<div data-processed="true" data-complete="true" data-hveid="CAEIBBAA" data-sfc-cb="" data-sfc-root="c" data-sfc-cp="" class="Y3BBE">The first step on our journey this month takes us to Ukraine. <span>Shabo are the leading producer of premium wines in Ukraine and wine production has existed in their own sub region of Shabo for thousands of years, Since 2003 the current incarnation of the winery has gone from strength to strength, making a name for themselves with both international grapes and also remarkable indigenous varieties such as this <em>Telti Kuruk.</em></span><span></span>

<div data-processed="true" data-complete="true" data-hveid="CAEIBBAA" data-sfc-cb="" data-sfc-root="c" data-sfc-cp="" class="Y3BBE"><span>In Bulgaria, the variety Melnik (<em>Shiroka Melnishka</em> or 'broad leafed') gives rich, powerful wines with exotic perfume which were famously admired by Winston Churchill. Alongside their wonderful single varietal example, Aya Estate also produce this wine which uses 30% Pinot Noir in the blend to lend a lighter, more fruit driven touch to the overall profile. These grapes are grown near Kavarna on the Black Sea coast where the constant sea breeze ensures a freshness to the fruit. Biodynamic practices are in operation throughout the estate, with the Melnik coming from 50 year old vines in the Sandanski region.</span></div>

<p><strong>Chelti </strong>Winery are one of Georgia's finest family owned wineries whose wines receive multiple awards each vintage. The history of the winery can be traced back to the last century when the ancestors of the <em>Marianashvili </em>family built their first wine cellars, now, Giorgi and his children Ana and Andria head up the wine-making and operations.<br><br>A <em>Qvevri</em> is a traditional Georgian clay vessel where the grapes would be fermented and aged giving a unique texture and array of flavours to the wine. Kisi is one of Georgia's many local grapes and one that produces some of the countries finest amber Qvevri wines.</p>
<p><em>With refined and complex flavours of dried apricots, mango, marmalade, roasted almonds, figs, chamomile, fresh herbs, saffron, and other spices, this really is a special wine. A great balance of freshness, complexity, and finesse.</em></p>

Strangely, Viorica is a crossing of two red grapes: <em>Seibel </em>and <em>Aleatico</em>. Grown on Purcari's estate in <strong>Stefan Voda, </strong>the Viorica is blended with the highly aromatic Muscat Ottonel to give a highly perfumed wine with floral complexity.</span></div>

<span></span>Back in Georgia, crafted from the indigenous Saperavi grapes and coming specifically from the Kakheti sub-region, <em>Kindzmarauli </em>is a naturally semi-sweet red made by deliberately halting fermentation early to leave residual sugars which help to give the wine it's unique character.</div>

<span>Wine has been made in the Kindzmarauli region for centuries. The micro-zone sits at the foothills of the Greater Caucasus, where a combination of </span><strong><span>alluvial soils</span></strong><span>, </span><strong><span>warm summers</span></strong><span>, and </span><strong><span>excellent drainage</span></strong><span> create the ideal environment for ripening Saperavi. It also holds official <strong>PDO (Protected Designation of Origin)</strong> status, which safeguards its authenticity and strict production standards. </span>

Having earlier discovered their wonderfully characterful indigenous grape Telti Kuruk we now also see equally skilled interpretation of the international grapes with a lovely Merlot. With tannin levels dialled down the resulting wine is silky smooth, rounded and incredibly moreish. Using only estate grown fruit, the wine is aged in oak for a minimum of 6 months but retains an elegant purity and freshness. </span></div>

<p>Born from the passion of immigrant families from the Canary Islands and Italy, <em>Bodegas Maricha</em>l has been crafting exceptional wines for nearly a century.</p>
<p>Located in the heart of Uruguay’s premier wine region — <em>Etchevarría</em>, Canelones— the vineyards thrive in rich loam-clay soils with natural calcareous deposits, creating the perfect terroir for wines of depth and character.</p>
<p><span>Periplo Sentire is born from a spirit of adventure. It honours the independent vision of Ezequiel Marichal, second-generation winemaker in the family, who in 1938 built the winery together with his mother and siblings. Guided by creativity and determination, his legacy continues to inspire winemaker Juan Andres Marichal. This Albariño is a tribute to that enduring sense of freedom—the freedom to explore, to innovate, and to create wines that reflect both place and spirit. </span></p>

<p><span>André Manz is more than an owner; he is the creator of ManzWine. A Brazilian of Hungarian origin, who travelled to Portugal in the 1980's. Included in a plot of land which he had bought for an entirely different project, was a forgotten vineyard. It was from this vineyard that the first viticultural adventures were born...</span></p>
<p><span>The wine is clean and expressive with sweet notes of plum and ripe blackcurrants, and also an elegant floral character.</span></p>

<h4 class="product-title h2"><span style="text-decoration: underline;">Kuzubağ Kalecik Karası 2024, Türkiye</span></h4>
<p data-start="2266" data-end="2702"><span>For any fans of Garnacha this next wine is sure to be a winner. From an estate we have featured previously, this is a beautifully earthy and velvet-smooth Turkish red wine made from <em>Kalecik Karasi, </em>a variety native to Anatolia. The grapes were hand-picked from the high-altitude inland Güney region of Denizli and fermented in stainless steel to preserve freshness. The result is a textured wine with plum and ginger flower aromas with red cherry, plum, leather and silky tannins on the palate.</span></p>

<h4 class="product-title h2"><span style="text-decoration: underline;">Le Petit Voyage Criolla 2022, Mundo Reves, Argentina</span></h4>
<p data-start="2266" data-end="2702">From vines between 25 and 40 years old - <span>The <em>Criolla Chica</em> (Listan Prieto in Spain) &amp; <em>Criolla Grande</em> (indigenous grape) come from a vineyard that is located in the lower part of the appellation <strong>Los Chacayes</strong></span></p>
<p data-start="1097" data-end="1630">Made using a 15 day period of carbonic maceration this is a wine which will please fans of Beaujoais and has a similarly light, easy going charcater.</p>
<p data-start="1097" data-end="1630"><em>Light reddish colour with bright cherry reflections, aromatically </em><em>expressive with notes of strawberries, cherries, some caramel </em><em>and a herbal touch.</em></p>

<p class="MsoNormal" style="margin-bottom: 0cm; line-height: normal;"><span> ArmAs’ estate sits in the Aragatsotn Province, with its vines planted between 700-1,900m above sea level on mountainous, volcanic aspect. The altitude lends a long ripening period and allows the vines to flourish in 300 days of sunshine per year, balanced by cool summer nights. The vines are ungrafted, a rarity nowadays, and their roots delve deep into 30 layers of volcanic, limestone and clay composition. </span></p>
<p class="MsoNormal" style="margin-bottom: 0cm; line-height: normal;"><span>      </span></p>
<p class="MsoNormal" style="margin-bottom: 0cm; line-height: normal;"><span>The indigenous variety, Karmrahyut, excels here and is hand-harvested to ensure only the finest grapes are used. In the winery, the juice is fermented and matured in stainless steel for 8 months and lees-stirring is practiced to enhance flavour and complexity. </span></p>

<p>Pilato are a true gem in the winemaking scene of Istria. This family run winery is l<span>ocated in the village of Lašići, near Vižinada. The family has been involved in agriculture for generations, and the first vineyard was planted by Ivan Pilato in 1934. Alongside indigenous varietals they also plant some international grapes as part of their 20ha site and this is a wonderful take on Pinot Blanc. The wine has extraordinary characteristics with a bright yellow tone showing green tints. The nose is full of orchard fruit and the taste is soft and rounded with those pears and apples bursting through.</span></p>

<p>Just half an hour away, near Momjan we find the Kabola winery who specialise in traditional winemaking methods and still use amphora to age their flagship wines. This is their Malvazija and what a great example. Here we have<span> a f</span><span>resh, well rounded, herby white wine with a moreish finish tasting of bittersweet grapefruit making this very drinkable. Coming from the Momjan Valley in Croatia, the vineyards are situated facing south west towards the Adriatic Sea and benefit from a mixture of red and grey soils which combine to give the very special flavour of this wine.</span></p>

<p><span>Next is our first visit to Dalmatia and the Testament Winery. Pošip is the true Dalmatian white grape variety which is grown on vineyards from the Croatian island Korčula. Posip was originally discovered by a farmer 150 years ago in the village of Smokvica, where the winery is now located. This is a great introduction to Dalmatian wine -  A moreish character with rich aromas, citrus fruits and Mediterranean herbs. It offers complexity with a lingering minerality.</span></p>

<p>Also from Testament is their companion red in the Dalmatian Dog range, the delicious Babic which is a multi-layered wine balancing forest fruits with Mediterranean herbs and spices. Opening with <span>scent of Marasca sour cherry and aromatic herbs, the taste is fruity and vibrant with just a medium body so not too heavy. Unsurprisingly this versatile wine compliments a range of meats, charcuterie and cheeses and is very nice on it's own too!</span></p>

<p>Next it's back to Pilato in Istria to offer you this sensational aged Teran. Unlike the Babic we have just visited this is very much an example of a 'food' wine. It's a bold and expressive take on one of Croatia’s most fascinating indigenous red grapes: Teran. Known for its deep colour, vibrant acidity, rustic nature, and intense character, Teran has been cultivated in Istria for centuries, producing wines that are as wild and untamed as the rugged landscapes they come from.</p>
<p>This beautifully aged 2015 vintage is a testament to Teran’s potential for development and complexity. It opens with rich aromas of dark cherries, wild berries, and dried herbs, intertwined with subtle notes of spice and earthy minerality. On the palate, its structured tannins and bright acidity create a lively yet balanced experience, with flavours of black plum, forest fruits, and a touch of cocoa leading into a long, refined finish.</p>
<p>Perfect for pairing with hearty dishes like slow-cooked meats, truffle-infused pastas, or aged cheeses, it’s a wine that tells a story of tradition, craftsmanship, and the unique terroir of Istria.</p>

<p>Along with showcasing indigenous varietals and traditional winemaking techniques, Kabola also offer some modern takes in international grapes and we finish with their elegant interpretation of Merlot which is full of dark berries, pepper and cinnamon. <span>It's a wonderful comfort wine with a warming and smooth profile. Leading with an aroma of blueberries and raspberries, the spices then kick in to give a balanced but intense flavour complete with long finish. </span></p>

<h2><strong>What's in this month's Explorer's Club?</strong></h2>
<p>To start the year we’re visiting the heart of Central Europe to explore one of our favourite and also one of the continent’s most exciting wine regions: Hungary. Known for its rich winemaking heritage that stretches back over a thousand years, Hungary offers a fascinating mix of tradition, innovation, and a treasure trove of unique grape varieties.<br><br>Hungary is perhaps best known for its legendary sweet Tokaji Aszú, often called the "Wine of Kings," but there’s also much more to discover. From complex whites like Furmint and Hárslevelű to elegant, spicy reds made from Kékfrankos (Blaufränkisch) and Kadarka, Hungary’s wines are as diverse as the country’s landscapes, from the volcanic soils of Tokaj to the rolling plains of the Great Hungarian Plain.<br><br>In this month’s Explorer case, we’ve put together a selection that showcases the spectrum of Hungarian wines. <p>To start things off, the St. Donat Csopak Hegybor 2021 is a brilliant expression of Hungary’s Balaton wine region. The family-owned winery celebrated for its commitment to sustainable viticulture and authentic, terroir-driven wines are located on the northern shore of Lake Balaton. St. Donat specializes in showcasing the unique minerality of the volcanic and marl-rich soils of the Csopak appellation.<br><br>This wine, made from the <strong>Olaszrizling </strong>grape (Welschriesling), embodies the essence of the region. It greets you with aromas of green apple, lemon zest, and white flowers, underpinned by a signature saline minerality. On the palate, it is crisp and vibrant, with flavours of citrus, almond, and a subtle herbal note, balanced by lively acidity and a clean, mineral-laden finish.<br><br>This versatile wine pairs beautifully with seafood dishes, light pastas, or fresh goat cheese, and it’s also an ideal companion for warm, sunny afternoons. This really is a superb introduction to the elegance and precision of Csopak’s wines, offering a pure and unadulterated taste of Hungary’s iconic Lake Balaton region.</p>

<p><span>Next we have a wonderful dry expression of Hungary's flagship grape - Furmint. This single vineyard example is from winemaker Sarolta Bárdos, using fruit solely from the stony and organically-farmed <strong>Rány</strong> vineyard, and is possibly the purest expression of Furmint in Bardos' range. The vines here are around 50-60 years old and offer excellent concentration, albeit low yields. Aromas of pear, white peach and stones show freshness, while the palate is sensual, layered and brimming with peaches and red apples. The finish is long and lively with refreshing acidity. This is a must-try Furmint.</span></p>

<p><span>For some contrast and to highlight the versatility of this classic grape we next sample a single varietal Furmint grown on the historic <strong>Meszes-Maly</strong> vineyard, located on the border of the villages Tokaj and Tarcal. Made in a delicious off-dry style, this wine retains the crisp acidity and mouth-watering notes of apple, honeysuckle and white peach but with a texture that is full and waxy. Wines from <strong>Peter Pince</strong> are all about the terroir, focusing on showcasing a style that's unique to the microclimate around Tarcal and Tokaj. The result is an array of characterful wines that are all beautifully made.</span></p>

<p><span>Our next wine, from leading producer <strong>Böjt, </strong>is a modern renaissance of quality Bull's Blood, or <strong>"Bikaver</strong>" as it prefers to be known today. The style is a showcase of the finest red wine blends in Eger, built on the backbone of <strong>Kekfrankos</strong>, which must make up more than 50% of the blend. <p>The <strong>Heumann</strong> 'Blue Secret' is where Hungary meets Bordeaux and is a modern <span>blend from the red wine area, Villany, in the south of the country. Selected from 14-24 year old vines grown on loess and limestone soils and with a proportion of <strong>Merlot and Cabernet </strong>added to the traditional <strong>Kekfrankos</strong>, the fruit is carefully ripened and gently crushed. The resulting fruit-forward wine has aromas of red cherries and vanilla with a deep purple colour and notes of smooth blackberries, cherries and plums on the palate. The tannins are soft and gentle with a rather long finish.</span></p>

<p><span>We conclude our tour of Hungary with rare treat and a unique style from the Tokaj region.</span></p>
<p><span><strong>Szamorodni</strong> takes its name from the Polish word <em>'samorodno' </em>meaning 'as it comes'. It's made from whole bunches that combine the treasured noble rot grapes and also the 'healthy' ones. </span></p>
<p><span>Whereas Tokaji Aszú is made by selecting individual grapes affected by Noble Rot and thus an intensely sweet, full and powerful wine, <strong>Tokaji Szamorodni </strong>combines those rich characteristics with the freshness and vitality of dry wines. The results are some of the freshest dessert wines we've tasted, without compromising on intensity.</span></p>
<p><span>This wine is made from the region's two most important grape varieties: Furmint and Harslevelu. Furmint is known for lending the wines good acidity, depth and rich notes of orchard apples and stone fruits whilst Harslevelu can add honey, floral notes and a round, oily texture. It's aged for a minimum of 2 years and has at least 50g/l residual sugar.</span></p>

<p>Similar in style to wines from neighbouring Maconnais, this wonderfully expressive Chardonnay from Jerome Lacondemine is a really unusual find as white wine production make up a mere 2% of the overall Beaujolais output!</p>
<p><span>With a deep lemon hue, the wine is rounded with rich, creamy textures but </span><span>it retains a brisk citrus backbone which assures a fresh and long finish. </span><br><span>The wine is made form 100% Chardonnay, has seen no malolactic fermentation and has undergone a very light oaking in new barrels which gives a soft hint of vanilla.</span></p>
<p>The rounded structure and crisp acidity make it a delightful companion to roasted poultry, or a festive platter of charcuterie and cheeses, perfectly capturing the charm and complexity of this versatile varietal.</p>

<p>This is the perfect time of year to appreciate something truly special, and with our next wine we have just the thing! </p>
<p>The Amfora Malvazija is a special style of white wine know as Orange wine, this is where the grapes are fermented with there skin (known as maceration) which give this style of wine is deep, orange colour. What makes the wine special is it's produced in a ancient, traditional and completely organic way, using natural yeasts and left to ferment in amphora vessels which are buried and left for 7 months and then aged in oak barrels for several years before bottling.<br></p>
<p>The wine is almost golden in colour, full-bodied with a mesmerising bouquet of quince, star anise and herbs with a warm and soft flavour which keeps a nice level of crisp freshness with excellent minerality and mild tannins. The palate is balanced with notes of butter, ripe peach and almond with a long finish.</p>

<p><span>Chateau Ksara is Lebanon's largest and oldest commercial winery. The 'Le Prieure' bottling is Mediterranean twist on a very French blend, mixing grapes you would traditionally find in blends from the South of France. Instead, in the warm Beqaa Valley, Le Prieure is brightly coloured and leads with intensely juicy red fruit aromas. It's soft and supple to drink with a mix of plums, berries, warming spice and liquorice. Each variety is fermented separately and matured for 14-18 months before being blended together for the final wine.</span></p>

<p><span>Wiese &amp; Krohn was founded in 1865 by two Norwegians - Theodor Wiese and Dankert Krohn - shipping initially to Scandinavia and Germany. In the century and a half since its foundation, Krohn has built up an outstanding reputation. Long renowned for the quality of their sublime Colheitas (single vintage tawnies), they produce a remarkably complete range for a small house, and each wine excels in its category. </span></p>
<p><span>Much of the secret lies in the high quality of their vineyards - the magical combination of terroir, locality, aspect, incline and low-yielding vines. Their Quinta do Retiro Novo estate in Sarzedinho, in the Rio Torto valley (where vinification takes place), is all A grade vineyard. Indeed Krohn only work with grapes from A-graded vineyards across all of their ports, and their top wines are still trodden by foot.</span></p>
<p>Vivid tawny-red colour. Nose of ripe mellow fruit with aromas of figs and prunes set off by an attractive woody and spicy character. Smooth and round on the palate, full of rich jammy flavours. <span>Krohn Tawny makes a delicious dessert wine and combines particularly well with flavours of almonds, berry fruit or dark chocolate. It can also be enjoyed as an accompaniment for rich, blue veined cheeses. It is excellent at the end of the meal, as a crowning moment of an enjoyable evening, served on its own or with a plate of walnuts or roasted almonds.</span></p>

<p><span>Tucked away at the foot of mountains in southwestern Bulgaria, near the serene banks of the Struma, Aya enjoys the perfect location for viticulture. </span><span>Nestled in a valley steeped in history and myth, the rugged landscape creates a dramatic amphitheatre of rolling terrain and crisp alpine air. </span></p>
<p>A unique late harvest dessert wine. A light amber coloured wine with an alluring aroma of apricot confit and roasted corn. Medium body but with a light, airy taste of delicate bitterness and popcorn in the finish. A funky, very interesting and refreshing sweet wine.</p>
<p>A real pleasure that speaks for itself, serve it very lightly chilled and pair with a variety of light desserts or drink simply by itself - enjoy!</p>

<p>We are doing a bit of jet setting this month for our Explorer case, most of what we discover is from the realms of central and eastern Europe but every now and again we find some gems from much further afield.  We have a wonderful South African producer that we want to share, along with a full world tour of wine destinations including Mexico and Japan. <p><span>Our first wine this month is a</span><span> fantastic Mexican red wine featuring the famous grape of Barolo, except grown in Mexico's gorgeous Baja California wine region. Here it results in a concentrated, full style of Nebbiolo with rounded red fruits, leathery tannins and a long, satisfying finish. Cooled by the Pacific breeze and with the vines situated 1000m above sea level, the wine is not overripe but offers a complex, unique style different to its Italian sibling. Made by oenologist Camillo Magoni.</span></p>

<p>Situated in Nashik, India's largest grape-growing region, Sula Vineyards was set up in 1997 by Rajeev Samant &amp; Kerry Damsky. They pioneered the growing of the French grape varieties Sauvignon Blanc and Chenin Blanc, which were first released in 2000 to wide acclaim as India's best white wines. Sula now cultivates Shiraz and Zinfandel amongst other international varieties and is broadly recognised as India's premium wine producer.</p>
<p><span>Aromas of quince and pear combine with tropical fruit flavours and mineral undertones. A notable acidity and hint of sweetness give this wine a balanced structure and refreshing character. Created by winemaker Ajoy Shaw, this is the perfect option to pair beautifully with Indian cuisine.</span></p>

<p>Next we move to Japan and one of the great range we have from the historic Chateau Mercian in Yamanashi. </p>
<p><span>For this wine, Koshu grapes are grown in the Fuefuki district, one of the 13 cities located in Yamanashi Prefecture. Harvest takes place from late September to early October. This wine spends 3 weeks on skins to achieve the vibrant apricot-skin hue. </span><span>Dual fermented, firstly in a stainless steel tank for about 28 days then in an oak barrel for about two weeks. Its then aged in oak barrels for 8 months. </span>Sweet and ethereal aromas of apricot, candied pear, Darjeeling and old Rose with subtle vanilla notes derived from it's time in oak. The complex palate from the skins and seeds of Koshu lend complexity to the mouthfeel.</p>

<p><span>The Pizzato family, originally from Italy, came to Brazil in 1880 and, after many years cultivating vines for other wineries, set up their own namesake winery in 1999. Today their 45 hectares of vines are split across Vale dos Vinhedos and Dois Lajeados, the former some 500m above sea level. The Tannat grown here enjoys plenty of sun and ripens fully, allowing it to be enjoyed earlier than its European counterparts. Deep purple-red in colour with prominent but smooth tannin, the wine leads with concentrated aromas of plums, blueberries, coffee and spice, with vanilla, black and red fruits, caramel and leather joining on the palate. A delightful, peppery red to please any 'big reds' fans.</span></p>

Finally this month we travel to South Africa for a brace of wines from the iconic Babylonstoren Estate in Franschhoek. <span>Firstly, their single variety Shiraz is by far one of our customers' favourite red wines. Aromas of cassis, pencil shavings and violets transform into gorgeous ripe cherry fruit, soft prunes and a tingle of spice. A multi-award winning, full bodied and beautifully-made wine.</span>

<div style="text-align: left;"><span>To complete our selection this month we also have their delicious Mourvedre Rose.</span></div>
<div style="text-align: left;"><span>Made in the classic dry Provençal style with a delicately fruity flavour profile, this dry and elegant wine blooms with delicious raspberries and rose petals on the nose. With minimal skin contact to give that magnificent pale hue, fermentation happened in stainless steel tanks for three weeks with one month ageing on the fine lees. Notes of rosewater, creamy rhubarb and pomegranate, rounded off with a refreshing minerality and a subtle punch of acidity.</span></div>

      <![CDATA[<p>This is the perfect dish for cold winter nights – tender pieces of beef stewed with carrots, mushrooms and thyme, with pearl barley to soak up all the delicious gravy, make this a really hearty, filling dish. Are you feeling warm already? It’s just right with the warming blackberry and cherry flavours of the <a href="https://www.novelwines.co.uk/products/bojt-egri-bikaver-superior" title="Buy Böjt Egri Bikaver Superior - Hungarian Red"><strong>Böjt Egri Bikaver "Bull's Blood" Superior</strong></a>, one of our favourite Hungarian red wines. There's a nice, spicy peppery character to the wine that works so well.</p>
<h3>Ingredients</h3>
<p><b>Serves 4</b></p>
<ul>
<li>400g chuck steak</li>
<li>Oil for frying</li>
<li>2 garlic cloves</li>
<li>1 onion</li>
<li>2 carrots</li>
<li>A large handful of white mushrooms</li>
<li>1 tbsp dried thyme</li>
<li>50ml brandy</li>
<li>2 pints beef stock</li>
<li>200g pearl barley</li>
<li>Salt and black pepper</li>
</ul>
<h3>Method</h3>
<ol>
<li>Cut the chuck steak into bite-sized pieces and fry in a little oil until just browned, and then remove to a plate. Chop the onion and carrot and crush the garlic, and fry them all together with the dried thyme in the lovely juices left behind by the beef.</li>
<li>Once the onion is nicely softened, add the chopped mushrooms and fry for a few minutes, and then return the beef to the pan. Turn the heat up, pour in the brandy and fry for a few more minutes, so that the beef takes on a bit of a glaze.</li>
<li>Pour in just enough beef stock to almost cover the other ingredients, then put the lid on and turn the heat down. Leave to bubble for an hour.</li>
<li>Add the pearl barley to the pan with the rest of the beef stock and simmer until the pearl barley is cooked through (it’ll be soft but still retain a certain bite). If you feel like there isn’t enough liquid to cook the barley, you can just add a little more boiling water.</li>
<li>Once the pearl barley is cooked, take the stew off the heat, put the lid on, and leave it for about ten minutes – this is just to rest the meat, so it will be tender and falling apart. Serve in warmed bowls.</li>

Pelagonia is an award-winning Macedonian food which specialises in the best traditional recipes from their region. This recipe will be using their Aivar. Aivar (or Ajvar) is an iconic recipe and trademark product of Macedonian. Made from roasting sweet juicy red peppers ground with aubergine, creating sweet tasting, creamy condiment the has no sugar, cream and is very healthy and low in fat and calories. <h4><span>What you will need</span></h4>

<li><span>1 medium (170g) chicken breast</span></li>
<li><span>1 tbsp of Aivar Pelagonia</span></li>
<li><span>Slice of tea smoked or cured bacon</span></li>
<li><span>1/2 a cup of grated mature cheddar</span></li>
<li><span>1 tsp chopped garlic</span></li>
<li><span>Sprigs of lemon thyme</span></li>
</ul>
<h4><span>Method</span></h4>
<ol>
<li><span>Marinade the chicken breast in olive oil, garlic and lemon thyme</span></li>
<li><span>Place the marinated chicken onto a griddle pan and griddle for two to three minutes on each side, season with rock salt.</span></li>
<li><span>Griddle the bacon slices</span></li>
<li><span>Remove and chop the bacon into thin strips</span></li>
<li><span>Place the chicken breast onto a tray, spread the Pelagonia Aivar with a table spoon and top with the bacon strips and grated cheese - bake for 10 minutes until the chicken is cooked.</span></li>
<li><span>Slice the chicken breast and it's ready to serve.</span></li>

<p><strong>Welcome to our series of articles celebrating delicious Mediterranean food and truly Novel Wines. This recipe series is in partnership with foodie Kiki Burton, behind popular food blog <a href="https://cardamomanddill.com/" title="Read Kiki Burton's Cardamom and Dill blog online">Cardamom and Dill</a>, alongside our friends at Raphael's Mediterranean Deli Products, who supply our <a href="https://www.novelwines.co.uk/collections/raphaels-mediterranean-deli-foods" title="Buy deli oils. olives and herbs">delicious range of oils and olives</a>.</strong></p>
<p>This week's recipe is <em>Kritharaki</em>, the Greek version of orzo pasta which greedily drinks up the glorious flavours of wild oregano, dill and lemon. This beautiful little dish of goodness is inspired by the tavernas of small fishing village Loggos, who all serve up wonderfully authentic Greek food. At the end of the recipe, you'll find our top wine pairings personally selected by our buyer, Ben Franks.</p>
<p><strong>Serves 4-6</strong></p>
<h2><strong>What you'll need</strong></h2>
<ul>
<li>2 tbsp Raphael’s extra-virgin olive oil</li>
<li>1 large white onion, finely chopped</li>
<li>3 garlic cloves, finely chopped</li>
<li>1.5 tbsp tomato purée</li>
<li>1 tbsp  Raphael’s organic oregano</li>
<li>30g fresh dill, finely chopped (or 1 generous tsp dried dill tops)</li>
<li>x2 400g tins good quality plum tomatoes</li>
<li>150g Raphael’s Mediterranean pitted Kalamata olives </li>
<li>300g kritharaki (you can also use orzo pasta)</li>
<li>Sea salt and freshly ground black pepper, to your taste</li>
<li>150g feta</li>
<li>1 lemon, zested and juiced</li>
<li>Crushed chilli flakes, for garnishing (optional)</li>
</ul>
<h2><strong>Kiki's method</strong></h2>
<p>In a large frying pan, heat the oil and gently fry the onions and garlic for around 10 minutes until they’re soft and translucent.</p>
<p>Add the tomato purée and stir around for a minute. Add the herbs (reserving a little dill for garnishing) and stir everything together for a another minute.</p>
<p>Add the tomatoes (roughly breaking them down with the back of a spoon) and the olives, turn down the heat right down and leave to gently simmer gently for 20 minutes.</p>
<p>Meanwhile, in a medium saucepan, cover the kritharaki with boiling water. Simmer for seven minutes (the texture should be al dente). Drain and stir into the tomato sauce. Add the lemon juice and season to your taste.</p>
<p>Drizzle with olive oil, scatter over the feta cheese and garnish with the lemon zest, a scattering of fresh dill and chilli flakes (if using). Take straight to the table and serve with a basket of freshly baked rustic bread, a classic Greek salad and, naturally, several frosted glasses of retsina.</p>

<p>In this week's recipe collaboration, we've selected Kiki's lunchtime Greek Wild Oregano-roasted Tomatoes and Whipped Feta on Garlicky Sourdough recipe. Kiki put together this treat after seeing Raphael Deli's Greek breakfast of tomatoes, ricotta, oregano and smoked sea salt on bread. At the end of the recipe, you'll find our wine buyer Ben's perfect pairings with this Med lunch.</p>
<h3>What you'll need:</h3>
<ul>
<li>3 plum tomatoes, halved</li>
<li>Raphael's extra virgin olive oil (buy yours <a href="https://www.novelwines.co.uk/collections/raphaels-mediterranean-deli-foods" title="Buy Raphael's deli products online">here</a>)</li>
<li>Wild oregano</li>
<li>Smoked sea salt and freshly ground black pepper</li>
<li>Whipped feta (200g feta cheese at room temperature and 80g creme fraiche, also at room temperature)</li>
<li>Two slices of sourdough bread</li>
<li>1 peeled clove of garlic</li>
<li>Half a lemon, zested</li>
<li>Pul biber, to garnish</li>
</ul>
<h3>Kiki's method</h3>
<ol>
<li>Heat your oven to 150C.</li>
<li>Line a baking tray with parchment and place your tomatoes on cut-side up, then drizzle them with the olive oil and season with oregano and sea salt to your taste.</li>
<li>Gently roast for one and a half to two hours - <em>Kiki says this will make your kitchen smell dreamy! </em>Remove from the oven once done and allow to cool a slightly.</li>
<li>Meanwhile, crumble the feta into a food processor and pulse for a few seconds. Add the creme fraiche and puree until its smooth and creamy.</li>
<li>Toast the sourdough and rub it with your garlic clove. Spread the whipped feta generously over it and add tomatoes on top.</li>
<li>Finally drizzle with olive oil, garnish with lemon zest, a sprinkling of oregano and pul biber.</li>

<p>In our debut recipe collaboration, we've selected Kiki's mouth-watering recipe for a beautiful tart inspired by Raphael's products. At the end of the recipe, you'll find our top wine pairings personally selected by our buyer, Ben Franks.</p>
<h3>What you'll need:</h3>
<ul>
<li>1 red bell pepper thinly sliced, with the membrane and seeds removed</li>
<li>1 yellow bell pepper thinly sliced, remove membrane and seeds</li>
<li>Raphael's Greek Extra Virgin Olive Oil (buy <a href="https://www.novelwines.co.uk/collections/raphaels-mediterranean-deli-foods/products/raphaels-gold-label-extra-virgin-olive-oil-pdo-kolymvari-crete-1-litre" title="Buy Raphael's Olive Oil">here</a>)</li>
<li>Half teaspoon of dried oregano</li>
<li>Sea salt flakes and ground mixed peppercorns</li>
<li>A knob of butter</li>
<li>2 finely sliced red onions</li>
<li>2 large, finely chopped garlic cloves</li>
<li>120g of baby spinach</li>
<li>2 large free range eggs</li>
<li>250ml creme fraiche</li>
<li>200g good quality feta cheese</li>
<li>1 lemon, zested</li>
<li>Freshly grated nutmeg</li>
<li>4 sheets of filo pastry</li>
<li>Raphael's olives (choose your favourite <a href="https://www.novelwines.co.uk/collections/raphaels-mediterranean-deli-foods" title="Buy Raphael's olives">here</a>)</li>
<li>Pine kernels</li>
<li>Sesame seeds</li>
<li>Fresh dill, for garnish</li>
</ul>
<h3>Kiki's method</h3>
<ol>
<li>Heat your oven to 190C.</li>
<li>Line a baking tray with parchment and arrange your pepper slices on top. Drizzle 1 tbsp of Raphael's extra virgin olive oil, season and add a pinch of dried oregano. Roast these for 20 mins and then set aside.</li>
<li>While they're roasting, put a frying pan on medium heat and add the remaining olive oil and the butter. Sautee the onions for 10 minutes until translucent and then add the garlic, frying for a couple of minutes more. Add spinach and wilt down before removing the pan from the heat and set aside.</li>
<li>Beat your eggs with creme fraiche and crumble in your feta. Add a squeeze of lemon zest and the nutmeg. Season to taste and pour in your cooled onion mix and roasted red peppers.</li>
<li>Arrange your filo sheets on a round pie dish and brush each layer with olive oil, making sure you cover the bottom and leave plenty of pastry hanging over the edge of the tray. </li>
<li>Tip your filling into the pastry and spread it to the edges, then arrange olives and pine kernels over the top. </li>
<li>Gently fold the overhanging pastry over the top and brush each layer with the olive oil as you go. Then brush the top of the pie with the olive oil and sprinkle over sesame seeds.</li>
<li>Bake for 25 minutes until golden and the top will be firm. Rest for 15 minutes and then serve with fresh dill and a simple Greek salad.</li>

<p><strong>What wine do you pair a Mediterranean roasted red pepper tart with?</strong></p>
<p>This superb tart needs something with acidity to cut-through but not overpower the dish. It makes sense to plum for a wine from a region similar to where you imagine you'd be enjoying this tart, whiling away the afternoon in the Greek sun, perhaps. </p>

<p>More of a curveball, but something I love with roasted red peppers (especially when garlic is involved) is a crisp, zingy rose wine. A blend of Solaris, Pinot Noir and Regent, this English pink mixes layers of pink grapefruit, rhubarb and strawberry fruit with a crisp, dry finish. </p>

<p>Of course! The cheat is to avoid tannin, because the main reason why red wine has rarely been paraded as a good match for fish is because tannin doesn't match a fish's lean fat content.</p>
<p>Something like Pinot Noir would work best. Pinot Noir is naturally soft in tannin and full of fruity red berries, but it also has fantastic acidity. </p>

<p>Don't worry, it's not as complicated as it sounds; in fact, wine and food pairings are completely subjective and depend on what you do or don't like in your wine.</p>
<p>Having said that, there are a handful of cheats that <strong><em>really work </em></strong>when it comes to getting your match in the right ballpark. That's because these cheats will <strong><em>bring out the best </em></strong>in both your wine and your food.</p>
<h2>Cheat 1: Salt <em>needs </em>acidity</h2>
<p>When you have salty foods, you should look for a wine with good acidity. Salt is a flavour enhancer, which is great for your food, but it also cuts through and subdues our palate's response to acidity. The result being your wine <strong><em>tastes fruitier</em></strong>.</p>

<p><strong>Prosecco</strong>, or any sparkling wine, is made with a "clean juice". No sparkling winemaker wants too much complexity in their pressed grapes, because fizz can accentuate these flavours massively. Fizz is for celebrations and by nature it <em>needs </em>to be crowd-pleasing. Therefore, grapes are often grown in cooler climates and picked earlier, while their acidity is much higher and fruit ripeness is lower.</p>
<p>Pair these sparkling wines with anything salty - fish and chips, full English breakfast, grilled sea bass, halloumi or feta - and you'll soften the acidity and bring out a very fresh, fruity aroma in the wine.</p>
<p>Another example is crisps. Notice how much nicer wine is with some salted crisps? How much "easier" it is to drink? That's because your wine is softer and fruitier on the palate thanks to the salt!</p>
<p>Some more? Try <strong>Sauvignon Blanc </strong>with <strong>goat's cheese</strong> or <strong>white fish </strong>and you'll probably have a great match. Hungarian <strong>Furmint </strong>with <strong>chicken salad </strong>or <strong>cold cuts</strong>. A light and dry <strong>Riesling </strong>or Japanese <strong>Koshu </strong>with <strong>sushi</strong>.</p>
<p><strong><em>Mouth-watering yet?</em></strong></p>
<h2>Cheat 2: Fats go best with <em>body </em>and <em>acidity</em>
</h2>
<p>Fats need a little complementing (body) and a little contrasting (acidity).</p>

<p>Let's start with red meat. I bet you opt for the Malbec? Perfect, why not! Malbec works because it gains its <strong>body </strong>from being nice and ripe, thanks to those sunny hills in Argentina, but great quality Malbec also has good acidity. Next time you try one, feel the back of your cheeks and how they pull-in - this isn't tannin, it's acid.</p>
<p>While tannin (the dry feeling you get from wine on the roof of your mouth, usually after an oaked red) can complement fats well, the main thing you need to get right is body and acid.</p>
<p>If you're eating <strong>beef</strong>, hopefully you season it well with <strong>salt</strong>. As before, salt and acidity work wonders together. Beef is quite an intensely flavourful meat, so you need to look beyond just big, ripe fruits (blackberry, etc) and also at structure (oak, spice). That's why <strong>Cabernet Sauvignon, Malbec </strong>and my all-time favourite <strong>Tannat </strong>work so well with beef. When made well they all have: good acidity, loads of fruit and full-bodied structure from oak.</p>
<p>Meats like <strong>lamb </strong>require a bit more thought. Lamb's more delicate, so going for something like a <strong>New World Pinot Noir </strong>from New Zealand, the USA or Australia can work really well because it has lots of acidity and lots of fruit ripeness. A Pinot's lighter structure means you won't <em>overpower </em>the lamb. Want a really good match? Seek out <strong>Kalecik Karasi </strong>from Turkey.</p>
<p>White meats like <strong>chicken </strong>or <strong>pork </strong>actually have quite delicate flavours, so it depends how you cook them. <strong>Butter chicken </strong><em>loves </em><strong>creamy </strong>white wines. Pork actually goes well with sweetness and tart acidity (apple sauce, anyone?) so try an off-dry <strong>Chenin Blanc</strong>. If you're BBQing pork or chicken, think about the <em>intensity </em>you're adding and look again at fuller-bodied wines that match in weight.</p>
<p>Buttery dishes like <strong>risotto </strong>can pair really well with full-bodied wines that are <em>creamy</em> like rich and full <strong>Chardonnay </strong>or soft and plush <strong>Viognier</strong>.</p>
<h2>Cheat 3: Sugar <em>loves </em>spice</h2>
<p>Spicy food can be really difficult to pair wine with. In fact, most of us in the UK opt for beer or hard spirits with our spicy food. We're missing a trick here because there's some absolutely lovely sugar and spice pairings to explore.</p>

<p>It's important not to forget your other cheats with this though. For example, if you're having <strong>ramen </strong>or a <strong>hot sweet and sour soup </strong>then think about the natural salt content. Same with spicy soy dishes. By our cheats, you'll need a wine that's <strong><em>both sweet and acidic</em></strong> to work. Opt for wines like Mosel Valley German <strong>Riesling </strong>or maybe even a <strong>late harvest sweet wine.</strong></p>
<p>When you get to curries, think about the ingredients. Dal, with its range of soft and sometimes creamy lentil dishes, need something with some body but also sweetness. Indian wineries like <strong>Sula Vineyards </strong>specialise in this and <a href="https://www.novelwines.co.uk/products/sula-vineyards-chenin-blanc">their creamy Chenin Blanc</a>, an off-dry white wine bursting with peaches and apples, is perfect for dals or coconut curries.</p>
<p>Similarly, tomato and onion based <strong>curry </strong>dishes are probably going to overshadow most white wines, even the sweetest. However, the concept of <strong><em>sugar and spice </em></strong>still applies to finding the best match. <p>Most wine drinkers have a preference towards tannin (red wines) or acidity (white wines). You also have the sweet tooth crowd and those who avoid sugar at all costs.</p>
<p>While I would still recommend giving something different a go and find out more about your tastes when drinking a wine alongside different food, sometimes you just need to pick for you.</p>
<p>If you're a <strong>red wine drinker</strong>, for example, and you're having fish or goat's cheese, don't be at a loss. There's a whole world of beautifully soft, lighter styles of red wine out there. Wines that can still give you structure, tannin and those black fruits in a bundle of softer acidity. Actually a great example is <strong>Beaujolais</strong>, where you could try <strong>Moulin a Vent </strong>wines for a richer, plusher style that will still sing with salty foods.</p>
<p>If you prefer <strong>white wines </strong>and you're having red meats or rich BBQ food, equally look at white wines with much fuller bodied profiles. <strong>Warmer climate </strong>white wines might be a better option with these foods, such as southern Italian <strong>Greco di Tufo </strong>or a Sicilian <strong>Zibibbo </strong>(Muscat).</p>
<p>Finally, if you're <strong>not a sweet tooth </strong>and you're faced with spice try complementing instead. Big spicy red wines like <strong>Barossa Shiraz</strong>, if you're used to them, can work for you with curry or chilli, especially if they're chocolatey as well (think about those chefs who dollop chocolate in their chilli con carne). Lime-fresh white wines with hot and sour soups or soy dishes can also work, such as <strong>Pinot Blanc </strong>from <strong>Alsace</strong>.</p>

<h3><b>Method</b></h3>
<ol>
<li>Start by making the ganache – it needs to cool and thicken before you can put it on the cake, so allow a couple of hours before you want to serve. Break up the chocolate and place in a large bowl. Warm the cream on the hob in a small saucepan, until it starts to steam and get frothy, then pour it over the chocolate and stir well until it’s melted, smooth and glossy. Set aside.</li>
<li>Next, make the salted caramel sauce – this also needs to cool. Measure out the butter, brown sugar and caster sugar, and warm on the hob, stirring occasionally, until the butter has melted and the ingredients have combined. Then, remove the pan from the hob and pour in the cream. Add a pinch of salt, stir well and set aside.</li>
<li>After about an hour, you can start making the cake. Preheat the oven to 180°C (160°C fan). Separate the eggs, putting the whites in one mixing bowl and the yolks in another. Whisk the whites until soft peaks start to form, add 50g caster sugar, and whisk again to bring it back to the soft peak stage.</li>
<li>Meanwhile, whisk the remaining 100g caster sugar with the yolks until thick and pale yellow. Add the cocoa powder, and then a spoonful of the whisked egg white, and stir.</li>
<li>Next, add the remaining egg white a third at a time, folding gently to combine without beating out all of the air (folding is a crucial skill for this cake, because if you beat the air out of the mixture it’ll end up as flat as a pancake – so look it up on Youtube if you’re not</li>

      <![CDATA[<p><span style="font-weight: 400;">This might sound a little strange, so you’re just going to have to trust me – </span><i><span style="font-weight: 400;">risotto del bosco</span></i><span style="font-weight: 400;">, or woodland risotto, is a traditional Italian risotto made with porcini mushrooms and dried blueberries. The hint of tart, tangy fruit is just the thing to lift the rich, earthy flavours of the mushroom, and makes for a gorgeous combination. <a href="https://www.novelwines.co.uk/products/painted-wolf-guillermo-swartland-pinotage">Painted Wolf ‘Guillermo’ Swartland Pinotage</a> is full and juicy, with blueberry flavours, so this unusual dish is the ideal partner for it.</span></p>

<li>30g dried porcini mushrooms</li>
<li>1 chicken stock cube</li>
<li>A small handful of dried blueberries</li>
<li>Fresh thyme</li>
<li>Salt</li>
<li>Parmesan, to serve</li>

<h3>Method</h3>
<ol>
<li>First, place the dried porcini mushrooms in a large jug or bowl and cover with a litre of boiling water. Leave to soak for 20 minutes.</li>
<li>After 20 minutes, transfer the mushrooms to a different bowl with a slotted spoon, and to the reserved soaking liquid, add the stock cube and dried blueberries. Save a couple of the mushrooms whole for a garnish, and roughly chop the rest.</li>
<li>Finely dice the onion and crush the garlic, and fry them gently in melted butter and a splash of olive oil until the onion is really soft – keep the heat low so it doesn’t get brown or crispy.</li>
<li>Add the risotto rice to the onion and stir through, then turn the heat up a little bit and pour in the white wine. Stir as it bubbles until most of the liquid has been absorbed, and then add the chopped porcini mushrooms, the soaked blueberries, and about a tablespoonful of fresh thyme leaves.</li>
<li>Give the reserved porcini soaking liquid a really good stir – the stock cube should have melted away by now. Start adding the liquid to the pan with the rice, a few ladlefuls at a time, stirring each time and waiting for all the liquid to be absorbed before adding any more. Continue until the rice is cooked – it should take around 20 minutes, and you might not need all the liquid. Once the rice is cooked, season with a pinch of salt.</li>
<li>In a frying pan on a high heat, briefly fry the reserved porcini mushrooms until browned, then dish up your risotto and top with the fried mushrooms, a sprinkling of fresh thyme and a little grated Parmesan.</li>

<li>Start by making the stuffing. Peel the parsnip, chop into chunks and boil in salted water until soft. Drain the water, then add a generous scoop of butter and mash the parsnips. Set aside until cool.</li>
<li>Dip the slices of bread into a bowl of cold water, then squeeze out as much of the liquid as possible. Add the bread to the pan with the mashed parsnips, along with the sausage meat (remove the skins, of course), a sprinkle of dried sage and a pinch of salt and freshly ground black pepper. Mix really well.</li>
<li>Next, preheat the oven to 190°C (170°C fan). Unroll the pork and spoon the stuffing in a line down the middle, then roll it up again and tie firmly with kitchen string. Cut a garlic clove in half and rub all over the pork, then sprinkle with dried parsley and black pepper. Pop it into a roasting tin and cover with tinfoil, then roast for 90 minutes.</li>
<li>When the time’s up, remove the tinfoil and give the pork another 10 minutes in the oven, so it takes on some colour. Then remove from the oven and allow it to rest (cover it with the tinfoil again and a clean tea towel on top, to keep it warm) for 10 minutes before serving.</li>

    <title>Sticky toffee apple pudding</title>

      <![CDATA[<p><span style="font-weight: 400;">Though I say so myself, this recipe is a humdinger. A soft, light sponge is flavoured with stewed Bramley apples and served with a rich caramel sauce – just the thing to accompany the <a href="https://www.novelwines.co.uk/products/monsoon-valley-late-harvest-chenin-blanc">Monsoon Valley Late Harvest Chenin Blanc</a>, which brings to mind red apples, honey and quince.</span></p>

<h3><b>Ingredients</b></h3>
<p><b>Serves 6-8</b></p>
<ul>
<li>3 Bramley apples</li>
<li>80g butter</li>
<li>300ml water</li>
<li>120g caster sugar</li>
<li>90g soft brown sugar</li>
<li>225g self-raising flour</li>
<li>1 tsp baking powder</li>
<li>1 egg</li>
</ul>
<p><i><span style="font-weight: 400;">For the caramel sauce:</span></i></p>
<ul>
<li>60g butter</li>
<li>85g soft brown sugar</li>
<li>50ml double cream</li>
</ul>
<h3>Method</h3>
<ol>
<li>Peel and core the Bramley apples, and chop roughly. In a small pan, melt 20g of butter, and then add the chopped apples, 40g caster sugar and enough water to nearly cover the apples. Stir well and then simmer on the hob, with the lid on, until the apples are nicely soft and starting to disintegrate when stirred. Add more water as necessary to keep the liquid at the same rough level.</li>
<li>In the meantime, preheat the oven to 190°C (180°C fan). Cream together the remaining butter and caster sugar, the soft brown sugar and the egg, until pale and fluffy, and then stir through the flour and baking powder.</li>
<li>Next, add the stewed apple to the cake mixture and stir together – the result should be pretty runny, so don’t worry about this. Pour into a baking dish (I used a 9 inch circular baker), leaving about 1 cm clear to the rim to allow for rising during baking. Place in the oven and bake for 50 minutes, until well-risen and deep golden brown.</li>
<li>To make the sauce, melt the butter and brown sugar in a small saucepan on the hob, and once you have a silky mixture with no grains remaining, add the double cream and stir to make a smooth sauce. Serve the pudding warm with plenty of sauce poured over the top.</li>

      <![CDATA[<p><span style="font-weight: 400;">The rich, indulgent flavours of roast duck need something sharp and sweet to balance them, and blackcurrants are perfect for the job. Serve with roast potatoes and <a href="https://www.novelwines.co.uk/products/kayra-okuzgozu">Kayra Okuzgozu</a>, a robust, full-bodied red with its own blackcurrant and blackberry notes.</span></p>

<p><span style="font-weight: 400;"><em><strong>A note on equipment</strong></em> – you’ll need a roasting tin with a rack that fits over the top, to roast the duck.</span></p>
<h3>Ingredients</h3>
<ul>
<li>A 2kg whole duck</li>
<li>A couple of cloves of garlic</li>
<li>Coarse sea salt</li>
<li>Dried thyme</li>
</ul>
<p><i><span style="font-weight: 400;">For the sauce:</span></i></p>
<ul>
<li>1 red onion</li>
<li>Butter</li>
<li>A small bunch of fresh thyme</li>
<li>1 tbsp blackberry vinegar</li>
<li>A splash of red wine</li>
<li>1 tbsp blackcurrant jam</li>
<li>300ml chicken stock</li>
</ul>
<h3>Method</h3>
<ol>
<li>For best results, do a bit of preparation the night before – take the duck out of its packaging, blot the skin thoroughly with kitchen paper to dry it out, and leave the duck, uncovered, in the fridge overnight. Drying out the skin helps it become really crispy during cooking.</li>
<li>Preheat the oven to 220°C (200°C). Blot the skin again with kitchen paper, then sprinkle the duck with coarse sea salt and dried thyme. Peel the garlic cloves and cut into a couple of pieces, and then cut slits in the flesh of the duck and insert the garlic pieces.</li>
<li>Place the duck on a wire rack over a roasting tin, and roast in the preheated oven for two and a half hours. Every now and then, drain the fat from the roasting tin underneath. Use it to cook your roast potatoes, and save a little bit for the sauce.</li>
<li>When you’ve got about 45 minutes left on the timer for the duck, make the sauce. Slice the red onion as finely as you can, and get it frying gently in a scoop of melted butter and a little of the reserved fat from the roasting duck. You want the onions to soften, rather than crisp up, so keep the heat low. Finely chop half of the fresh thyme and add to the onions.</li>
<li>Once the onions are nicely soft, add the blackberry vinegar. Fry for a minute or two, and then add a good splash of red wine, the blackcurrant jam and the chicken stock. Turn up the heat to get the sauce bubbling a little so it reduces and thickens.</li>
<li>You can, of course, carve the duck and serve it as you would normally, but here’s what I like to do: when the timer goes for the duck, carve it and remove the tender meat from the bones. Shred the meat and skin with two forks, pile onto a serving platter, and drizzle with plenty of the sauce. Scatter the rest of the fresh thyme over the top and serve with the rest of the sauce in a jug.</li>
