Anthony Bourdain Kitchen Confidential: Adventures in the Culinary Underbelly

When people ask me what started my journey into food, I tell them it was tailgating at Oakland Raiders Home games and Anthony Bourdain's Kitchen Confidential book. I've loved cooking my whole life but never thought it was a way to pay the bills.

As an young adult my uncle took me to almost every Oakland Raider Home Game in the early 2000's with his group of BBQ Masters. Every game these guys would turn simple meats into tasty bites that everyone tailgating loved. They would show me a few tricks here and there that sparked my passion for creating good food on the grill. Plus being able to see Metallica Play in the the parking during the Raiders Jets AFC Championship game also didn't hurt.

After five years of cooking at every Raiders Home Game in Oakland with my uncles friends teaching me the down and dirty Tailgating BBQ life and then going to Culinary School turned my BBQ Pasion into a Culinary Journey. At the start of this journey a good friend of mine gave me his beat-up copy of Kitchen Confidential he had read for years. He had worked all over California learning his trade. Reading this book was like Googling how to work hard and play harder in the kitchen. It was a how to do and how not to do. It was a work of Culinary Art to me.

Kitchen Confidential is a book that everyone who has a passion to cook should read or now thankfully to Amazon Audio if you don't have the time you can hear this book from Anthony's own voice. Anthony's death was one of the only deaths of a person I had no personal contact with that I felt so much. During a book tour got to hear him speak in Sacramento but never go the chance to fire up the grill and do some real time with him. In my BBQ journey's I've worked with people who have and they have all told me their experiences, but I never got to enjoy it myself.

Cauliflower Vegetable Pizza In 30 Minutes

Pizza is one of mine favorite foods to eat. I eat to much of it at times, so I've been working on a few new recipes for my family and I to enjoy that are on the healthier side. This is a Cauliflower Crusted pizza with a few toppings. A very simple recipe that take 30 minutes to make.

How to Make:

Buy a pre-made Cauliflower Pizza crust. Toss it in the oven for 16 minutes. While that's baking chop up a few toppings that you enjoy. Mine has a Pesto Sauce, Pickled Cabbage, Red Bell Peppers, Green Onions and Tillamook 3 Cheese Blend over the Pesto and on top to hold it down. I also made a peperoni and all cheese pizza that my kids loved. They had no idea it was a Cauliflower crust.

Tip:

Follow the directions on the box of Pizza Crust you buy. I used the ones in the ad below.

Shiner Nation Chicken Wings

With football season back everyone needs a good wing recipe to enjoy game day. This recipe is simple and is in Honor of the Moonshine Bandits and the Shiner Nation. The Flavor is very enjoyable and everyone can eat them.

Method:

Take 2lbs of Chicken Wings and put them in a salt bath over night with your favorite seasoning mix. Rinse off and put into a citrus marinade for 5 hours. Remove and rub them down with American Outlaw Shiner Rub, Fire up the Traeger and put them at 275 for an hour. Take out and mix the up with American Outlaw Peach and Pepper Sauce. Enjoy

Pulled Pork Cuban Casserole

Easy to make Pulled Pork Cuban inspired dish. I always make too much pulled pork and have to find way to make it fun for the family to enjoy has leftovers. This dish was a big hit. My wife and my 9 and 6 year old kids loved it and asked for it the next night too.

Your going to need:

3lbs Cooked Pulled Pork

1/2 Cup of Heavy Cream

1 Cup Cheese (I used Swiss)

Sliced Pickles

4oz Cream Cheese

a few squirts of mustard (I used Guldens Stone Ground Dijon)

6 oz Ham or some other leftover meat. (I used turkey)

Preheat the oven to 400

Take the cut up pulled pork and pop it on a hot cast iron pan or a stone casserole dish like I used in the photo above. Add cream cheese, mustard, and heavy cream.

Once its all melted and mixed in with each other add half the pickles. I love pickles so I added about 3 ounces at this point. Let the simmer until its nice and thick.

Top it all off with Sliced Ham, bacon or your choice of leftover meats, add remaining pickles and pop into the oven at 400 degrees F for about 20 minutes. Once the cheese is golden brown and bubbly its time to pull it out and serve.

Note: I used a stone dish for mine so I popped in the oven for 15 minutes and then put it on a stove top burner as I made the dish. Then put it back into the oven to finish. I would do the same with a cast iron pan too, but be careful everything will cook faster and the pan will be hot.

Food To Meet Podcast

For the past ten years I've been working in the food industry. I started out doing street carts at Disneyland and moved into several "Mom & Pop" places after that. Culinary School came next just because I wanted a solid foundation. Mind you I went to a small school and learned a lot but the biggest thing to come out of it was the connections I made. Most of these people are still in my life today. One of connections was Tony Dabrowski who I've worked with off and on for the past 10 years. Everything from Hot Dogs to food trucks and even was on the set for his episode of Man vs Food when Adam Richman couldn't take down the 5lb Chili Dog. He will me my first guest.

During this time I was working on my own BBQ Dream and started Buffalo Boys BBQ. The catering company is still going but I have noticed I know a lot of fun food folks that have very interesting stories and I want to share those stories with you. We are going to have food industry guest ranging from the local farmer to big time restaurant owners. The podcast is about the people and not so much about the food. Food will be talked about but not the main focus. Its going to be a long form conversation about their journey and let the conversation take us to the next place. We haven't shot our first show yet but its going down next Monday.

We are documenting the whole process of making this podcast happen. Videos and a lot of behind the scenes stuff will be released during the process. Please take this journey with us on this next adventure.
