over slaw mixture and stir well to combine.  Cover, refrigerate and let cool for 1-2 hours until quinoa is cold and flavors have had a chance to blend together.  Eat as a side or as a whole meal!</li>
