Nel frattempo pulite la zucca, tagliatela a pezzettini e mettetela in una casseruola con 30 gr. di burro. Salate e cuocete per 10 minuti a fuoco moderato. Scolate il riso e lasciatelo raffreddare in una terrina. Aggiungete la zucca, la noce moscata grattugiata, l’uovo, l’emmenthal grattugiato, pepe, e 100 gr. di pane grattugiato. Mescolate il tutto. &lt;p&gt;Le arancine (o arancini) sono un piatto tipico siciliano, diffuso in tutto il mondo. Si possono trovare nei bar e nelle rosticcerie, e tra pochi giorni saranno il piatto forte della giornata dedicata a Santa Lucia (13 dicembre) che a Palermo è molto sentita. Qui ve le proponiamo (fotoricetta) in due varianti: carne e burro.&lt;br /&gt; &lt;strong&gt;&lt;br /&gt; * Ingredienti:&lt;/strong&gt;&lt;img id="media-544918" style="border-width: 0pt; margin: 0.2em 0pt 1.4em 0.7em; float: right;" src="http://nonsoloprimi.myblog.it/media/01/02/516561869.jpg" alt="arancine.jpg" width="306" height="191" /&gt;&lt;br /&gt; &lt;br /&gt; &lt;br /&gt; per il risotto:&lt;br /&gt; 500 gr. di riso carnaroli&lt;br /&gt; 30 gr di burro&lt;br /&gt; una bustina di zafferano&lt;br /&gt; 1,5 lt. di brodo leggero&lt;br /&gt; sale e pepe&lt;br /&gt; 50 gr. circa di cacio cavallo grattugiato&lt;br /&gt; &lt;br /&gt; per il ripieno alla carne:&lt;br /&gt; 30 gr. di macinato di vitello&lt;br /&gt; 30 gr.&amp;#8230;&lt;/p&gt;

Tritate finemente i biscotti nel mixer, incorporate il burro fuso e amalgamatelo bene. Tagliare a dadini l'ananas, versarli nella panna montata con lo zucchero e aggiungere 6 cucchiai di succo di ananas e il kirsch. Riempire la crostata con la crema e guarnire con qualche dadino di ananas.&lt;/p&gt;
