Lemon Cupcakes

After a well spent break these 2 last days, I felt like getting back to baking. And by baking I actually mean baking cupcakes.

This time I wanted to go for something very yummi. And well, lemon does the trick for me. What help me the most was being offered this lovely book on cupcake recipes. Cupcakes have lemon juice and zest and the frosting is buttery with lemon zest.

Still these little pots of calories don't really look like the professional ones. I do need to get a real piping bag.

If you'd like me to share the recipe, I'll gladly make another post with it!

My thesis presentation is just around the corner. It is the last step to officially finish my master. Among some recipes to be put into practice and new ones to be discovered (sometimes once I start it takes awhile for me to calm this urge down) I'm moving on with the presentation, but now that my thesis is already done I have so little motivation left!...

Vanilla Cupcakes with Raspberry Frosting

Because I was so eager to show you what kind of baking adventures I've been up to, I decided to take some pictures of the cupcakes that I just made. I told you I was not having a life - well, I am. But not one that involves working hard.

Because this is going to be a very long post, I'm only going to write it in English. Very sorry Portuguese-speaking dudes and dudesses.

I must say, it took me awhile before I got brave enough to try this recipe, I mean cupcakes in general. I just thought it would be much more difficult than it is and so, I just kept postponing it.

Stupid of me, because it is one of the best things I've tried to bake. Ever. Yeah, I know. It's so good, it's almost unreal.

I must advise you though. If you are to do it, make sure you have a lot of people with you, so you're not tempted to eat them all at once.

What I like so much about cupcakes is that they're the funniest, happiest of cakes. Just looking at them makes me happy and yes, partly it's because of the possibility of eating them all, but it's more because of the colors and all the preppy little details about them.

It's a girls' thing, you wouldn't get it.

I want you to try this so very bad that I will share my recipe - which is basically the same as the ones you can find on the Internet... Shall we start?

Ingredients (for the cupcakes):

- 1 cup granulated sugar

- 1 stick butter, softened

- 2 eggs

- 2 teaspoons vanilla extract

- 2 teaspoons baking powder

- 1 1/3 cups of flour

- 1/3 cup of milk

- 1 pinch of salt

Preheat the oven to 180ºC (it's better not to turn it all the way to 200 because you don't want the cupcakes to lose all the moist). Start placing your cupcake tray, and put the paper cups inside each hole of the tray - I didn't do that in this case because the size of the paper cups were way too big for the tray, but they look so much better if you do it as the recipe suggests.

In a mixing bowl cream together the sugar and the butter. Add the eggs and the vanilla extract and cream together to a smooth mixture. Add all the dry ingredients and slowly add the milk and mix everything to combine.

Pour the dough in each cup and take it to the oven. Bake cupcakes for about 15 minutes. I think it doesn't need more than that, just keep an eye on them and once you see they are dry from the inside, they're done. Take them out and allow them to dry and cool off.

Now here's the fun bit, which allows you to be a bit creative.

This one time I wanted to try something different and so I started putting jam (raspberry) on the inside. It's pretty easy - just cut tiny circles on the middle and a bit deep and place the jam.

These are the paper cups I used, not the best as they absorb all the fat very rapidly. Better to try metal ones perhaps.

Well, there's just the frosting missing. It involves some technique, nothing that time won't teach you.

Ingredients:

- 1 stick butter, softened

- 1/2 cup of raspberry jam

- 1/2 teaspoon vanilla extract

- 450 gr. powdered sugar

- fresh raspberries, strawberries, or any other berries of your taste (optional)

- pinch of salt

To make the frosting combine together all the frosting ingredients except the fresh fruit. Add the frosting in a piping bag fitted with a large star tip (I just used a spoon). Top with a strawberry on top.

And voilá, they're done. Hope you give it a try!

Estou absolutamente aborrecida por estar constipada. Consequentemente não tenho saído de casa nestes últimos 2 dias. Não há outra coisa que me leve a pensar que não tenho nada para fazer e que preciso de ter uma vida. Não, a sério, eu preciso. A minha vida não pode ser ver séries, filmes e cozinhar bolos. Se bem que o último exercício tem me levado a fazer umas coisas bem espectaculares. Namely cupcakes! Yum. Tenho imensa vontade de experimentar todas as receitas da Bakerella, mas claro isso requere que eu atinja um level asian para tal. Fica a sugestão para quem se sentir corajoso.

I'm out of mind with boredom for being with a flu. As a consequence I have not got off my house for the last 2 days. There is nothing else that leads me but to think that I have nothing to do and that I need to get a life. No, seriously, I do. It can't be about watching TV shows, movies and baking. Although this last bit always makes happy and has allowed me to make some awesome things. Namely cupcakes! Yum. I'm so tempted to try out all the Bakerella's recipes, but of course that implies me getting to level asian to do so. If you feel brave enough give it a try.

What I've been up to - thesis, job searching, sales and whatnot

As últimas duas semanas que passaram foram intensíssimas, com a minha tese muito atrasada tive de me trancar no meu quarto para finalmente dar o término à coisa.

E dei. Hurray! Não nego, estou felicíssima por ter tirado tamanho peso dos meus ombros. Mas fiquei com uma tamanha aversão a tudo o que seria relacionado com escrever num computador que não tive coragem sequer de abrir o blog nestes últimos dias.

Falta-me agora a defesa, lá para Fevereiro. Um dia ao qual adiarei o meu nervosismo. O ideal é mesmo preparar-me o melhor possível para que na altura não haja lugar para nervos.

Que mais se sucede? Bem pouco mais, para além da minha busca pelo primeiro emprego. E não está fácil como já antevia, não estou a ter tantas respostas como gostaria de receber. Mas uma pessoa não é de desistir, pois não? Mudarei de estratégia se até Fevereiro nada resultar.

Noutras esferas. Hoje como fui entregar a minha tese (teses, 5 exemplares, conta calada) achei por bem dar-me um pequeno regalo. O que eu mais gosto de encontrar é coisas que não espero terem desconto, como a Perfumes &Companhia. Estão neste momento a fazer 50% de desconto em perfumes e maquilhagem como Yves Saint Laurent, Chanel, Dior, Esteé Lauder...

Eu sabia que era um investimento que valia a pena, então trouxe este pequeno comigo.

Pelo que já experimentei é óptimo. Cheira muito bem e é um pó hidratante especial para peles oleosas - não que a minha seja muito, especialmente nas bochechas, mas é sempre bom. Ficou-me por 26 euros. Thumbs up!

The last two weeks have been very intense, with my thesis getting behind schedule I had to lock myself in my room to get the thing done.

And so I did. Hurray! I do not deny the fact that I'm uber delighted for having taken such heavy weight off my shoulders. But I got a deep aversion, these last days, to anything computer-related. I couldn't even open my blog for pitsake!

I'm only missing my thesis' defence, which will happen in early Feb. For now I will postpone all the nervousness related to that day. I think that if I prepare the best I can there won't be a reason for me to be nervous. Or is there?

What else is going on? Very little, besides me searching for my first job. And it's not being easy as I anticipated, as I'm not having as many answers as I'd expect. But one is not to give up, right? I'll be changing my strategy if things don't go according to planned, by February.

Other interesting facts. Today, as I was delivering my thesis (not 1, but 5 hard copies, friggin' expensive) I thought I deserved a little gift. What I love the most is finding unexpected things to be on sales, such as in cosmetics at Perfumes & Companhia. Brands such as Yves Sain Laurent, Chanel, Dior, Estée Lauder,... all under 50% in make-up and fragrances.

I knew it was a worthwhile investment, so I brought this little guy with me.

From what I experienced it's great. It smells really good and it's a special powder that is a moisturizer and still tolerant with oily skins - not that I actually apply, especially concerning my cheeks, but it's always a good thing. With the 50%, I got it for 26 euros. Thumbs up!

Muitas vezes dou por mim a gostar de roupa que uma rapariga como eu não deveria gostar. E depois lembro-me, mas porque não?
O grande truque é saber nivelar o aspecto de maria-rapaz. Para além de não ficar bem a toda a gente, não é tarefa fácil.
O mesmo acontece ao contrário, rapazes que saibam usar roupa um tanto feminina têm o meu respeito.

Afinal, o que mais importa é saber expressar-se duma maneira em que realmente se acredite.

The same happens the other way round, guys being able to pull off girlish stuff own my respect.

This Happens All the Time...

O ano a acabar e a minha vida a sofrer algumas alterações. Como sabeis (gosto de falar na terceira pessoa do plural que torna tudo muito mais cordial) vou abandonar a minha vida académica (não sabendo se é definitivo!) e reconsidero o que me define.

Ao longo deste tempo que fui crescendo, também os meus gostos foram mudando. Em muito como me visto fala sobre mim e dita o meu estado de espírito. Ultimamente, vejo que no entanto, a minha roupa já não tem muito que ver comigo e é nesse sentido que quero investir este próximo ano.

A verdade é que até agora nunca fiz um esforço muito grande para encontrar roupa que realmente gostasse; algo mais que saísse da esfera daquilo que toda a gente tem. E isso torna-se irritante. Tanto mais quando um par de calças parecem durar 2 meses.

E alguém que se confesse fútil tem de se esforçar nessa direcção. Procurar coisas com mais qualidade, que sejam únicas e que possam ser adoradas por uns bons anos.

...coming to this thought yet again.

This year is coming to an end and my life still undergoing some changes. As you know, I will be finishing my academic life (not knowing if it's something to return to!) and I find myself reconsidering what defines me in the first place.

A I grew older, my tastes also went through some changes. In a general manner, the way I dress up is able to tell a lot about myself and express my state of mind. And lately, I see how my clothes no longer have much to do with me and that's something I'm willing to invest in this next year.

The truth is that, up until now I have never made a great effort to find clothes that I would actually love to have; something unique that would stand out from the realm of what everyone has. And it comes to a point where it gets annoying. All the more so, when a pair of pants seem to last two months.

And for someone who's embraced a shallow endeavor it's almost a necessary effort to be made. Finding items that have better quality, truthfully unique and that can still be cherished for some good years is definitely something to take place.

Tiveram um óptimo Natal? So did I.

É realmente terapêutico estar com a família e fazer o ponto de situação do ano que se passou. Ver como vai aumentando (cada vez mais anões!) e como é giro o Natal por eles.

Mas o stress nunca fica de lado. Tenho só mais uma semana, só mais uma, e a minha tese tem o seu fim.

É tão estranho estar a acabar a minha vida académica. Sinto-me muito verde. Penso muito se não precisaria de tirar mais qualquer coisa para ficar com uma base sólida de conhecimentos. Mas em quê, e para quê?

Bem, vou prosseguir a minha maratona. Desta vez com outro alento, já que tenho uma caixa de ferrero rocher ao meu lado!

Ah, e tenho de vos mostrar alguns dos presentes espectaculares que recebi. Fica para amanhã.

Às vezes dou por mim a percorrer as alas masculinas de roupa quando não consigo encontrar o quero.

Sorte a minha, ou talvez não, tenho os ombros largos. Então muitas das vezes encontro roupa que me veste muito bem.

Há que ter cuidado claro, conjugar com coisas femininas que contrabalancem um potencial tomboy.

O azul petóleo e o verde pistachio sempre foram cores que me inspiraram, parecem ter outra edge e não serem tão fáceis de conjugar. Mas adoro a combinação das duas.

Peço desculpa, acordei agora para a colecção da Massimo Dutti. Volta e meia volto à mesma máxima, que cada vez mais a escolha convém ser em qualidade, não em quantidade. Não que esta marca seja o expoente de qualidade, mas uma possibilidade ainda em conta.

Gostei, gostei. Principalmente dos mocassins em bordeaux, que devem ficar cheios de pinta com umas calças cinzentas claras.
